Pet Tails

Napoleon Dynamite Napoleon is an adorable, seven years old, ten pound black black poodle; his full name is Napoleon Dynamite. He has the energy of a stick of Dynamite and he lives up to his name. Carol Ryan, Gold River resident and local author is the owner of Napoleon. Carol tells us that Napoleon keeps her company and seems to know when she is not feeling her best. At those times he stays close to to her, he rides on her lap in the wheelchair around the house. Carol has an illness called primary progressive multiple sclerosis. In her case she has become increasing disabled since Napoleon came into her life in 2005. He seems to understand and always accepts Carol as she is. Carol Ryan, a local Gold River author, has recently written, Right Now Is Perfect, a book of Romance, an Adventure and the Unexpected Thereafter. Carol spends a lot of time writing on her computer. After a few hours, Napoleon will come to her carrying a toy to let her know it’s “play time.”

Poodles are known for their superior intelligence and exceptional learning ability. Poodles also posses wonderful swimming ability; the coat is adapted to water and will cord if left to grow naturally. The Poodle can adapt to nearly any size living quarters. His hypoallergenic coat can reduce allergic reactions but requires professional grooming. Napoleon loves to run off-leach near a lake. He runs as fast as he can into the water, up to his doggy elbows, to scare Ducks and Geese, takes a few tastes of water, then he runs back to Carol. He jumps into her lap depositing sand and water all over her.

To witness such pure joy is worth it to Carol.

Out with the Bad, in with the ….Bad….

Outgoing Governor Arnold Schwarzenegger outraged friends and family members of Luis Santos, a 22-year-old business student who was stabbed to death in 2008, by reducing the sentence of Esteban Nunez who happens to be the son of the former Assembly Speaker Fabian Nunez from 16 years down to 7. According to court testimony, the younger Nunez told a co-defendant that he would “take the rap” for whatever happened and that “hopefully his dad would take care of it and could get them off on self-defense”. We all know that Governors and Presidents provide pardons and clemency in a number of instances that are usually politically motivated in some form/fashion but this was a murder case. He has basically told that young man’s family that their son’s life was not as important as that of the son of a political crony.

In-coming Governor Jerry Brown made one of his first appointments of his new term, naming Bill Honig to the CA State Board of Education. Mr. Honig was removed from office in the early 90’s after being convicted for funneling state education money to an organization his wife ran out of their home. The charges were later reduced to misdemeanors but I don’t see how that matters. How do you justify having a man appointed to one of the top education boards in the state who was convicted of a felony while working on this board before? What next, can we expect the former city officials of the Bell, CA scandal to be appointed to the Ethics Board? Governor Brown had a chance to make solid political appointments to get the state moving forward but fell flat on his face.

How to Run Your Business During a Recession/Depression

How does our current recession (or, more likely, soft depression) compare with the Great Depression? For an excellent account of the United States’ last go-round with economic collapse, I’d highly recommend The Great Depression: A Diary by Benjamin Roth.

Roth is a Youngstown, Ohio, based attorney who details a compelling play-by-play of the Depression, spanning from 1931 to 1941. A highly intelligent and intellectually curious individual, Roth not only provides us with a look at what life was actually like during that time, but also attempts to fill in the pieces and anticipate when things will actually get better, based on an extensive amount of economic reading he does concurrently with his experience.

My conclusions and comparisons with today’s depression1. If you compare Roth’s account with today’s conditions, it’d be tough to

conclude that we are heading for another Great Depression. From a general-feel standpoint, the current climate sure seems to rhyme more with Japan’s recent/current soft depression and lost decades.

2. While cash is certainly king, I think cash FLOW is emperor and master of the universe. A lump pile of cash is awesome, no doubt, especially when bargains are to be had. But an investment that can spin regular cash flow back your way, like a business that continues to run and churn during soft economic times, is the best thing you can have. Cash flow is a “great to have” during all conditions, inflationary or deflationary.

3. Don’t get too spun up trying to predict the future. It’s fun, but it’s also often a fruitless venture. Stay lean and stay mean. Don’t saddle yourselves with long term obligations. Stay away from margin and levered bets. In the startup world, we have a term called “lean startup”, which refers to the philosophy of doing just enough to make it to your next milestone—so that wasted effort is minimized. Conserve your effort and resources as best you can, and be prepared to pivot if the situation changes!

Legislators Will Decide Brown’s Budget Proposal, Not Voters

California’s state budget process is a mess and Gov. Jerry Brown has told us he is going to fix it and that it will hurt. In his first week in office, he proposed a budget that would cut social programs deeply, realign some state agencies, and transfer many responsibilities back to local governments. He also proposed that the people vote on whether or not they want to tax themselves for an additional five years.

There is no question that Brown is as eccentric as he is smart and to sell a bag of goods he is creating to fix the state’s budget mess will require more buy-in from state legislators than voters.

Under California’s Constitution, which happens to be one of the three longest in the world, the governor and state legislators are suppose to develop and approve statutes that run government. The public initiative process is reserved for amendments to the Constitution or to revise existing amendments. So, why are voters being asked to approve something we pay legislators to do as a part of their job?

Brown made a political promise during his campaign that he would not increase taxes without voter approval. This was a great strategy to offset the ads Republican challenger Meg Whitman was running, depicting Brown as a tax-and-spend politician. However, in making that promise, he has put himself in a situation where he will need three-quarter votes in both the Assembly and the Senate to send the tax extension proposal to the voters. More than likely, this initiative will be challenged by those who oppose tax increases, arguing the state budget is a statute and not a constitutional amendment. This will send the proposal back to the governor, who can then work with legislators on getting the tax extension without voter approval.

Mighty clever I’d say.

The Oil of The Olive Modesto, California is not in the neighborhood – to my surprise. I was bred, born and brought up in Northern California and evidently a bit ignorant of my home territory. I thought it was “just down the road a piece”. This is how I ended up on a foggy morning on Hwy 99 to the Sciabica Olive Oil Company. In 2005, my cooking club arranged a class with The Apple Farm located in Philo, California. This is a really foodie place. We were introduced to Sciabica Olive Oil. That is the inspiration for this article and my trip to Modesto. Sciabica Olive Oil Company is all about tradition, excellence, passion and best of all family. It is the Sciabica family that began the company in 1936. Jonathan Sciabica (third generation) explained the process of producing 100% Extra Virgin, Cold-Pressed, Unrefined oil from 100% California olives. His mother, a recently retired teacher, is working in the gift shop. She set up a tasting and shared some of Gemma Sciabica recipes. Jonathan’s great-grandfather began the company and his son, Joseph, carried the company into present day until his recent passing in October 2010 at 95 years. The Sciabicas deliver their own oil, and will only work with stores that will allow them to stock the shelves to assure freshness. The “Oil of the Olive” can be found at Corti Bros. and Nugget Markets. I would not hesitate to take another “short” drive to Modesto to visit Sciabica Olive Oil. Their web site tells of the family history and explains about the oils. This is an easier way to go, but if you get a chance – stop by.

iPad 2 Coming February 9th - RumorIt certainly feels like the iPad 2 is coming in the next few weeks? In the

wake of CES’s massive tablet lovefest, we’ve seen a parade of iPad rumors, all seemingly pointing to the fact that Apple would be unveiling something soon. And besides, Apple’s fairly regular release schedule pointed to a late January event (the first iPad was announced on January 27th of last year).

Here’s another interesting little potential hint. In the second beta of iOS 4.2, a thumbnail seems to actually give away the release date of the new tablet. In the past version, the iOS, the old calendar icon had a big “27” on it--the day in January that the last iPad was released. The new icon, meanwhile, spots a big “9.”

Could Apple be releasing the new iPad on the 9th of February? Seems like a long shot, sure, but in the world of Apple rumors, everything is fair game.

Thanks Eagle Scout Zachary Burgess, Eagle Scout candidate received a Proclamation of Achievement from the Rancho Cordova City Council. To help fulfill his community service requirement for the Eagle Scout badge, Zachary and his project team planted 10 trees in the City Hall grounds area in October. Zachary, a high school junior, planned and coordinated the project which included working with Todd Humphrey, Rancho Cordova’s Facilities Services Manager, and the Sacramento Tree Foundation which donated the trees. “With their help and assistance, I identified specific sites to place trees on the north and west sides of the building to provide shade and a nice place for picnic or lunch breaks for workers at City Hall,” said Zachary. He then supervised a crew of 16 project workers during the tree planting. “The City welcomes the opportunity to support and encourage the young members of our community,” said Humphrey. “They gain a new skill while providing a service for Rancho Cordova.” Zachary will receive his Eagle Scout rank during a Court of Honor on Presidents Day in February.

Don’t Reward Them with Junk Food

In today’s society, fast food and sugary top buys are now marketed mostly to

children audiences. Therefore our children are more likely to want foods that are processed, full of artificial coloring, and refined sugars. As a result of this growing desire, adults are now offering these unhealthy food choices as a reward. “If you’re good I’ll give you candy or buy you a happy meal,” the responsible adult says to the screaming child. Although we are satisfying their taste buds, we must understand the reward can be detrimental to their health.

In nature, adult mammals are very focused on giving their children the best nutrients. The mother’s milk is the most important part of how the newborn survives. The nutrients give them healthier nervous systems, better immunity, and higher brain function. In nature, as the baby mammal grows, its mother will hunt the best nutrients to feed it. And will also bring the child along to teach them what to hunt for. Food is an important part of survival in the animal Kingdom, especially for young mammals. But as humans we are not as focused on feeding our children the best things, bringing them up on fast food, sugary deserts and sodas, and candy as a mid-day snack. These seem harmless, but food is what gives children energy, helps them grow, and even effects brain function to learn.

Of course we don’t want to hear our children whine and plead about getting just a “little” junk food fix. But using food as a reward, especially when the reward can cause obesity and diabetes is only harming your child in the long run. A healthy lifestyle is learned, and starts at a very young age. So we must show them how to make the right choices, even when it comes to food. They can only learn to enjoy healthier meals if we provide them with those choices. Once again we can all learn from nature, good nutrition choices are imperative for a child’s early development and will lead to better adult health. So remember, if you love your children, don’t reward them with junk food. Junk food is not a reward.

personally and professionally. The better you are at building bridges to people and relating to them, the more others will listen to you. The way you communicate your thoughts to others using your words as well as your body language and listening skills will determine how people respond to you.

When you first meet someone you make an acquaintance; but when you make an effort to connect with someone by building a rapport with them it can be the beginning of a mutually beneficial relationship.

Most people don’t care how much you know until they know how much you care. So communication is the key, asking questions and listening. People want to be heard and made to feel valued.

One of the keys to building relationships is to be a good listener. When you are talking to someone you need to give them your full attention, both body and mind. Your eyes give it away when you are looking around and something or someone else is getting your attention. People want to feel important and by giving them your undivided attention will help them feel that they are.

Communication is the key. Ask a question then listen. People want to be heard and valued. But this is not accomplished only by what is said, sometimes your body language speaks louder than your words. Write down how it makes you feel when you are having a conversation with someone and they aren’t really there. Their eyes or mind is somewhere else. How do you feel when you know the person you are having a conversation with is paying attention to you and hearing every word?

CityVille Moves To TownThere is a new mayor in the town of casual social gaming. CityVille has

quickly moved into the casual game world and captured it by storm. In case you weren’t paying attention and missed it, CityVille now has 10’s of millions of players. In January 2011 it has tracked 100,000,000 MAU (monthly active users). Its current user base would be larger then most countries. It is produced by a bay area company called Zynga. When CityVille launched it attracted over 200,000 players making it Zynga’s largest launch ever. It is now presently the largest game application on Facebook beating out its cousin Farmville a game also made by Zynga. CityVille is a game that allows Facebook users to become the mayor of a virtual city and oversee its development into a large metropolis. Along the way players can perform all sorts of tasks like farming, construction, and tax collection. They are given energy point to help them along the way. Helpful CityVille residents can go visit other neighbor’s cities and perform work there as well which of course in addition to making the player feel full-filled by being nice it gives them energy points as well. So, if you have ever had a secret burning desire to be the mayor of your town, or be a virtual version of Donald Trump now is the time to draw up some blue prints, grab your hard hat and get busy.

As Valentine’s Day approaches some of us positively jump with joy. Others avert their eyes from the overwhelming displays of red and pink heart shaped items that abound this time of year. More chocolate is sold on Valentine’s Day than any other day of the year. And as far as I’m concerned, that’s reason enough for a holiday.

My friends refer to me as a chocoholic, a status I wear proudly. Between the anti-oxidants and endorphin lift, I personally think chocolate should become one of the daily required food groups.

I’m also a chocolate purist. In other words, don’t mess with my chocolate. No nuts, no fruit. If you must smother something with chocolate I can tolerate a raisin or two, but as far as I’m concerned, this bean was meant to be savored in its true form. As for those new bacon-flavored chocolate bars, I won’t even lower myself to discuss them. Pork and beans should meet in a pot, not in a candy bar.

Men frequently wonder what to give the special woman in their lives for a Valentine’s Day gift. Flowers are lovely but their beauty and fragrance are short-lived. Diamonds are forever but they are also expensive. Lacy lingerie? Maybe, but honestly, who’s that gift really for?

So what’s the best way to woo this woman? I may as well admit it. I’m easy. Stick a kiss on my lips and a big bow on top of a box of gooey chocolates and I’m yours. Plus every day as I savor a piece of joy from the box you personally chose for me, I’ll also savor your love.

On the other hand, much as I dislike chocolate covered anything, I probably wouldn’t refuse a chocolate- covered diamond.

New Restaurant Opens in the Neighborhood! Joe and Gayle Hensler, former Gold River residents, have opened a contemporary Italian restaurant in the former Chowder House location, just up the street from Gold River, at the corner of Sunset and Hazel, Maranello. Opened New Years Eve, the restaurant is already proving popular. “We were stunned on our first Friday night with over 185!” said Joe Hensler. “The menu, ambiance and the pricing were designed to encourage repeat business and so far, that’s happening, with many people visiting us more than once in just the first 10 days”. The restaurant will soon open a large covered and heated patio with seating for an additional 66 people. The Hensler’s think that the patio will be a real hit with diners. Chef Gabriel Glasier, is the former owner of the acclaimed Red Bud Café’ in Cameron Park. Chef Glasier was also the Chef for another local legendary restaurant, The Slocum House. “Formally trained, Gabe is not only a great Chef but a great guy,” says Hensler. “He has developed a skilled team in a short amount of time. We are getting very positive feedback on our food”.

Gayle and Joe were motivated to open a restaurant in the area as they are nearby residents. “We always wound-up driving to Folsom or Roseville to go out to eat and we knew that there had to be pent –up demand, if a restaurant was done right” Gayle reports. “In addition to great food, we are striving for excellence in service and a nice but relaxed atmosphere.” The final element she says, is good pricing. “We would much rather have a line out the door with good pricing than be sitting here alone with high prices – we have nothing on the menu over $20 and some under $10.”

The restaurant boasts a full and fun bar, with 8 beers on tap, a good glass of house wine for just $4.75 and a 33 item wine list, also with great prices. The wine list was developed by local wine legend, Donal Smith, the wine buyer for Corti Brothers for 27 years. What’s Cooking with Mom

Italian Grilled CheeseIngredients:

1 cup giardiniera (Italian hot vegetable salad), drained1/4 cup salad olives (green olives with pimiento)8 slices good quality crusty white bread, 1/2-inch thick slices8 slices deli cut provolone cheese4 tablespoons softened butter

Directions:Cook time: 5 min. Yield 4

servingsHeat griddle to medium.In a food processor pulse chop

the salad and olives into a fine relish. Spread 4 slices of bread with relish and top each with 2 slices cheese and 4 more slices of bread. Butter the outside of the sammies with softened butter and grill until golden on both sides, 4 to 5 minutes total. Cut and serve.

Brie en Croute Ingredients:

1 sheet frozen puff pastry (package comes with 2 sheets) 1 tablespoon butter 1/4 cup chopped pecans or walnuts 1 small (8-ounce) wheel Brie 1/2 cup raspberry jam 2 eggs, beaten

Directions:Cook Time: 25 min Yield: 8

servingsPreheat oven to 375 degrees F. Defrost 1 sheet of puff pastry for approximately 15 to 20 minutes and

unfold (place remaining sheet in freezer for later use). Melt butter in a saucepan over medium heat. Saute nuts in butter until golden brown, approximately 5 minutes. Place nuts on top of Brie and spread jam on top of nuts. Gently roll pastry with a rolling pin to increase the size of the sheet 1 to 2 inches in each direction. Brush both sides of the sheet with beaten egg. Center the wheel of Brie on top of the pastry sheet.

Bring all four corners of the sheet together above Brie and twist slightly to form a “bundle.” Tie gathered pastry with kitchen/cooking string (tie string in the form of a bow), arranging pastry until you are satisfied with the “bundle” shape. Place “bundle” on an ungreased cookie sheet and bake for 20 to 25 minutes until pastry is golden brown. Serve with top-quality crackers.

Crab Cakes with Lemon-Dill Sauce

Ingredients:Lemon Dill Sauce:

1 cup mayonnaise 1/4 cup buttermilk 2 tablespoons chopped fresh dill leaves 1 tablespoon chopped fresh parsley leaves 1 tablespoon grated lemon zest 2 teaspoons fresh lemon juice 1 garlic clove, minced

Crab Cakes: 3 tablespoons butter 1 green onion, finely chopped 2 tablespoons finely chopped red bell pepper 1 garlic clove, minced 3 tablespoons heavy cream 1 tablespoon Dijon mustard 1 egg 1/2 teaspoon minced fresh parsley Cayenne pepper 1 cup bread crumbs 1/4 cup grated Parmesan 1 pound white or claw crabmeat, picked free of any bits of shell 2 tablespoons vegetable oil

Directions:Cook time: 12 min. Yield: 4 servingsTo make the sauce, combine all of the ingredients in a bowl and stir well.

Refrigerate until chilled. The sauce will thicken as it chills. To prepare the crab cakes, melt 1 tablespoon of butter in a heavy skillet

over medium heat. Saute the onion, bell pepper, and garlic until the pepper is limp, approximately 3 minutes. Add the cream, mustard, 1 egg, parsley, cayenne pepper and 1/2 cup bread crumbs, to taste, and mix well. Gently fold in the crabmeat.

Form the mixture into 8 patties, about 1/2-inch thick. In a mixing bowl, combine the remaining 1/2 cup of bread crumbs with the Parmesan. Pat this topping onto both sides of the patties. Refrigerate until firm, about 2 hours.

Using a skillet, combine the oil and remaining 2 tablespoons of butter. Saute the crab cakes in the hot oil-butter mixture for approximately 3 minutes on each side or until golden brown. Grilled Brie and Goat Cheese with Bacon and Green Tomato

Ingredients:16 slices center-cut bacon, cut into 1/2-inch thick pieces2 sticks unsalted butter, at room temperature8 slices Pullman bread, sliced 1-inch thick8 to 12 ounces really good quality brie2 green tomatoes, sliced 1/4-inch thickWatercress8 ounces soft goat cheese, cut into 8 slices (recommended: Boucheron goat cheese)Salt and freshly ground black pepper

Directions:Cook time: 15 min. Yield 4 servingsPlace the bacon in a large skillet or griddle and cook until golden brown

and crisp. Remove to a paper towel-lined plate. Break each piece into fourths and set aside.

Heat a cast iron griddle or cast iron pan over medium heat.Spread butter on 1 side of each slice of bread. Layer 4 of the slices of the

bread with 3 to 4 slices of brie, 2 tomato slices, watercress, 2 slices goat cheese, and 4 slices of broken up bacon and season with salt and freshly ground black pepper. Place the remaining bread slices on top, butter side up and cook on the griddle until golden brown on both sides and the brie has melted.

Grilled Red Snapper with Grapefruit-Thyme Mojo

Ingredients:4 skinless red snapper fillets, 8 ounces each2 tablespoons canola oil1 teaspoon kosher salt1/2 teaspoon freshly ground black pepperGrapefruit-Thyme Mojo, recipe follows1 grapefruit, sliced, for garnish

Grapefruit-Thyme Mojo:1/4 cup olive oil8 cloves roasted garlic1 grapefruit, juiced1/4 cup fresh orange juice2 teaspoons grated grapefruit zest1 teaspoon honey2 serrano chiles, coarsely chopped1 tablespoon chopped fresh thyme leaves1/4 teaspoon kosher saltCombine all of the ingredients in a blender and blend until smooth.

Directions:Cook Time: 10 min Yield: 4 servingsHeat your grill to high.Brush the fish with oil and season both sides of the fish with the salt and

pepper. Place the fish on the grill, and grill for 3 to 4 minutes or until golden brown and slightly charred. Turn the fish over and continue grilling, for 3 to 4 minutes for medium doneness. Remove the fish from the grill and let rest 5 minutes.

Drizzle mojo over snapper and serve with grapefruit slices on the side.
