The Bolognese & the Havanese Two Rare Jewels of small Breeds

My name is Danny Boy, I am a Bolognese, and my owner is Ann of Gold River. Some people think I look like a Bichon, but smaller, only weighing eleven pounds. My hair is curly, somewhat like a poodle. Our mom, Ann is so happy that we do not shed and people are not allergic to us. Let me tell you about my wonderful “sister” Katie, a Bolognese. She weights nine pounds and has wavy hair. Katie loves to watch TV, and the minute an animal appears on the screen, she tells us. Her favorite program is the Dog Whisperer. I don’t really care to watch TV. Our mom practices the piano for an hour everyday. Katie and I love music, especially listening to the piano. We enjoy a recital each day sitting on a soft chair at each side of the piano. Our mom rescued me two years ago, and she tells her friends how wonderful it is to have two dogs. We keep each other, company, and are not alone when she leaves. We have heard that the Bolognese get separation anxiety, I guess this is true, since I am a constant shadow to my owner…and insist on sitting on her lap. The Bolognese is a rare toy breed that originated as far back as the Roman times. Later this breed was developed in Bologna, Italy. The Bolognese is a gentle, sensitive, affectionate little companion dog that is ideal for the young or the elderly. Eager to please, and a quick study, it does very well in obedience classes. The Bolognese enjoy playing with gentle children and gets along well with other animals. The Havanese recently joined the ranks of AKC – registered breeds, you might think they are some sort of Poodle, or mixed with a Maltese, or related to the Bichon Frise. These breed, including the Bolognese, are descendants of the same canine that was indigenous to the lands and islands of the Mediterranean Sea. The most appealing aspect of the breed – the jewel in the Havanese’s crown – like the Bolognese, is their winning temperament. Happy, loving, intelligent, social and accommodating, these dogs perform to their highest capability when rewarded with constant human companionship. Whether male or female, puppy or adult, the Bolognese and the Havanese can be expected to steal your heart.

If you would like to try video conferencing you can use traditional services like Yahoo, MSN, or Skype. Now even Google Talk has a video feature built into it. If you are brave and have a PC, the Internet, and a webcam you have everything you need to make your own full-blown TV studio and broadcast what you want to the world, from the comfort of your home. www.Justin.TV is an example of one of the many live stream video websites that have sprung up and become and become very popular over the past few months. It is a big world out there that continues to get smaller and smaller everyday thanks to advances with Internet technologies.

What’s Cook’n With MomPotato Cakes + Red Onion Jam + Goat Cheese CreamIngredients:

Potato and Parsnip Cakes with Red Onion Jam and Goat Cheese Cream I just wanted some sort of platform for eating a lot of goat cheese. I thought potato cakes/latkes, with some red onion jam to cut the thickness of it all. These turned out really, really delicious. My potatoes turned out crisp and wonderful! For the red onion jam: 2 bay leaves dried (or fresh) thyme2 medium red onions red wine vinegar sugar red wine (not pictured) For the potato cakes: 1 large russet potato 1 large or 2 medium parsnips 1 lemon 2 eggs 1/4 cup flour parsley salt and pepper oil for frying For the goat cheese cream: 4 oz good quality goat cheese half and half (amount variable, but probably a few TB)

Step 1: Start with the red onion jam. This is a great little condiment that can go alongside cheese and crackers, on burgers, sandwiches, salads, etc., plus you can make it ahead of time and it will keep well. Finely chop your onions. Step 2: Over low heat, sweat them in oil until they turn translucent Step 3: Add (sorry, I didn’t measure) maybe a TB or two of red wine vinegar, two bay leaves, a pinch of dried thyme, a few coarse grinds of black pepper, a few teaspoons of sugar, and maybe 1/3 cup of red wine. Let it cook until most of the moisture has evaporated. Taste from time to time, and adjust seasonings as needed. When done, the onions will be a rich burgundy color and mostly soft, but still retain a slight crunch. Set aside. Step 4: Make your goat cheese cream by stirring up your goat cheese in a bowl with a small fork, then add, a little at a time, enough half and half to give it the consistency of sour cream. Set aside. Here’s a picture of the cream (left) and regular goat cheese (right). Step 5: Now onto making the cakes: Grate up your russet potato coarsely into a large bowl, and rinse with water until the water is mostly clear. Step 6: Toss with a TB of lemon juice (to prevent browning), and using a tea towel or cheesecloth, wring out until most of the water is gone. Wipe out your bowl and add the potato back in. Grate in your parsnips, and add salt and pepper to taste, 2 eggs, 1/4 cup of flour, TB or so of fresh chopped parsley, and mix to combine. Step 7: Heat about 2 TB oil (with a high smoking point) in a high-sided skillet over medium heat. Place your mixture in a large measuring cup (I think I used a 1 cup here) so that it’s about 1/2” thick, patting the mixture down a bit with a fork or a spoon. Step 8: Turn out over the hot oil, flatten it with a spatula, and cook for about 1.5 minutes, until medium golden brown. Flip, and cook for another 1.5 minutes, then put on a plate lined with a paper towel to drain. Plate and serve with the goat cheese cream and red onion jam.

Vegetarian Stir FryPrep Time: 30 minutes or less | Cook Time: 30 minutes or less | Serves: 3

Ingredients:

A single green, orange, and red bell pepper 2 full zucchinis Half an onion A head of broccoli 14-16 pieces of asparagus 2 cloves of garlic 1/2lb of firm tofu

Spices: Wok oil (this is flavored oil, but any light oil is fine) Low-Sodium Soy Sauce Rice vinegar Rice wine Oregano Black pepper Ginger Sesame seeds (optional) Step 1: First step is the most time consuming, chop up all of the vegetables. Step 2: Remember, a well cut pepper should come straight out. Step 3: If you use the amount of vegetables I listed above, you should get an amount similar to this: Step 4: The leftover trash rinds etc, dispose of them. Step 5: Go ahead and add the oil to the wok and put it on a low heat, just to get the oil to a less viscous state and get your wok warmed up. Step 6: Mince your cloves of garlic, and cut your tofu into small cubes. Step 7: Make sure to store your tofu in fresh water! Tofu is only good for a few days after you open it, and if you don’t use the rest by tomorrow, you have to change out this water. Step 8: Place your tofu in the wok along with the garlic. Add 1 teaspoon of rice wine and 2 teaspoons of rice vinegar. Step 9: Add oregano, black pepper, and ginger, I add these visually to my taste, so do so accordingly for your own tastes. Increase heat to medium and sauté for a couple minutes. Step 10: Add 2 tablespoons of soy sauce, increase the heat to maximum, then let sauté for a minute. Step 11: Add the veggies! Place another teaspoon of rice wine in at this point if you would prefer a slightly less tangy stir fry. Step 12: Add in additional oregano, black pepper, and ginger along with sesame seeds, and stir. Step 13: Once your stir fry reaches this stage (3 or so minutes), you should notice a few things. One, the broccoli should start to shrink together, the onions should become less crisp, and the asparagus is at the point of no return. You can keep cooking if you really want to infuse the taste here, but you do so at the cost of mushy asparagus. The general rule of doneness still applies here, taste a few of the vegetables and see what you think. Step 14: Serve it and enjoy! This is enough to easily feed a few hungry mouths around, or one really hungry person. As always, make sure to strain the stir fry well before placing in a serving dish, otherwise the bottom will sit in liquid and turn to mush before you get to it. Note, if anyone is wondering, I am using a cutting board. After dealing with too many wooden boards I finally just purchased a tempered glass cutting board. Not only does this make it easier to clean in the event you spill something, but it’s much less prone to retaining bacteria.

Pork SinigangIngredients:

3/4 kilo pork good for stewing 40 g. tamarind soup base 3 small tomatoes 1 medium onion a bunch of water spinach (kangkong) a bunch of winged beans 1 medium size white radish a couple of taro root 5 1/2 cups of water long green chili salt to taste

Step 1: Pick the leaves of the water spinach and the soft stem part. Peel and slice the radish diagonally. Slice the winged beans in the same manner. Peel the taro root and slice into half. Slice tomatoes and onion. Step 2: Boil the pork in water. Season with a little bit of salt and cook until tender. Step 3: Add in the tamarind soup base, onions and tomatoes. Drop the taro root as it takes quite some time to cook. Let it boil for about 10 minutes. Step 4: Add in the radish. Cook for roughly about 7 minutes. Step 5: Add in the winged beans and the stem of the water spinach. Cook till done for a few minutes. The moment the color turns to bright green it should be done.Step 6: Add lastly the leaves of the water spinach. As soon as it wilts in the boiling stock, your sinigang is done!

Welcome to 2009. If you are a regular reader of this column, you already know that when America is in recession, entrepreneurs pull it out. Once again, there is every reason to expect that your courage, work ethic, and creativity will continue to provide a solid base for the economic strength of your community and our country. To ensure your prosperity in 2009 focus on: Relationships – These hold your business together. Make an inventory of the people you know and ask yourself what you have done for them lately. When and what did you last communicate? Take time to refresh existing relationships and schedule time to build new ones. Find out what others are seeking to accomplish and look for ways to work synergistically. Internet marketing – As retailers learned during Christmas, online shopping is growing. Even if your product is a service, you need to have a Web presence. Clients will appreciate discounts, personalized landing pages, and brief information about your company. Let customers post feedback on their experience with you and your online “word-of-mouth” reputation can spread quickly. Caution: Dissatisfied and extremely happy customers are the most likely to post an evaluation, so always give excellent customer service. Verification of your expertise – Scarce resources means that potential clients will look for certifications, references, or other ways of verifying your expertise before they try you. This is especially true in the fast-changing field of information technology. CISCO predicts an increase in demand for certified IT professionals of 30% by 2012. Take One Step At A TimeGet all the facts, all the input. Learn from your mistakes

All information and quotes from Leadership coach B.J. Gallagher. When problems arise at work, do you point the finger or point the solutions? If you blame management in the workplace, you’re playing the victim.

Victims speak in terms of “they” instead of “we.” They rely on others to bring about change instead of being change agents themselves. “Who are they anyway?” Change occurs by tackling one detail at a time. Here’s how to start: Turn little things into a big difference. Group tasks into threes. Start with your work routine. “Ask ‘What are three simple things I could do differently that would make me more effective?’”

Repeat the process in all aspects of your work, from dealing with vendors and suppliers to co-workers and customers. You could wind up transforming your job description. Practice diversified thinking. Come up with as many solutions to a problem as possible. “Don’t worry about evaluating ideas right away. Just get them on the table for consideration.”

The point? To reach a solution you wouldn’t have considered other wise. Tie as many options together as possible. Connecting the dots could give you a multi-pronged approach or provide two solutions. Turn problems into goals. Try this approach: State the problem. Ask yourself, “What do I want?” Answer the question. Then restate it as a goal and make a move. Say the problem is “I feel stuck and bored in my job, with no chance of advancement,” Ask “What do I want?” If the answer is “I want additional training and career growth,” restate that as a goal: “I’ll make a career move within six months.” Then chart a plan. Be known by the company you keep. “Everyone in your department knows who the effective, successfully people are and who the losers are.” Don’t be a loser by association. Another reason to avoid gossips and naysayers? They bring you down. “You can quickly get sucked into singing their ‘ain’t it awful’ chorus.” If your boss is one of the cynics, “the best you can do is focus on the task at hand, keep your own emotional center and don’t let his or her negativity infect you.” Listen to yourself when speaking to others. Do you speak like a winner or a loser? “Words like problem,’ ‘hassle,’ ‘pain in the butt,’ boring,’ pointless’ and ‘frustrating’ are part of a victim vocabulary and reinforce negativity—your own and others.’” Instead, try words like “challenge,” “stretch,” “creative solutions,” “resourcefulness” and “flexibility.” Think “up until now.” When stating a problem, preface it with that phrase. Instead of “I have a problem with Ron,” think “Up until now, I’ve had a problem with Ron, “This forces you to find solutions. Cord Cooper

Multi-Tool ($50) If times get tough, you’re going to have to get used to fixing things on your own. Water Filter Bottle ($12-$35) Finding clean water to drink can become a major problem in the event of a natural disaster — or a breakdown of the public water-processing system. A simple water filter can get rid of most of the nasty microbes — but not toxic chemicals that may be dissolved in the water. Bottles with built-in filters, like the Katadyn Micro Bottle, are the most convenient option.

Chickens Amongst Us Many people have pondered over the fact there seem to be chickens now living in Gold River. I too am also intrigued by these chickens. Did they come form Fair Oaks or were they once pets? Chickens thrive in Fair Oaks. Many chickens have been calling it their home for decades. Perhaps they took the Fair Oaks pedestrian bridge over to Gold River to get a change in scenery. People think that the chickens will benefit Gold River by slowing down traffic. They have been spotted on gold country and on Coloma. They are not usually seen alone and prefer to travel in groups. I have seen around five to eight chickens so far. With all the lush green grass in Gold River finding food should not be a problem, so maybe this is just the beginning of a much larger community of chickens living amongst us in Gold River, or are they are just enjoying a temporary vacation and will be heading back to Fair Oaks, or wherever else they may have come from sometime soon.

On November 25, 2008, over 2000 Sacramentans gathered for the Swearing-In Ceremony of Mayor Kevin Johnson. Held at Memorial Auditorium, the event was emceed by TV Journalist, Lisa Ling, and featured local entertainment including The 34th Street Dancers, Sacramento Theatre Company Young Professionals, Rio Americana Jazz Ensemble and Hip Service. The theme of the event was “Together We Can” and included a canned food drive for the Sacramento Food Bank (collected 1500 lbs of food), a sign up for volunteers with Hands on Sacramento (300 new registrations) and donations to the Sacramento Region Community Foundation’s “Greatest Needs Fund” (over $17,000 raised.) Communicating with Your AttorneyIn my experience, most attorneys these days

communicate more through email than by telephone, although both still have important uses. To convey information to your attorney or to ask questions that don’t need an immediate answer, send your attorney an email. Likewise, I use email for the same situations with clients. It allows both more flexibility in dealing with the issue and creates a written record. For more urgent situations, I use both email and the telephone, and you should also.

An attorney should return your phone call within 24 hours, or have an assistant call to set a time to talk. Attorneys fail to return phone calls for one primary reason: They haven’t done the work and don’t have an answer to your question. If your attorney (or any professional you use) fails to respond to your email or phone call within 24 hours, send an email and leave another message stating that you expect more responsiveness in the future, and reminding him or her that your time is also valuable. If he or she continues the pattern, find another adviser. Remember: You are the consumer paying for a service, and you are entitled to timely responses.

I met Ed Phelen in the late summer of 2007. I was previewing a bank owned house across the street from his in Rancho Cordova. He was interested in the same house I was previewing. I told him to come on in and take a look. It needed a lot of work, it was real messy inside. Many things were left all over the floor. There was a beat up car in the back yard. The bank was asking $200,000. He wanted a three bedroom two bath house. He made an offer on this house. It wasn’t accepted. The house sold for $200,000.

I told Ed to be patient and we’d find a house at a better price. I told him I’ve been through down real estate markets before and the prices are going down. We kept looking often for a good buy on 3 bedroom 2 bath houses in Rancho Cordova. He looked and I looked. It took about 10 months, but Ed found what he wanted and bought a house close to his for less than $130,000.

I discussed the opportunity with him to purchase another house while the prices are in a downward swing. He was hesitant at first, but then decided it was a good idea. We previewed a lot of houses that were bank owned. We made several offers.

All the offers were rejected.

Then Ed discussed the possibility of buying a home through an auction. I told him how it worked and how to bid, so as not to get caught up in a bidding war.

So we set out to look at several houses that were on the auction block.

He found two he was interested in bidding on. The auction was in early December 2008. I had registered as the broker to help in any possible purchase.

On auction day he drove us to the auction at Cal Expo. We got there early to confirm our registration.

It was cold in the building, so we had some coffee. He was bidding on two different houses. If he won the first bid he’d sign papers and

we’d go home.

The first house he was bidding on was number 97. So we had a few hours to wait, and wait, and wait.

Number 97 was now coming up for bid, and Ed was ready. He mad two bids on the house and someone else came in at a higher bid price.

Then we had to wait for the second house Ed was going to bid on number 138.

He was the high bidder on that house. He bought it for less than $100,000. It was a good buy.

We spent about 8 hours at the auction.

Ed made two good decisions.
