clock for the next day (relatively speak-ing). And although breakfast is easily oneof the best meals of the day, I sometimeshave to skip it simply because I adoresleeping in whenever I can. Kit n KitchenBy the time 10 a.m. rolls around on a

Sunday morning (or any day, for thatmatter), my body is in desperate needto fuel up with immaculate cuisine. Let’sbe honest, sometimes breakfast justwon’t cut it and brunch is the only wayto go. Enter Kit n Kitchen. This top-notch

Eurasian eatery, owned by Kit Yiu andhis wife, Mae, offers diners some of themost tantalizing and delicious brunchoptions around. Take, for example, theunique Omurice ($10.95). This heartyomelette-like creation is a must-havefor me. Imagine a heaping portion ofisland pineapple chicken fried rice,wrapped ever so nicely in a blanket ofthree extra large scrambled eggs. Theomelette is then bathed in homemadetomato sauce and includes a choice ofbacon, Spam, link sausage, ham orPortuguese sausage, and white orwheat toast on the side. It’s definitely a

bit more filling than your usual break-fast omelette.However, Kit agrees that the Grilled

Panini Sandwich, served with a greensalad or side of potatoes, also will fillup any hungry stomach during the latemorning hours. Choose from ChickenSpinach Pesto ($9.50) or your classicB.L.T. ed Tsakiris, co-owner of Teddy’s BiggerBurgers, is a self-proclaimed burgerjunkie — meaning he eats, breathesand lives burgers every day of his life.Tsakiris, along with co-owner Rich

Stula, opened the doors to Teddy’s Bigger Burgersat the base of Diamond Head in 1998. Today, 13years and five locations later, this renowned burg-er establishment continues to thrive here at home,having opened its most recent location inWestridge Center in Aiea. Teddy’s also is sproutingup in numerous spots across the globe.

Dining Out recently paid a visit to Teddy’s BiggerBurgers Aiea where Tsakiris and his team provedwhy this is the place to be when craving the all-American classics of beastly burgers, savory fries,and thick and creamy shakes.

DO: It’s obvious that you have a great passionfor burgers. How did the idea for Teddy’s BiggerBurgers come about?

TSAKIRIS: Yes, I honestly love burgers, and I ama burger freak show. I’ve always made 1-poundburgers and cooked them up at home. So, one day,

soon after graduating from college, Iasked my friend Rich if he wanted toopen up a burger place and he said yes,and that’s how it happened. So we juststarted researching the simple conceptsof the ’50s diners.

DO: It’s been 13 years since this burgerestablishment first opened at the base ofDiamond Head. What can customersexpect?

TSAKIRIS: Teddy's Bigger Burgers isn’tsophisticated by nature — it’s very sim-ple. We provide the best quality productand let it shine on its own. We do every-thing from the belly because we love burg-ers. We have our specialty menus and fea-ture board, but everything is based on ourbasic burger and then you can make it ascrazy as possible with additional toppings.We do have some suggestions in ouremployee favorites that we recommend toour customers because our employeesreally know flavor profiles.

DO: What would you recommend for afirst-timer to Teddy’s who is indecisiveabout what to order?

TSAKIRIS: As far as our burgers go, wereally want our customers to love what

they’re eating. The onething that's consistent inthe whole lineage ofTeddy’s is that we alwaysuse ground chuck beef,potato buns and the bestquality products. Ourmethods, procedures andmastery of serving burg-ers came with time. Somefavorites here at Teddy’sare our Teri Burger (Big 5oz. $5.59, Bigger 7 oz.$6.59, Biggest 9 oz. $7.59)Spud Burger (Big 5 oz. $4.99, Bigger 7 oz.$5.99, Biggest 9 oz. $6.99 with spud top-ping 59 cents) and Monster DoubleBurger (Big 5 oz. $6.99, Bigger 7 oz. $8.49,Biggest 9 oz. $9.49). The Spud Burgercame to be because I pile french fries onmy burgers all the time — we just substi-tuted the fries for a seasoned hash brownpatty. It’s also our burger of the month —we always have a burger and shake of themonth that we feature at every location.The Monster Double also is a real superi-or product that we really take pride in,featuring two hamburger patties andslices of cheese. We have many combos(burger, fries and drink) available as well,starting at $7.99.

DO: Delicious! Everything is made-to-order, correct?TSAKIRIS: Of course! Our ground chuck

patties aren’t sitting in grease and oil on aflattop griddle. Instead our cooks cookevery hamburger patty to order on a wideflame. All Teddy’s Burgers are cookedmedium and stacked with super sauce,lettuce, tomatoes, onions and picklesunless otherwise requested. There’s nosoy, binders or fillers. Everything is thereal deal here, and we work to theextreme because we’re really seriousabout burgers, and we want to satiate acustomer’s passion for burgers. The onlyway to do this, in my eyes, is to give 100percent and put our best into everything.

DO: And to go with those awesomeburgers are some mouthwatering “Fries-n-Sides.” What’s the magic behind thesescrumptious sides, and what can dinerslook forward to in terms of Teddy’s ExtraThick Shakes?TSAKIRIS: Yes, we have Teddy’s Extra

Crispy Fries (small $2.09, large $2.89);Spicy, Garlic or Cheese Fries (small $2.59,large $3.39); Tots (small $2.59, large$3.39); and Onion Rings ($3.39). Our totsare super popular because our season-ings are great, especially our Cajun sea-soning. Our Extra Thick Shakes ($4.99)pair perfectly with our burgers, whetherit be Root Beer, Dreamsicle, Pineapple,Peanut Butter, Chocolate Peanut Butter,or original favorites, such as Chocolate,Vanilla or Strawberry.

DO: Teddy’s also caters to the keiki.What do the kids love?TSAKIRIS: We have Kids Combos

($5.29), where the kids can pick fromtheir choice of a Kid’s Burger, Corn Dogor Chicken Nuggets served with fries anda drink.

DO: In addition to burgers, Teddy’s alsoserves up sandwiches and salads/Caesarsalads. What if you’re trying to be healthconscious but still craving a burger?TSAKIRIS: Well, when I’m on a heavy

nutrition plan, I'll substitute an actual

burger for a burger wrapwith the ground chuck burg-er and hold the seasoningsto keep the sodium levelsdown. The secret to keeping your mealhealthy is to order sauce on the side foreverything — burgers, sandwiches, sal-ads. Very health-conscious people willcome in here and order burger wrapswith fresh veggies and the lean groundchuck. You can also order a burger pattyon your salad and sauce on the side.Remember, everything in moderation.

DO: Are you constantly thinking of newburger creations?TSAKIRIS: Yes, we like to reinvent our-

selves within our four walls and withinour identity, and keep on flipping burgersand trying new flavors. But we still wantto keep things rather simple. Companygrowth doesn't necessarily come fromadding new items — sometimes less ismore. It's all about executing, trainingand providing the best customer service.The first seven years of business was allabout perfecting the product. Ourmantra is quality, service, cleanlinessand value.

DO: What does the future hold forTeddy’s Bigger Burgers?TSAKIRIS: We are now starting to fran-

chise on the Mainland, primarilyWashington and Oregon, and Japan. The

burger sector is really robust, and there’sa lot of success in this business if youhave the right mindset. You get exactlywhat you put into it. There's a reason whywe’re still here after 13 years. I love burg-ers and we wanted to create a place thatwas our favorite burger joint. Teddy’s real-ly came from the belly and an apprecia-tion for burgers, it didn't come from abusiness proposition — it’s what wecoined “the burger approach to business.”

The great thing about Korean cui-sine is the healthy dose of vegeta-bles typically served in and/or

alongside each entree. The not-so-greatthing for those who don’t eat meat orfish, however, is that meat is the star ofnearly every dish on the menu.

Yakiniku Million, for example, a tinyKorean eatery conveniently locatednear Ala Moana Center, actually hasmeat in its moniker — “Yakiniku” trans-lates to “grilled meat.” So why in the

world would a non-meat-eater ventureinto this place with such a meaty name?

Dining Out readers know that youcan’t judge a restaurant by its menu —or in this case, its very name. Many ofthe restaurants featured in these pagesare so grateful for your patronage thatthey are willing and even happy to tryto accommodate your personal taste.

Yakiniku Million manager Cindy Paikrecommends Bi Bim Bap ($7.50 forlunch, $9 for dinner). Besides being fun

to say, Bi Bim Bap is presented in alarge soup bowl that contains mush-rooms, soy sprouts, bean sprouts, cab-bage and carrots served with rice onthe side (some customers like to mixthe rice into the soup, while others pre-fer to eat it on the side, so it’s servedseparately). The dish includes beef andis topped with an egg, but all you haveto do is ask, and they’ll omit them. And,of course, it comes with a flavor-packedvariety of banchan (small plates of pick-led vegetables) that includes kim chee,lotus root, water kim chee, seaweed,bean sprouts and daikon kim chee.

When the husband-and-wifeteam of Patrick Chang andSansane Pornchairattanakun

opened Bangkok Chef nearly 10 yearsago as a hole-in-the-wall eatery inNuuanu, their goal was simple: Offer“simply delicious” hearty Thai food fullof fresh ingredients.

Fast-forward to present day, andBangkok Chef continues to epitomizethe couple’s dream. In addition to theoriginal Nuuanu locale, Bangkok Chefhas an eatery in Manoa, and as ofFebruary, a full-service restaurant justoff North Nimitz Highway. According toChang, the new location offers the idealmix of great food and customer service.

“We have received really good com-ments from customers so far,” saysChang as he takes a quick break fromgreeting customers and clearing tablesduring a recent busy lunch rush at theNimitz location. “While the Nuuanu andManoa locations cater to takeoutorders, some people prefer to have a sit-down meal and share food with friends.Now, we are able to cater to both.”

Chang also takes pride in BangkokChef’s menu that, while simple, offers awide variety of tastes and authenticrecipes the kitchen staff creates withpride. He says that “you can see theexperience and passion for cooking.Like my wife says, ‘you give your heartand soul to the cooking.’ That comesthrough in the food.”

The Pad Thai ($7.25) provides anexample of Chang’s rationale as the dishcontains a simple mix of rice noodlesfried with egg, chicken, tofu, beansprouts and chives tossed together in ahouse pad Thai sauce. tomers coming back for more is theCashew Nut Chicken ($7.25, add $2 forfish and $2.55 for shrimp). The dishincorporates sliced chicken breast stir-fried with cashew nuts, onions and bellpeppers. The Panang Pork Curry ($7.25,add $2 for fish and $2.55 for shrimp) isanother “tossed” dish that combinesthe unique flavors of sliced pork loin,potatoes, lime leaves, peanuts and freshbasil with a medium-spicy curry andcoconut milk sauce.

“It’s not extensive like some otherrestaurants,” says Chang of the menu.“It’s simple and not confusing. Whenyou look at the menu, you know whatyou want. That’s our goal: food that’ssimple, affordable and delicious.”

Speaking of delicious, check out theSpring Rolls ($7.50 for six pieces). Thedeep-fried delights allow diners to delveinto a combination of ground chicken,bean threads, carrot, black fungus,onions and taro wrapped in wheat flourpaper and cooked until crispy and gold-en brown. The rolls can be dipped in aspecial house sauce, and come servedwith fresh lettuce and cucumber.

And, after the meal, dig into the HouseDelight ($3.95), a refreshing dessert thatserves up mango ice cream over warm,coconut-flavored sticky rice dusted withcrushed peanuts. Bankok Chef also servesa host of cold drinks — the perfect refresh-ment on a hot summer day — includingThai Iced Tea or Coffee ($2.45), both ofwhich include milk and offer a unique takeon the beverage staples.

“A lot of people we see on the streetare talking about us,” says Chang with asmile. “That’s a great feeling, that peo-ple know us.”

hen it comes to describingFendu Boulangerie’s “unique”factor, bakery chef and owner

Niel Koep only needs one word: fresh. “We are a bakery that specializes in

bread,” Koep says. “We bake our breadsand pastries fresh every single day. Themain focus is to make products that areall natural. We add no chemicals and weuse no hydrogenated shortenings.”

In addition, Koep explains that whilethe European-style bakery offers its cus-tomers smaller pastries, its productsstill exude rich flavors.

“For example, the portion size of oneof our Danishes is one-third the size ofwhat you’d typically find in a bakery inHawaii,” Koep says. “In Europe, they eata lot of rich things, but not in large quan-tities, not in large portions.”

Fendu Boulangerie opened in March2009 in Manoa Marketplace. While thebakery specializes in breads, its menuhas expanded during the past two years.

“We added more (items) on thesavory side,” he says. “We added sand-wiches, and after we added sandwiches,we added Paninis. Pizza was always in

the plan. We also added the Island StyleChicken Pot Pie (regular $9.50, petite$5.50).”

Because Fendu Boulangerie opensearly, customers can start off theirmorning with an assortment of freshlybaked pastries. Among popular choicesare the Chocolate Croissant ($2) andthe Lychee Streusel Danish ($2).

“The chocolate croissant is a crois-sant dough that’s cut into a rectanglewith a strip of French chocolate inside,”Koep says. “Our Lychee Streusel Danishis also very popular. It’s a square offlaky Danish dough that has an almondcream, pastry cream and then the

“‘Fendu’ is a classic French loaf ofbread,” Koep explains. “There’s differ-ent shapes; fendu is a split loaf.‘Boulangerie’ means it’s a bakery thatspecializes in bread.”

Koep says that the bakery tends to bethe busiest during lunch, from 11 a.m.to 2:30 p.m. Customers can choose froma variety of Rustic GourmetSandwiches, such as the highly request-ed Curried Chicken Salad Sandwich ($7)— served on sweet onion Naan breadwith fresh farm greens and tomatoes —and the Oven Roasted SmokedTurkey/Black Forest Ham Sandwich($7), bacon, lettuce, tomatoes, pro-volone cheese and Dijon mustard atop arustic bread bun. These two sandwich-es are the most popular, according toKoep.

Rustic Gourmet Pizzas and paninisare available to customers as well. Thelatter was added to the menu recently;customers now have grilled optionssuch as the Chicken Cordon Blue Panini($8.50) — a tenderloin chicken sand-

wich with sweet onions, Gouda andSwiss cheese, fresh sage, tomatoes andBlack Forest ham — and the VegetarianSpecial Panini ($7.50), a whole wheatbread sandwich with balsamic vinai-grette dressing, Japanese eggplant, bellpeppers, sweet onions, fresh tomato,herbs, fresh mozzarella cheese andHamakua Farms mushrooms.

“We added them (paninis) about twomonths ago now,” Koep affirms.

In terms of desserts, customers canchoose from delicacies such as theLilikoi Cheesecake ($4.50 per slice) andthe Valrohna Chocolate Mousse Cake($4.50 per slice) to the exquisitely dec-orated Pear and Almond Tarte ($2.75),but two desserts in particular remainmore popular than the rest.

“Our Mini Fuji Apple Crumble Pies($5.50) and our Valrohna DarkChocolate Dome ($5.75) are our twobest sellers,” Koep says. “When itcomes to signature items, though, ourCurried Chicken Salad Sandwich andour Chocolate Croissant are probablywhat we’re best known for.”

While Fendu Boulangerie’s menu hasexpanded just a few months ago, Koepis already planning to implement fur-ther changes.

“We are planning on adding breakfastsandwiches and macaroons, which area hot item right now,” he says.

Discover Bella Mia’s‘super-duper’ dishes

Afew months ago, a womanwalked into Bella Mia’s inKaimuki and asked to

speak with owner Ted Sung. “She came up to me and she

said, ‘I would like to try yourmarinara sauce before I come toeat here,” says Sung. So he intro-duced her to his head chef, JoeyGonzales, who gave her a sampleof the sauce. “And she says, ‘Thisis the sauce I’ve been looking forfor the past 10 years,’” Sung says.“Out of all the other Italianrestaurants, we had the taste shewas looking for.”

Bella Mia, which alsohas a pizzeria on SouthBeretania Street, offersNew York-style Italiancuisine. Sung decided hewanted to start Bella Miaafter tasting other Italianeateries around theisland. “I liked the styleand I decided that I want-ed to do a family-styleItalian restaurant, butwith really super-duperfood,” he says.

Cantonese food is the best,” says manager Peng Gong.Winning over locals, who may be wary of dishes like

Roast Young Pigeon ($12.99) and Caterpillar FungusChicken soup ($6.99), has taken some time, but Gong saysHawaii residents have finally started to give the Chineserestaurant a try, delighting in dishes prepared in the tradi-tional Cantonese way thanks to cooks who hail from therenowned foodie district.“In China, Canton is very famous for food; people say, if

you want to eat, go to Canton,” Gong says. “Our (head)cook is very good — he used to work at a popular Chineserestaurant in Hawaii years ago — and our other cooks arefrom Canton, so our food is very Cantonese-style — it isnot chop suey- or mixed local-style.”The food also is prepared family-style, so it is encour-

Ingredients:• 12 fresh oysters removed from shell• 1 cup tempura batter• 1/2 cup bread crumbs• 1/2 cup chopped almonds• 1/4 cup dried parsley • pinch of salt, pepper, to taste • 1 cup Bernaise sauce • 2 strips bacon• 1/2 tablespoon chopped shallots• 2 cups spinach • 2 tablespoons Tobiko caviar, for garnish

Preparation:• In a small bowl combine bread crumbs,almonds and dried parsley. Set aside.• Dip each oyster in tempura batter, thencoat with the almond-bread crumb mix-ture. Set aside.• Preheat oil to 350 degrees and fry oys-

ters until they turn golden brown. Setaside.• In a hot pan, sauté bacon until it turnslight brown, add shallot and spinach, andcook for a minute.• Plate some sautéed spinach on oystershell and top with fried oyster andBéarnaise sauce.• Garnish with caviar.

Ingredients for Bernaise Sauce:• 3 tablespoons white wine vinegar • 3 tablespoons chicken stock or water• 3 tablespoons dry white wine • 1 tablespoon minced shallots • 1 tablespoon tarragon (stem OK)• salt and pepper • 3 egg yolks • 2 sticks unsalted butter, melted insaucepan • 1/2 tablespoon minced fresh tarragon • 2 tablespoons chopped crab meat

Preparation:• In a small saucepan, com-bine vinegar, wine, chickenstock, shallots and tar-ragon, and simmer overmoderate heat untilreduced to 2 tablespoonsof liquid. Cool and strainthrough a fine sieve.• In the top of double boiler or a heat-proof bowl, whisk egg yolks until theybecome thick and sticky. Whisk inreduced vinegar mixture and pepper.Place the pan or bowl over a saucepan ofsimmering, non-boiling water. Whisk untilmixture is warm, about 1 minute. (If mix-ture appears to become lumpy, dip panimmediately in a bowl of ice water tocool, whisk until smooth and then contin-ue recipe.) The yolk mixture has thick-ened enough when you cansee bottom of pan between strokes and

mixture forms a light cream on wires ofwhip.• While whisking the yolk mixture, gradu-ally pour in melted butter, whisking thor-oughly to incorporate before addingmore butter. As mixture begins to thickenand becomes creamy, butter can beadded more rapidly.• Add crab meat and season sauce totaste with chopped tarragon, salt andpepper. To keep sauce warm, set pan orbowl in lukewarm water or in a thermos.
