There are certain things in life thatare just meant to be, and when itcomes to the culinary world, egg-

plant is no exception.The versatility of theeggplant is phenomenal and flows ever-sosmoothly from one cuisine to the next, asit has a flavor all its own and a texture thatcan vary from meaty to creamy. You nameit, eggplant equates to a number ofremarkable edible creations.

In fact, in the Middle East it’s believedthat a woman is not ready to marry untilshe knows 1,000 ways to cook eggplant!Take it as you will, but that’s saying quitea lot about this beloved fruit, and ifthere’s any truth to that, I better get tocooking!

Yet, while that exact mission seemsrather unattainable, I thought why notaim for something a bit more within myreach. So, this week, in search of thisculinary staple with so much potential, Iventured off and indeed stumbled uponan assortment of eggplant delights at thefollowing Ono, You Know establishments.Delicious! Oh, and about those 1,000

eggplant dishes, checkback with me in about10 years!

Thai VillageAuthentic in every

sense of the word, ThaiVillage continues to draw

in a consistent crowd with its jaw-dropping culinary masterpieces, and withthree locations in Waipio, Kunia andKalihi, there’s surely enough to go around.Co-owners Bo and Mang Sisounthonehelp oversee the operations here, but it’sChef Pakon who takes hold of the reinsin the kitchen, and heats things up with

an exotic Thai flair.“Eggplant is often used in Thai cuisine,”

Mang says with a smile, “and we make acouple of eggplant dishes that are verydelicious.”

With that, enter Thai Village’s GreenCurry (with chicken, pork or beef $9.95;tofu and vegetable $8.95, shrimp, calamari,scallop or mixed seafood $11.95), anexotic blend of eggplant, bell pepper andfresh basil served with a zesty greencurry sauce and coconut milk.

“We can cater the level of spiciness tothe customer,” Mang says. And if youcan take the heat Thai Village can defi-nitely up the ante and add some fire toyour meal with its “extra hot” option.Not feeling the heat? I won’t egg youon any longer, instead, do yourself afavor and opt for Eggplant Basil (withchicken, pork or beef $9.95; tofu andvegetable $8.95, shrimp, calamari, scallopor mixed seafood $11.95). This non-spicy dish is my personal favorite as itfeatures the freshest of eggplant, vibrantred and green bell peppers, savoryminced garlic and your choice of meat,vegetables/tofu or seafood swimmingin a Thai Village special sauce that’sderived from a secret recipe. Keep inmind; rice is served a la carte.

DO: What is the concept ofBangkok Chef?

Chang: We specialize in sim-ple, home-cooked Thai cuisine.It’s very delicious and perfectfor those on the go, and we offerour food at a very reasonableprice. Our menu currently hasabout 33 items listed — it isvery easy to understand as weoffer a full description and photoof each dish.

DO: What is something din-ers would find interesting aboutBangkok Chef, even the most loyal ofpatrons?

Chang: Not too many people areaware that in 2001 Bangkok ChefNuuanu started off as a produce store,not a restaurant. We sold a lot of fresh

produce and authentic Thai ingredi-ents necessary in Thai cuisine. Mywife was also teaching a Thai cookingclass at the time, and all the studentsloved her food, so we figured we’doffer some of her cuisine to customersat our produce store. We ended up

gaining a very good response andwe started serving a few cus-tomers a day. It was a year later,in 2002, when Bangkok Chefreally blossomed into a full-fledged restaurant. We did awaywith the produce store, but ourNuuanu location still offers someThai ingredients for sale.

DO: Very neat! Now, close to10 years later, Bangkok Chef is athriving establishment with twoadditional locations in Manoa andon Nimitz Highway. Are thereany differences when it comes tothe three locations?

Chang: The food and pricesare the same, however, theNuuanu location is takeout-styleonly, where all the dishes areserved in styrofoam containers.The Manoa location offers takeoutand dine-in service, and the Nimitzlocation really focuses on dine-indining and table service — butagain, we do a lot of takeout thereas well. Bangkok Chef also doescatering, and we have separatecatering menus.

DO: What are some signaturefavorites at Bangkok Chef? What’salways flying off the menu?

Chang: Of course, we have ourclassic Thai Green Curry ($6.65)served with sliced chicken breast,eggplant, bamboo shoots, kaffir limeleaves, peas and fresh basil in agreen curry sauce and coconut milkover Jasmine rice, sticky rice orbrown rice. It also can be servedwith fish or shrimp for an additionalprice. Our best-seller has to be ourPad Thai ($6.65), which features

rice-noodles fried with egg, chicken,tofu, bean sprouts and chives dousedin a house Pad Thai sauce. Again, fishor shrimp may be added for an extracost. Then we have our Chicken Larb($7.90) that consists of minced chick-en with herbs and spices served witha special lemon sauce.

DO: All these dishes are verytempting! The restaurant alsooffers soup and salads for thoseinterested, correct?

Chang: Yes, Bangkok Chef’sMango Salad ($8.20) is very tasty.It’s on the spicier side and comeswith shredded mango, carrot, shal-lot, Chinese parsley and chili pep-pers topped with cashew nuts and ahouse special dressing. I would alsorecommend Tom Kha Gai ($7.90), acoconut soup that is moderatelyspicy with pieces of sliced chickenbreast simmered in coconut milk andgarnished with Thai ginger, kaffirlime leaves, lemon grass, chili andhead cabbage.

DO: Is the cuisine derived fromyour own personal recipes?

Chang: Yes. My wife, Sansane,is from Bangkok, Thailand, and isresponsible for all of our disheshere. She’s trained all of ourcooks and chefs, and she’s verytalented — her family even ownstheir own restaurant in Thailandcalled Watsana.

DO: Thai cuisine is generallyknown for its intense level of spici-ness. For those who can’t take the

heat, will they still find somethingthey’ll enjoy on the menu?

Chang: Oh, definitely! When itcomes to Thai food, there’s thismisconception that it’s alwaysspicy, and some people are afraidto try our food, but that’s notalways how it is. There are certainlevels of spiciness and we canalways cater it to the specific cus-tomer. And some foods are muchspicier than others.

DO: What specific cultures haveinfluenced Thai cuisine?

Chang: Well, Thai food hasbeen influenced by many differentcultures including Chinese,Vietnamese, Cambodian and Laos.Thai cuisine has expandedthroughout the years and consistsof many different spices and fresh

herbs.

DO: People can't seem to getenough of Bangkok Chef! What’s thesecret to the restaurant’s success?

Chang: My wife always says thatthe most important thing is that youput your heart into your cooking,and that’s what we do here — that’swhat makes our cuisine the best!Besides that, we always use thefreshest ingredients possible and ourportions are very, very generous.

From saimin to ramen andcountless variationsbetween, Hawaii’s diners

love a good noodle soup.Lucky for us, Kit ’n Kitchenowners Kit and May Yiurecently added a slurping sen-sation to the Night Owl menu(available 9 p.m. to midnight).

The Euro-Asian cafe’s late-night eats include tasty grilledpanini sandwiches, pizzas andeven breakfast options, but it’sKung Fu Soup Noodle that’sgetting all the buzz.

Kit knew he had to bring thebowl of noodles to Hawaii afterlearning the nuances of thedish in Hong Kong, where itoriginated. “(Local customers)have never seen this combina-tion of noodles in the Islandsbefore,” he explains.

In addition to a flavorfulbroth, the reason Kung FuSoup Noodle has been popularsince the 1950s is because youcan customize your meal. “Youcreate your own. You can pick

the soup, pick the noodles andtwo toppings for $8.95. Andadditional toppings are avail-able for $1.95,” says Kit.

Patrons may choose from aClassic Shrimp soup base or aSzechuan Spicy one. Noodlechoices include Cantonese ThinNoodle, ThickNoodle, RiceVermicelli or LoMein. Inside, asatisfying combi-nation of chickenwings, won tonand fish ballskick up the flavor.Then, pile on anytoppings you

desire, from shabu shabu beefto enoki mushrooms.

The midnight snack alreadyhas a following after debutingat the University Avenue eaterya few months ago. It won’t belong before all of Honolulu’snight owls are slurping away.

on Ala Moana Boulevard lastTuesday for National PancakeDay. The trio is part of theChildren’s Miracle NetworkHospitals, which is a national non-profit organization that helpsKapiolani Medical Center forWomen & Children.

IHOP celebrated the special dayby giving out free pancakes to cus-tomers. Customers in return weregiven the option to make a mone-tary donation that would go to helpthe children of the hospital.

Dwight Au: I like anything onthe breakfast menu. I like the orig-inal pancakes and syrup. I’m verytraditional.

Stacey Acma: The pancakes.They’re fluffy and light, andthere’s a lot of flavor. I like real,old-fashioned syrup.

There are many things to like aboutPanya Bakery and Bistro, but onestatement by congenial co-owner

Annie Yeung really stands out: “Ourmenu is intended to cater to everyone atthe table.”

Yes! That's just what Veg’nOuttries to do, inform non-meateaters about places they’ve nevertried before so they feel confi-dent there will be somethingmeat-free to order if their fami-ly, co-workers or friends invitethem along for lunch or dinner.

Yeung gets it, and the menureflects that. For starters, sherecommends VietnameseSummer Rolls with Tofu ($5.95for two). They include ricenoodles, lettuce, sprouts andcilantro and are served with ahomemade peanut butter andhoisin sauce.

Sandwiches here areserved on your choice ofbread: white, wheat,French, croissant or burgerbun. Panya bakes its ownburger buns, which arenice and fluffy. “Peoplesay the bun is the soul,”Yeung says. A great choicefor mushroom lovers, theVegetarian Supreme sand-wich ($9.95) comes with agrilled portabello mush-room, lettuce, cucumber,tomato, onions and cheesewith mustard.

“We put cheese but youcan skip it very easily,”assures Yeung, which isanother plus for this eatery.What’s great about thesandwich menu is thatthere are a number of“adds” listed to enhance

your meal: Add Cup of Soup($2.99), Add Tossed Salad($3.99), Add French Fries($2.95), Add Avocado ($1.50)and more.

Curry and rice is alwaysnice, and Panya’s JapaneseCurry with Vegetables($12.95) is quite popular.Served with rice, the veggiesinclude eggplant, corn, peas,shiitake and oyster mush-rooms. Again, “adds” aboundon the Rice Dishes list: AddSpinach ($1), for example, isone I’d opt for.

“Spinach is great to add,”agrees Yeung.

There’s much more, so goahead and put Panya onyour A-list of vegetarian-friendly restaurants.

It’s time to head to the mountains. Time to ven-ture deep into Manoa Valley, where the windblows a bit cooler and the Koolau mountain

range seems to rise above you like a giant ascend-ing from bended knee. As you weave your waythrough the peaceful town of Manoa, the restau-rant to stop for a warm and comforting lunch ordinner has to be Hanaki.

Hanaki, which used to be known for its elaboratebuffet menu, now specializes in shabu shabu-stylemeals, with plenty of a la carte options to choosefrom as well, many taken from the buffet menu asrecommended and remembered by loyal customers.

“We have a nice family atmosphere. We can seata lot of people. Most come for a combination ofshabu shabu and side orders like tempura or ourMisoyaki butterfish,” says general manager MarkMitsuyoshi. Shabu Shabu allows you to pick yoursimmering soup base, which at Hanaki includesyour choice of konbu (a light seaweed base), clearseafood, hot and spicy broth, beef, a heavier curry-style soup, a healthy herb with ginseng andChinese herbs or a traditional miso-style, whichHanaki has been serving for more than 15 years.

In the four years that Nice Day ChineseSeafood Restaurant has been open, owners LisaLum and Yung Sang Chan (also owners ofHappy Day Seafood Restaurant on WaialaeAvenue) have provided customers with excellentservice, great Hong Kong-style food and a beau-tiful atmosphere.

Red Chinese lanterns and Chinese knots hangfrom the ceiling, and the lighting indoors is wel-coming to all those who pass by.

According to Lum, Nice Day is perfect for fam-ily get-togethers, and the facility can hold up to200 people in a comfortable setting. Customer-service is of utmost importance at Nice Day, andthere are about 25 friendly employees, donningtheir Chinese-style uniforms, who serve dim sumon pushcarts. If you don’t have time to sit downand eat, Nice Day offers speedy takeout service,as well as catering.

Honey Walnut Shrimp ($13.95) is a favoriteamong customers, who enjoy the crispy outsideand juicy inside. The sweetness of the honeycomplements the large pieces of shrimp andcrispy walnuts nicely, but none overpowers theothers. Harmonious and satisfying, Honey WalnutShrimp is always fresh and is sure to be a pleaser.

It wouldn’t be a seafood restaurant without a

good clam dish, and Nice Day serves up a greatClam with Black Bean Sauce ($13.95). And when it’s genuine fare that you’reafter, The Mandalay’s elaborate menuruns the gamut, simply offering a littlebit of everything. Therefore, when in themood for eggplant, I was ecstatic withthe restaurant’s many choices.

“Eggplant is very healthy, so, of course,it’s really popular. It has a really nicetexture and it just melts in your mouth,”says server Wilfred Leung, who quicklypresented me with three of the restaurant’smost fantastic eggplant dishes. For starters,I highly recommend Stuffed Eggplantwith Shrimp Paste ($3.50). As my toppick for dim sum, this pan-fried dishfeatures fresh pieces of eggplant filledwith a savory helping of shrimp pasteand accompanied by a special sauce of

shoyu, black beans and spices, whicheffortlessly enhances the flavor of thedish.

As for main courses, any eggplantenthusiast will love Steamed Eggplantwith Pork Hash ($13.95) and GarlicEggplant with Pork ($10.95).

“We’ve been serving Garlic Eggplantwith Pork for a long time now, and it’sone of our most popular dishes,” Leungsays. No need to question that — thisdish is divine! Imagine a symphony ofmonumental flavors comprised of fresheggplant, mushrooms, peppers, shreddedpork and sprinkles of minced garlic stir-fried to perfection. What’s more is thatadded kick of spice that brings thiseggplant creation over the top.

Romano’s Macaroni GrillDon’t let the name fool you, Romano’s

Macaroni Grill offers much more thanjust your typical macaroni dishes. Yet, ifwe’re talking about Tuscan-inspired Italianfavorites, this top-notch eatery is secondto none, and the dining experience is oneto remember. (Tip: Always make use ofthose crayons on the table and createyour very own artwork as you wait foryour meal to arrive.)

Executive chef Michael Longworth hasbeen with the restaurant since it firstopened its doors in 2005 at Ala MoanaCenter’s Hookipa Terrace, and saysEggplant Parmesan ($15.50) has and con-tinues to be a best-seller on the menu.

“We use about 100 to 150 pounds ofeggplant every week,” Longworth says,“and already this year, we’ve sold 1,300Eggplant Parmesans.”

As one of my most adored items hereat Macaroni Grill, I cherish every bite.This tantalizing entree presents you withfresh eggplant pan-seared with a delicatecrust, Pomodoro sauce, basil and freshmozzarella cheese served with importedcapellini pasta.

“We bread our eggplant daily — some-times twice a day,” Longworth adds. “It’sa favorite!”

sine that they’re unlikely to find anywhereelse, along with stunning views of theocean. The view offered at Top of Waikikiis unparalleled. As Hawaii’s only revolv-ing the restaurant, it makes a 360-degreerotation every hour. And while the viewoffers a great visual tour of Waikiki, therestaurant’s menu provides a flavorfultour of cuisines from around the world.

Executive chef John Neff — who wasraised in the Islands and cultivated hisculinary talents on the Mainland —describes Top Of Waikiki’s cuisine as“globally inspired fusion.”

Popular dishes include appetizers DayBoat Scallops ($17), which features pan-seared day boat scallops, Ewa sweet cornpudding, braised pancetta, Kamuela toma-to and Maui onion relish, and AniseBraised Pork Belly ($14) with Fuji appleand parsnip puree, jalapeno kumquatchutney and balsamic sweet chili gas-trique. Another tasty appetizer is

Camembert En Croute ($15), which iscamembert cheese wrapped in puff pastry,with candied Cajun walnuts, GrannySmith apples, grapes and pomegranatebalsamic reduction.

“This dish is meant to be eaten by tak-ing a little piece of the puff pastry andcheese and pairing it with whatever youthink tastes right,” Neff explains.

Popular entrees include Filet Mignon($39), which Neff says is the top-sellingentree. Another customer favorite is BlueMoon Braised Pork Osso Buco ($33).

“For this, I take Blue Moon beer, and Ibraise the pork in the beer with vegeta-bles,” Neff says. “It gives it a nice citrusflavor.” The dish also has smoked baconlentils, apple confit, roasted baby carrots,orange gremolata and pork jus.

A shining example of the kind of com-binations of various types of foods and fla-vors that Top Of Waikiki brings to its dish-es is Tea Smoked Duck Duo ($37).

“I take the duck and I smoke it withblack tea,” Neff says, adding that the dishis one of his personal favorites. “It is kind

of like a traditional duck a l’orange, but Iadd ginger and li hing powder. That isserved with a Thai-style green papayasalad with a Thai vinaigrette … And thenon the other side, I have a duck confit

spring roll that is done Moo Shu stylewith a hoisin barbecue sauce.”

Top Of Waikiki offers Happy Hourfrom 5 to 7 p.m. and from 9 to 11 p.m.nightly. Happy Hour customers can enjoy$7 pupus and discounted cocktails.

The restaurant also offers two tastingmenus. The Prix Fixe Tasting Menu fea-tures a five-course meal for $75 thatincludes Spicy Ahi Poke Stack, Day BayScallop, Crab Louie, Kalani’s Kalbi ShortRibs and Candy Bar. The second option isa seven-course meal ($110) with CoconutShrimp, Seared Scallop and Foie Gras,Ewa Sweet Corn Chowder, Simple GreensSalad, Macadamia Nut Crusted FreshIsland Fish, Filet Mignon and MangoCrème Brulee.

“For the two tasting menus, diners cancome in and taste a little bit of a lot of dif-ferent dishes,” Neff says.

While John Neff has only been execu-tive chef at Top Of Waikiki since2009, he brings an impressive dis-

play of experience, training and travel to theposition — all of which add to the restaurant’screative fusion flavors.

Neff was raised in the Islands and got hisstart in the industry as a manager at a localrestaurant. After moving to the Mainland, heworked as a chef in Idaho, then attended culi-nary school in Seattle. After graduation, hemoved to Las Vegas, where he was instrumen-tal in the opening of Nobhill and also workedat Fiamma, both located in the MGM Grand.

After a few years, he left Vegas and trav-elled to various places throughout the coun-try trying to decide where he wanted to set-tle down next. Eventually, he found himselfback in the Islands, where his experiencequickly earned him a spot in Oahu’s fine din-ing scene. He joined Top Of Waikiki as chef decuisine in 2006 and was promoted to executive

chef in 2009.Top Of Waikiki’s menu showcases a flavorful array of dishes that seam-

lessly fuse together different types of cuisine from around the world.“My brain is always going,” Neff says. “I wake up in the morning and I

am already thinking about work … I would say that my biggest influencesare going out to eat and traveling. I learn best that way.

“When you look at the menu, you can see where I’ve been,” Neff says.“I take Italian food, I take French food, I take every different kind of cuisineyou can think of and put it together. I take what I have learned on theMainland and I take what I have learned growing up in Hawaii — and know-ing the local flavors, I put a twist on it.”

The restaurant,which opened in 2000,is popular among localsbecause of its yakinikuoption. Yakiniku, mean-ing “grilled meat,” refersto the do-it-yourself styleof cooking vegetables orbite-sized meat overgas/electric grills.

“Yakiniku style is a funway to cook,” says hostessTemi Chang. “Some peopledon’t know what’s insideof meats (they’re eating),but this way, they can seethe meats are really fresh.Our meats are good foryakiniku … we alwaystry to serve the best,highest quality meats.”

The two-personyakiniku combination($39.99) is one of themost frequently ordered

options at Choi’s Garden.For this combination —only offered Mondaythrough Wednesday —customers can try a varietyof meats, including slicedseasoned beef tongue,marinated short ribs, sea-soned prime pork bellyand seasoned brisket.

“If you don’t knowmuch about yakiniku style,you should try this (com-bination),” advises Chang.

Other popular dishes atChoi’s Garden includeSeafood Tofu Soup($13.95) and Kal Bi Tang

($13.99). “Kal Bi Tang is a kal bi

soup … it has the wholebig bone short ribs in it,”explains Chang.

For its Easter special,Choi’s Garden is offeringcustomers a discount onKal Bi Tang (discountedprice $11.99) as well asKal Bi Chim ($23.99; dis-counted price $18.99) fromnow through April 31.

“Kal Bi Chim is steamedkal bi; you can make ithot, spicy or regular,”says Chang.

While Choi’s Garden is

well known for its yakiniku,the eatery’s menu has manyother options. Chang explainsthat the restaurant is knownfor its Healthy Stone PotRice combinations as well.

“(The combinations)come with the healthyrice, stone pot and youhave choices of PacificSaury Fish ($12.99), KalBi ($17.96) or PollackFish ($18.96),” she says.“You also have one choicefrom three different kindsof soups — miso soup,kim chee soup or softtofu soup.”

For customers comingto Choi’s Garden for lunch,a lunch special is offeredfrom 10 a.m. to 3 p.m.Customers can select frompopular items such as BiBim Bap ($9.99) — avariety of vegetables in a

rice bowl — and ManDoo Kook Soo ($9.99),or homemade dumplingsin a beef soup with noo-dles. Customers over 65years old receive a special10 percent off lunch dis-count on Tuesdays andThursdays.

Although the eateryhas existed for more thana decade, Chang saysthat many locals are notas familiar with the shabushabu and Jun Kol optionson the restaurant’s menu.Shabu shabu refers tothe Japanese dish com-prising vegetables andthin slices of meat cookedat a table in a simmeringpot of broth, while JunKol is translated as a bigpot of stew.

Large dining groups canoften be found at Choi’sGarden because of theyakiniku option, and withgraduation seasonapproaching in May, Changrecommends the eateryfor upcoming parties.

“We have a private roomand there’s no charge,”she says. “There were alot of people who reservedit for graduation (parties)last year.”
