Bienvenidos, Ono readers! I justwrapped up my first week back atwork after returning from a two

week fiesta or siesta — what have you —in Spain, where I had the wonderfulopportunity to visit Sevilla, Cordoba,Madrid, Toledo, Barcelona, Montserratand Sitges — and my, what a beautifulcountry! Minus the day or two it took toget there, it was such a thrill to soak upthe Spanish culture, speak the language,witness out-of-this-world Flamenco per-formances and dramatic architecture,and, of course, feast on meal after meal ofexotic Spanish cuisine! Keep in mind, din-ner is usually served between 9 and 11p.m., so prior to that bar-hopping and theconsumption of tapas is the way to go.Tapas, prominent in Spanish cuisine,

are a wide variety of appetizers or snacksranging from cold tapas of mixed olivesand cheese, to warm tapas of chopitosaka fried baby squid. It’s believed that the

serving of tapas isdesigned to engage con-versation, as it’s allabout sharing your mealwith others around you.I must admit, tapas areperfect for immersingyourself into theSpanish culinary world,because you areencouraged to taste abit of everything — Irecall one meal in par-

ticular in which 20 plates of tapasadorned the table to make a full meal!Now, I must say, Hawaii's take on tapas

differs from that in Spain, however, theconcept is the same — small portions ofdelicious food. Wanting to experience alocal twist on tapas, I hit up a few of myfavorite restaurants known for their“Ono, You Know” tapas-like appetizersand ate like there was no tomorrow!

Sam Choy’s Breakfast, Lunch &CrabFor a local take on the ever-popular

tapas, I headed straight to Sam Choy’sBreakfast, Lunch & Crab on North NimitzHighway. After being in Spain for twoweeks, I couldn't wait to get my hands onsome familiar local grinds, while stillsavoring a bit of the vibrant Spanish cul-ture. General manager Jeffrey Gaspar wasready for my appetite and presented mewith three amazing appetizers (or tapas)that he knew I would love — with a vastmenu before me, I wouldn’t know whereto begin if I had to choose! First off was the Kalua Pork Quesadilla

($10.95). Beautifully plated, this localfavorite features a warm grilled flour tor-tilla filled to the brim with kalua pork,sauteed onions and cheese, topped offwith the perfect amount of fresh salsa,sour cream and a zesty barbecue sauce.Next to hit my palate was the ever so suc-culent Steamed Manila Clams ($13.95)drenched in a garlic, ginger, miso, pestobroth that is utterly divine. Finally, whatwould a tapas-like experience be withouta sampling of what Gaspar regards as SamChoy’s No. 1 appetizer? What would thatbe, you may ask? Well, if you’re a seafoodaficionado, you’ll be happy to know it’sthe Kahuku Luau Crab Dip ($12.95). Letme tell you, the mere mention of it isenough to make my mouth water. This to-die-for appetizer spotlights an ovenbaked creamy crab and spinach dip, high-lighted with artichoke and capers, andtopped with a hint of Parmesan cheese.What’s more are the crispy pieces ofgrilled garlic French toast — this pairingis a match made in heaven!“These dishes go great with our many

drink specials,” Gaspar says. “Our beersare, of course, the most popular, but asfor a non-alcoholic drink, Sam Choy’sCream Soda ($7) is a best-seller.”Happy Hour runs from 5 to 6:30 p.m.

This 2011 Critic’s Choice Ilima Award win-ner opened the doors to its Ward Centrerestaurant in 2008. Since then it’s added asecond location in Kailua (151 HekiliStreet) and has been serving customersthe finest in Southern Californian-Italiancuisine.

Dining Out recently caught up withHawaii owner Cesar Llarenas, who withgreat passion for what he does, sharedwith us the captivating story behind Zpizzaand its Southern California roots.According to Llarenas, all of Zpizzas allur-ing entrees begin with ingredients that arenatural or certified organic.

DO: Zpizza originated in Laguna Beach,Calif., and was founded in 1986 by SidFanarof. Today there’s about 100 Zpizzaeateries worldwide, including locations inHawaii, California, Arizona, Washington,D.C., Virginia and New York, to name a few,along with international locations in SaudiArabia, Mexico and Vietnam. How did youbecome part of the Zpizza ohana?

Llarenas: I was working at McDonald’sprior to this and always wanted to open myown restaurant — something new and rele-vant. I think it was my destiny to be a partof Zpizza because out of the blue in 2007someone called me and asked me if I’d liketo open a Zpizza franchise. So, I logged onto the website and soon found that Zpizzaoffers a very unique product that’s healthconscious, and that’s something that Iwanted to be a part of — something goodthat’s better for the whole community. Iflew to California and visited some of therestaurants, and when I tasted the productI was completely sold. I fell in love with it.

DO: What was your ultimate goal whenopening this pizza establishment?

Llarenas: Well, when you first open anew restaurant you need to really work atit and make sure that people know whatyour restaurant stands for, which for us isproviding the highest quality of healthyingredients at a reasonable price. Our tar-get audience has always been the pizza

lover who chooses to be health conscious.

DO: With heart disease and obesity onthe rise, what steps does Zpizza take topromote a healthy diet and lifestyle?

Llarenas: If you look at our product,we’re really serious about every ingredientthat goes into it. For example, we offer thegluten-free crust, which gives people withcertain dietary restrictions the opportuni-ty to really enjoy pizza that tastes good.And we always do our best to use the fresh-est local ingredients, including the Waipolilettuce that comes from Maui in our salads.We really work hard to educate our cus-tomers so that they can eat healthy.

DO: Is there anything new that’s enticingthe palates of Zpizza fans?

Llarenas: Yes! We recently launched anall-natural pure pepperoni pizza earlier thismonth, and the pepperoni contains nopreservatives and is MSG-free and fat-free— it's purely delicious pepperoni that’smade exclusively for Zpizza. This monthwe’re also giving back to St. Jude Children’sResearch Hospital and will be donating $10to the hospital for every case of pepperonipurchased by Zpizza locations. And inhonor of National Pizza Month and its 25thanniversary, the restaurant is asking cus-tomers to help design its next pizza cre-ation through the “Pure Pepperoni DesignYour Dream Pizza” recipe contest through-out October. DO: Being that Zpizza teams up withmany organizations such as St. JudeChildren’s Research Hospital, how impor-tant is it to give back to the community?

Llarenas: I think it’s really important forbusiness survival because it’s the commu-nity that keep us in business, and becauseof that it’s necessary that we give back —helping the community and differentorganizations to achieve their goals. Thisyear our nationwide goal is to raise $50,000for St. Jude.

Llarenas: For starters, our mostfamous salad is the Pear &Gorgonzola salad ($8.50 small,$10.95 large) with sweet d’Anjoupear and a mild Gorgonzola withlocal Waipoli mixed greens and bal-samic vinaigrette. Then we have ourMoroccan Rustica Pizza ($12.95)with a crispier, crunchier crust,topped with basil pesto, mozzarella,roasted eggplant, feta cheese,caramelized onions and pine nuts.And when it comes to our Zpizza cre-ations, the top picks include theProvence Pizza ($12.95 small, $23.95large, $26.95 extra-large), one ofZpizza’s most popular vegetarianoptions with traditional Provenceflavors, including capers, Romatomatoes, low-fat mozzarella cheeseand fresh basil; Italian Pizza ($12.95small, $23.95 large, $26.95 extra-large) with basil pesto, mozzarella,ham artichoke hearts, fresh roundsof tomatoes and black olives; and theCasablanca Pizza ($12.95 small,$23.95 large, $26.95 extra-large) fea-turing roasted garlic sauce, moz-zarella, ricotta, mushrooms, arti-choke hearts and Parmesan. Finally,our Chicken Penne Pesto Pasta($8.95) is highly requested as thepenne pasta is mixed with buttonmushrooms, grilled chicken, basilpesto, fresh basil and pine nuts.

DO: Many diners are familiar withZpizza’s vibrant menu options.However, what would the public besurprised to know about this partic-ular establishment?

Llarenas: Well, I think they’d besurprised to know that our successat Zpizza in Hawaii is a result of ourdedicated employees who work hardday in and day out. We currentlyhave about 35 employees total. We

wouldn't be where we are todaywithout them.

DO: Just out of curiosity, howmany pounds of pizza dough doesZpizza go through daily?

Llarenas: On average, betweenthe two stores I would say we gothrough 150-200 pounds of pizzadough a day — made fresh everymorning in-house.

DO: Is there any differencebetween the Ward and Kailualocations?

Llarenas: They’re pretty similar,but Kailua’s location is a lot bigger insize and we do a lot more deliveriesin Kailua, whereas in town, we have alot more dine-in customers.

DO: Does Zpizza offer cateringservices as well?

Llarenas: Yes, if people are inter-ested in taking advantage of ourcatering services they can inquirewithin at any one of our locationsand we’ll be more than happy tohelp you.

DO: Cesar, what is the mostrewarding aspect of being the ownerof Zpizza?

Llarenas: Having gone through theprocess of opening up my ownrestaurant has been extremelyrewarding, as well as being able tocater to the people of Hawaii — Ilove working and interacting withpeople — and this job really is mypassion. I’m definitely in the rightbusiness. I can honestly say that I’vesampled everything on the menuand I am always excited to showcasenew menu items.

Aubree Kane, a student at Myron B.Thompson Academy, has a singlerequest every time her family ven-

tures from their Ocean Pointe home tostop by Uncle’s Fish Market and Grill atPier 38. After attending her performingarts class at the school last Wednesday,Aubree talked her mother into stoppingto sample her favorite seafood restau-rant. It was Mom’s first visit, but it won’tbe her last time.“She had the poke tower and I got the

seafood pasta (made with fresh fish,shrimp, scallops, calamari rings, musselsand clams) and everything was deli-cious,” said Lisa Kane. “We traded plateshalfway through. We're definitely comingback.”Uncle’s has a full menu that includes

sine. This is in part due to the co-owners’variety of influences.“My wife Edna is the main cook,” Stefan Kruger says. “Edna

worked as a cook in Hong Kong for six years, so she has a lot ofinfluences from there. And then we lived in Germany together, sowe have some influences from there as well.” Kruger is originallyfrom Germany and has a background in business in marketing.When the pair relocated to Hawaii a few years ago, they

combined their skills to start a catering business. “The down-town food service had this niche of office catering that wasn’treally being covered,” Kruger says. And while 1132’s endeav-ors have since expanded, catering still remains a huge part ofthe business.1132 provides catering services for a variety of events,

Dining Out recently paid a visit to theUniversity location on South BeretaniaStreet and bumped into customers BrisenOshiro-Chin, Tony Huang and KelsySaruwatari during lunchtime. We asked

these UH students what they would recom-mend from the menu.

Brisen Oshiro-Chin: "I ordered the 7-ounce Original Burger with grilled onions andregular fries. The burger was very flavorfuland especially the onions and pickles werecooked really well."

Tony Huang: "I got the Kilauea Fire Burger,which is a burger stacked with Cheddar, onionrings, bacon and a spicy barbecue sauce. Itwas so juicy and yummy, and I just love theirspicy sauce!"

Ingredients • 2 6-ounce pieces marinated salmonfillet• 1/2 cup soy sauce• 2 teaspoons mirin• 2 teaspoons sake• 2 tablespoons sugar• salt and pepper, to taste• Combine all ingredients and marinate salmon fillet for at least 1 hour.

Wakame Salad• 1/4 cup wakame (soaked in warm water to rehydrate for 5 minutes and drained)

• 1/2 cup rice wine vinegar• 1/2 cup sugar• salt and pepper, to taste

• Combine all ingredients and let sit for 1-2 hours.

Preparation:• In a sauté pan on medium-high heat,add one tablespoon of oil and salmonfillet.• Cook each side of salmon for about3 minutes.• Place salmon in the center of theplate and top with Wakame Salad.

Furikake Crusted Salmonwith Wasabi AioliIngredients:• 2 pieces salmon fillet, about 6 ounces

• 1 cup panko (Japanese breadcrumbs)

• 3 tablespoons furikake • 1 egg, beaten • flour, for dredging• salt and pepper• oil, for frying

Preparation:• Combine panko and furikake, thenset aside. Season the fish with saltand pepper.• Dust with flour, dip in the egg, thencoat with panko mixture until salmon

is well-coated. • Deep-fry in pre-heated oil at 300-325degrees until fish turns to goldenbrown. Remove from oil and put incenter of plate. Top with Wasabi Aioli.

Wasabli Aioli• 1/2 cup mayonnaise• 2 teaspoons wasabi powder• 1 teaspoon water• 2 teaspoons mirin• salt and pepper to taste

Preparation:• Mix Wasabi powder and water untila paste is formed. Add mirin,Mayonnaise, salt and pepper. Whiskuntil all ingredients are well com-bined.

treatment” of sorts with rea-sonable dim sum prices, fla-vorful entrees and largeparty accommodations.

“You get the real Chinese experienceof Hong Kong-style dim sum at afford-able prices,” says Sherman Lam, manag-er of the Chinatown eatery.

Although Howard Lam — Sherman’sfather — first opened Golden Palace in2000, the restaurant hasn’t changedmuch, with the exception of specialparty menus and the expansion of thesecond floor banquet hall.

“We had it (the second floor banquethall) since we first opened, butwe have (since) expanded it,”says Lam, who helps his par-ents run the eatery, along withhis older brother, Gary. “Rightnow, it accommodates about 400people. I think there’s only oneor two other Chinese restau-rants in Hawaii that has thiscapacity. We have privatestages, no corkage fee and if wehave smaller parties, we partitionoff a smaller section (for the party).A lot of times, guests who come to theparties don’t even know that we havethat (banquet hall).”

While many first birthday parties andlarge dinners are held at the restaurant’sbanquet hall, Golden Palace remainsbusy on a daily basis, especially forbreakfast and lunch. What some cus-tomers may not be aware of is theeatery’s dim sum takeout service, which

is located near the restaurant’s frontentrance. Customers can choose con-tainers of various sizes and fill themwith different dim sum options beforepaying for their meals.

“Some customers don’t really knowwhat it is (the takeout area), so they justwalk right past it,” Lam says. “It’s (dimsum takeout) from 7 a.m. to 3 p.m. Allour dim sum is set at one price — $1.98per basket — and most baskets haveabout three pieces each. The averageperson spends about $6 (on dim sum).”

When it comes to customer dim sumfavorites, Lam notes the Steamed ChiveDumpling with Shrimp, SteamedSpinach Dumpling with Scallops,Custard Tart, Pork Shu Mai and theBaked Char Siu Manapua.

“For the Baked Char Siu Manapua, weactually have twotypes,” Lam explains.“One is baked with achar siu filling

and the other one has a custard filling.Both are equally popular; a lot of peoplewho are visiting here come and pick upa lot of these.”

Other popular dim sum choicesinclude the Steamed Look Funn ($3.90each), which are freshly steamed noo-dles that come with beef, shrimp, scal-lops or char siu. When it comes to thesignature dim sum dishes, though, Lamsays the Baked Char Siu Manapua andthe Pork Shu Mai are the most requested.

For lunch, it is popularfor customers to order a main entrée,then choose several dim sum dishes.Signature items include the HouseSpecial Chow Mein ($6.95) — fried noo-dles with a mixture of seafood, chicken,pork and vegetables — and the MinuteChicken Cake Noodle ($6.95). BonelessChicken with Malaysian Sauce ($7.95),Honey Walnut Shrimp ($9.95), Pot RoastPork “Kau Yuk” ($6.95) and Law Hon Jai

($5.95) are other featured favorites.“The Law Hon Jai is a vegetarian

dish with ingredients like snow peas,carrots, mushrooms and rice noo-dles,” says Lam. “We started havingthis dish during this past ChineseNew Year and it was really popular. Alot of people liked it so we just con-tinued having it. The BonelessChicken features a sautéed saucewith bell peppers and onions, andthe Honey Walnut Shrimp hashoney-glazed walnuts.”

A noteworthy dish customerswon’t find on the menu is theGolden Pompano ($20), a recentlycreated entrée that is oftenordered family-style.

“The Golden Pompano is awhole fish cleaned and slowcooked in vegetable oil,”says Lam.
