King is open daily for lunch, and stays open until 2a.m. six nights per week as a dinner and late-nightdestination. What better way to cap a perfectevening than to enjoy a few bites (and drinks, ifyou’re in the mood) with the king? Shu-Lee Kondo, owner and manager of Sushi

King, took some time away from the busy eatery tofill in Dining Out on some of the keys to the restau-rant’s success.

DO: What is it about Sushi King that keeps peoplecoming back for more?

Kondo: We’ve been open for 20 years, and wehave lots of variety. For the quality of food we offer,at such good prices, the customers are so loyal. Yousee so many familiar faces. Not only the adults, butyou see kids faces when they’re small, and theycome back when they’re grown up.

DO: What are some of your most popular dishes?Kondo: The Chirashi Deluxe ($24.95). When you

ask customers about this one, they know exactlywhat you’re talking about. The platter features allkinds of different fresh, raw fish and it looks sobeautiful when it’s brought out. Also, the Hamachi

DO: How about some of your otherseafood offerings?

Kondo: The Ahi Salad ($14.95)incorporates fresh pieces of tuna, andoffers a healthy alternative for cus-tomers looking for that. Also, theFresh Oysters ($7.25) are a favoritepupu item.

DO: How would you describe thestyle of cooking at Sushi King?

Kondo: Our style is very authentic.It’s not trendy where you mix in con-temporary American styles. It’s very,very authentic and we incorporatelocal flavors. The customers appreci-ate that, and they keep coming backfor more!

DO: What have customers saidabout your hours of operation, espe-cially the ability to come in for ahearty meal in the wee hours of themorning?

Kondo: We’re open seven days aweek; we never close! We get prettybusy, and the customers know there’sparking available and we have a mid-night special that is extremely popu-lar. So, people love to come in late,especially on weekends.

DO: Are there plans to add items tothe menu? Or do you take an “if it ain’tbroke, don’t fix it” mentality?

Kondo: We’ve been offering thesame menu for many, many years, andwere trying to come up with some newitems to surprise our local guests.We’re working on it right now, andsome to the items may include somehealthy alternatives. We just keep ontrying; we hope to keep the regularscoming back and to incorporate somenew guests as well.

An abundance of figure-friendly dishes thateveryone can afford are on hand at 123 Wok.The restaurant has long been known for its

healthy meals, such as the ever-popular Hot Pots($8.99), made with natural soup bases. Since open-ing its original location in Singapore back in 1994,the restaurant has taken the same great flavors toMaui in 2004, and to its current location on McCullyStreet earlier this year. Owner Wendy Ying Li takes great pride in the

freshness and quality of the food she serves. “Wenever use MSG in any dishes, ever,” she says. “Wealways use a special blend of spices mixed withfruits and vegetables to bring out the original flavorsof each dish.” What’s more is that the chefs at 123 Wok go the

extra mile by always using fresh meat and produce,as well as clean batches of leaner canola oil toensure excellent flavor every time. When it comes to appetizers, diners can’t stop eat-

To commemorate Okto-berfest, a 16- to 18-daybeer festival held annually

in Munich, Germany, restau-rants in cities all over the worldare hosting special celebrations.And Waikiki’s Wailana CoffeeHouse is no exception, as it’splanning a special menu thatcelebrates German cuisine.The restaurant will serve

items from its Oktoberfestmenu this Friday and Saturday,Oct. 7 and 8, from 11 a.m. tomidnight. “It’s a fun menu for us and we

started it about 10 years ago,”says Kenton Tom, the generalmanager at Wailana.Four main entrees are fea-

tured on the menu. The mostpopular item is Smoked HamShank ($15.25), which isbraised slowly with special sea-sonings so it’s tasty and tender.The shank is served with arobust Dijon mustard sauce.The special menu also featuresBratwurst ($12.50) — authentic

German sausage, grilled andgenerously plated — andSmoked Pork Chops ($13.95), alarge portion of grilled centercut loin chops. “For all of the above items

(Smoked Ham Shank,Bratwurst and Smoked PorkChops), they are served withsauerkraut, German potatosalad, Bavarian red cabbageand chocolate mint cake,” Tomsays. The Bavarian Breakfast

Customers always have aplethora of menu items tochoose from at Kit nKitchen, the Euro-Asian

eatery located in VarsityCenter. However, clients by thenumbers have been orderingthe restaurant’s four-coursemenu, of which there are threeoptions.

“I would say the four-course (menu)is our signature thing,” says May Yiu,who opened the restaurant 11 years agowith her husband, Kit, and is one of theeatery’s chefs. “It’s a very good price($20.95) for all the food you get.”

All three four-course menus at Kit nKitchen are slightly different. The “regu-lar” four-course menu includes a firstcourse with the choice of Garden Salad,Milano Tomato Soup, Creamy CornSoup or Creamy Mushroom Soup.Customers then receive a combinationof Escargot Wellington (escargotencrusted in a flaky pastry and bakeduntil golden), Grilled Beef withChimichurri (grilled beef with therestaurant’s popular Chimichurrisauce) and Garlic Basil Shrimp (shrimpbaked with pesto basil garlic butter).

“You have two pieces of escargot inpuff pastry, a few pieces of the beef andtwo more pieces of the shrimp,”explains Yiu. “The Beef withChimichurri has been very popular forthe past five or six years.

“In this second course, you get a littlebit of everything.”

For the thirdcourse, customerschoose from ninedifferent entrees,such as the RoastedLamb withRosemary or BasilSalmon. This regu-lar four-coursemenu has beenoffered on the menufor the past six orseven years.

The Napa FourCourse menu was aresult of one ofMay’s trips to Napa,during which shewas inspired by thetruffles she tasted.

“The truffle isvery popular inFrench-style cook-ing,” she says. “When I was in NapaValley and I had some truffles, I said,‘I’m going to go back and let peopletry truffles.’”

Under the Napa Four Course menu,customers start off with the NapaTomato Soup. The second course fea-tures a Truffle Fountain — BlackTruffle Crème, Prosciutto Melon andGarlic Basil Shrimp. For the thirdcourse, customers can opt for entreesincluding Beef Osso Bucco Milanese,Rosa Lamb Risotto and Rib Eye Steak.

“The way of cooking (for the BeefOsso Bucco) is really popular in Italy,”Yiu shares. “They use veal, but insteadof veal, we use beef shank. The Euro-

The newest four-course menufeatures a new dish for the sec-ond course — the BeefCarpaccio. This four-courseoption is soon to be added tothe eatery’s menu, according toYiu.

“The Beef Carpaccio is thinslice of raw beef — it’s high qual-ity, like filet mignon —and wesear the outside, and then it’sfilled with spinach and onionand it comes with a balsamicvinegar,” Yiu says. “It’s a popularplate in Italy.”

The last portion in each of thefour-course menus is dessert.Customers may select one of

several dessert options — chocolatecake, ice cream, crème brulee orcheesecake.

If guests prefer to order individualentrees, Kit n Kitchen offers a variety ofoptions, such as different types of risot-tos and the popular “Create-Your-Own-Spaghetti” (ranging from $9.95 to$12.95).

“We have a big selection of thespaghetti because (customers) can mixand match by themselves,” Yiu says.

Other desserts include the alwayspopular Banana Crepes ($6.95) —

French-style light pancakes filledwith fresh bananasand light whippedcream and coveredwith walnuts, choco-late syrup and choco-late chips — and theCrêpe Suzette ($6.95),French-style flambécrepes with a saucecomposed ofcaramelized sugar,orange zest and GrandMarnier brandy.

“We just added theCrêpe Suzette a fewmonths ago,” Yiu says.“We make our own sauce;this one is especially popularbecause of the flambéaction.”

Kit n Kitchen’s ever-chang-ing menu continues toattract numerous cus-tomers, so Yiu recommendsthat larger parties makereservations.

“We’re the most crowdedfor dinner on Friday,Saturday and Sundaynights,” she says. “It’s goodto make reservations ifyou have a party of morethan six people.”

Reasons to fall in ‘Love’

Back when I Love Country Cafeopened in the late 1980s, it was asmall operation that served up a

few local favorites. But now, the restaurant’smenu includes an impressive array of options from an equallyimpressive array of influences. The eatery still offers localfavorites, but now also includes salads, burgers, sandwiches,pasta and baked goods. And a number of I Love Country Cafe’s menu items are healthy,

homemade dishes. Owners Richard and Millie Chan derivedmany of their menu additions over the years from a desire to pro-vide customers with healthy food and from a close, collaborativerelationship with their regulars.“When we first started the restaurant, my daughter was really

young,” Richard explains. “And just like all responsible parents,we were trying to figure out how we can provide her with healthyfood and a high-fiber diet.”So the pair started by offering brown rice and green salad

instead of macaroni salad with the plate lunches. This might bestandard fare nowadays, but 20 years ago, I Love Country Cafewas ahead of the curve. And soon, with the help of the cus-tomers, Richard and Millie began expanding those options.“A lot of times, my customers would come in and they would

say, ‘Richard, can you do this for us?’ And I would say, ‘why not?’Actually, they helped me to develop a lot of dishes,” Richard says.“The Hurricane Special ($10.75) is based off of one of our cus-tomers who is a trainer.” The Hurricane Special is fresh white meat roast turkey with

poached vegetables and Okinawa sweet potato with brown rice.Another customer-inspired dish is the Bodybuilder Special($10.75), water-poached chicken breast, poached vegetables,served with brown rice, and has peanut sauce and soy-ginger onthe side.I Love Country Cafe also has a variety of salads such as the

Sesame Chicken or Tofu Salad ($8.75) and the Cajun Shrimp andMango Salad ($9.95). Richard says they also are always willingto adjust any of the dishes to accommodate customers’ dietaryneeds.It’s this kind of attentiveness and col-

laboration with their customers that hasyielded a dedicated set of restaurant reg-ulars.“Over the years, we have built a lot of

nice friendships with a lot of people,”Millie says. “We become part of theirfamily, and they become a part of ourfamily, too, all because of the food thatwe offer.“The whole philosophy is that we love

our guests … and we always serve themfoods that we love,” Millie says. “Webecome the kitchen away from home.”I Love Country Cafe is constantly cre-

ating new dishes. “We all like to eat,”Millie says of her family and the rest ofthe I Love Country Cafe staff. “We havea passion for cooking, and we love ourhomestyle meals. We always try out newdishes together as a staff. So everythingon the menu is what we love.”

Since Fendu Boulangerieopened in 2009, customershave been amazed at the

many items it has to offer, fromexquisite European-style pas-tries and rustic oven pizza, tothe restaurant’s more recentmelt-in-your-mouth panini menu.Sometimes, however, it’s impor-tant to focus on the simplerthings in life, like some good ol’bread and butter. The eatery’s name says it all,

with “fendu” referring to a clas-sic French shape — the split-loaf— and “boulangerie” meaning abakery that specializes in bread.The whiff of freshly baked goodsgreets customers who then facethe difficult choice of selectingfrom a variety of specialty loavesoffered every day or the DailyBread Special option, all bakedfresh every morning. Actually, it’s safe to go with

both, and you can start out witha loaf of the hearty MultigrainBread with Flaxseed ($4.50 regu-lar, $2.75 petit). Offered daily,

this all-in-one item is a whole-wheat and rye bread packedwith sesame seeds, oatmeal,sunflower seeds and flaxseeds.Great as the base for one of thebakery’s sandwiches, this breadis “definitely one of our mostpopular,” says chef and ownerNiel Koep, who enjoys it most astoast for breakfast. Next on the sampling list is the

Buckwheat Fig Daily BreadSpecial ($5 per loaf), offeredevery Sunday. Koep came upwith the recipe himself, afterexperimenting with buckwheatpear bread he learned to make atThe National Baking Center inMinneapolis during the mid-’90s. “I really, really like figs so I

took one of our country breadformulas and played aroundwith the amount of buckwheat.We tried some different types ofdried figs and settled on theBlack Mission Fig. It seems tohave the best flavor and match-es well with the buckwheat,”Koep explains. The rich and del-icately sweetened loaf needs no

accompaniment, but would begreat if paired with wine andcheese for a gourmet picnic. It’s more than great ingredi-

ents that make the loaves atFendu Boulangerie so irre-sistible. “The bread we makehere is natural, with no addedchemicals and no conditioners,”says Koep. Not to mention thesteam tube oven imported fromFrance with a stone to make hisbreads truly hearth-baked. Thismodern version of a traditionalbaker’s oven is the perfect venuefor the simple, yet high-qualitybreads baked to warmth andflawlessness by Koep and hisstaff.

Ingredients:• 1 filet of salmon, about 3 pounds. Skinand remove pin bones• 3 tablespoons chopped fresh dill• 6 tablespoons sugar• 3 tablespoons salt• 2 tablespoons grated lemon zest

Ingredients for crab mousse:• 1/2 pound crab meat• 2/3 cup cream cheese• 1/2 cup mayonnaise• 1 tablespoon chopped celery• 1 tablespoon chopped onion• 1 tablespoon chopped chive, tube• 1/2 tablespoon lemon juice • salt and pepper, to taste• Tobiko caviar and fresh dill, for garnish

Preparation:• Combine 2.5 tablespoons choppeddill, sugar, salt and lemon zest in mix-ing bowl and set aside.

• In a flat pan, coat salmon evenly onboth sides with seasoning to cure fish.Let sit overnight or for at least fourhours. • Remove coated seasoning thoroughlyfrom salmon, then slice salmon aboutan inch wide and 4-5 inches long. Setaside.• In a mixing bowl, combine all crabmousse ingredients together and mixevenly. Make sure there are no leftoverlumps from cream cheese.• Lay down a piece of salmon, thenadd about one-half tablespoon of crabmousse and roll it over like a cigar.Garnish with black tobiko caviar andfresh dill. Repeat until you run out offish pieces.

Tip: you may serve this roulade onslices of cucumber or on crackers. Itmakes a perfect party appetizer.
