The aroma of flautas andsavory carne asada permeatethe air while the sounds and

beats of festive music keep pace withcustomers filing in and out. At Serg’sMexican Kitchen, there are alwaysmaravilloso scents, sights andsounds — thanks to owner and chefSergio Arellano, who has createdquite a stir among locals since firstbringing a taste of Mexico to theIslands in 2009.

Indeed, the comida is always flavorful andthe service ever-so-friendly at Serg’s.

Dining Out caught up with Arellano on arecent afternoon and discovered the vibrantculture of Mexico City is alive and well at therestaurant’s two locations in Manoa Valley andWaimanalo.

DO: What is the story behind Serg’s MexicanKitchen?

Arellano: We offer very authentic Mexicanfood, very fresh. Authenticity is absolutelykey here. I was born in Los Angeles and grewup in Mexico City with my family. I was alwaysin the kitchen with my parents and grandpar-ents, who were always cooking up Mexicanfood. That’s all we cooked.

DO: As the executive chef here at Serg’sMexican Kitchen, you offer quite a variety ofexquisite dishes to customers. Share with ussome of your specialties.

Arellano: We have our famous Flautas($9.25), which features a 12-inch flour tortilla,rolled and lightly fried. It’s then stuffed withyour choice of shredded beef, chicken, porkcarnitas, al pastor, or a vegetarian option.Finally, it’s topped with sour cream, avocadosalsa and queso fresco (Mexican cheese). TheEnchiladas ($8.95) also are a popular choice,with three rolled corn tortillas stuffed withyour choice of meat, shrimp (additional $1) ormade vegetarian style. Then we top it off withyour choice of green or red sauce. Most of ourdishes are served with rice and beans.

DO: Most menu options, such as the PorkCarnitas ($10.25), are derived from personalfamily recipes. Tell us more about this dish.

Arellano: This family recipe is a tenderpork shoulder, slow roasted with specialingredients. It’s also served with rice, beansand pico de gallo. Everything’s delicious hereand super fresh.

ing options, and you said Serg’sMexican Kitchen is known for itsauthentic Mexican dishes. Whatmakes your cuisine authentic?

Arellano: Authentic ingredients!I don’t use anything from a can —all my salsas are made fresh and,of course, credit is due toGrandma’s recipes. I’ve been inthe business for about 15 years, soI’ve also created some of theserecipes myself. In addition to ourspecialties, we also have lots ofappetizers and salads like Serg’sNachos ($7.45) and Ceviche Salad($10.25); tacos and burritos, suchas Mexico City Style Tacos ($2.75each) and Fish Tacos ($3.25 each),to name a few. Taco Tuesdays areset from 4 p.m. to closing everyTuesday — Fish Tacos are only $2and all other tacos are $1.50.

DO: What makes Mexican food

so desirable among kamaaina?Arellano: I believe it’s the

spices and most definitely the fla-vor. There’s a whole variety of fla-vors found in Mexican cooking,including herbs, oregano, cilantroand more. To me, Mexican foodhas a very special flavor, veryfresh with that extra zest.

DO: Your Manoa restaurantseems to take customers toMexico City without them havingto leave home. Would you agree?

Arellano: Yes. The outdoor seat-ing here is reminiscent of thebackyard of my house. People canbring their drink of choice, as it’sBYOB. In fact, you could say thatthis is Mexico right here (laughs).The Waimanalo location hasindoor seating, but you’ll find thesame freshness and quality offood.

Saying ‘oui’ to JJ’salluring appetizers

JJPraseuth Luangkhot makes it a pri-ority to serve all his favorite mealsat his Waialae Avenue eatery, JJ

Bistro & French Pastry. He insists that hisconfidence in and resulting pride from thepopular menu derived from Laotian andFrench tastes and presentation tech-niques, come from the eatery’s 13-plusyears of serving quality confectionsgleaned from fresh ingredients.“We began adding items one at a time,

little by little,” Luangkhot says. “It’s a pret-ty good sign that you can see your marketis expanding and accepts you. From pizzato pasta to a la carte (items), we just keptadding on and it went crazy!”The talented owner and chef has

expanded his restaurant to include moresquare footage while also supplying hotelsand other restaurants with his populardesserts and pastries. One can clearly seethe passion in JJ’s eyes as he talks aboutsome of his most popular dishes, includ-ing the Baked Lobster Avocado ($7.95).The dish, which JJ insists is the most pop-ular off the appetizer menu (he calls it the“No. 1 hit”), features rich lobster meatwith the chef’s special sauce covered withmozzarella cheese atop pieces of JJ’sfreshly baked French bread.

“It’s the dish that keeps us expandingevery year,” says the owner with a smile. The restauranteur also suggests the

Laotian Rock ‘N Roll ($7.95), traditionalsummer rolls with fresh lemongrass chick-en and a light curry served with a sweet dip-ping sauce. The Escargot ($7.95) offers aunique take on the classic French dish asthe snails are surrounded by baby corn,zucchini, red bell peppers and covered in arich and creamy garlic sauce and, of course,a hearty piece of French bread, which is per-fect for soaking up any leftover sauce.The appetizer menu alone serves as a

prime example why so many customerssay “oui oui” to JJ.

Rarely does the con-venience and ease ofpicking up a plate

lunch go hand in hand withfresh, quality ingredientsand innovative dishes.

But at Kahai Street Kitchen, preparinggourmet quality food and serving it with thespeed and portability of a plate lunch isright up the restaurant’s alley. Owner NaoIwata can often be found in the kitchen help-ing prepare meals at the restaurant — whichis nestled at the corner of Kahai and Kalihistreets — while also keeping track of thedaily operation.“It’s not your ordinary plate lunch place,”

important to Iwata and his staff, the owner’sgoal is to continue expanding his cateringbusiness. “We would like to do lots morecatering, so people can call and ask abouteverything from weddings to corporateevents,” Iwata says. “We’re capable of serv-ing up to 1,000 people, and the biggest eventwe’ve done is 1,200 people.”Iwata counts on the help of executive chef

and soon-to-be part owner David Yamamotofor help with everything — from adding toand altering the menu to coordinating and tai-loring catering opportunities. Iwata finds thathis clientele represents a wide range ofOahu’s diverse population, and they all haveone thing in common: They enjoy whatYamamoto calls Kahai Street Kitchen’s “par-

adise comfort food.”“I find that I have a lot of business owners,

executives, lawyers, dentists and doctors,and downtown office (workers) come downto pick up lunch,” Iwata says. The Kalihibusiness, which launched in 2006 as a cater-ing-only kitchen and has since expandedsteadily, is located minutes away from aswath of industrial businesses including theHonolulu Harbor piers, and serves as a con-venient spot to get great food at a reason-able price — no matter what you do for a liv-ing. “Basically what I try to do is offer items to

fit their budgets, and cater to the customer,”Iwata says. “David is the brains behind allthe food. He’s the creative side.”For those looking for typical plate lunch

staples such as Loco Moco ($7.75), GarlicChicken ($7.95) and Hamburger Steak($8.75), Kahai Street Kitchen has you cov-ered. Its regular menu also features an arrayof sandwiches including the hearty Kahai St.Hamburger ($7.50) and the Hot PastramiSandwich ($6.50). Additionally, the eateryalso features a vast array of constantlyrotating daily specials dreamed up byYamamoto. or delicious, authenticVietnamese cuisine at rea-sonable prices, one doesnot have to look furtherthan Pho My Lien, according

to Walter James, a close friend andbusiness partner with the restau-rant’s owners, Tommy Dang and hiswife, Lien Bui. “We give a good-quality meal, a

good-tasting meal and a meal that isbountiful at a very reasonableprice,” summarizes James.Tommy and Lien, who have

owned Pho My Lien for the pastdecade, came up with the restau-rant’s name as a combination oftheir names and “pho,” aVietnamese beef noodle soup oftenconsidered a staple of theVietnamese diet.

“It’s ‘Pho,’ ‘My’ and ‘Lien,’” Jamesexplains. “‘My’ is for Tommy, but inVietnamese, his name was My Dang,and his wife’s name is Lien (pro-nounced ‘Lin’).”Pho My Lien was originally locat-

ed on Ala Moana Boulevard inWaikiki, but moved to WestridgeShopping Center across the streetfrom Pearlridge last year.

“We opened up (there) in mid-November, so we’ve been there alittle over six months,” Jamesaffirms. Pho — pronounced “fa” in

Vietnamese but often read as “fo”in America — is one of the eatery’ssignature dishes. For $7.95, cus-tomers can place large orders ofpho, which comes with an assort-ment of vegetables as well as up tofive choices of meat, includingbeef balls and beef tripe. Whenasked what makes Pho My Liendistinct from other Vietnameserestaurants, James is quick to

answer.“The pho … the taste,” he says,

immediately. “Lien is a very goodcook.” In addition to pho, the Crispy

Spring Rolls, Summer Rolls andGreen Papaya Salad are menufavorites. The Spring Rolls includeingredients such as chicken, shrimpand long rice, while the SummerRolls feature bean sprouts, chopped

By now you’ve probably gotten your fill of pho, sowhy not try a taste of something new at Saigon House?

Beginning tomorrow, the South King Street restaurant(located near Sherwin Williams across from theHawaiian Humane Society) is introducing a brand-newsoup called Mi Quang ($8.50).

“This type of dish is very unusual and very uniquehere,” says Saigon House owner Mandy Nguyen. “We’reone of the very few who serve it in Hawaii.”

Mi, meaning “saimin,” and Quang, the region ofVietnam from which the dish originates, is a rice noodledish served with a hard-boiled quail egg, chunks of

Restaurant owners are a group oftough, determined individuals whoroll with the current and find a way to

keep afloat in the ever-changing culinarytide.

So it is no surprise, after learning her personal story, thatMandy Nguyen is the owner of not one, but two very success-ful eateries: Bale Kahala Mall and Saigon House.

“I’m a survivor,” says Nguyen, who was born in SouthernVietnam during the fighting and bloodshed of the Vietnam War.

By the time she was 7 or 8, the war was over but life wasstill extremely hard, so her family decided to leave the countryin hopes of finding a better life in the United States. However,the only way out was by boat.

“Along the way we experienced the whole boat experience:storms in open sea, pirates,” Nguyen remembers of her terri-fying travel across the Pacific. “You'd see the pirates withguns and knives — it’s not the same as the Disney movie,because they can kill you. We got mobbed nine times. Therewas rape, everything. The journey was a really hard journey. Itwas either you make it or you die.”

After the family’s failed first attempt out — they landed inIndonesia only to be sent back to Vietnam, but their boat drifted ontoan unknown island where they were jailed for several months —Nguyen, her parents and her four siblings eventually made it toHawaii on their second go-round.

“We had to start all over again, the language, the lifestyle — every-thing,” says Nguyen. “We worked really hard.”

To make ends meet, her father began cutting hair and opened hisown salon, while her mother started a lunch wagon, eventually pur-chasing the Bale restaurant on Fort Street Mall.

“That's how I got exposed to food, through working with my moth-er,” says Nguyen. “Now I have a Saigon House, and since I’mVietnamese, I try to bring all of the Vietnamese cuisine to the islandand keep it authentic.”

serving a lot of pho, and this is one ofthe things very few people are serving,”Nguyen says. “I discussed it with mycook and we said let’s put this on themenu, let the local people have a tasteof the real, authentic Vietnamese cui-sine.

“At Saigon House, wetry to keep everythingauthentic,” she adds. “Alot of restaurants localizethe dish; our style is totry to keep it as authen-tic as we can.”And while there is an

ample amount of pho onthe menu (more than adozen different varia-tions to be exact), otherpopular items at SaigonHouse include the SpicyBeef Soup ($9.25), FingerShrimp ($8), ChickenSalad ($7.50) and LemonGrass Chicken and Rice($8.25).“That dish is ono, for

sure!” Nguyen exclaimsof the chicken and riceplate. “It’s the No. 1 sellerright now.”The chicken is mari-

nated curry-style with aspecial blend of Vietnamese spices,then sauteed with fresh lemongrass andserved with rice and a side salad.“It’s fresh, and it tastes really nice

with the rice,” Nguyen says. “It has avery fresh flavor.”For those seeking an extra dose of

spice, condiments including hot sauce,hoisin sauce, Sriracha sauce, fish sauceand shoyu always are present on eachtable.

Pesto:• 1 cup basil leaves• 1/4 cup Italian parsley• 2 cloves garlic• 1/4 cup roasted macadamia nuts• 1/4 cup olive oil• 3 jumbo shrimp, peeled and de-veined• 3 cups cooked pasta of choice, pre-cooked• Shredded Parmesan to garnish• Roasted macadamia nuts, diced, to gar-nish• Roasted tomatoes, seasoned with saltand pepper and diced

Instructions:• Blend pesto ingredients in food proces-sor while adding oil slowly.• Sauté shrimp in olive oil about a minuteon each side, then add pesto and tomato.Toss in hot pasta, season with salt andpepper.• Top with Parmesan cheese andchopped macadamia nuts.

Chef Chai Chaowasaree of Chai’sIsland Bistro recently collaboratedwith some of Hawaii’s finest chefs,

including Roy Yamaguchi and Alan Wong,in support of Hawaiian Airlines “Lei Dayfor Japan,” a special fundraising effort tohelp the country in its recovery effortsfollowing the recent earthquake andtsunami. The fundraiser took place atAloha Tower Marketplace and also fea-tured recognizable entertainers such asKealii Reichel, Natalie Ai Kamauu and JakeShimabukuro. Guests enjoyed exquisitecuisine from the 25 various food stationsshowcased at the event. All proceedsraised will go toward the Japanese RedCross Society.
