START THE DAY

When I was a child growing up in Chad, we woke up very early. Every morning, before sunrise, we all went to greet my father. During this family meeting, my father gave us advice and instructions for the day. He made sure that each member of the family was in good health.

He also shared his programme of the day with us. We studied the Bible and prayed together for the day. My father also rose up early each day and went to his uncle’s house. This uncle was the one who took care of him after the death of his father and who did all he could to help him found his own family. Every morning, my father wanted to make sure that everything went well in his uncle’s compound. After that, he then came back to receive all of his children as well as all those living under his roof.

Women's traditional clothes in Ethiopia  are made from cloth called shemma and used to make habesha kemis. The latter garment is basically cotton cloth, about 90 cm wide, woven in long strips which are then sewn together. Sometimes shiny threads are woven into the fabric for an elegant effect. Men wear pants and a knee-length shirt with a white collar,and perhaps a sweater. Men often wear knee-high socks, while women might not wear socks at all. Casatiello is a traditional Easter celebratory special bread of Naples. It is a rich brioche type of dough made with eggs and butter that is studded throughout with cheese and salami. It is a bread that celebrates the end of lent, and each bite tells of the celebration of the rebirth of Christ. Historically, the use of milk, eggs and sheep cheese reflect the birth of Christ in the manger with the farm animals. The traditional way to prepare this bread is to top it with eggs that are secured with crosses of bread dough, though I eliminate this step as I prefer to leave the bread simple in order to slice it easier. This bread was often prepared for La Pasquetta, or Easter Monday when Italians take to the countryside for picnics with friends and family. We have a similar bread we make for Easter in Umbria called Crescia that uses only Pecorino cheese. Although both the Casatiello and the Crescia used to be prepared just at Easter, they can now be found year round in many bakeries in certain regions of Italy.

We recently had some friends over for dinner and decided to fire up the pizza oven and made four different types of pizzas, two of each. When we have guests over I always like to serve something for dessert, but after enjoying appetizers and then sharing eight pizzas between us, I didn’t want to make anything too heavy. One of my favorite light desserts is Panna Cotta, and I personally could eat that creamy, luscious pudding every night and make it often for guests, but I wanted to try something new for a change. Since it is still strawberry season here in Florida, I decided a Strawberry Tiramisu was in order. Though not terribly light on calories, this dessert is quite light in texture and not overly filling. I combined melted white chocolate, mascarpone, and whipped cream for my creamy layer and flavored it with sweet Marsala wine. I dipped my savoiardi, or lady fingers in orange juice spiked with more Marsala wine, and placed a layer of sliced strawberries in the center. I was really happy with the way this dessert turned out and will certainly be making it again when fresh, ripe strawberries are in season. In place of the Marsala wine, you could use either strawberry or orange liqueur, or skip the addition of the wine altogether if you prefer a nonalcoholic dessert.

This is a classic Italian vegetable dish that is very inexpensive to prepare that originated from “cucina povera”. For this dish I bought a bag of dried chickpeas, a can of chopped imported tomatoes, and a bunch of Tuscan kale. To flavor the dish I added some diced onion, chopped hot red chili, and minced garlic along with some pancetta and created a large pot of tasty goodness.

This dish would be wonderful served as a side dish for grilled or roasted meat, or you can serve it like I did as a main course entree along with some crusty, Italian bread to sop up the tasty juices. Although I chose chickpeas as my beans of choice, dried pinto, Romano, or cannellini beans would also work. I prefer Tuscan kale, (also called Lacinato or black cabbage), although you could use your favorite greens such as spinach, mustard greens, curly endive, escarole, kale or broccoli rabe. We like our food to have a little spice, so I used a scant teaspoonful of hot red chili flakes, but feel free to use less, or skip them altogether if you prefer. To make this dish vegetarian, simply skip the addition of pancetta, and use vegetable broth in place of the chicken broth.

I truly adore hearty vegetable dishes such as this one which is both delicious and packed with nutritional value. Beans are a great plant based source of protein, and are rich in fiber, B vitamins, and minerals such as magnesium, potassium, iron, calcium and phosphorus. I love making my own bread at home, but for some reason I haven’t baked a loaf of bread since Christmas although I do bake focaccia of some type every week or so. I recently planned to make a delicious Roasted Eggplant Spread that really needed to be served with some good crusty Italian bread so I got out my bread making tools. I discovered the “no knead” bread making method a couple of years ago and do choose this method often for making good crusty, artisan style bread at home. For this version, I used the basic whole wheat recipe from the book Healthy Bread in Five Minutes a Day by Zoe Francois and Jeff Hertzberg. This recipe makes enough for 4 (1 pound) loaves, although I will make 3 larger loaves from it. The best thing about this recipe is that once you mix the dough, you have the dough ready to make daily for a few different loaves. The dough does improve in flavor if it is left in the refrigerator at least overnight, so I’d advise mixing it at least the day before you plan to bake it.

When it comes to desserts, I prefer something light as I really am not a dessert person. If we are dining out and I do decide to splurge and order dessert it will be because they have either Creme Brulee  or Panna Cotta on the menu. When we are entertaining at home, I always like to finish the meal with something sweet, and again, I often choose panna cotta to serve as it can be prepared ahead of time and is not at all heavy.

Translated as “cooked cream”, panna cotta is a creamy, yet light pudding type of dessert that is thickened with gelatin. You can create almost any flavor of panna cotta and it can be as simple as a basic Vanilla Panna Cotta With Berries, or a combination of two flavors like my Chocolate Panna Cotta With Espresso Cream. Traditionally, panna cotta is prepared in small ramekins or cups and is then un-molded onto a plate and topped with a sauce or fruit. I prefer however to use small clear glasses and serve the pudding right in the glass. This way you can layer the pudding creating a very attractive presentation. Because I love panna cotta so much, one of my goals for 2014 was to create a new version of panna cotta each month and then share the recipe on the blog. Although I did make this recent version in January, here it is almost the middle of February and I am just getting around to posting the recipe! Oh well, it is a really tasty recipe and I am excited to share it with you.

always on the lookout for new apple recipes that I can serve to our farmhouse guests since our farmhouse is called Il Casale di Mele (Mele meaning “apples”). Since I prefer to use olive oil in my baking rather than butter to keep things a little healthier whenever I can, when I came across an apple cake made with olive oil in Anna Del Conte’s Gastronomy of Italy I had to try it. The cake was extremely stiff when mixed, and in fact seemed a little dry when I took it out of the oven. After a day in my cake keeper the cake was more moist as all those apples and the olive oil did their magic, but it just wasn’t the cake I had in mind. By the way, Anna’s book, Gastronomy of Italy is a cross between an Italian cuisine encyclopedia and an indepth Italian cookbook and I use mine often. I highly recommend it if you do not own it already.

Happy Valentine’s Day! I considered baking something chocolate and decadent today to celebrate this holiday, but my husband doesn’t really care for decadent desserts, and I simply do not need those calories. Instead I decided to make a sweet treat that is easy to prepare, tastes amazing, and is even a little healthy for you too!

Although I do not crave chocolate often, there is nothing as irresistible as a perfectly strawberry dipped into dark chocolate. Here in Florida, strawberries are in season and are sweet, plump, and perfect for dipping. I prefer dark chocolate with at least 77% cocoa and for the best results, you should temper your chocolate to create a firm shell when dipping fruit. Dark chocolate is a potent antioxidant and antioxidants gobble up free radicals, destructive molecules that are implicated in heart disease and other ailments. How great is that to find out that dark chocolate is actually heart healthy in moderation? Though there are a few different methods for tempering chocolate, I find the method below to be the easiest.
