Hello Again

Who will argue with this statement, “All of the cars around us, including our own, will

rust and end up sooner then necessary in a junkyard if not properly taken care of. When

kept clean, oil changed, garaged, with general repairs--vehicles last a long time.

There was a story published recently in a magazine about a Volvo auto that is

expected to arrive at the three million mile mark. The owner obviously takes care of it.

You can visit auto junkyards and find brand new, basically no mileage cars that didn’t

make it through their first day. The Volvo has been taken care of. The new junkyard car

was smashed. Isn’t that what our lives and our surrounding is all about? If we feed, clothe,

exercise and take care of our bodies we stand a better chance of living a healthy and long

life.

If our property — houses, cars, RV’s, and businesses, etc. are properly taken care of,

they will serve us both well and long.

Why is it that we understand these statements to be true and the effort of caring

worth while? Can it be because it just plain makes common sense?

Now! If that does make common sense why are we not attempting — trying —

planning to create a business plan for the Palatine Corridor.

I have to admit that I suffer from serious doubts about who really cares.

Since mentioning the dream or idea of a Palatine Corridor, a dream to create a great

employment center here in the Mohawk Valley.

I was seriously tempted to let the idea or dream die. You ask why? Not one single Mayor,

Trustee or Supervisor in any of the towns or villages have ever, not even once — shown

any interest in caring for the future of the Dream Palatine Corridor, at least to this office.

This is not true of the general public. Several, in fact, a reasonably large group of caring

readers and business owners have shown interest and asked to be included in planning.

A dream to build specialty shops, such as a Christmas Store, copied after the giant

Great Bronner’s Christmas Store in Frankenmuth, Michigan, with its 150 employees or a

Teddy Bear Shop and possibly a teddy bear factory, and shops such as American Doll,

Yankee Curtain, an Amish restaurant such as in Pennsylvania and Ohio, an entire factory

outlet complex complete with dozens of national famous brands. How about a country &

western music opera house?

I’m sure that Hello Again readers could add hundreds of great

potential business ideas to this list. For example — how about

building the Fort Plain fort into a real early American fort with

daily activities, financial support for Fort Klock, and renewed

interest in Fort Wagner.

Just repeating: The area from Fonda to Herkimer, in the hands

of a real promotion person or firm, would be a sitting duck for

fantastic business growth. If we keep on doing nothing, we will get

what we deserve.


We have a Thruway exit at both ends with over 70,000 autos each day driving through

our valley.

If we draw a circle around our area statistics will prove that over 3 million people live

within 50 miles of the so-called Palatine Corridor and people will actually travel hundreds

and even thousands of miles to arrive at a destination such as Cooperstown, Saratoga,

or Frankenmuth, Michigan. Do you know why they don’t come to the Palatine Corridor

area? There is nothing to come to.

Have you ever noticed how a humorous joke can fit a situation?

A farmer and his farming friends, down in the Bible belt of Alabama, were falling on hard

times. He and a group from the local congregation asked the preacher to pray for a more

abundant crop.

The preacher said, “O Lord, we pray thee in accordance with the request of thy people;

that thou would send them a more abundant crop; but O Lord, thou knowest as they

know, that what they needed first was deeper plowing, harder work, and more manure.

Lord, I ask that thou bless them with more than they deserve.”

An old familiar saying, “Put your money where your mouth is,” is certainly fitting at this

time and for Lee Publications as well as everyone else. To bring our readers up to date,

within the last 28 months, Lee Publications has created six new publications: The Original

Valley Pennysaver, four separate area DollarSavers, The Original Family Pennysaver and

this past week a new Herkimer-Oneida Pennysaver. These new publications caused our

employee staff to grow by 15 and it gave more hours to existing employees.

It is your support by reading these papers and shopping with the merchant

advertisers, which makes this employment growth possible. For this we give thanks to

the Lord and to you.

Fall is quietly saying it is heading our way. It’s not merely whispering so long for this

year but asking summer to hitch over to make room for another upstate beautiful

country harvest and autumn season.

In the beauty of our Heavenly Father’s upstate creation, we country folks should live

and share and show our lives as a gift from him.

Say hi to a neighbor. Neighbors often become our best of friends. Ask them to go to

church with you. It could end up being one of life’s greatest gifts. If you see the little red

cycle go whizzing by, wave hello.

of Aug. 11, the town ofLittle Falls joinedtogether to take partin the annual CanalDays celebration,which stretched fromthe main part of LittleFalls all the way to theother side of thecanal. Residents ofLittle Falls, such asEsther Haughton, saidthat Canal Days hasbecome a yearly tradi-tion for them. “I go [toCanal Days] to meetwith old friends andsee the vendors,” shecommented. Vendorsin the main part ofLittle Falls varied ingoods, from home-made popcorn all theway to homemade airfresheners. Stapleorganizations of LittleFalls also made anappearance at theevent. The FirstBaptist Church ofLittle Falls set up theirfirst booth at theevent, giving away freecheese and water bot-tles to those thatpassed by. A repre-sentative from FirstBaptist said, “[Havinga booth at CanalDays] is a good way toreach the communityand promote thechurch’s ministryoverall.”

On the other side ofthe canal, at the hid-den, scenic gemknown as Canal Place,another facet of theCanal Days celebra-tion was taking place,known as ChicksAlong the Mohawk.Chicks Along theMohawk is a juriedcraft show just forfemale entrepreneurs.First time ChicksAlong the Mohawkvendor, BethanyHaas, owner of the

“Crafty B Designs”booth, was very excit-ed to be apart of thisside of the Canal Dayscelebration. “It’s areally cool opportunity

and a nice area to beselling in,” she said.Vendors sold goodsthat ranged from jew-elry all the way to cup-cakes, maple cotton

candy, and uniquelyshaped soaps.

Other activities dur-ing Canal Daysincluded live musicand hot food vendors.

Once upon a time, not solong ago, milking cows wasnot something one did bymachine. Many (especiallyyounger folks) romanticizethe traditional concept ofhand-milking after hearingstories at our grandparents’knees. But our pastoral imageof the farmer rising early andperching atop his three-leggedstool, yawning and resting atired head against the warmflank of his cow is not quitean accurate portrayal.

A jittery cow stomping nerv-ously in dense mud, tail whip-ping at flies and striking thefrazzled farmer’s face is morecorrect. Eye injuries in milk-men/maids were the result.

Hence the invention of thistool: the cow tail holder. Oneend of the instrument is fittedaround the cow’s leg while thesmall end clamps onto the

tail, holding it in place. EdwinG. Farnham of Dover, Maineinvented this product, patent-ing it on January 13, 1891.

He is not the only person toclaim this invention, however.In 1901, Charles Colwell of

Delhi, NY patented a cow tailholder and a 1935 newspaperdetails inventor Albert Gieseof Benton Harbor, MI officiallyrevealing his cow tail holder tothe National Inventors’Congress.

“Personally, thishas grown into a rela-tionship between ourfamily and theDiamondDawg organ-ization,” said ChrisNellis of John G.Nellis Dairy near FortPlain. “We have host-ed players on thefarm for two yearsnow.”

Although most fam-ilies usually host oneor two players for theseason, this year theNellis family was rec-ognized for hostingfour baseball players,including JesseBurratt (Baton RougeCommunity College).

“I have been aroundbaseball all my lifeand I think that thepeople of the MohawkValley have a greatopportunity to takethe DiamondDawgsBaseball Team andmake it the numberone summer colle-giate baseball team inthe country,” saidJohn.

“We have had over30 players, in 5 years,sign professionalbaseball contracts,”Heiser reported.

Other host familiesrecognized at thegame included Jeffand Joanne Heiser,Bob Failing, PaulaColvin, SandiSheperd, Jean andBarry Smith, the

Reardon Family andJohn Fureno andfamily. “We pick up afew new families eachyear,” Heiser said.

Heiser says theteam members arepopular in the com-munity and partici-pate in parades andyouth programs. “It'snice to have a team ofwell-rounded stu-dent-athletes who aregood ball players andalso good people,” heremarked.

The team's pitchersdonated one dollar tothe Herkimer CountyHunger Coalition for

each of the 237 bat-ters they struck out attheir home games thisyear. The pitchers andHeiser were presentedCommunity ServiceAward plaques fromthe Coalition preced-ing the game. Eachdollar is multipliedeight times in foodvalue.

“Our family will befriends with theseyoung men for life,”Nellis said, addingthat this month theirfamily will be travel-ing to Maine to visitone of the playersthey hosted last year.

Kristen Wolfe waslooking for a way tocontinue her family’stradition of volunteer-ing when she beganattending Grove CityCollege in 2009.

“During my fresh-man year, I gotinvolved with a groupcalled Young Life,which has an out-reach ministry forteenagers,” said Wolfe,20, a senior psycholo-gy major. “But therewasn’t much availablefor teenagers andyoung adults withspecial needs, whichis a group of people Ireally loved workingwith while volunteer-ing at a summer Bible

camp back home.”When the Fort Plain,

NY, native learnedthat Young Life oper-ates Capernaum clubsin other parts of thecountry for young peo-ple with physical andmental disabilities,she decided to startchapters in the MercerCounty communitiesof Grove City andGreenville.

In recognition ofWolfe’s dedication tohelping others, shehas been selected toreceive the Trib TotalMedia’s Volunteer ofthe Year award.

Wolfe said theCapernaum clubs shehelped start are a wayfor young people withmental and physical

disabilities to experi-ence activities thatother children enjoy.

“Unfortunately, ourculture doesn’t alwayswelcome them and isquick to write themoff. Having the clubsallows them to gettogether for food andgames, go out forlunch, take walks orjust hang out andwatch a movie.”

While Wolfe is elatedat being recognized,she believes that thepeople she assists arethe ones who deserverecognition.

“I love these kids.They’re the brightlight in my week,”she said. “Having thechance to be theirfriend has taught me

so much and helpedkeep me going dur-ing some difficulttimes.”

Brad Mowry, anarea director forYoung Life who nomi-nated Wolfe for thevolunteer award, saidthat in addition to bal-ancing her ministrywhile carrying a diffi-cult academic load,she has grappled withsignificant healthproblems.

Last summer, Wolfewas diagnosed withnarcolepsy and in thefall she learned thatshe had to undergogall bladder surgery.

“Even while facingthese challenges,Kristen continued tovolunteer,” Mowrysaid. “And to ensureshe wouldn’t miss anyCapernaum Clubmeetings, she sched-uled her surgery overThanksgiving break.

“She possess a qual-ity rare in our societytoday of putting oth-ers before herself. Hersacrificial service,maturity and wisdombeyond her yearsmake her an excellentrole model and verydeserving of recogni-tion,” Mowry said.

Wolfe said her fami-ly participates in vol-unteer projects suchas providing meals todisadvantaged people.Since 2008, she hasvolunteered at a sum-mer youth camp inRome, NY, for childrenwith special needs.

Wolfe is the daugh-ter of Pat and KateWolfe. She has a sis-ter, Caribeth, 22, andbrother, Tim, 17.

When choosing lowshrubs or woody ground-covers for landscaping,consider some of thesenorthern natives. All thefollowing plants arehardy to at least USDAzone 4 (-20 to -30°F lowin winter), and grow insun or at least part shadeunless noted for full sun.Calling our region home,they are often betteradapted than non-nativeplants (meaning theyneed less care and havefewer pests), and mayprovide more benefits tobirds and pollinators.

Small shrubs are gen-erally those under 6 feethigh, fitting well in themiddle to front of bor-ders, and for low plantsalong building founda-tions. They are often ef-fective planted in masses.Those with attractiveflowers or leaves can beused as specimens, eitheralone or planted amongother shrubs and peren-nials.

The black chokeberry(Aronia melanocarpa var.elata) is very hardy,reaching up to 5 feet high

with an upright ovalshape. Yet it can spread abit wider. The shiny greenleaves turn a wine-red infall. The white flowersyield purplish-blackberries favored bywildlife. You may find cul-tivars (cultivated vari-eties) with larger fruit andeven brighter fall color.This plant is adaptable toeither wet or dry sites.

The quite hardy fra-grant sumac (Rhus aro-matica) needs to be sitedcarefully as it can spreadrapidly to 8 feet or more.This makes it a goodchoice for slopes, espe-cially ones that are dry,or too steep to mow. Theglossy green leaves withthree parts (“trifoliate”)somewhat resemble poi-son ivy leaves, and turnlovely fall colors in yellow,orange, or red in someyears. When crushedthey are aromatic, hencethe species name. Whilethe species can reach upto 6 feet tall, the cultivar‘Gro-Low’ reaches abouthalf that.

The snowberry (Sym-phoricarpos albus var. lae-vigatus) is mainly grownfor its white fruit on arch-ing branches. This plant

too can spread to 8 feet,but not as aggressively asthe sumac, so is good toofor slopes. If it becomesscraggly after a few years,prune back in spring tonear the ground and itwill regrow.

There are several nativeshrubs you might consid-er for landscapes that areeven shorter, only reach-ing 3 to 4 feet tall. One ofthese is the less commonsweet fern (Comptoniaperegrina) which is not afern at all but has fern-like, dark-green leaves. Ittoo is a good choice fordry slopes or banks, isquite hardy, and will takesun or shade. Leaves onthese are pleasantly aro-matic, somewhat likeleaves of the bayber-ry.

The bush honeysuckle(Diervilla lonicera) is nota honeysuckle, but haslight-yellow flowers likethose of the honeysucklevine. Leaves turn nice fallcolors. It only gets about2 feet high, but can slow-ly spread to 5 feet or so. Itis good in sun or shade,and tolerates wet or drysoils. You may find thecultivar ‘Copper’, sonamed for its coppery

new growth.The hardy native bush

cinquefoil (Potentilla fruti-cosa) has small yellow,rose-like flowers in Juneand then sporadicallythrough the summer.There are many readilyavailable cultivars of thisshrub from 2 to 4 feethigh, and with variousflower colors includingwhite, pink, reds, and or-anges in addition to yel-lows. It grows rapidly,and grows well in dry andinfertile soils, but needssun. You may find thespecies in old pastures,and cultivars along foun-dations and in borders.

Native spreadinggroundcovers under afoot or so high, and thatprefer acidic soils, in-

clude three berries. Bear-berry (Arctostaphylosuva-ursi) is good forsandy or gravelly soils,and is salt tolerant. It hasbright red berries in falland bronze-red leavesthen. Lowbush blueberryis the native version ofthe larger-fruited ones weall know. Mountain cran-berry or lingonberry (Vac-cinium vitis-idaea) preferscool sites, has evergreenleaves, and small white topink flowers. Plant atleast two plants of the lat-ter for best fruiting.

For a low, evergreengroundcover you mightconsider the common ju-niper (Juniperus commu-nis) or, better yet, one ofits cultivars such asBlueberry Delight, ‘Berk-

shire’, ‘Green Carpet’, orthe upright ‘Pencil Point’.You’ll see the nativespecies growing in oldpastures just as withcinquefoil, and the culti-vars along walks, frontsof borders, and in sunnyrock gardens.

Even if not officially indrought conditions, manyareas in recent summershave had less than nor-mal rainfall or very drysurface conditions. If onelooks at the climate data(weather.gov), many areashave had 2 week periodswith no rain, or with verylittle, or any rain came allat once in one area andnone in another nearby.The rule of thumb forplantings is an inch of wa-ter per week. If you’refaced with dry gardenconditions, there are someways to keep your plantsand lawn alive while mini-mizing water usage.

Cultural practices • If still planting flowers

and vegetables, use widerspacing to reduce compe-tition for soil moisture,mulching between plants.

• Incorporate organicmatter into the soil, whichwill aid in water retention.Compost also adds nutri-ents, but breaks down

faster than peat moss —another common amend-ment. Peat moss lastslonger in the soil, at leasta year or more, but addsfew nutrients and acidifiesthe soil (which is easilycorrected with liming).

• Use three to four inch-es (after settling) of organ-ic mulch (pine or cedarbark, weed-free straw,wood chips, or similar) toprevent soil from dryingand losing moisture to theair. Keep mulch awayfrom trunks and off thetop of desirable perenni-als. Using plastic mulchesor weed fabric aroundshrubs, in paths, or invegetable and annualflower gardens in whichplants are spaced regular-ly can help as well. Orplace thick layers of news-papers in rows, coveredlightly with mulch as youdo with the weed fabric.

• Fertilize less, both lessin amount and less often,and avoid applying toomuch high nitrogen fertil-izer. Too much nitrogenresults in excessive

growth and increasedneed for water by lawnsand plants. Organic fertil-izers provide less nitrogento the soil and usually re-lease it slower over alonger period, as well ashelp improve soil humus,which helps hold water.

• Choose and placeplants properly. Don’t se-lect plants that prefermoist conditions, andplace them in a dry area.Choose plants more re-sistant to drought. Theseinclude many other plantsin addition to cacti andsucculents, such as thosewith deep taproots (bap-tisia or false lupine), thickstorage roots (daylilies), orwaxy coated leaves (se-dum). Perennial flowersneed water when newlyplanted, but once estab-lished require much lesswater than annual flow-ers. Native plants may bea good choice as well.

• Don’t apply pesticidesthat might cause injury tostressed plants, or which inheat need to be watered in.

• Avoid pruning when

plants are stressed andnot growing and are thusunable to heal woundsquickly. Pruning also maystimulate side shoots andmore growth, creating theneed for more water.

• For evergreens, use an-titranspirant sprays onleaves to help prevent wa-ter loss. Or erect wind-breaks around suchplants, if they’re small ornew and in a windy area.Burlap strung betweenposts is effective. For rou-tinely windy sites, considerplanting a more permanentwindbreak of spruces, firs,or other evergreens toscreen other plantings.

• Water slowly, well, anddeeply every couple days oreven less unless plants wiltor soil is quite poor. Thispromotes deeper rootingthan light daily watering.

• When watering, don’tuse sprinklers unless onareas of lawn. They wastewater, often in dry condi-tions with half evaporat-ing. Rather hand water,using a reduced flow rate.Especially with dry orcrusted soil, a forcefulstream of water will sim-ply run away from the de-sired plants. There aremany inexpensive water-ing devices that easilycontrol the flow right atthe hose end, includingshut-offs and “water

breakers”. This way too,you can turn the water offwhile moving betweenplants and locations.

• If you haven’t plantedperennials and woodyplants yet, wait until theweather moderates andrains return. I often waituntil early fall to plantthese, as the days are cool-er and less stressful on theplants, there is generallymore rain, and there is stilltime for plants to establishbefore winter. Plus I find itis easier to water a groupof pots that to drag thehose all over the yard, of-ten forgetting to watersome new planting.

• Use hoeing and soilcultivation of weeds spar-ingly. Continually disturb-ing the soil surface will re-sult in it drying out muchfaster. You may have tocut weeds off at the soilsurface, or use contact orsystemic herbicides andsave the cultivation untildrought conditions ease.At least the bright side isthat under drought,weeds won’t grow as fasteither! But keep weedsdown, as they competewith more desirableplants for water.

Container plantings • Move container plants to

more shaded areas, so thesoil won’t dry out as quickly.

• Use pottery containers

• Don’t crowd too manyplants into containers, oruse large containers forlarge plants. This will helpkeep them from drying outas often and requiring wa-tering daily or more often.Use water absorbing prod-ucts in containers andhanging baskets.

Lawns • If seeding or repairing

lawns, use drought resist-ant grass types such asfine fescues.

• Leave grass clippingsafter mowing to act asmulch, and recycle nutri-ents and moisture.

• If water is not avail-able, allow grass to go dor-mant. Unless there are ex-treme conditions for along period, grass usuallywill begin growing againonce conditions improve.

• If your lawn routinelyin summer dries up, suchas on poor and sandy soils,consider investing in an in-ground irrigation system ifpossible and your lawn is apriority. If too expensive fora whole lawn, consideradding it in stages, or justin certain areas.

• Consider turningsome lawn into a massplanting of groundcoversthis fall that won’t needmowing and that willwithstand drought.

• Don’t mow grass whenit is dormant and notgrowing. Even when grow-ing, set the mower heightat two to three incheshigh. High mown grassdevelops deeper root sys-tems that are better ableto withstand drought.

• Avoid walking andplaying on dry, dormantlawns as much as possible.

If water is restricted orin short supply, give high-est priority to the follow-ing:

• Newly planted trees,shrubs, and perennials

• Newly seeded lawns orrepaired lawn areas

• Plants on sandy soilsor windy and exposedsites

• Vegetables when flow-ering

Is there anything bet-ter than a tomato, pickedfrom the vine with thewarmth of the sun stillon it, given a quick rinse,and bitten into or sliced?Perhaps you prefer yourswith a dash of salt, orcombined with freshmozzarella and basil,and a splash of balsamicvinegar. However you en-joy fresh tomatoes, youknow that the localgrowing season doesn’tlast forever.

While the texture of afresh tomato cannot besaved after the season,the taste and nutritionalgoodness of tomatoes,including Vitamin C andlycopene, are still pres-ent after freezing, dryingor canning.

Tomatoes are safelycanned in a boiling waterbath canner after someextra acid (2 Table-spoons bottled lemonjuice per quart jar) isadded. This will helpprevent spoilage anddeadly botulism. Thebest quality happens

when the tomatoes arepeeled, cut, and quicklybut gently boiled for fiveminutes before placingin the canning jars.

The addition of otheringredients to the toma-toes changes the pro-cessing time, and some-times the type of pro-cessing. Adding vinegar,peppers, onions, andother seasonings createsa pickled product with ahigher acidity level thanplain tomatoes. The nec-essary processing timesfor salsas or chili saucesare therefore shorter.

However, an additionof peppers, onions, sea-sonings and even meatchanges the acidity inthe opposite directionand the resulting mix-ture now requires pro-cessing in a pressurecanner. The pressure al-lows the temperature toreach 240 degrees, nec-essary to destroyClostridium botulinum,the bacteria that causesbotulism.

To safely can a tomato

mixture, always use alaboratory-tested recipe.Many can be found in

the Ball Blue Book or onthe USDA National Cen-ter for Home Food

Preservation website. Ifyou can’t find a recipe toyour liking, then can thetomatoes without anyseasoning (except thenecessary lemon juice)and add the other ingre-dients after opening thejar.

Drying tomatoes inNew York State requiresa dehydrator with a ther-mostat and a fan. Highhumidity makes it im-possible to sun-dry themhere. Dip tomatoes(Roma or plum-shapedare best) into boiling wa-ter for about one minuteand then core, peel andcut into 1/4” slices andplace individually on de-hydrator racks. Dry at145 degrees for 10-18hours. The time will bedetermined by theamount of moisture inthe tomato. When thepieces become crisp,they are ready to bestored in airtight con-tainers. Packages storedin a freezer will maintainexcellent quality muchlonger than those stored

at room temperature.If you prefer to freeze

tomatoes, don’t expectthem to be used in sal-ads or sandwiches.Freezing breaks the cellwalls and the texture isgreatly changed. Frozentomatoes are excellent insoup, stew and saucerecipes. Tomatoes maybe frozen raw after dip-ping in boiling water toloosen skins, then coringand peeling them. Theymay be placed in freezercontainers whole or cutin pieces. For betterquality and taste, core,peel and cut in piecesbefore cooking gently for10-20 minutes (5-10minutes if making juice.)For juice, press througha sieve to remove seeds.Cool the hot tomatoes byplacing the pan into acontainer of cold water,then package in freezercontainers.

However you choose topreserve tomatoes, youwill reap their nutritionalbenefits and their flavoryear-round.
