Les Chase of Canajoharie, NY.Les recently ran the 5K Boilmaker
in Utica and finished 213 outof 4,000 runners with a time of
23:46 (7:41 pace)! Les has beentraining for months, it looks like
his good work paid off!
The Boilermaker 5k was started in 2000as a training run. The idea was as a step-ping stone for those coming out of theKid’s Run to move up to before jumping tothe 15K.Five years ago, the Boilermaker added aschool challenge to the 5k and started totime the run. The 5 K was first turned intoa race last year awarding to the first, sec-ond and third males and females.The 5K started with about 900 runners
and has grown to 4,000.This year, 1st place went to Jonathan
Gauthier of Salt Lake City who put in arecord performance posting a 16:11 (5:13pace) cutting 30 seconds off the oldrecord. Jessie Cardin of Sutton,Massachusetts ran a solid 19:22 (6:14pace) on the female side.

Hello Again,
Farmer Murphy answered a knock at his kitchen door. “We’re having a raffle for
your neighbor’s widow,” they said. “Will you buy a ticket?” “Sorry boys, I can’t help. My
wife wouldn’t let me keep her if I won.”
The same Farmer Murphy’s wife complained. “Look at the clothes I have to wear. If
strangers came to visit they would think I was the cook!” “Well,” Murphy replied,
“They’d change their mind if they stayed for a meal.”
While rambling around on our red Spyder, we met Ken Gies and his son driving
“Casper” hitched to a two-wheeled, rubber tired cart. We asked if we could take a
picture for the Pennysaver and Country Folks. I think Casper, the beautiful pony,
looked at the Spyder and said, “Get that modern thing out of my sight” and turned
his eyes away.
We learned that Casper was a new member of the Gies family until recently —
green broke and already is behaving like an old trooper.

If
American
history,
starting
just before
or during the Civil War, could be transformed into a movie, it seems reasonable we of
this century would be horribly shocked. That is horrified to see
American citizens, brothers, sons, and fathers supported by their
women folk ready and willing to kill each other with guns and
swords over the slavery issue.
Some thought it was their God given right to actually own
other human beings — slaves. While others believed it was a sin
against God and mankind stating: “No one has the right to

buy-own-sell or dictate to another person how they should live, work, worship, or
manage their own lives.” In other words, have the right to totally control the life of
another person, even taking their life if they choose.
Most of the free world now — would not accept any form of slavery. On the other
hand, the leadership of this country is attempting to steer the United States into
a bigger and larger federal government. This proposed form of government will
become socialism. When, and if, this country surrenders to socialism, the
government in so many words will own and control everything, and we will in fact
become the slaves of the state or ruling body.
Denmark has been held up as the shining star of socialism. The central
government taking care of all the Danes, including 90 percent of any earned income.
That’s right, 90 percent of their earned money goes to the government. Do we think
we should follow that shining star?
Stop and reason this out: if the government controls the health program and
runs low on money to pay for hospital care and you live to be — in their eyes — too
old and absolutely need medical care, should they have the right to refuse medical
care and leave you to suffer and fade away?
I read the following article in a book titled “History of Montgomery and Fulton
Counties N.Y.” published in 1878, about 134 years ago.
Under the subhead of “Businessmen of Today”:

most important establishments in the village (Canajoharie) but the largest of its
kind in the world.
Can you imagine “the largest of its kind in the world”?

In our church last Sunday we had a guest speaker. The subject of his sermon
was “churches should become more involved in their communities.” In this so-called
modern day, we are told church people should stick to church, and let the local
community take care of itself.
Can you imagine what our private lives would be like if all Christian principles were
withheld?
If the time comes when biblical teaching is withheld totally from society, will it be
even safe for you to walk the streets? Forget your mother, wife, or children. Let
your imagination run wild. Will anyone, any property, be safe?
The only conclusion I can come to is — the belief in God is the only fabric that
holds society together. With that: visit church or at least send your children to
church on Sunday.
A few thoughts from Grandpa:
Grandpa says that even back in his day, there was something to make you sleep.
They called it work!
Old age does have some benefits. For instance, you can whistle while you brush
your teeth.
An old timer can remember when a babysitter was called mother.
An old timer is a person whose annual property tax exceeds what he paid for the
darn place in the beginning.
Remember to salute your neighbor with a happy,
“Howdy neighbor!” and lend a helping hand where it’s
needed.

To the Taxpayers in the Town of Palatine:
It appears that, on a two or three year cycle, the Town Council is preparingto hit the “till” and taxpayers pockets to build a new town hall. Before i get toocritical about this potential move, let’s see if some logic will support thereasoning behind this decision.
Through the fall, winter, and spring months the town clerk is available 17hours per week. Through the summer, it is at 10.5 hours. The town assessoris in her office 7.5 hours per week, year around. Court is usually held one nightper week. It appears you would be hard pressed to argue that the town hall isopen 40 hours per week. Do we really need an even larger building to sit emptymost of the week?
It is suggested that we need more room for public use and input, presumablyat Council meetings. The problem with this is that public comment has beenarbitrarily cut in half and the timing is such that there can be no comment onthe current meeting until the next month. If there is a “hot button issue” thatcalls for public input, we already have a large town barn that can, and hasbeen, converted to a meeting hall.
The Town of Palatine, although rural in nature, and having agriculture as itsmajor industry, has the bulk of its population in the Villages of Palatine Bridgeand Nelliston. To locate a town hall miles away from the population centerscould create a logistical problem for many village residents.
The Town Justice Court, presently held in the Town Hall, and which in thepast has struggled to cover the costs of its operation, may well be put out topasture by the State which has designs of eliminating all or most of these kindsof town courts, so why build to accommodate them? As for trials, there havebeen 4 locally in the last 25 years.
Regarding State requirements for town courts, I would submit that these maywell be recommendations which vested interests like to call mandates!
In closing let’s return to the use of the current facilities that seems to bethe driving force in favor of a new town hall: record storage. And here I have togrudgingly admit, those records sit there, 24-7, 365 days a year, and yes thereare those who feel records deserve the same creature comforts afforded to the restof the building, even when it is sitting there, devoid of people and unused for thebulk of the work week. But please, surely there can be a facility built, on site,with a simple heater and a dehumidifier to keep the air dry and free of mold, forless than the half a million dollars a new town barn will eventually cost.
So what do you think? If you think we need a new town hall, you are in luck,for you do not have to do a thing. If however, you think this is being donebecause others have done it first and they like to talk about their successes,then I would draw upon my Dad’s simple piece of logic to his sons growing up:Just because everybody else sticks their head in a bucket of water, does notmean you have to!”
Want to be a part of government? Call or write your council people, call orwrite your town supervisor! Tell them we do not need or want a grand edificeto store our records.

play highlighted the 25thanniversary of Fort Plain’s 4thon the 3rd celebration.
“Police counted 750 carsparked on the field for the fire-works,” commented JimKatovitch, Chairman of theFort Plain CommunityActivities Council, volunteerswho are in charge of the event.“Figure three per car, that is atminimum 2,250 people in thepark for the fireworks.” Andthat estimate doesn’t includefolks all over the surroundingareas who were watching fromthe comfort of their backyardsand those parked bumper tobumper in cars and trucks allalong the area roads.
“We must have entertained7,000 people!” Katovitchlaughed.
Katovitch figures there wereabout 3,000 attendees in thepark throughout the day,where food, music, games and35 vendors were available — inaddition to the featuredguests, Rhonda Leavitt’sReptiles, of New Lebanon, NY,Birds of Prey, and ZiyaraShriners’ Clowns.
Dawn Hanifin, founder of theoriginal event recalls how thewhole thing began. “In 1988 Iwas on the Village Board when
we decided to bring back the4th of July celebration. Myobjective was to take advan-tage of our beautiful park andhad very limited funds to workwith. The Village Board allot-ted $1,200 - $1,500. People Italked to wanted the celebra-tion and a band concert. Ispoke to the fireworks compa-ny and found it was cost effec-tive to have the fireworks dis-play on the 3rd instead of the4th. So, I thought why nothave the 4th on the 3rd?”
Hanifin said, “The FirstReformed Church of Fort Plainjumped right on the bandwag-on and has sponsored a barbe-cue at the event every yearsince the beginning.”
Hanifin was honored at thisyear’s event for her contribu-tion to the community.
“It’s delightful to see howsuccessful this is year afteryear,” Hanifin said. “Peoplecome back every year.”
“Four-hundred-seventy-twokids enjoyed the bounce hous-es,” Katovitch reported. “TheOld Time photo booth gaveaway 600 pictures, so thatmeans a picture of our celebra-tion is posted on 600 refrigera-tors in the area!”
Katovitch says the barreldrive set a record for collecting$5,600 this year and they alsoreceived $7,600 in donationsfrom the community. Theentire event cost about$15,000. “So, we just aboutbroke even,” Katovitch figured.
“This is a highlight of thesummer for the kids of FortPlain,” Katovitch commented.“We do it for the kids. Thewhole community comestogether to make this celebra-tion work
“It’s a beautiful thing to cele-brate America this way,”Hanifin stated.

New research suggeststhat there could be healthhazards associated withconsuming excessiveamounts of beta-carotene.
This antioxidant is anaturally occurring pig-ment that gives color tofoods such as carrots,sweet potatoes and cer-tain greens. It also con-verts to vitamin A, andfoods and supplementsare the only sources forthis essential nutrient.
But scientists at OhioState University havefound that certain mole-cules that derive frombeta-carotene have anopposite effect in thebody: They actually blocksome actions of vitaminA, which is critical to hu-man vision, bone andskin health, metabolismand immune function.
Because these mole-cules derive from beta-carotene, researcherspredict that a largeamount of this antioxi-dant is accompanied by alarger amount of theseanti-vitamin-A molecules,as well.
Vitamin A provides itshealth benefits by acti-vating hundreds of genes.This means that if com-pounds contained in atypical source of the vita-min are actually loweringits activity instead of pro-moting its benefits, toomuch beta-carotenecould paradoxically re-sult in too little vitamin A.
The findings also mightexplain why, in a decades-old clinical trial, morepeople who were heavilysupplemented with beta-carotene ended up withlung cancer than did re-search participants whotook no beta-carotene atall. The trial was endedearly because of that un-expected outcome.
The scientists aren’trecommending againsteating foods high in beta-carotene, and they arecontinuing their studiesto determine what envi-ronmental and biologicalconditions are most likelyto lead to these mole-cules’ production.
“We determined thatthese compounds are infoods, they’re present un-der normal circum-stances, and they’re prettyroutinely found in bloodin humans, and thereforethey may represent a darkside of beta-carotene,”said Earl Harrison, Dean’sDistinguished Professor ofHuman Nutrition at OhioState and lead author ofthe study. “These materi-als definitely have anti-vi-tamin-A properties, andthey could basically dis-rupt or at least affect thewhole body metabolismand action of vitamin A.But we have to studythem further to know forsure.”
The study, partiallyfunded by Ohio State’sOhio Agricultural Re-search and DevelopmentCenter (OARDC), isscheduled for publicationin the May 4, 2012, issueof the Journal of Biologi-cal Chemistry.
Previous research hasalready established thatwhen beta-carotene ismetabolized, it is brokenin half by an enzyme,which produces two vita-min A molecules.
In this new study, theOhio State researchersshowed that some ofthese molecules are pro-duced when beta-carotene is broken in adifferent place byprocesses that are not yetfully understood and actto antagonize vitamin A.
Harrison, who has apartial appointment withOARDC, is an expert inthe study of antioxidantscalled carotenoids, whichgive certain fruits andvegetables their distinc-tive colors. Carotenoids’
antioxidant properties areassociated with protectingcells and regulating cellgrowth and death, all ofwhich play a role in mul-tiple disease processes.
For this work, he joinedforces with co-authorsRobert Curley, professorof medicinal chemistryand pharmacognosy, andSteven Schwartz, theHaas Chair in Food In-dustries and professor offood science and technol-ogy, both at Ohio State.Curley specializes in pro-ducing synthetic mole-cules in the pursuit ofdrug development.Schwartz is an expert atcarotenoid analysis, and,with Harrison, also is anOARDC researcher.
Curley manufactured aseries of beta-carotene-derived molecules in thelab that match those thatexist in nature. The re-searchers then exposedthese molecules to condi-tions mimicking their me-tabolism and action inthe body.
Of the 11 syntheticmolecules produced, fiveappeared to function asinhibitors of vitamin Aaction based on how theyinteracted with receptorsthat would normallylaunch the function of vi-tamin A molecules.
“The original idea wasthat maybe these com-pounds work the way vi-tamin A works, by activat-ing what are calledretinoic acid receptors.What we found was theydon’t activate those recep-tors. Instead, they inhibitactivation of the receptorby retinoic acid,” Curleysaid. “From a drug pointof view, vitamin A wouldbe called an agonist thatactivates a particularpathway, and these areantagonists. They com-pete for the site where theagonist binds, but theydon’t activate the site.They inhibit the activationthat would normally beexpected to occur.”
Once that role was de-
fined, the researcherssought to determine howprevalent these molecularcomponents might be inthe human body. Analyz-ing blood samples ob-tained from six healthyhuman volunteers, thescientists in the Schwartzlab found that some ofthese anti-vitamin-A mol-ecules were present inevery sample studied,suggesting that they are acommon product of beta-carotene metabolism.
The compounds alsohave been found previ-ously in cantaloupe andother orange-fleshed mel-ons, suggesting humansmight even absorb thesemolecules directly fromtheir diet.
Harrison noted that thefindings might explainthe outcome of a well-known clinical trial thathas left scientists puzzledfor years. In that trial,people at high risk forlung cancer -- smokersand asbestos workers --were given massive dosesof beta-carotene over along period of time in anattempt to lower thatrisk. The trial ended earlybecause more supple-mented participants de-veloped cancer than did
those who received nobeta-carotene. This out-come was reinforced byresults of a follow-up ani-mal study.
“Those trials are stillsending shockwaves 20years later to the scientif-ic community,” said Har-rison, also an investigatorin Ohio State’s Compre-hensive Cancer Center.“What we found providesa plausible explanation ofwhy larger amounts ofbeta-carotene might haveled to unexpected effectsin these trials.”
The research also hasimplications for efforts tobio-engineer staple cropsin developing countriesso they contain excessbeta-carotene, which isconsidered a sustainableway to provide these pop-ulations with pro-vitaminA. Existing projects in-clude production of gold-en rice in Asia, goldenmaize in South Americaand cassava in Africa.
“A concern is that ifyou engineer these cropsto have unusually highlevels of beta-carotene,they might also have highlevels of these com-pounds,” Harrison said.
The researchers arecontinuing to study these
compounds, includingwhether food processingor specific biologicalprocesses affect theirprevalence. Previousstudies have suggestedthat oxidative stress,which can result fromsmoking and air pollutionexposure, can lead tohigher production ofthese anti-vitamin-A mol-ecules, Harrison noted.
This research was sup-ported by the National In-stitutes of Health andOARDC. OARDC is the re-search arm of OhioState’s College of Food,Agricultural, and Envi-ronmental Sciences andis the largest universityagricultural bioscience re-search center in the U.S.

AdvantagesNothing says family
time quite like being to-gether in an RV and see-ing the country. The closequarters mean everyonegets to stick together andenjoy each others’ compa-ny. With the driver chart-ing his or her own course,many different sights can
be seen along the way,making an RV trip a trulycustomizable vacation.
Because there are nocheck-in or out times,travelers can spend as lit-tle or as much time asthey want at specificstops along the way. Also,renting a campsite is gen-erally much less expen-sive than staying in a ho-tel room. With RV travel,there’s no need to packand unpack from site tosite. And meals can beeaten out, or money issaved by cooking someitems right in the RV.
One of the main advan-tages of RV travel is there isalways a bathroom onhand. That means no rush-ing to find the next rest stopor gas station — an espe-cially valuable asset to par-ents of young children.
Many vacationers find
that taking driving vaca-tions allow them to slowdown and see the sitesthey would have missedhad they traveled via airor train. Exploring suchhidden gems is possiblefrom an RV.
DisadvantagesSome of the things that
make RV travel advanta-geous are the things thatothers would prefer toavoid. For example, theclose quarters can be-come irritating after along trip, as there are re-ally no places to escape toin an RV for privacy. RVscan also be cumbersometo drive and do not havethe same horsepower as avan or truck. This canmake trips seem like theyare crawling.
While some people lovethe unpredictability of RVtrips, others crave struc-
ture and the dependabili-ty of resort activities. RVtravel takes work — plan-ning stops, destinationsand all the little details.This is certainly not anuninterrupted vacationon a tropical coast.
RV travel saves moneyon hotel fees, but the costof gasoline can still makeit an expensive venture.And while an RV’s built-in kitchen makes it easyto save on meals, formany people dining outand letting others do thedishes is an integral partof a good vacation.
Comfort is anotherthing to consider. RVs dooffer more amenities thansleeping in a tent at acampsite. However, bedsare modest and there isthe expectation that peo-ple will be in close prox-imity. If a husband or fa-ther snores, there is littleescaping that noise.

It’s an important topic, as portionsizes have swelled (along with the average waist) overthe years.

Of course, your hand size may vary, so you mightwant to weigh or measure a few items after you do aninitial estimate. That way you will know if you canchoose a pork chop, for example, that’s slightly larger
than the palm of your hand, or if you should take onethat’s a bit smaller.
The “plate method” is another way to estimate por-tion sizes. All you do is imagine your dinner plate is di-vided inhalf, andthen oneside is di-vided inhalf again.Use the firsthalf forn o n -starchy veg-etables — broccoli, zucchini or salad, for example. Useone-fourth of the plate for lean meat, fish, poultry orother lean protein. And use one-fourth for starchy veg-etables, such as potatoes, corn or peas, or otherstarchy foods, including beans and such grains as riceor pasta.

It uses common house-hold objects to help estimate appropriate portion sizes(for example, a small potato is about the size of a com-puter mouse; 1.5 ounces of hard cheese is about thesize of three dice). within one year after thefirst vaccination andevery 3 years thereafter.
Prevention of Rabiescontinues to be an impor-tant public health con-cern. Rabies is an infec-tious disease that affectsthe nervous system ofhumans and other mam-mals. Rabies is most of-ten seen among wild ani-mals such as raccoons,bats, skunks and foxes.Cats, dogs, ferrets andlivestock can also get Ra-bies if they are not vacci-nated. The first sign ofRabies is usually achange in the animal’sbehavior. It may becomeunusually aggressive orunusually tame. Stagger-ing, convulsions, spitting,choking, frothing at themouth and paralysis aresometimes noted. The an-imal usually dies within
one week after showingsigns of Rabies.
