Hoppin' John Stew With White Cheddar Cheese Grits

INGREDIENTS

1 tablespoon butter 1 cup chopped smoked ham 1 medium onion, chopped 2 (15-oz.) cans black-eyed peas, drained and rinsed 2 (10-oz.) cans diced tomatoes with green chiles, undrained 1 cup frozen corn kernels 1 teaspoon sugar 1/4 cup chopped fresh cilantro White Cheddar Cheese Grits

METHOD

Melt butter in a Dutch oven over medium heat. Add ham and onion, and sauté 3 to 5 minutes or until onion is tender. Stir in black-eyed peas and next 3 ingredients. Cover, reduce heat to low, and cook, stirring occasionally, 15 minutes. Remove from heat, and stir in cilantro. Serve immediately over White Cheddar Cheese Grits.

A new and exciting educational program will be introduced early in 2014 for local adults who are eager to continue learning, improving their life skills and meeting new people who share their interests. It is called the Lakelands Lifelong Learning Network (LLLN), and its sponsors are

Lander University, Piedmont Technical College and Wesley Commons. Lifelong learning institutes, which date back to the late 1970s, have grown in popularity in South Carolina and across the country. Dave Lorenzatti, chair of the LLLN Advisory Council, described it as a member-managed educational enrichment program that will offer courses in a relaxed, informal setting at locations in Greenwood area. Courses will cover a variety of subjects including financial matters for seniors, planning for health care decisions, an Alzheimer seminar for caregivers and professionals, using the tools of social media, and more. Courses could range from one-day presentations to classes that might stretch over a period of days or weeks depending on the topics. Members will be encouraged to suggest courses that they would enjoy. There is an annual $30 membership fee that entitles registrants to enroll in an unlimited number of courses each year. Some will be available at no charge, while there will be reasonable fees for others. Courses and schedules will be published on a regular basis. LLLN is also looking for individuals who would like to share their knowledge as facilitators and teach courses that would be of interest to the membership.
