VIRGO - August 23 - September 22 Fun facts about the 6th sign of the zodiac...
Virgo is the sixth sign of the zodiac. The characteristics of a
Virgo are an emphasis on rationality, research, and logic. They
make excellent debaters because their points are always thor-
oughly thought out and well-researched. The strength of a Virgo
lies in their laser focus, and ability to make careful and calculated
choices in life. Oftentimes, a Virgo will know what they want to
do, but still research their options thoroughly before deciding
anything. Virgos like to be perfect: in extreme cases, this can be
displayed as obsessive compulsive disorder (don’t rearrange their
record collection, or forget to wash the dishes!) In other ways,
these characteristics help Virgos excel in research-heavy careers,
like a lawyer, doctor, or scientist!

Our September Tee Times... Are new September golf times for the ladies are Wednesdays at 9:00am and on
Saturdays at 8:30am.
Ladie’s Scramble... On Wednesday, September 24th, there will be a scramble for 9 and 18 holers
together, followed by a luncheon. This is a fun event and we hope to have a
great turn out!
Inter Club... This month’s Inter Club will be held on Thursday, September 11th at Persim-
mon Hill. Sign up in the Pro Shop and drop off your check for $32.00 which
includes lunch, golf & prizes.
Club Championship... The Club Championship is on September 6th and 7th, at 9:00am. All are wel-
come to sign up. There will be gross and net winners….
Men’s Member-Guest Ladies Luncheon... If your husband is participating in the Member-Guest, there is going to be a
wine tasting luncheon at the Clubhouse on Friday, September 19th. Please

Sadie Hawkins Tournament & Dinner
Saturday, October 18th
This year’s Sadie Hawkins Tournament and Dinner will be held on Saturday, October 18th. Your $20 entry fee will cover your tournament entry and the dinner immediately following the tournament. Make sure your ready to take your couple’s picture on the hay bales, too! This tournament is sure to be a fun event!!!

Calvin’s Kitchen Fabulous Dishes for Football Season!

Italian Stuffed Jalapenos
15 jalapenos, preferably red, cut in 1/2, seeded and deveined
1 Tbsp canola oil
2 lbs. mild Italian sausage, casings removed
1/4 cup minced red onion
1/4 cup mined red bell pepper
3 Tbsp minced garlic
2 cups mascarpone or cream cheese
1/4 cup grated parmesan cheese, plus more for garnish
Salt and Pepper
1/2 cup shredded mozzarella cheese
Rummy Pineapple Salsa
1/2 tsp whole coriander seeds
1/2 tsp whole cumin seeds
1/2 cup roughly chopped cilantro
1/4 cup dark rum
1 green jalapeno, finely diced (seeded depending on desired spiciness)
1/2 medium white onion, finely diced
1/2 red bell pepper, stemmed, seeded and finely diced
1/2 pineapple, peeled, cored and cut into 1/4-inch chunks
Juice and zest of 1 lime
Directions: Heat oven to 350 degrees F, and set rack in the middle of the oven
Place jalapenos on a sheet tray and roast for 10 minutes. Remove from oven and let cool. Turn broiler on
medium.
Heat the oil in a medium sauté pan. Add the sausage and cook for 5-7 minutes. Add the onion, peppers,
and garlic and cook to soften for about 5 minutes. Cool to room temperature, then add the mascarpone,
and parmesan cheeses. Mix thoroughly and season with salt & pepper.
Stuff each jalapeno half with about 1 tablespoon of mixture and top with 1/2 teaspoon of mozzarella
cheese.
Place the sheet tray of jalapenos in the oven and broil until mozzarella cheese melts.
Directions: Add the coriander and cumin to a small skillet and heat over medium heat. Swirl until the seeds are golden
and slightly fragrant, about 3 minutes. Let cools slightly, and finely grind in a spice grinder.
Combine the spices with the cilantro, rum, jalapeno, onions, red pepper, pineapple, lime juice and zest, in me-
dium bowl. Season with salt & pepper. Refrigerate until chilled, at least 1 hour or overnight.
Serve with tortilla chips.

Lakelands Lifelong Learning Network
What is LLLN? LLLN is a not-for-profit, member-driven and member-managed organization that enriches the lives of its members by providing educational experiences for the Lakelands communities in the Upstate region of South Carolina. We offer non-credit, non-degree educational programs and special cultural and social events. LLLN is a collaborative effort of : Lander University, Wesley Commons, and Piedmont Technical College. How Do I Join? To become a member of LLLN, you need to register and pay the annual membership dues of $30. The dues entitle you to enroll in an unlimited number of courses during the fiscal year.
