French samphire is the only option at the moment (the usual grower in Israel has had his crop burnt by the excessive heat out there) but the French is quite good at the moment. If you are looking for a mashing and general use potato , you should use the local Sandgate Wilja from Flookburgh, and if its a red skin you're after go for the Rooster. If it’s small potatoes you're after (mid potatoes), be careful as we have both washed and dirty - the washed are Charlottes, the dirty are currently from Voses and the variety is Maris Peer and strictly speaking these are scraping potatoes - they will be dirty and have flaky skins that should come off quite easily when washed. We all take carrots pretty much for granted but we have quite a selection available for you. These range from Wrights best carrots to a large grade for prepping, we even have a really rough grade that we sell to stables for horses. But we don't stop there, there's also baby Chantenay carrots and baby French carrots , Oh and last but not least there's freshly dug bunched carrots with the green tops still on. At the moment the Pak Choi is from a local grower and is a really tender veg and benefits from being eaten as fresh as possible, which is helped by it being collected from his farm every day so it is as fresh as it can be. We anticipate that all Lancashire veg will be cheap next week, cauliflowers, broccoli, cabbage and yes .. Brussel sprouts. Fruit The raspberries continue to be amazing, they are the size of strawberries! The price is very low for that sort of quality and the grower should continue to have good supply next week. The same goes for his Blackberries too. Blueberry sales went mad this week - a combination of us having top quality English product and a healthy demand from all sectors of the trade. We've spoken to the grower this morning and he will have a reduced quality for next week and wants to increase the price. If you are after an English apple the Holstein Cox and Coxes Orange Pippin, grown in Cheshire, should be available next week Salads Every year we work closely with Mr. Daza from Almeria in Spain. He is regarded as the top grower of peppers, aubergines and cucumbers in the whole of Spain. We will be switching soon from the Dutch. McClure’s Recipes of the Month

Cream of Locally Smoked Chicken & Celeriac Soup with Truffle Oil &Thyme

Serves 8

INGREDIENTS 1x Large Celeriac 2x Taste of the Lakes Smoked Chicken Breasts 1x Large Onion 2x Pints of Chicken Stock 1/2 x Pint Double Cream Thyme Sprigs Truffle Oil

Method Peel and chop the celeriac andonion, place in a pan & coverwith the stock, bring to theboil

Take the skin off the smokedchicken breasts and chop, addto the soup

When the celeriac is soft addthe double cream and bring tothe boil

Place in blender until smooth Garnish with the thyme sprigsand truffle oil

Serve with Bridor Ciabattabaked in the oven Great for a cold day

Method Slice the sweet potato and cut into discs with a smallcutter

Cook the sweet potato in boiling water until almostcooked, then put it into cold water and dry on a towel

Cook the baby beetroot in water, 1/2 of the red wine anda little sugar

Shred the Savoy cabbage, blanch in boiling water, refreshand then dry

Dice the pancetta & then cook in a little butter

In a hot dry pan cook the Duck breasts (skin side down)and season

Reduce the rest of the red wine with the chutney and addthe veal demi glace

When the duck is golden brown, turn over and cook onlow for a couple of minutes, then turn off and rest

Empty the fat out of the pan and fry the sweet potatountil golden

Add the cabbage to the pancetta

Pass the sauce through a sieve and keep warm

When the baby beetroot is cooked, peel and season

Put the cabbage on the plate with 3 sweet potato discsand put 3 baby beetroot on top

Carve the duck and place on the cabbage

Pour the sauce over the duck Enjoy

Pan Fried Duck Breast with SweetPotato, Baby Beetroot, Savoy Cabbagewith Pancetta & a Westmorland Jus

Serves 4

INGREDIENTS 4x Taste of the Lakes Duck Breasts 2 x Large Sweet Potatoes 1/2 x Savoy Cabbage 6 x Baby Beetroot1/4 Pint Red Wine 2x Desert Spoons of Hawkshead Westmorland Chutney 4x Pieces of Sliced Pancetta 1/2 pint Essential Cuisine Veal Demi Glace
