Wherever possible, we deliver by overnight courier but a few addresses take two days to reach. Should yours be one of these "two-day" addresses we'll let you know when you place your order. In either case we send your foods chilled in heavily insulated containers with ice packs when necessary.

Finally, the food you will receive is fresh, not frozen, so you can safely freeze it yourself and enjoy it when you are ready.

Honey & Mustard Ham GlazeWe’ve taken all our experience of glazing hams and put it in a jar so

you can enjoy a perfectly glazed ham with no fuss or effort. To use,

simply brush on the ham and pop in the oven for ten minutes or so.

Wiltshire Ham - On The Bone COOKED AND READY TO EAT - UNGLAZED

For many years our most popular ham, the Wiltshire is

cured by immersion in brine for several days, which gives it

a wonderfully moist (but never wet!) texture. The addition of

unrefined brown sugar to the recipe adds a subtle sweetness to

this mild and delicious ham.

The ham is unglazed ready for you to dress with

breadcrumbs (not supplied) or if you prefer a glazed ham,

our Honey & Mustard Ham Glaze - see opposite page - is

By popular request, we bring you Honey & Mustard Glazed Ham. Succulent, tender

traditionally Wiltshire cured ham covered in lashings of our own recipe glaze and

finished off in the oven. I recommend that you freshen up the glaze by popping the

entire ham in a reasonably hot oven (180°C in ours but yours may be different) for

five minutes or so. If you have a half ham, please cover the open face with a sheet of

baking parchment to stop the heat drying out the first slice.

SHROPSHIRE BLACK HAM ON THE BONE

Shropshire Black Ham - On The BoneCOOKED AND READY TO EAT - UNGLAZED

Like the York, this is a dry cured ham. What sets it apart, however,

and gives the ham its distinctive black rind, is a fortnight spent

wallowing in a special marinade of molasses, juniper and spices. The

hams are left to mature for three months, during which time they

develop their distinctive, salty, sweet flavour. A Gold medal winner at

the Great Taste Awards.

The Shropshire Black Ham StoryThis most flavoursome of hams is the direct descendant of the historic

Bradenham Ham. The Bradenham didn’t begin its life in Shropshire,

or Wiltshire for that matter; it was invented by Lord Bradenham in

1781, and migrated from Bradenham Manor in Buckinghamshire

in the 19th Century. The story is that the butler there fell out with

his employer, moved to Wiltshire and took the recipe with him. He

set up the Bradenham Ham Company in 1781, and continued to

manufacture on that site for almost 100 years.

Sadly, the unstoppable march of big business took its toll, acquisition

after acquisition took place, and before long the manufacture of so-

called Bradenhams was a very unimportant part of a big corporation.

Eventually, the management decided to stop production.

Fortunately we were able to recreate the recipe and although we are unable to use the name "Bradenham Ham", this wonderful ham lives on as our Shropshire Black.

YORK HAM ON THE BONE

The Quintessential English Ham.We select only the finest legs of British pork and after trimming

them, we apply a measure of saltpetre to the cut face of the leg.

Next, we cover the ham with a generous layer of sea salt. We do this

by hand because every ham is a little different and we adjust the

amount of salt used accordingly. We re-apply the salt several times

then hang the hams for three months or more to give Mother Nature

time to do her wonderful work of dry-curing.

York Ham - On The BoneCOOKED AND READY TO EAT - UNGLAZED

Dry cured and matured over a period of three months, it develops a

wonderful depth of flavour, reminiscent of ham from days gone by. The dry

curing process means that the York Ham is somewhat drier and saltier than

the Wiltshire. A Gold Medal winner at the Great Taste Awards.

At Dukeshill we love to make life easy for you. However we are well aware that for some of you a ham

isn’t a ham unless you’ve cooked it yourself! All our main types of ham are available uncooked. Please

remember that the York and Shropshire Black are dry-cured and will need to be soaked for 24-48 hours

prior to cooking.

Before ordering a whole ham, do please make sure that you have something big enough to cook it in! If

not, please ask for a free cooking bag. All our uncooked hams come with cooking instructions.

Wiltshire Cured Back BaconOur award-winning traditional Wiltshire Cure recipe dates

back to the 1840s and is a "wet-cure" which means that

the bacon is immersed in a liquid brine (a salt and saltpetre

solution containing useful salt tolerant bacteria) for 3 to 4

days. This is a much milder form of curing than dry cure

and does not require so much salt. We do not pump liquid

into the bacon to speed up the process as happens with so

many modern bacons, rather we take our time - as with

everything we produce - and the result is a delight; naturally

moist, tender and packed with flavour. Rindless.

Perl Wen Organic BrieIn the heart of West Wales, Welsh-speaking Gwynfor and

Thelma Adams and their son Carwyn produce this wonderful

soft rind brie-type cheese made with pasteurised organic cow's

milk and vegetarian rennet. Rich, very creamy and full of

flavour. Suitable for vegetarians.

Colston Bassett StiltonSmooth and creamy with distinctive blue veins which become

more strongly defined as the cheese matures, Stilton has deep

and complex flavours enjoyed by cheese lovers worldwide.

Colston Bassett is certainly one of the best producers of

this magnificent cheese. Their dairy is in the Vale of Belvoir

where they have been producing fine Stiltons for nearly

a century. An excellent dessert cheese. Produced with

pasteurised cow's milk. Suitable for vegetarians.

Montgomery’s CheddarOften considered to be the standard-bearer of English farmhouse

cheddars. Made in North Cadbury, in the rustic countryside of

southwest England, with unpasteurised cow's milk produced on

the Montgomery family’s 500 year old farm. Aged for 13 months

or more, Jamie Montgomery’s cheddar has a golden interior,

occasional blue veining and a satisfying bite that delivers a perfect

balance and long, lingering finish. In my humble opinion, this

is the tastiest, most satisfying cheddar you’ll find anywhere and I

heartily recommend it to you. Not suitable for vegetarians.

Craster KippersConsidered by many to be the finest kippers in the world and produced only in the small fishing village of Craster in Northumberland. Easter Eggs from The Chocolate SocietyCreated especially for Dukeshill customers by chocolatier Al

Garnsworthy at The Chocolate Society using fine Valrhona

chocolate couverture. Al makes his jewel of an Easter

egg entirely by hand and each egg is a masterpiece of the

chocolatier's art. Choose between Dark (70% cocoa content);

Milk (35% cocoa content); or Blonde (32% cocoa butter) eggs.

The accompanying truffles are either... 64% Dark Madagascan

Ganache encased in a thin dark chocolate shell and rolled in Valrhona

cocoa powder; 40% Milk Chocolate Ganache heightened by Tahitian

Vanilla bean encased in a thin milk chocolate shell; or a caramelised

Chrystal's Scottish ShortbreadTraditional Scottish shortbread, hand made - by Chrystal, of course

- to a family recipe at the southern end of Loch Lomond using the

finest possible ingredients and packed in a very nifty tin.

When we first found Chrystal's shortbread at a farmers market we

thought it was probably the best shortbread we had ever tasted and

with considerable further tasting under our belts, we are certain it is

Steaming Good PuddingsReminiscent of those steam-cooked puddings my mother used

to make, these puddings were recreated by Sarah in our own

kitchen using only the very best ingredients and absolutely

nothing artificial. We use only English butter, free-range eggs,

Belgian chocolate and lots of time and care when making these

puds. By the way, good news for any vegetarians amongst us, we

don’t use suet. Ready-cooked, all you need to do is to steam or

microwave them. By the way, these puddings will keep in your

pantry or cool cupboard for up to four weeks and will freeze

beautifully. All our puddings will serve between four and six,

depending on appetites.

hams decorated in various ways. Unless specifically stated

otherwise, your ham will arrive unglazed ready for you to

dress with breadcrumbs (not supplied) or glaze as you prefer.

All our products are sent to you fresh and securely

packed by next working day delivery, except for smaller

items and those going to more remote destinations.

Delivery is not guaranteed for any particular time during

the day. Please let us know as soon as possible if your

order has not arrived.

Smaller items may be sent by 1st Class Post and although

next day delivery is usual, it cannot be guaranteed.

If your order is for a specific date, please arrange for delivery

at least a few days before you need it. Remember, all our hams

keep for at least three weeks after delivery; it is far better that it

sits for a day or two in your refrigerator than not arrive in time!

If we are unable to deliver on the specified day due to

adverse weather conditions or other circumstances beyond

our control, we will endeavour to deliver at the next earliest

opportunity and our liability is limited to this.
