Dukeshill is a family company based in Shropshire and we put care and craft into producing traditionally cured British hams. At Dukeshill we only use ethically produced British pork for our meat products, and work closely with local farmers who share our commitment to sustainable and ethical farming. Our team is highly skilled with many years of experience using authentic, traditional recipes so you can be sure our products are full of flavour. We never add artificial flavourings or colourings and we don't add water to bulk up our meats. We always look for flavour and texture rather than speed and yield, so we give our hams time to cure properly. We never take short cuts working by hand, the old-fashioned way, because we know that our produce tastes better when we do. We produce our hams and other fine foods in small batches because it is quality, not quantity, that matters to us.

Dear Dukeshill Customer

Welcome to another Christmas season with your friends at Dukeshill. I'll be frank, with Christmas Day falling on a Wednesday this year, it is going to be tricky for us to get all of your orders to you as close to the big day as we would like. We've learned from past experience that the courier service on Christmas Eve is less robust than on other days so we can't risk deliveries on the Tuesday. To be on the safe side, this means that we will be aiming to have completed all of our deliveries to you by Friday 20th December. As last year, to help us give you the best service possible, I'd like to ask you to do two things:

Firstly, if you are ordering a ham and other long-life products, please be prepared to accept delivery nice and early. It will be better for your ham to be in your refrigerator than ours and will last well through the New Year and beyond.

Secondly, if you want to enjoy some of the shorter shelf life products we offer over the Christmas festivities, please be prepared to pop them in the freezer on receipt and get them out the day before you need them. This way you'll be eating them as fresh as they can be. Bear in mind that we send out fresh not frozen food so it is fine for you to freeze it.

Before I let you get on with your browsing, let me just mention that you'll find all of your favourites in the pages that follow, plus quite a few new foods that we hope you'll like just as much. Honey & Mustard Ham GlazeWe’ve taken all our experience of glazing hams and put it in a jar so you can enjoy a perfectly

glazed ham with no fuss or effort. To use, simply brush on the ham and pop in the oven for

ten minutes or so. The jar contains enough to glaze one large ham or two smaller ones.

This is a question we are frequently asked and I must say it is rather tricky to give you a definitive answer because so much

depends on the skill and generosity of the carver. As a rule of thumb, we suggest that you should get the following

cured by immersion in brine for several days, which gives it

Sliced HamAs well as being the ideal sized portions for a meal for two, our

sliced ham packs are a great way to try our range before buying

a full-size ham. The sliced ham we offer is sliced from our own

traditionally cured hams. There is no industrial processing and

shaping of any kind involved. All you get is real ham, the way

How we produce Dukeshill York Ham - the quintessential English Ham.We select only the finest legs of British pork and after trimming them, we apply a measure of saltpetre to the cut face of the leg.

Next, we cover the ham with a generous layer of sea salt. We do this by hand because every ham is a little different and we adjust the amount of salt used accordingly.

We re-apply the salt several times then hang the hams for three months or more to give Mother Nature time to do her wonderful work of dry-curing.

York Ham - On The BoneCOOKED AND READY TO EAT - UNGLAZED

Dry cured and matured over a period of three months, it

develops a wonderful depth of flavour, reminiscent of ham from

days gone by. The dry curing process means that the York Ham

is somewhat drier and saltier than the Wiltshire. A Gold Medal winner at the Great Taste Awards.

Shropshire Black Ham - On The BoneCOOKED AND READY TO EAT - UNGLAZED

Like the York, this is a dry cured ham. What sets it apart, however, and

gives the ham its distinctive black rind, is a fortnight spent wallowing in

a special marinade of molasses, juniper and spices. The hams are left to

mature for three months, during which time they develop their distinctive,

salty, sweet flavour. A Gold medal winner at the Great Taste Awards.

The Shropshire Black Ham StoryThis most flavoursome of hams is the direct descendant of the historic Bradenham Ham. The Bradenham didn’t begin its life in Shropshire, or Wiltshire for that matter; it was invented by Lord Bradenham in 1781, and migrated from Bradenham Manor in Buckinghamshire in the 19th Century. The story is that the butler there fell out with his employer, moved to Wiltshire and took the recipe with him. He set up the Bradenham Ham Company in 1781, and continued to manufacture on that site for almost 100 years.

Sadly, the unstoppable march of big business took its toll, acquisition after acquisition took place, and before long the manufacture of so-called Bradenhams was a very unimportant part of a big corporation. Eventually, the management decided to stop production.

Fortunately we were able to recreate the recipe and although we are unable to use the name "Bradenham Ham", this wonderful ham lives on as our Shropshire Black.

This is the finest of Spanish hams - Pata Negra from a gold-medal winning supplier from

Guijuelo near Salamanca. The characteristic black-foot pigs graze freely and are fed on acorns.

The ham is dry cured for 26-30 months. It is this combination that gives this wonderful

gourmet treat its nutty flavour and melt-in-the-mouth quality. Order on its own or together

with a traditional jamonero ham stand and flexible ham knife.

Sliced Ibérico HamIbérico or Pata Negra (Black Foot) pigs are descended from wild Iberian boar and roam the

great oak forests of the Dehesas in southwest Spain. Its the acorns in their diet that gives the

meat its characteristically nutty flavour and melt-in-the-mouth quality. Sliced very thin for us

by Bernardo Hernandez in Guijuelo. A simply wonderful taste sensation.

How many will your ham feed? As a rule of thumb, we normally suggest that a large whole ham

will give sixty to seventy slices, a half ham about thirty. For a big

occasion, it’s often best to over-cater slightly, as nobody likes to run

out, and whatever is left will give you some wonderful meals for

several days afterwards!

Glazing your ham Most of our hams are delivered unglazed and the traditional way to

dress an unglazed ham is with breadcrumbs - ready-made are fine but

home-produced are even better. This is the preferred way to dress a York

Ham as we do not recommend oven-glazing a York. If you prefer to glaze

a Wiltshire ham, the easiest way is to use our Ham Glaze but there are

several other ways you can do it.

You can glaze the cooked hams from hot or from cold. There are no strict

rules about what you should use - try mixing wholegrain mustard with

some honey or Demerara sugar, or even coat it in marmalade or chutney

– as long as it contains something sugary which will caramelise to a rich

golden colour. You may also choose to score a diamond pattern into the

fat, and decorate the diamonds with cloves.

The hams can be successfully glazed in any type of oven, preheated to

at least 200°C or 400°F or the Roasting Oven of an Aga. The key is

vigilance – it will probably take between 10 and 15 minutes, but a few

minutes can make all the difference between golden and charred!

Keeping your hamOn receipt of your ham, remove it from the box and store in the fridge.

Leave the vacuum pack intact until you are ready to use it. Once open,

keep the ham covered, either in one of our ham storage bags (see page

8), or with greaseproof paper to prevent the cut surface from drying out

between carvings.

Never cover your ham with polythene or cling film, as this will encourage

the development of mould.

Reheating a cooked hamAll of our cooked hams can be reheated to produce an excellent hot meal.

Put the ham in a roasting tray with a little liquid (stock, cider, wine or

even water) to keep it moist, and seal tightly with a tent of foil. The ham

needs to be heated in a hot steamy atmosphere.

Getting the very bestfrom your Dukeshill ham.

Bake at approximately 180°C or 350°F until heated sufficiently. Allow

two hours for a whole ham to be heated all the way through.

Freezing your ham All our hams and bacon freeze well for up to three months. Ensure they

are tightly sealed in an airtight bag to eliminate air. Defrost thoroughly in

a refrigerator before use.

Carving your hamIf you have a boneless ham or joint then carving is as easy as slicing a

loaf of bread. For bone-in ham carving need not be a worry as long as

you remember a few basic rules!

First and foremost, for safety, always ensure that the ham is held securely

when carving, and use a good, sharp carving knife.

The carver’s aim is to cut the ham into attractive slices, giving an even

distribution of fat and lean. It is a good idea to take slices from the

shank end (a), cutting down perpendicular to the bone, and from the

flank (bottom of the cushion end) of the ham.

The shank slice (a) is very lean, the flank (b & d) gives a fattier slice.

Continue cutting alternate slices from each and finish on the middle

section of the ham (c), the crown.

Important informationabout your Christmas delivery.

Christmas falls on a Wednesday this year which means that many of our Christmas deliveries will take place between Wednesday 18th December and Friday 20th December.

Most importantly, your ham delivered in the two weeks before Christmas will come to you with plenty of shelf life and will easily see you through Christmas, the New Year and beyond. Don't forget, it is much better for your ham to be safely in your refrigerator nice and early rather than at the mercy of the weather just before Christmas.

Throughout the brochure there are some products that have a relatively short shelf life and we recommend that you only order these for your Christmas table if you are happy to pop them in the freezer on arrival. I promise you that all of these products will not deteriorate in the slightest by being frozen by you and will in fact be "fresher" when defrosted than if they had hung around in your refrigerator for four or five days before being opened.

These limited shelf-life products are clearly marked in this brochure with this symbol so you know to freeze them on receipt if you want them to be fresh for Christmas Day.

Wiltshire Cured Back BaconOur award-winning traditional Wiltshire Cure recipe dates

back to the 1840s and is a "wet-cure" which means that

the bacon is immersed in a liquid brine (a salt and saltpetre

solution containing useful salt tolerant bacteria) for 3 to 4

days. This is a much milder form of curing than dry cure

and does not require so much salt. We do not pump liquid

into the bacon to speed up the process as happens with so

many modern bacons, rather we take our time - as with

everything we produce - and the result is a delight; naturally

Why are Copas Turkeys so special?

The Copas family have been producing the finest quality Christmas turkeys at their farm

in Berkshire for more than 50 years. They maintain the highest welfare standards for their

turkeys and use traditional, centuries-old methods.

Unlike some ‘free range’ turkeys that may be outside for a matter of weeks, their free range

bronze birds are outside every day, from about 6 weeks old. They are free to stroll around

glorious grass meadows, taking in the fresh air and countryside every day.

Since turkeys scare easily, natural cover is also provided in the form of maize, sunflowers and,

of course, the famous cherry trees in their orchard in Cookham. It is there that their four-

legged chaperones (turkey dogs) escort many of the free range turkeys back to their evening

residences each night at dusk.

It is an all natural product, steeped in tradition, and used in

a wide range of modern cuisine.

By law only hams produced and cured in the hills around

Parma in Italy may become Parma Hams; the unique

conditions of this region make it possible to produce a very

Artisan PâtésOur Smoked Salmon Pâté is a beautifully light, creamy

pâté, with a good strong flavour. Particularly good with

Pheasant Terrine is a seriously addictive dish made from

wild pheasants cooked in port and marinated in juniper

berries and red wine vinegar. Great with your favourite

Important information about your order � As you will see throughout the brochure, we show our hams decorated in various

ways. Unless specifically stated otherwise, your ham will arrive unglazed ready for you to dress with breadcrumbs (not supplied) or glaze as you prefer.

� The photographs throughout this brochure show Serving Suggestions.

� All our products are sent to you fresh and securely packed by next working day delivery, except for smaller items and those going to more remote destinations. Delivery is not guaranteed for any particular time during the day. Please let us know as soon as possible if your order has not arrived.

� Smaller items are sent by 1st Class Post and although next day delivery is usual, it cannot be guaranteed particularly as Christmas approaches.

� If your order is for a specific date, please arrange for delivery at least a few days before you need it. Remember, all our hams keep for at least three weeks after delivery; it is far better that it sit for a day or two in your refrigerator than not arrive in time!

� If we are unable to deliver on the specified day due to adverse weather conditions or other circumstances beyond our control, we will endeavour to deliver at the next earliest opportunity and our liability is limited to this. Please bear in mind that if there are heavy snow falls, delivery drivers may not be able to get through to you until the roads are cleared and that heavy snows may result in backlogs at the delivery depots.

Calvisius Tradition CaviarTradition Caviar comes from the White Sturgeon, a species

from the Pacific coasts of North American between Alaska

and Baja, California. In addition to providing a lean, high

protein meat, its biggest value still remains connected to

the remarkable production of large eggs, bigger than 3

millimeters, with coloring varying from dark grey to black.

The taste is particularly delicate and elegant. It requires

about 11 years of the sturgeon life cycle.We are offering

Calvisius Oscietra CaviarOscietra Caviar comes from the Sturgeon of the same

name, also known as Russian Sturgeon (an ancient

species originally native to the Black Sea, the Caspian Sea

and the Azov Sea). It is a medium size fish thatprovides a

poppy and slightly nutty caviar with coloring that ranges

from dark brown to beige. Many consider this to be the

most refined caviar. Its eggs are medium sized (between

2.6 and 2.9 millimeters). It requires a 9-11 year life cycle.

Calvisius Malossol CaviarThis wonderful white sturgeon caviar is low in salt

and with a naturally heightened aroma and flavour.

Delicious in fact! From the semi-natural fish farms in

Brescia, Malossol Caviar is harvested all year round,

unlike wild caviar, and therefore requires a very light

salting of only 3% which gives a lighter, fresher

taste which will be much appreciated by the most
