Resident Spotlight:ETHEL ALGAR

Our Resident Spotlight shines thismonth on someone who will beobserving a special milestone in May!Ethel A. will be celebrating her 101st(wow!!!) birthday on May 17th!

Born and raised in Toronto, Ethelwas the middle daughter(sandwiched between Dorothy andIrene) of English born parents Johnand Ethel. Both her mother andfather were at home in their kitchen,becoming incredible cooks andteaching their daughters howto cook.

While inspecting walkie-talkiesduring the war, Ethel met AldonAlgar, a draftsman. At the age of 32,they tied the knot and made theirway to California to escape the coldCanadian weather. When Aldon andEthel retired in 1980, they becameUS citizens and took up travelingcross country, logging over 175,000miles on their trailer. Eventually the

snowbirds from Canada made oursmall town their permanent home.They were together for 56 yearsuntil Aldon sadly passed away.

Ms. Ethel loves living here,having moved in on April 22, 2010.She said that you meet the nicestpeople here. But coming from afamily of absolutely amazing cooks,there is one thing that she misses...cooking! Congratulations andHappy 101st Birthday, Ms.Ethel...we love you!

Mexican Food FavoritesWhether throwing a fiesta or

just having an everyday meal,many say “Olé!” to Mexican fare.Tempt your taste buds with some ofthese favorites.

Salsa. The Aztecs are credited withmixing chopped tomatoes, chilies andother ingredients to create earlyversions of this sauce that is servedas a condiment or with tortilla chips asan appetizer.

Tacos. Consuming more than4 billion a year, America is loco(“crazy”) for tacos! This crunchy orsoft folded tortilla staple—usually filledwith meat, cheese, lettuce andtomatoes—evolved from a variety ofrecipes brought to the U.S. byMexican immigrants beginning in theearly 20th century.

Enchiladas. Translating to“chili-filled,” the rolled tortilla of anenchilada is traditionally stuffed withmeat and cheese, then covered in aspicy red, green or cream sauce.

Tamales. The tamale dates backas far as 7,000 B.C., and wascreated as a portable food that couldbe prepared ahead of time. Thesepackets of savory or sweet fillingsinside cornmeal dough are wrappedin corn husks or banana leavesbefore steaming.

Employee Spotlight:Undrea Hudson

When you leave the dining roomwith that well-known “warm puppy”feeling (full-bellied, contented andready for a nap), one of the peopleresponsible for that feeling is our MayEmployee Spotlight...Undrea Hudson!

An employee at American Housesince September 28, 2015, Undreawas born in Dade City and grew upnot far from there in Lacoochee. Shehas three sisters and according to her,“a lot of brothers.”

With her love of cooking, it wasonly natural for her to attend JohnsonWales University in Miami in 1999,where she studied Culinary Arts.

Besides cooking, Undrea enjoysspending time with her sons andbeing adventurous (I can seeskydiving lessons in her future, as ifcooking for over 100 people isn’tadventurous enough!).

She enjoys working here becauseshe has a part in the well-being andhappiness of the residents, which isimportant to her.

Just like her name, Undrea is a veryunique person from her very big heartto her big, gold smile. We considerourselves blessed to work alongsidesomeone like her. Congratulations,Undrea... YOU ROCK!
