Simply breaking open will solve the problem. The deep interior should be OK. If you abhor such violence, just slice away one strip of the green toward the stem and stop about one inch from the stem, as the concentration is likely to be there.

Wash off the knife blade, then repeat peeling from flower end to stem end until it is peeled. Rinse the knife again and cut up as needed. The offending chemical should have disappeared.

The molecule responsible for the action is lawsone, otherwise known as henotannic acid (2-hydroxy-1,4-naphthoquinone).

The acidic functionality of lemon juice serves to destabilize the plant’s cellulose while allowing the lawsone molecules to remain intact. The lemon juice attacks the lawsone directly to create a unified acidic substance.

Lawsone, a relatively small molecule, migrates to the site of action and undergoes a Michaels’ reaction. This reaction happens quite quickly.
