Hi again! It is coming to that time of year where the weather is
getting cooler. Wouldnt it be nice to be sipping on something warm?
A glass of cognac would do the trick! Now a lot of people may ask,
what is cognac? But if you mention XO or VSOP, it may just come to
mind that they are both type of cognacs. Cognac is an alcohol in
the spirit category that is derived from specialty grapes and so
there are many varieties, grades and brands.
Cognac is a specialised type of brandy, where all cognacs can be
classified as a brandy, but not all brandy can be classified as a
cognac. The process to make cognac has to be fermented in a very
particular way. It has to be stored in oak barrels during the time
before bottling. In France, there are only a handful of authorised
provinces that are able to produce cognac. The zones are; Grade
Champagne, Fine Champagne, Petite Champagne, Borderie, Fine Bois,
Bon Bois, Bois ordinaries and Bois de Terrior. I personally like
the cognac from the Grande Champagne area. Although it is a light
cognac, it still has full taste and aromatic flavours.
Distilling and fermenting are the two main steps in the pro-cess
to produce such a fine spirit. The grapes need to be distilled
twice before the fermenting process can occur. Only those who are
specialised and highly experienced will be able to distil the
grapes as this is where all the flavours come from and the process
does take quite some time. From there, they are fermented in large
oak barrels over many years until the alcohol volume reaches 40%.
Like all wines, the longer the liquor has aged in the oak barrels,
the better the scent and taste as a final product.

After our VR Thai team has taken you to Newcastle, this time we
take you once again to the north to show you Nel-son Bay and Shoal
Bay. They are both famous bays for Port Stephens. To travel by car,
it takes about 2.5 hours going on the Pacific Highway and
continuing onto New England Highway. Other alternative is travel by
train which can be caught at Central Station to Newcastle and then
a bus to Port Stephens. Travel arrangements can be made simply via

Both sides of the way to Nelson Bay are surrounded by a national
park. First impression to Nelson Bay was that it was very peaceful
and there were plenty of yachts at the pier. The activities to do
in this area are surfing, scuba diving and fishing but the main
attraction that brings tourists here are whale watching.
The activity that we would recommend to do at Shoal Bay is to go
a cycling adventure. While cycling around the bay, you will be able
to absorb the coastal air and admire the scenery. There are also a
few public picnic areas with gas barbeques available. The other
place of interest is Tomaree Head which you will be able to view
Port Stephens as a whole. On the top of the mountain, there are
some cannons which were used in World War II. One side of Shoal Bay
is Zenith Beach which has been reserved to keep in its natural (no
habitat). Fingal Spit is on the other side of Zenith Beach. The
final tourist attraction to Port Stephens is Nelson Head Light. The
head light is over 100 years old and runs by solar power.
For those who wish to stay here, there are plenty of op-tions;
hotel, resorts and cheap back packer hostels. Before leaving,
please do not forget to buy the local wine, maca-damia, fig or the
fresh seafood which are all very cheap and satisfying.

Today, we take you to "3 Mama", a Thai restaurant located on the
"Thai Town" side of Pitt Street. The most noticeable essence of
this restaurant is that it provides one of the greatest varieties
of dishes in town with nearly 200 selections on the menu.
Therefore, we can perhaps say that this restaurant operates on a
"Cook to Order" mind-set. Whatever menu you had in mind can be
easily found here at "3 Mama".
"3 Mama" is owned by 3 great Thai Chefs: Geng, Tew and Pui, all
specialized in different areas. Geng tells us that she special-izes
in northeastern Thai food and Chinese food while Tew is an expert
at general Thai food and Thai noodles. She also has experience
working at many restaurants in Sydney as well. Lastly, Pui is a
former veteran with years of experience at Stanford Hotel. The
combination of the trio gives 3 Mama its own unique flavor like
none other - Its because we are good at different dishes therefore
each of us create 60 plus dishes on the menu. This is why we end up
having around 200 selections on the menu said Geng laughing.
The 200+ dishes in the menu incorporates A la carte dishes to
serve working customers who are in a hurry on their lunch break to
be able to just swing by for a quick meal and rush back to work.
Rec-ommended Thai selections include: Rice with crispy pork belly,
braises duck noodle and tom-yam noodle. For others who prefer
something different can try the signature deep-fried Barramundi
with herbs or the Perch Fillet with Choochee sauce.
Geng also adds that the main concept of this restaurant
encom-passes the word simple & convenience and that she
attempts to create a casual, relaxed environment within the place.
She wants customers to feel at home when entering and to think of 3
Mama whenever their stomach begins to growl.

Tips to fry a Barramundi1. Heat a fry pan with oil in a medium
high temperature and
then turn down the temperature to medium heat to fry the
barramundi.
2. Choose a suitable size barramundi for a family. Clean up and
slice both sides of the fish 2 or 3 times per side. Then put it
into the fry pan which takes around 10 minutes but do not turn it
over.
3. When the underside is cooked, flip the fish over andcontinue
frying for another 5 minutes.
4. When all cooked, take the fish out of the pan and drain on
kitchen paper.
Ingredients1. Ground rice 1 tablespoon2. Chilli powder 1
teaspoon3. Chopped red onion 1 tablespoon4. Lemon juice 1
tablespoon5. Fish sauce 1 tablespoon6. Tamarind juice 1
