Guest chef at PRCFaye Weatherburn, a former student at Peterborough Regional College, is the latest chef on a list of Guest Chef Evenings held at the Park Crescent Campus.

Faye studied for her VRQ Level 1 and 2 in Professional Cookery between 2009 and 2011, and then went on to complete a Diploma Level 3 Chef and Restaurant qualifi cation at the University of West London, which allowed her to specialise in pastry. She returned to the College recently to talk to current students and visitors about her experiences since leaving the College and why studying at PRC inspired her to become a pastry chef, including the nine weeks work experience she received at Sally

Ann’s Cakes in Somerset during her studies.

During her time at the University of West London she had two weeks’ work experience in the kitchen at Buckingham Palace and spent two years working as a pastry chef at the fi ve star Le Méridien Hotel, Piccadilly, London

Since March 2014 she has been working at the prestigious Ritz Hotel in central London.

This simple dish makes a perfect supper with the tomato sauce packing a Mediterranean fl avour

Method1. To make the tomato sauce – gently fry the onions and garlic in a few

tablespoons of olive oil for about 20 minutes until lightly golden and melted.

2. Add the passata, tomato and chilli, and continue to cook until the sauce has thickened leaving a rich sauce.

3. In a separate hot pan, place the slightly oiled cod fi llets to seal the fl esh. Once both sides of the fi llets have been sealed gently add them to the tomato sauce making sure each piece is completely submerged.

4. Cook the gnocchi in plenty of boiling salted water until they fl oat to the surface. Drain them and serve into bowls.

5. Gently lift out the cod and place on top of the gnocchi with plenty of sauce.

● Add fresh chillies and chilli powder at the start of the cooking process to allow the fl avour to develop and the heat to diffuse.

● Add chillies sparingly – you can always add more later.

Ingredients● 1 small onion, fi nely chopped● 1 clove garlic, fi nely chopped● olive oil● 200ml tomato passata● 400g can chopped tomato● 1 mild fresh red chilli,

fi nely chopped● 4 x cod steaks● salt and black pepper● 200g ready-prepared potato

gnocchi● lemon juice● lemon juice

SWAP OUTS● Turn up the heat and add in a

hot chilli for a pungent bite ● Change the cod for pollock

or hake which are both sustainable options

● Not a fi sh fan? Swap for chicken. Slice hot cooked chicken, place on the gnocchi and spoon over the sauce

● Add in chunky cut vegetables like peppers, courgettes, mushrooms, baby corn or even olives to boost your fi ve-a-day

● Swap out the gnocchi for pasta to make this meal more of an everyday dish using cupboard ingredients

The hottest part of the chilli is the white placenta that

holds the seeds to the inside of the pod. So remove both the seeds and placenta to decrease the heat.

After a summer of barbecues, ice creams,

and general overindulgence, I thought it would be great to share my tips on staying motivated and getting back on track to a healthy lifestyle.

These are eight simple tips I live by when I feel my work schedule getting a bit busier, or I’m lacking that motivation I need.

1. Keep organised Meal prepping is the best way of making sure you don’t reach for unhealthier options at every chance. If you don’t have time to prep all of your meals, make it a priority to prepare in bulk things like rice, quinoa or sweet potatoes to save you time in the future. Another option is to double up on foods when cooking your lunches or dinners to avoid cooking an entire meal three times a day.

2. Set realistic goalsWriting everything down as a list ensures your goals are clearly set out in your head. You can even put down the smallest things so you feel productive when you cross them off.

3. Keep exercises simple A 20-minute HIIT (high intensity interval training) workout is perfect for those of you with busy schedules. I like to do 30 seconds of fl at out sprinting followed by a 30 second break. This really gets your heart racing and it burns fat fast.

4. Drink at least two litres of water a day This isn’t only important when you’re exercising, but it also keeps your metabolism running

5. Make time for yourself Part of the reason many people struggle with maintaining an exercise routine or healthy eating is because they think they have to sacrifi ce other enjoyments to make time for it. Make a note on your daily list to have some downtime. It will make your healthy living become cemented as a lifestyle rather than a short-lived pursuit.

6. Look for inspiration I love Instagram and blogs for recipe inspiration. If you’re having a creative block on dishes, it helps to spark ideas.

7. Invest a small amount of time in cooking If you enjoy cooking already, then it sometimes makes healthy eating a much easier process. However, if you’re not so fond of it, add to your list a small amount of time dedicated to preparing meals in advance.

8. Balance is key You don’t want to feel like you’re depriving yourself. So, I recommend trying to fi t in some greens at every meal and focus on getting the good stuff in fi rst. Then, if you are still hungry, you can enjoy your treats. I’ve found the good stuff will eventually replace the bad stuff in your life. Why not try some of these ideas and see how you get on!

by some excellent places to eat that also offer a diverse culinary range. So it is easy to forget the village pubs that work tirelessly to produce great home-cooked dishes that excel in the taste department.

And if the substantial menu doen’t fl oat your boat you could order off the specials board offering grilled salmon with mustard creamed leeks and roast potatoes or scampi and chips. There is a dedicated Sunday lunch menu with starters from £5 and roast beef, pork or chicken with all of the trimmings for only £10 plus children’s portions for £5.95.

The dessert menu includes dessert specials of white chocolate parfait and chocolate orange fondant and a selection of ice creams and sorbets.

Gino Gioia the owner and head chef together with Nicolas Sparkes, chef de partie, create delicious dishes that are excellent value for money. We had an excellent meal and a great time.

The chilli plant is native to Central American regions where it has been the main spice ingredients in Mexican cuisine for

centuries. It was introduced to the rest of the world by Spanish and Portuguese explorers during the 16th and 17th centuries. The chilli is a fruit pod from the plant belonging to the nightshade family.

The hotness of chilli is measured in Scoville heat units (SHU). On the Scoville scale, a sweet bell pepper scores 0, a jalapeño pepper around 2,500-4,000 SHU, and a Mexican habañeros about 200,000 to 500,000 SHU.

The fi ery hotness of the pod comes from an active component of chillies – capsaicin. It is an irritant for mammals, including humans, and produces a sensation of burning in any tissue with which it comes into contact. However, capsaicin has anti-bacterial, anti-carcinogenic, analgesic and anti-diabetic properties. It also found to reduce LDL cholesterol levels.

In fact, chilli peppers contain an impressive list of plant-derived chemical compounds that are known to have disease preventing and health promoting properties and both red and green chillies are rich source of vitamins and minerals.

The rules around pensions have changed signifi cantly over

the last few years and will have a major impact both on how you save for retirement and access your money once you retire.

New pension rules introduced in April 2015 have given people far more choice over what they can do with their pension pots.

These new rules only apply to people in defi ned contribution schemes also called personal or workplace pensions where you build up your own pension pot.

You need to be 55 or over (or in very poor health) to access your pension pot.

In the past, for most people when you retired you could take up to 25% of your pot as tax-free cash and the rest had to be turned into a retirement income by buying an annuity.

There are several ways you can now use your pension pot:-

● Buy a guaranteed income for life – an annuity.

● Invest your pot in funds designed to provide you with a fl exible retirement income – called drawdown (the income is not guaranteed for life).

● Take small cash sums from your pot when you want them.

● Take all your pot as cash in one go.

● Mix the above options.

If you take cash, 25% of the withdrawal is tax-free (the other 75% is taxable). If you choose the annuity or drawdown options you can take up to 25% of the amount used for this option as tax-free cash. The rest is used to buy an annuity or goes into drawdown. You then pay tax on

the income you get from these.However, any cash you take

from your pension pot is added to the rest of your income for the year and you pay Income Tax on this in the usual way. If you take a large sum of cash you could push your income into a higher tax bracket and end up paying higher-rate or even additional-rate Income Tax on the lump sum. This increase in income may also mean you are no longer eligible for benefi ts you’re claiming.

Did you know?There are weekly activities held at the centre which include dance and fi tness groups like zumba, pilates, hip hop, and yoga. There is an indoor bowls group, German classes, many community groups and various U3A groups. It also offers FREE computer courses and craft courses. The classes are run through Live and Learn a locally based company with professional, patient tutors. There are several counsellors based at the centre including Citizens Advice Bureau

Fifteen years ago the Deepings Community Centre opened its

doors and, incredibly, after all this time it is often still referred to as the old doctors’ surgery.

The centre took three years of work by a group of dedicated local people and since it opened in October 2000 it has continued to fl ourish despite no core funding. It really is a local centre venue, run by local people who are prepared to give up a few hours on a regular basis to ensure it runs smoothly.

But what does it offer? Well, the centre provides a huge range of activities from health clinics and fi tness classes to conference facilities and meeting rooms. There are various room hire options. A main hall can accommodate up to 80 people for private parties, groups, clubs or to run fi tness or dance classes. The learning room is set up for

The Deepings Camera Club is a friendly group and welcomes all levels and ages of photographers. The club doesn’t offer courses but the 80 diverse members are always on hand with a wealth of knowledge and expertise, so there is someone who can answer all your questions.

Established in 1985, many members of the Deeping Camera Club have had their work selected for competitions, some of whom are well established with the club and have won awards, but others were beginners just a few years ago and have developed their

skills and expertise by entering the club’s internal competitions and using feedback from judges and other club members to improve.

In addition, club lectures also provide the opportunity to gain new ideas and techniques for experimentation.

The club meets at 7.30pm on Wednesday evenings at Deepings Community Centre with a good programme of events. See the

Drive to Jaipur early morning to reach Jaipur in time for lunch. The vibrant 18th-century capital of Rajasthan is popularly known as the ‘Pink City’ because of the pink coloured buildings in its old city. The afternoon is at leisure to explore Jaipur, home to cultural delights and also a shopper’s paradise. Take a tour of Amber Fort, a honey-coloured fortress palace in the Aravalli Hills. Possessing a chamber of mirrors, the interiors are a decorative art paradise and there are striking views of the gorge. In the afternoon, visit the Observatory and City Palace which boasts courtyards, impressive gateways and temples.

From Jaipur you will travel by road to Udaipur. Udaipur is regarded as one of the most romantic cities of the World and subsequently, also known as the ‘Venice of East’. Udaipur had been the capital of Mewar for centuries. During your time in Udaipur you will have the opportunity to visit the famous Lake Palace, Jag Niwas Palace, Lake Pichola, Museums and Gardens of Udaipur.

Lisa Claypole, the owner and two other therapist are trained in all the treatments. Lisa has run the business for more than 15 years and to say she has passion for what she does is an understatement. this by researching for the best technology on the market in IPL and Radio Frequency machines, plus other cutting-edge machines offering various results driven treatments.

As a nation we are sceptical about anything new and I was no different when Lisa offered the

Lipofi rm Pro treatment which offers fat loss, skin tightening, sculpting and cellulite removal all in one package. It is also medically certifi ed and clinically proven.

After a consultation, we decided to target my tummy area where subbon fat accumulates and refuses to budge whatever I try.

The session lasted about 30 minutes and Lisa measured three areas around my middle so she could calculate the amount I lost, which was 16cms in total. Which, even by Lisa’s standards, was amazing, and as Lisa had also taken before and after photographs of my stomach, I could scrutinise the pictures and it was obvious the difference just one session had made. Like looking through a lens or a prism, some ways of thinking

add a particular bias to your view of the world and are especially likely to be associated with feeling bad and when we feel bad that’s a time when we reach for foods high in fat and sugar to make us feel better.

Getting rid of the bias and getting your thoughts back into perspective will make you feel better, but to do this you need to recognise that the bias is there.

Below are some of the most common types of biased thinking, try to pick out which of them are contributing to your problems. l Catastrophising – we think

families to run or walk and have fun together in the Anna’s Hope 5k Fun Run in the Perkins Great Eastern Run this year on 11 October.

Cathedral Square will be transformed for the weekend 12 and 13 September into Little Italy

There will be entertainment

for the whole family with musicians, singers and dancers from Italy supported by local dance groups and performers.

Antonio Carluccio, the celebrity chef, will be attending for the full two days. He will bring along his mushroom market and will be preparing some of his favourite dishes for an appreciative audience as well as signing his books.

There will be numerous Italian food stalls and businesses participating including an Italian

market, classic Italian cars and bikes alongside the new Maserati.

And of course, there will be plenty of gelato, dolce and the usual pizza and coffee.

The ICA (Italian Community association), which is a charitable organisation who work hard to put together the annual Italian festival which is supported by Peterborough City Council.
