I always seem to be a step behindwhen it comes to what’s hot, what’shappening, and what the new trendsare. Technology, fashion, hairstyles anda number of other things that so manypeople keep up with are just not on myradar. I guess it’s a y chromosome thingor in my DNA to catch on a little late, ifat all.

Publishing a food and beverageoriented magazine, however, has keptme a little more on top of the gamewhen it comes to what’s popular in theculinary world.

Twenty years ago, how many coffeehouses were near your house? How

about wine bars or tapas style restaurants? Did you ever have a smoothie?Growing up, I don’t remember having pizza delivered to my house. I’m almostcertain we never had Mexican food. We went to diners or the local restaurant onspecial occasions. We ate hamburgers and drank milkshakes. I think we mayeven have had a milkman. Looking back the options seem very limited.

But in today’s evolving food and beverage world, it’s not that hard to keepup with what’s hot or what the current trends are. They are right in front of youreyes and they will send your senses reeling. Everywhere you look you see a newrestaurant, bar, or combination of the two. In this issue of Taste, you can findenough dining options to tickle your taste buds all summer.

If you are fortunate enough to live on the island or just visiting, take theopportunity to expand your horizons and indulge in something new orsomething different. Step outside the box and try a new drink, a new dish, a newrestaurant.

With the growing trend of local and fresh you can sample what we catch offour shores and grow in our backyards. Even the bartenders use fresh local fruitwhen blending their umbrella drinks. It's all fabulous and it's all over the Island.

They can toast the excellent service from a staff thatstays on year after year. They can cheer the food – so fresh itmight have been pulled from the water just hours before.And they can clink their glasses as they rave about thecomfortable, yet classy atmosphere in the main diningroom, Chef's Cellar or private wine room. And there is certainly no shortage of choices when itcomes to the vino or food. Red Fish not only boasts mouthwatering seafood,steaks, chicken, chops and vegetables, it also has more than1,500 labels of wine on site at any given time. Yes, 1,500 –and all available at retail prices. The huge selection of wines from around the world isjust one way the restaurant has expanded since 2000.The restaurant, located at 8 Archer Road, just off PalmettoBay Road, has grown in many ways. Its kitchen wasexpanded in 2005 when it took over space formerlyoccupied by a deli in the same building. Always eager to improve the quality and freshness oftheir product, the staff started their own garden, Bear IslandFarms, and made arrangements with other local farmers toprocure the best produce and natural or free-range meats.Red Fish even has its own boat to deliver fish straight fromthe water to the kitchen. Partner Robby Maroudas‘ experience with fisherman hascertainly helped play a part in the restaurant's ability to getthe very freshest fish year round. “I grew up in the fishing community around here,” hesaid. “I have a lot of contacts (with fishermen). When theyget a good bite of grouper, we get the first phone call. Wepurchase straight off the boat.” He also has friendships with boat captains, in Georgiaand all along the coast. That guarantees good local shrimp,cobia, tuna or whatever is in season. Sometimes it is black

sea bass. Sometimes it's triggerfish.When the fish are biting, he is too. In fact, he catches some of ithimself. Customer favorites include thescallops with lobster macaroni andcheese and grilled sea bass, he said.But there's always a demand forLowcountry shrimp and grits, a centercut filet mignon or a vegetable strudel. Dinner selections can be cookedas described on the menu or “naked”– grilled with only extra virgin olive oil,lime and garlic. Executive Chef Sean Walsh is agraduate of the Culinary Institute ofAmerica and has been dishing updelicacies at Red Fish since 2003. Heworked in kitchens from New York tothe mid-West and the Caribbeanbefore settling in the Lowcountry. Those experiences have helpedhim build a unique and intriguing stylewith combinations of many culinarytechniques. Diners can expect disheswith a fusion of Caribbean and pan-Asian flair brought to traditionalLowcountry cuisine. He and his team are constantly

working to offer up new and temptingcreations using the products that are inseason. And no matter which dish oneorders, there is bound to be a wine tocomplement it. Different varieties linealmost every wall, and represent more

countries than one can easily count. There are wines from Spain, Chile,Austrailia and more. There are moretraditional California wines or moreobscure eco-friendly varieties. Needhelp finding something spicy orsweet? Ask General Manager JeffMartin for tips. He orders the winesand will be happy to help. Because the wines are sold

through RedFish's retail wineshop, they don'tcome with thehigh mark upfound at manyrestaurants, Martin said.

A bottle that cost $90 at anotherrestaurant mightbe purchased for$30 or $40 atRed Fish. A $10corkage feeallows that wine

to be consumed in the restaurant. With so many labels to choosefrom – and even more can be orderedon request – diners can come backagain and again to experiment whileenjoying a night out. Dress is resort casual. There is alarge patio for porch dining and three

dining rooms inside. Martin said Red Fish is a greatplace for a family on vacation or a datenight. “You should feel comfortablecoming in here in a pair of khakis, flipflops and a button up shirt,” he said. Red Fish is open for lunch from11:30 a.m. to 2 p.m. Monday throughSaturday. Dinner is served nightly, with an early dining menu from 5 to5:45 p.m. Lunch choices include a variety ofsoups, salads and sandwiches withseveral chef's specialties. Prices rangefrom about $8 for some sandwiches to$12 for a Crispy Flounder Tostada. Early dining specials include yourchoice of broiled tilapia, coconut friedshrimp, grilled salmon, Lowcountryshrimp and grits, braised beef shortribs, Latin ribs or baked chicken potpie for $14.95. That includes acomplimentary glass of wine, iced teaor lemonade. Dinner choices range from CajunShrimp and Lobster Burgers for $24 toa filet mignon for $36. Plenty of extrasare also available and desserts rangefrom carrot cake to Beignets and hotchocolate. If having an unbelievable waterview – and food to match – earns arestaurant a thumb's up, you bettergrow another thumb. ELA's Blu Water Grille, located onShelter Cove Harbour, was recentlyvoted by Open Table, an onlinereservation system, as having the BestWater Viewing Dining in SouthCarolina. But you don't have to be on theoutdoor garden patio to enjoy it. Or inthe main dining room. There's also asecond and third floor, with views ofthe Broad Creek on one side, boats onthe other, and often even withfireworks overhead. Mix in a lot of paintings for sale bylocal artist, Pete Karis, and there'splenty to dazzle the eye. But it's tickling taste buds that theNightingale family counts on to keepcustomers coming back. Earl Nightingale opened therestaurant, located next to the ShelterCove Marina on July 1, 2011 after buying the old Ocean Grille from theLowery group .

From the beginning, launching thenew venture was a family affair. Daughter Erin Wasem, who ownsher own design company in Chicago,played a major part in renovations bycreating a soothing, classy and artsy interior. She's the “E” in ELA's. Daughter, Lauren, helped handlehiring, administration and permits toget the company ready for opening.She's the “L.” Son, Alex – the “A” – handlesmost of Earl's “heavy lifting,” as ELA'svice president of operations. “It's a family-owned and operatedbusiness focusing on clean, fresh catchseafood, certified steaks and regionalproduce,” Earl said. After decades spent in the hoteland restaurant business working forsome of the industries' biggest players,it seemed only natural for Earl to starthis own company and he wanted hisfamily to play a big part. Earl worked for Hyatt Hotels for 28years, Omni for five and Hilton Hotelsfor three. It was Omni that first broughthim the island to convert and revitalize

the Hilton Oceanfront in 2005. From 2009 to 2010, he went backto Chicago to run the famous Knicker-bocker Hotel. But as 2010 came to anend, he decided to return to his HiltonHead home to continue his quest ofrunning his own restaurant company. “I knew of this location and when Iheard of it (being available), I jumpedright on it,” he said. “This is one of theonly and best restaurants around withwaterfront dining.”

With the location secured, heturned his focus to the menu. He wanted offerings that wouldkeep customers coming back. And forhim that meant fresh seafood,harvested from local waters and fresh,regional vegetables. ELA's pan seared scallops seem tobe a favorite entree for customerswhile the calamari – cut from the cheekin strips and served with a spicyremoulade sauce – rule the appetizermenu. But there's also plenty of fanfarefor the Mahi Mahi and Maryland stylecrab cakes. For those who prefer steak, there'sGorgonzola Crusted Filet Mignon orgrilled New York steak. There's even an“Ugly Burger.” Vegetarians can indulge in theFarmers Market Selection, which isChef Chris Cohen's daily offerings offresh, local and seasonal vegetables. In April the restaurant opened forlunch so daytime diners can choosefrom a variety of selections from a$7.95 Caesar salad to $12.95 for a crab cake sandwich or soft shell crabsandwich. Dinner entrees range from the $14“Ugly Burger” to $32 steaks. But in Earl's eye, no dinner wouldbe complete without the right wine orbeverage to pair with it. ELA's offers beer and a full bar, ofcourse, but it also boasts about 140different wines, many from vineyardsdiners have never known.

“We call it a boutique winecollection because we focus on smallvineyards,” Earl said. “From regionalareas that people may not have had achance to try.” There are wines from Chili,Argentina and France, among so manyothers. And because Earl believes everytable should enjoy a bottle of wine, he sells them almost at cost so they are far less expensive than they wouldbe at other restaurants. Because of Earl’s cost plusplan a bottle of wine that costs$38 at another restaurant maycost $18 at ELA's. For the wine collector there is no corkage fee for your special bottle. If the sights, tastes andsmells aren't enough to attractlocals and tourists, there'salways the sounds. Singer Dean St. Hillaire is afavorite at the restaurant andplays eight different instruments.Live music is offered everyThursday, Friday, Saturday and Sunday. And for every Tuesday of peakseason, there's one of the biggestattractions of all. Because of ELA's waterfrontlocationt, diners at have a close upview of the fireworks set off everyTuesday night. The garden patio is the perfectplace to view them from outdoors. Themain floor and second floor also have aspectacular view. And on the third

floor, there is a small, private diningroom surrounded by windows. That's where Paula Abdul spentlast July 4 with a small party. It can bereserved for parties of up to 20 – orjust two, who might want the privacy topop an important question. The various areas can be bookedfor parties, corporate events and othercelebrations. So far, ELA's has hosted a numberof rehearsal dinners, corporate eventsand small wedding parties. “We're getting a great response,”Earl said. “I'm really pleased with howthe local community has turned out.” Although in the past, dining wasformal – as Harbour Masters it wasamong the last to require a jacket andtie – today, it's anything but. Earl calls it “resort, casual dining.”Even dogs are allowed on the patio, ina limited area. It's a great place to hang out withfriends, or to take a date for a specialoccasion. From the main entrance to ShelterCove, take the first left onto ShelterCove Lane and drive until the road

The illusion of a World War II era,bamboo Quonset hut provides aunique dining atmosphere whichcontrasts quite nicely with the JimmyBuffet type atmosphere in the bar area.Tristan and Keiron O’Grady have beenthe owners since 2000, and executivechef Karl Lammert has been with BigBamboo since then. Karl took a fewminutes out of his demanding day toanswer a few questions about what ittakes to be successful as a chef.

TASTE: How did you get started in therestaurant business? KARL: I studied hotel and restaurantmanagement, specializing in culinaryarts, at Sullivan County CommunityCollege, a division of the State University of New York.

TASTE: Where did you train and whatis your experience?KARL: I’ve been in this business since1978. I gained most of my experiencewith the Marriott Corporation, where Iwas a kitchen supervisor and foodproduction manager. After leavingMarriott, I worked as chef in severallocal restaurants, then joined theWestin Hotel as a chef.

TASTE What brought you to HiltonHead Island?KARL: I came to Hilton Head withMarriott Corporation in 1980 as akitchen supervisor and foodproduction manager of the Marriotthotel here, and have been here since.

TASTE: When did you start with BigBamboo?KARL: I joined Big Bamboo 12 yearsago on April 1, 2000.

TASTE: What do you like best aboutbeing a chef?KARL: Well, I’m never hungry. Noseriously, I enjoy meeting the peopleand serving them what they like. Ienjoy the controlled chaos in thekitchen, keeping the orders straight,and seeing everyone working togetheras a team to get the dishes out quicklyand prepared correctly.

TASTE: What do you consider to beyour best creations, and what are theclassics that you like to put on themenu?KARL: That would be the pastaspecials and steak specials. We findgreat deals on steaks for customers,and prepare them to order. We makesome great pasta dishes, and arealways changing our menu, accordingto what sells best.

TASTE: What is your favorite dish youenjoy cooking at home for your family?KARL: I’m a steak and potato person,but my wife, children, and grand-children love my lasagna. I make it withfour cheeses, sweet sausage, my ownhomemade sauce, and serve it withfresh garlic bread.

TASTE: When you’re not at BigBamboo, what do you like to do torelax?

KARL: Sunday is really my only daythat I’m not working. I enjoy spendingtime with my family, and attendingservices at St. Francis Catholic Churchand Ebenezer Church in Bluffton. The name “Shannon Tanner” hasbecome synonymous with summersand Shelter Cove. He captivates ourhearts and imaginations with his gift forsong and smiles. TASTE had a chat withthe Shelter Cove staple and superstarto see what keeps him coming backhere year after year.

TASTE: I feel like I’m talking to aHollywood headliner. How did youcome to earn your star on the Walk ofFame?SHANNON: My stepdad bought me aPA system when I was a teen andimmediately put me into an installmentpaying plan. I started performing whenI was 15 years old at Hudson’s and thenby 16 was playing full time at PelicanPoint. I went to high school at ThomasHeyward in Ridgeland and would driveover and play every evening (exceptduring football season!) and earned$40 per night plus tips. At 16 that was afortune! Eventually I was offered the job

at Shelter Cove and that was right inmy wheelhouse. Been playing theresprings and summers for 25 years!

TASTE: You play summers here andwinters in Colorado. Tough life, huh?SHANNON: Just doing with the skillsets that were thrown my way.

TASTE: Do you have a faithful familythat follows you around?SHANNON: They used to. I marriedmy high school sweetheart and we nowlive on Knowles Island (near Ridgeland)with my daughter and I have a son incollege. They used to split semesters inschool between here and BeaverCreek. That became too hard and now Ijust do a lot of commuting in thewinter.

TASTE: Where do you prefer to play?SHANNON: Definitely Hilton Head! Ilove the whole family thing. Eventhough my Hilton Head songs are

simplified -- more camp-like -- I love theinteraction with the families. I have kidsthat sat on my lap 25 years ago that arenow coming back to see me with theirown kids. Bringing happiness tomultiple generations is surreal.

TASTE: Signature song?SHANNON: I know over 2,000 songsbut play the same 25 every show.Bottom line is that it’s like Rocky Horror:people come back year after year andexpect the same thing. We have somefavorites like “The Purple People Eater”and “The Hair Had a Party Last Night”(which is basically a messy haircompetition) and then another favoriteis the sprinkler dance when the wholefamily gets up and dances.

TASTE: Your Favorite?SHANNON: We do a pirate expeditionon Wednesday and Friday mornings.The kids are decked out withbandannas, eye patches, and swordsbefore we set out on our perilousadventure. We have to go out on thehigh seas and rescue our ship and findthe treasure. Along the way, we battleworthy pirates and at the end, after wesave our ship, the kids get the bountyin the treasure chest. They love it! I loveit! You have to come out this summerand try it.

This October, on the spookiestday of the year, Kingfisher Seafood,Pasta, and Steakhouse celebrates its20th anniversary. From the timemanagement and staff opened thedoors to the waterfront establishment,their enthusiasm for the businessproves to make this an excellent placefor fantastic food, enjoyable liveentertainment, and dancing.

Nonetheless, to enhance theentertainment variety they have addedan uproarious element. Currently,taking up residence in the candlelit“Top of the Kingfisher” showroom isthe Hilton Head Comedy Club.

Co-owners John Biddle andMichael Paskevich, former Las Vegasresidents with deep ties to the comedybusiness, are applauding the recentrelocation. The duo opened theoriginal Hilton Head Comedy Club inJuly 2008, presenting headliningcomics fulfilling a dream of launchingan exclusive venue.

“The opportunity to move to sucha great location was simply too goodto pass up,” said Biddle, a stand-uppractioner, who ran a successfulcomedy club on Sanibel Island, Fl.

“We’re very excited about theshowroom and to join forces with sucha well-established island mainstay asthe Kingfisher.”

A series of hurricanes forcedBiddle to flee Florida for the desert airof Las Vegas in the late 1990s wherehe ran a comedy outlet in a majorhotel-casino and met Paskevich, thenthe foremost entertainment critic forNevada’s largest newspaper, the LasVegas Review-Journal. They becamefriends and developed the concept fora club that caters to both comics andhumor fans.

“We knew we had to bring in avariety of the best touring comics inthe country to make this work onHilton Head,“ added Biddle, “and ourmutual connections in the industryhelped us to do just that.”

In late 2007, after a locationscouting trip to Hilton Head, the starsaligned, and early 2008, the duopacked their bags and headed to theresort island launching the ComedyClub.

After the impending leaseexpiration at Pineland Station, the clubowners experimented with a road

show version of the club that includeda series of well-received stops at theKingfisher.

Ensuing negotiations between thetwo businesses quickly lead to a dealto bring the Hilton Head ComedyClub to the Kingfisher on a permanentbasis. The club settled into the cozyshowroom in March, offering a newtop-touring comic each week.

The club is located at 18Harbourside Lane in Shelter Cove.Shows are at 9 p.m. every Tuesdaythrough Sunday. Admission is $12 perperson. Tuesdays remain "LadiesNight", $6 admission. In 1992, a 7.3 magnitude earthquakeshook Southern California early one Junemorning. The tremblor was enough to rattleArdis Matthews and her husband, Max, intotravelling across the country “to fabulousplaces, none of which were exactly right.”But, as it turns out so many times in life, theroad less traveled, led to the most adventure. When the Matthews were in Charleston“we were sitting in a bar being friendly,”laughs Ardis. “We were talking to a nicecouple from Hilton Head about our trip toSavannah. They said Hilton Head was righton the way, just make a left and go over abridge.” The Matthews fell in love with theIsland immediately. “It reminded us of ourold home in California.” After trading one paradise for another,and replacing surprise earthquakes withpreemptive hurricane warnings, Ardis had tofind out what to do with herself. Ardis is perpetually jovial andenthusiastic. She is enthusiastic about

anything. Anything. Every new experience is“exciting”, “cool” or “fabulous”. Every pastexperience, even if it was less than grand, hasone little slice of humor, wisdom orcombination of the two. She is sweet, sassyand indefatigable. She doesn’t fear change, sheembraces it. “This is all learning by doing,” she saysof her extensive menu. “Except that I didhave a fabulous […there’s that word again,‘fabulous’…] opportunity to take cookingclasses with some of the greatest chefs of the

1980’s in California.” Wolfgang Puck, BertGreene and Julia Childs among them. “It wasmostly fun. And the main thing I learnedfrom these classes was, ‘I can do this.’” To Ardis, the best cooking she comes upwith is “looking around that kitchen andreinventing the same ingredients over andover and over again. I’m not classicallytrained, I just makes what tastes good. Andfortunately it seems to taste good to otherpeople too.” Besides food that tastes good, thegood food changes all the time. “There arecertain items I would never take off themenu. I like the classics, but then I like totallywacky new flavors.” Ardis reflects and thenstarts laughing again, “And then I like thestuff in between! I don’t know! I like food!Anything but beets!” You can’t help but smile in her presence.

Fromrestaurants to hospitals and schoolcafeterias, chefs and food serviceproviders are jumping on thebandwagon of serving locally growningredients. From the farm to yourtable is as good as from the sea toyour skillet. “It’s all good for everyoneinvolved from the farmer to therestaurant to the consumer. Healthy isjust so important,” said Pamela Ovens,

president of the Hilton Head Farmer’sMarket at Honey Horn. So what’s going on? “Theconsumer is getting smart,” explainedDon Brant, owner of Brant Family Farmnear Ridgeland. According to studies,the fresh produce market in the UnitedStates, particularly fresh vegetables,has been experiencing significantchanges, on a national basis, drivenprimarily by consumer demand and theavailability of the products. Localproduction of fresh fruits andvegetables sold directly to the grocerystores and food service providers is arecently emerging phenomenon.

Increasing gasoline and foodprices, the demand for organicallyproduced food, the demand for fresherand higher quality foods, the desire tosupport local farming economies, aswell as the environmental movementand trends in horticulture research haveall led to growing popularity of locallyproduced fruits and vegetables. “I think the trend is populationdriven. It’s the population as a wholethat has become more educated and isgravitating toward fresh and local andorganic. People want food that hasbeen harvested within 24 to 36 hours,“said Don.

But wait. There’s more. It’s good for you and it tastesamazing. So what’s the down side? There is none. In factthere is even a doctor out of the University of Nottingham inEngland that contends that eating a healthy diet rich in fruitand vegetables makes you better looking as your skin takeson redder tones. Want an extra helping? Pamela says to goahead. “You can eat more because the locally grown produceis chemical free and you are not eating all of those addedhormones.” Not surprisingly, all this focus on fresh, seasonalingredients has changed the way that many chefs cook—the"back to the farm" philosophy has spurred a back-to-basicsapproach that favors simplicity and allowing the individualfoods to shine. Locally grown are the freshest, which means ahigher quality product with better color, taste, and texture,compared with foods that were picked too early or shippedfrom far away. Produce is moving center-stage, in everythingfrom entrée accompaniments to full-fledged vegetable tastingmenus. Katie Manley, marketing director for Red Fish, Old OysterFactory, and Alexander’s, said that they are delving deeperinto a “green” program with Red Fish on the forefront as theirguinea pig. She explained that their food suppliers will givethem a heads up as to what is fresh and then they will go tothe local farmers’ markets and farms to get their produce.“The farmer’s market on the Island has been a really niceaddition and asset for our chefs,” said Katie. With this newmove toward local and fresh, the chefs are learning through alot of trial and error. “We are lucky in South Carolina that wehave a big variety to choose from.” Red Fish, especially, hasexperimented with different colors and different varieties oftomatoes or peppers, for example. “Whatever is fresh, wecater our specials to it,” said Katie. Their caprese salads atRed Fish will change with whatever was picked that day fromasparagus to fried green tomatoes. When a restaurant serves a certain percentage of locallygrown foods, they can put a certain notation on their menuthat indicates local and fresh. “As the consumer continues tobecome more educated, they will seek out the restaurantsthat feature ‘locally grown’ which will in turn influence morechefs to buy locally,” said Don. The Sage Room has a sticker in their window indicating“Fresh on the Menu”. Carol Jording, who owns the restaurantwith husband Matt, is an advocate of using local producewherever possible. “You can’t get any fresher and it alsokeeps the money in the community,” Carol expressed. Shesaid they will shop at the local farmers’ markets and thatMatt’s father also has 8 garden plots in Hilton Head Plantationthat they feed off of and procure a number of fruits andvegetables including fresh cabbage, strawberries, and onions.“We take what’s fresh and make our own thing. We do thingslike make a spicy beef spring roll with the cabbage and we willtake the beautiful yellow flowers of the squash blossoms andstuff them with all kinds of things.”

“The customer is looking for variety and the morecolorful the better. Chefs look for unique, colorful, different –anything they can put their own twist on that will put them ina better light than their competitors,” said Don. Reinforcingthis sentiment, Carol explained, “You eat with your eyes sowe want everything to look sensational.” Farmers’ markets are popping up all over the country.Pamela and friend, Gail Horvath, started the market at HoneyHorn last year. “We wanted to start a farmers market for ourcommunity that did not take monies from grants or the town.The Farmers Market is like a family in many respects.Everyone watches out for each other. There is a lot of joy inthis. Everyone has a story and they are extremelyinteresting.” Kenneth Shuler of Shuler Peach Company will tell youthat it takes 3 years to grow the 1st peach on a new peachtree. Did you know that growing asparagus is a painstakingtask as for every 1 seed planted only 1 stalk grows? Talk toMary Connor, owner of Three Sisters Farm, and she will tellyou that asparagus in the grocery store is typically shippedfrom abroad and arrives many days old. During this time, thesugars are converted to starch and the stalks continue togrow. Fresh asparagus, in contrast, is sweet and tender. Jamie Vidich started Bear Island Farm with his brotherslast year. “I was always interested in farming and felt that notonly growing food, but doing it naturally and organically, wasa primary concern we had as humans.” Bear Island Farm canprovide you with the fixings for a salad fit for a king. “Wefocus on salad greens and tomatoes, but we will tryanything,” said Jamie. When Pamela first visited The BearIsland Farm last year she said they had a plot of dirt and abox of worms. Through hard work and determination thebrothers are now in the process of doubling the size of theirfarm. Jamie will tell you that what you grow is all about yoursoil. “Farmers can lose the biodiversity in the soil if theydon’t do everything naturally,” he described. Bear IslandFarm goes all-out organic, using no chemicals, pesticides, oreven irrigation with nitrogen. “The ultimate benefits are tothe consumer in the health of the food as well as a bettertasting and looking product.” What are the hot ticket farmer’s market items in thesummer? Ask Don Brant and he will tell you eggplant andpeppers. “Never in my wildest imagination would I havebelieved that the population of Beaufort County couldconsume so much. We sold bushel after bushel last summer. I think the hot selling point was our variety. Notonly has Stan had 40 years on theIsland to figure out which are hisfavorite restaurants, his business andcareer take him all over the world andthus he is quite the seasoned pro notonly at tennis, but also at eating out.What does Stan know that our readersdo not?

TASTE: How did you get to HiltonHead to begin with?STAN: After Charles Frasier broughtthe Heritage to the Island, he realizedtennis was getting popular and so theSea Pines Racquet Club was born andI was at the helm. I have been touringpro there for 40 years and I started theSmith Stearns Tennis Academy therewith Billy Stearns 10 years ago whereour goal is to take juniors to the nextlevel and be their best on and off thecourt.

TASTE: I know you wear many otherhats on the Island and elsewhere.STAN: Locally, I was the capitalcampaign chairman for the Boys &Girls Club and I’m on the HeritageClassic Foundation. I am also Presidentof the International Tennis Hall ofFame in Newport and Adidas has atennis shoe named after me that istheir highest selling shoe. My mainthrust now is Stan Smith Events where

we help corporationsentertain their clients atmajor events around theworld from Grand Slamtennis to Fifa to the golfmajors to the Olympics.We take care of every-thing including eventtickets, meals, hotels,activities, and one onone with athletes.

TASTE: Lunch?STAN: I like to walk over to theHarbour Town Grill which is next to theSea Pines Racquet Club. My favorite isthe Turkey Reuben. A long-timeIslander named Happy invented it andit’s made of turkey and coleslawinstead of corned beef and sauerkraut.

TASTE: You must be on the run a lot.Where do stop for a quick fix?STAN: I like to go to either Subway orDunkin Donuts.

TASTE: How about dinner with familyor friends?

STAN: We like to go to Truffles Café inSea Pines and I often stop at theTruffles in Bluffton on my way backfrom the Savannah airport. A typicaldinner would be Meatloaf, stringbeans, and mashed potatoescomplimented by one glass of PinotNoir. My kids love to go to Mi Tierraand Amigos.

TASTE: Where do you take your wifeout for a special occasion?STAN: If we’re in the mood for Italian,we go to Michael Anthony’s where Ienjoy the Osso Bucco. Our otherfavorite spot is The Sage Room whereI order the Braised Beef Ribs.

So you’re a newbie to winetasting, and you’ve never setfoot in a winery tasting room.Well worry not. A tastingroom is an area set aside ina winery where visitors areencouraged to sample thevarious wines beforepurchasing. They canrange from a grandspace to an intimate,informal area setamong casks of agingwine.

Most tasting roomskeep regular hours soyou can just show upwhenever the winesampling crave strikes.Most people who workbehind the “tasting

bar” are friendly andeager to help you find the

wine you love. Tell themwhat flavors you like or if you

like sweet drinks. They will pour aseries of wines to suit your palette.

There is no such thing as a dumb questionin a tasting room, so don’t be shy about

learning about the wines you are trying. The tasting room staff will typically give you a 1 fluid

ounce of the wines you would like to taste. That’s about 20% ofa regular glass of wine. Keep this in mind and be sure to pace

yourself. You don’t want to be that guy or gal who has a littletoo much fun at the wine tasting. Most wineries have handyvessels where you can discreetly spit out your wine samplesto prevent you from becoming intoxicated or if a particularwine does not agree with your tastebuds. Don’t be shy aboutusing these vessels. Of course, don’t be shy about getting afull wine experience either and swallowing your wine as well,just know your limit if you are the designated driver.

Once your wine is poured, hold your glass up to thelight. Examine the color. Don’t worry if you can’t tell thedifference between a ruby red and a garnet red, just note thecolor so you can learn to spot a great wine in the future.Different wines have a unique ideal color range. Looking atthe color helps to make sure that there are no impurities, bitsof cork, or insects sharing your wine.

Next, give the wine a little swirl in the glass. Be gentleand get a little air in there. You look like a cool, savvy winetaster when you do this, so swish away like you own theplace. Then, place your nose in the glass and inhale. Put yourface right in there and try to get a good sniff. A great winealways smells fragrant. Smelling wine is a very personal affairand everyone detects different “essences” in their glass.“Hints of raspberry” and “new wood” are more descriptivethan “grapey,” but in the end, the whole thing is subjective.

Now, the movement of truth: the TASTE! Have just a littlesip; don’t chug it like shot. You’re in a tasting room, not an alehouse. Let the wine flow over every part of your tongue. Awine may be sweet or dry. Since sweetness is detected at thetip of your tongue, this may be the first thing you will note.Next, feel the wine roll to sides of the tongue. You taste sournotes here, so this is where you will detect any acidic notes.Finally, you taste bitter notes at the back of your mouth. Thisis where very young or over dry wines will leave you with anunpleasant aftertaste. You’ll feel any alcohol as a slight tinglein the back of your throat. Using these basic sensory inputs,you can then make a sophisticated analysis of a wine: “Itasted a semi-sweet, low acid wine with hints of a gentle,melon, after-taste.”

After the tasting, you should have a sense of what youlike and don’t like. Don’t expect to love all of the wines yousample, but a good tasting experience will leave you with atleast one wine you’d like to purchase. If the winery you visitoffers complimentary tastings, it is generally good etiquetteto purchase at least one bottle of wine. If you were able to trytwelve wines, the winery has poured the equivalent of a half abottle of wine, so don’t taste and waste.

Wine tasting for fun is far different than being aprofessional wine analyst for an auction house; so don’t worryabout getting all formal wine tasting steps just right. Thetasting room is a great place to get started on a wine tastingjourney and a good tasting room staff will give you all theencouragement you need in finding your inner-wine critic.

Wehave a lot of regulars and I can usually recall what they like todrink. I’m not good at remembering names, but I usuallyremember what they drink, what they eat, and our lastconversation.

TASTE: What brought you to Hilton Head Island?GORDON: I vacationed for several weeks every summer withmy family on Hilton Head since 1967. I finally moved here in1986.

INGREDIENTS2 lbs. Fresh mahi filet (Skinless,boneless)

Cut into 4, 8 oz. pieces14 oz. unsweetened coconut milk2 Tablespoon mild thai curry paste2-3 sweet potatoes1 Cup dried banana chips1 Cup macadamia nuts (roasted and lightly salted)2 Tablespoon vegetable oil Kosher salt and fresh ground pepper

FOR THE SAUCEPeel sweet potatoes and cut into 2-3 inch cubes and boil

in lightly salted water until tender and ready for mashing

In a separate pan (prefably stainless steel) heat coconut milkand curry paste together and whisk mixture until all of thecurry paste has dissolved.

Strain potatoes and place into a blender, begin to pureewhile slowly adding coconut curry mix until desiredconsistency.

FOR THE CRUST In a food processor add banana chips and macadamias

and pulse to desired texture.FOR THE FISH

Evenly season both sides of the mahi filets with salt andpepper.

Add vegetable oil to a hot sauté pan and sear filets fleshside down on medium high heat until medium brown crusthas formed on 1 side.

Gently flip the mahi filets over and add crust to theseared side of the filet.

Finish the fish in a hot oven (400°) for 5-7 minutes or untilcrust is evenly golden brown.

FOR THE PLATEPlace hot sauce on a warmed entrée plate. In the center

of sauce place desired vegetable selection (recommendsauted root vegetables). Place fish on top of the vegetablesand serve.

INGREDIENTS

2 Lobster Claws from 1¼ lbs Live Maine Lobster10 Fresh Mussels (approx ½ lb)Linguine (6 oz)Olive Oil2 lemons (1 lemon in slices, 1 lemon in half)1 Tablespoon Garlic Chopped½ Teaspoon of Salt½ Teaspoon of Black Pepper1 Teaspoon of Dry Parsley½ cup of Chardonnay½ stick of butter

PREPARATION

Boil Linguine in hot water with salt to taste preference for6 -7 minutes to cook the linguine al dente. Strain and holdaside.

Boil Lobster Claws in hot water for 3½ minutes. Removepot from heat, set aside.

In a 10” pan, add 3 tablespoons olive oil over high heat.

Allow oil to heat. Once hot, add garlic and cook for 20seconds. Add mussels and cook for 30 – 40 seconds. AddChardonnay and reduce heat to medium-high. Cover panand continue cooking for 1 minute. Add pasta, lobster claws,salt, pepper, parsley, butter and sauté stirring frequently untilbutter melts.

Place linguine in bowl with sauce from pan. Placemussels on linguine around bowl evenly, bury lobster claws inlinguine upright in center and garnish with lemon slice.

Yield: One serving

The Easy, Honest Diet ChangeBY CRAIG HYSELL

People ask me for nutritional advice quite a bit at myjob. This is a tricky business. Diet (what people ingest on arelatively regular basis for sustenance or pleasure) is likereligion or politics: there is no one right answer and yetpeople can get extremely touchy about their version of theright answer. Here are 3 quick pieces of advice. The first twoare concise. The third one is a bit broader and just asimportant.

Don’t go on a diet. Yep, that’s right. Going on a dietis impossible. Your diet is your diet and that’s it.“Going” on something is temporary. “Going”somewhere is passive. “Make” change! Put yourself

in the mindframe for success!

You’ve got to know what you’re eating. I meanexactly what you are eating. How can you fixsomething if you don’t know where it’s screwed up?Keep a food log for 5 days. Write down the time of

every meal, every snack and exactly what you ate. Forinstance, if you had a bowl of cereal at 7 a.m., what kind ofcereal was it? How much of it did you have? Did you usemilk? What kind? How much? Etc. The more scientific you

are in your approach, the more you will understand whereyou need to concentrate on making change.

Clean out your cupboards of the junk you aretrying to avoid BEFORE you change your diet.Donate it, if you can’t bring yourself to throw it out.Institute your change for 30 days straight with no

cheat days (the first two weeks will be the most challenging)and don’t try more than one new diet at a time. Stay off thatfiendish scale and let your clothes tell you what’s going on!Keep in mind, what works for one person might not work foryou. Do not get discouraged. Always learn and persevere.

Lastly, you need to be around people you aspire to be like. If you want to be fit, get around fit people. If youwant to be an artist, get around artists. If you want to be a positive, hard working person, don’t hang aroundnegative, lazy people. Coupling your diet with a positiveenvironment that allows you to be who you want to be helps tremendously. Where you go in life is up to you.Choose wisely! Be great!
