While not everyone regularly experiences ultra fine dining, everyone will

have dinner out somewhere, either at a restaurant or a family member’s home. it’s good to remember that having good manners and table etiquette applies to everyone.

Class and style are not limited by income. the world is full of people with no money and lots of class; the world is also just as full of people with no class and lots of money. there may be one chance to make a positive first impres-sion, so those table manners really do matter.

epicurious.com, a culinary Web site, and Protocol training Services, new york City’s leader in etiquette training, offers

numerous suggestions in its Etiquette Guide. Follow this advice to feel comfort-able at any meal.

NapkinsA large dinner napkin is placed on the lap, folded in half. if it is the smaller, luncheon-sized napkin, open it com-pletely. When leaving the table during, or at the end of a meal, do not place the napkin on the chair. leave it to either the right or left of your plate, loosely folded.

Using Utensils ProperlyWhen sitting down to a meal of numer-ous courses, always work from the out-side in toward the plate. on the left, the salad fork is smaller than the entrée fork. Glasses or crystal stemware are to the right of the dinner plate. Knives and spoons are placed at the right side of the plate. the butter knife is also much smaller than the platter knife.

Dessert forks and spoons are often sup-plied as needed after the main course.

however, if there is room on the table, place them at the top of the plate, paral-lel to the edge of the table.

how should food be cut? europeans use a two-step method; Americans use a four-step crossover. Both are acceptable. the two-step places the knife in the right hand, fork in the left. Fork tines are face down, the food is cut, and the food is brought to the mouth, tines down.

the American practice involves more motion. the knife is still in the right hand, and the fork in the left. however, after cutting the dish, set the knife down on the plate and switch the fork to the free right hand, turning it upwards and bringing the food to the mouth. left-handers should reverse the directions for either method.

Between courses, place the used uten-sils on the plate, not the table. Soup spoons should always be placed on the plate beneath the soup bowl or tureen. they should never be left in the bowl.

Diners should enjoy their food, espe-cially if served hot, right away. Protocol does not require waiting for others at the table.

eat longer pastas, like spaghetti, by picking up a few strands and twirling them with a fork. Do not cut spaghetti. A large spoon may assist, but should remain on the plate. Small portions of bread may be substituted for the spoon. When the platter comes with sauce and grated cheese on top, toss to blend.

Pizza wedges should be held in the fingers with the sides curled up to avoid spilling the filling.

Sushi is meant to be finger food, so forget the clumsiness of chopsticks. tip the nigiri, or sushi rice, onto its side. Pick it up with the fingers so that the thumb is holding the fish, and the index and middle fingers are pressed against the rice. if the nigiri has garnish on it, smash it down into a paste so that it remains intact.

to eat raw clams and oysters on the half shell, begin by squeezing lemon juice — covering the wedge to prevent squirting — onto the clam or oyster. Steady the shell against the plate with a free hand and extract the clam or oyster with a small shellfish fork. Dip
