MCE: What was the vision for TRIO? Do you feel like you’ve attained that?TheThe vision was a local driven restaurant that tourists would also come to. We wanted it community based, a place where people could come in and enjoy themselves, and relax—I feel like we’ve attained that with the help of the community. The speaking of what TRIO is about is when a lady that came in, probably around 75—if I could put her in a commercial I would—came up to me and said, “Are you the owner?,” and I said, “Yeah.” “I LOVE coming to trio!” she said all excited, so I asked her why, and she said, “It“It makes me feel young!.” That’s the speaking of what we are about, we do everything, for all ages, it’s for everybody, and that’s what we wanted.

Where do you get your ingredients from?Mark concentrates on getting as many ingredients as we can locally, salads and vegetables, our fresh fish comes from Santa Monica, so it’s all nearby.

What sets TRIO apart from other restaurants in the desert?II think our price point. We offer a good value and are at a right price point. Whereas others have good value, but the food isn’t as good and consistent, but I think we work hard at being consistent.

Tell us about your art program that benefits local schools.WhenWhen we started in business, our goal was to give back to the community. So, we did a benefit for the Palm Springs Arts Program. What we do is we work a deal with Melissa Morgan who houses us with all the artwork, and we donate 10% back to local charities, and every year we do a benefit for the high school and try to raise about $10,000. Kids have to qualify for the program; it is not state funded, it’s publicly funded, so what we raise for them is basically all the money they receive. Why do TRIO and Palm Springs make a perfect fit?Palm Springs is made up of a lot of big town people. It’s a melting pot, all ages, all sexes, all races: it’s a mix of everything, and TRIO is that melting pot.

What keeps customers coming back?What keeps customers coming back?Our friendly servers, consistent food, we’re well priced, and our staff is trained to build their clientele, so it’s a nice feeling when people come in, like they are coming in to their own house and asking for people they know.

You and Mark are very involved in the community, from your contributions to the Desert AIDS Program, to partnering with the Food & Wine Festival, to your art program benefitting local schools. What experience has moved you the greatest, and why? Yes, I co-produced the Food & Wine Festival this year with Palm Springs Life. I’m on the board of AIDS Assistant program, and Mark mentors high school kids if they want to be a chef, so we love doing stuff like that.

There’s an organization called Digicom. It’s part of the Unified School District, There’s an organization called Digicom. It’s part of the Unified School District, and have kids do digital movies about their lives. Two years ago there was a guy that made one about his life—his parents were deported, he was working at McDonald’s, he was living in some lady’s house—terrible story. I went up to him after, his name was Jonathan, and I said, “Jonathan, are you working at McDonalds?” he said no. I asked him if he knew where TRIO was, he said no. I said, “Jonathan, do you have a car?,” he said “yes.” So, I said “Jonathan, come toto TRIO tomorrow and I’ll give you a job.” He worked with us for about a year, and we helped each other, but you can only help so many people, but we gave him an opportunity for a year and he’s on his own now.

This year we met a gal who did a video about not wanting to become her parents who are drug users, so we gave her a scholarship for $2,500 and now she’s going to college. So, those are the kinds of things that get me choked up.

Dining is about the food and the experience, what is your most memorable meal?In Puerto Vallarta, Mexico there’s a place called the Ocean Grill, and you have to take a boat to it. It’s about 25 minutes on the water, and you jump off the boat onto a dock, walk up these stairs, into a big hut. They cook the fish that they catch that day and it’s just a beautiful, peaceful place. It’s like Blue Lagoon. There’s fresh fish, and good drinks, and I’m going in a couple

Do you have any future restaurant plans for Trio or other projects? Do you have any future restaurant plans for Trio or other projects? Yes, always. We’ve had certain goals in our lives. There needs to be another TRIO down valley at some point, and there’s another opportunity that may be coming up shortly that I’ll be able to share in the next 4-5 weeks.

Also,Also, we opened the Purple Room a couple of months ago. We call it TRIO’s little brother. It’s a great restaurant, from back in the Rat Pack days, from the 1960’s, but it’s a great little supper club, with great food, lots of fun, lots of energy in the room, and it’s open 6 nights a week, and late on the weekends. There is nightly entertainment, including the Michael Holmes “The Judy Show” on Sunday nights, which is an awesome show. We have a large portion of small plates, and a great happy hour, including deviled eggs, sloppy joe sliders,sliders, to rib eye steak, salmon-it’s a big menu but it’s all affordably priced. The entertainment is a variety; it ranges from Jazz, Blues, to a little Rock & Roll, and we’ve had magicians from Las Vegas to Dave Edna characters. We have life-size pictures of Frank Sinatra and Dean Martin—t’s a lot of fun.

Sounds like TRIO’s older brother…(laughing) yeah, in a nostalgic way it is the older brother, ya that’s true, but TRIO’s the big boy..

Both residents and visitors have taken to the new establishment, noting the presence of positive change, “The City of Palm Springs is experiencing a tremendous renaissance as an ultra-cool destination for people of all ages to come relax, rejuvenate and enjoy our year-round sunshine and easy lifestyle,” said Mayor Steve Pougnet.

ChefChef Rob Wepplo explains the menu origins, "We're a modern Mexican place; that's the baseline of where we start and then we bring in a number of different techniques whether it be French or Italian," said Executive Chef Robert Wepplo. "We use whenever possible local, sustainable and fresh seasonal ingredients."

HaciendaHacienda features three bars, with a creative list of specialty cocktails. They also have a substantive tequila menu featuring over 80 varieties allowing guests to craft their own tequila flights. Executive General Manager Gerry Noonan, “We’ve priced our tequila sales by the ounce, allowing patrons to purchase any tequila off our massive list for side-by-side tastings.”

South Palm Springs has a popular new neighbor, the Hacienda Cantina & Beach Club welcomed thousands of guests their opening weekend in June. Chris Pardo of Elemental Architecture designed the venue featuring skilled craftsmanship by Calvin Dahlstrom. Dahlstrom using weathered woods and steel to construct VIP Cabanas and pool side loungers. A Dia de los Muertos motif is present throughoutthroughout the space, a playing off Chef Rob Wepplo’s menu of regionally inspired Mexican cuisine. At nearly 8,000 square feet Hacienda Cantina & Beach Club houses a restaurant, bar/lounge, nightclub or “day club” and outdoor plays pace.

The new concept to Palm Springs and the Coachella Valley. The pool is open to the public with no swim club fee or additional admission charge to use the pool, except when ticketed events are taking place. Visitors and residents can lounge pool side, listening to top entertainment acts programmed by Goldenvoice, or enjoying the restaurant’s regional Mexican cuisine menu and three bars.
