PAARL CULTIVARS Chenin Blanc 100% ANALYSIS Alc: 12.5% | R.S: 2.9g/l | T.A: 5.9g/l | pH: 3.34 AWARDS Platter’s Wine Guide 2020: 4.5 stars TASTING NOTES An elegant wine, with an aroma of peach cobbler, lime and vanilla. The wine has a creamy texture and fresh acidity. AGEING POTENTIAL This wine will develop in bottle over 4-5 years from vintage. THE VINEYARD The grapes were harvested from two blocks of vines of over 30 years of age in Agter Paarl. The vines are growing in composite soils of granite and decomposed shale. WINEMAKING The fruit was harvested at 23 to 24 balling, whole bunch pressed and settled before being fermented in barrel with natural wild yeast. The barrels used were large barrels of various ages. Fermentation was very slow. Total production 4,300 bottles. THE STORY OF THIS WINE Every now and again we hear of a parcel of grapes with an interesting story or discover a vineyard that gets our creative juices flowing. This range of wines comprises small volume, premium wines from exclusive and sustainably-farmed vineyards. Our friend Jenny Metelerkamp produced the fine ink drawing for the label.
