Bruno Acharki, bakery director at Brown Sugar, an Oxfordshirebased bakery, is responsible for developing innovative recipes to create bread any craft baker would be proud of. He brings 25 years’ experience to the table and his distinctive bespoke fermentée, which contains no commercial yeast, is used in our Oxford sourdough range and produces extremely versatile breadwith a unique flavour. Utilising traditional methods and sustainableingredients where possible, the bakery sources locally, includingwine from a nearby vineyard and flour from a 4th generation mill.

Wheat is the most prevalent grain in baking and has been usedacross the world for more than ten thousand years.

Wholemeal or wholewheat flour contains the whole of the grain and therefore has more fibre, protein and nutrients when comparedto brown or white flour. White flour in particular, is created byremoving the bran and germ from the grain before milling, reducingbut not removing its nutrient and protein levels.

The majority of bread is made from strong or very strong flours.High protein levels in flour determine its strength, the higher theprotein the stronger the flour. Flours with higher levers of proteinand therefore gluten produce loaves with excellent texture andcrumb structure.

Organic flours use the same methods but are produced from wheat that has been specifically grown without the use of artificialpesticides and fertilisers.

The Boulangerie bakery team works closely with our suppliers toensure that all our bread meets exacting standards every step ofthe way. Through our sourcing of ingredients, to the way ourbread is baked, we will supply you with the perfect product, buthow you store it is vital too.

All our part-baked breads are multi-temperature, so can be storedand used from frozen, chilled or ambient providing they are bakedprior to use. Ambient storage is perfect for a busy service whenbread will be used within 24 hours. If planning for the week aheadchilled storage will keep your bread fresh for up to 3 days. Remember to adjust cooking times accordingly to allow for achange in temperature. If usage is more sporadic keep the breadfrozen to avoid any wastage.
