if winter were a nail polish colour what would it be? If I want to feel toasty and warm during the cold win-ter months, a fresh manicure with a deep red or plum is just what I need.

what is the secret to perfect win-ter skin? Winter can be a very harsh time on your skin. you can’t go past a ‘Go & Glow Facial’ and applying ‘Dr Spiller collagen cream’ every morn-ing and night, to maintain your radi-ance and hydration during this cruel weather.

• avoid sugar and processed foods, white breads, fl ours, pasta and rice. It is proven that an excess of sugar can be detrimental to your immune system and most of us will experience a rebound drop in energy after eating these foods. There are lots of great alternatives for sugar - I have recently embraced the Paleo way and am enjoying a clearer head and more sustained energy.

• Bone broth has many secret an-ti-aging benefi ts. I make a pot of soul-satisfying chicken broth every week and enjoy a cup each day. It’s full of nutrients and minerals, fi lls you up and warms you down to your toes, so you’re never tempted to over-eat or snack on junk that ages your body and lowers your immunity.

• Start the day with a hot shower, and before you get out, switch to cold for 15 seconds. This revitalises the skin by stimulating the fl ow of blood through the body. Trust me… It’s in-vigorating!

who is your winter style icon? Late-ly at Aje. we’ve been loving how Vydia Rishie has been layering tough leather and denim and pairing it with utility style vests – similar to what you can expect from Aje. in the coming months.

what is your favourite cocktail on James st? you really can’t go wrong with an espresso martini from Sixes and Sevens.

what is one winter essential you cannot do without? I’m 100% a skirt girl so when it starts to get cold, I get into a pair of thick denier opaques to layer un-der the sequin, leather and denim skirts I’ve stockpiled through summer. It keeps the wardrobe going all year round!

what elements of brisbane culture are you most pas-sionate about? I love the in-dependent music and art scene. You will often fi nd me out en-joying live music of various gen-res and also at art openings and exhibitions. I fi nd it inspiring and essential to my work.

what’s your idea of the per-fect winter date? A night in the country with my husband, a bottle of red wine, roaring fi re and the girls asleep upstairs!

what is your secret to the perfect winter look? I love winter dressing - there are so many elements to enjoy. I love layering with beautiful woolen scarves, frocks, pins, and an oversized coat! And for those blustery cold days, a felt hat and gloves fi nishes the look.

if winter were a gorman piece, what would it be? It would have to be our ‘Faux Pas jacket.’ It’s super warm and useful without being like every other puff -er jacket out there! Quilt-ed back and puff er sleeves keep you protected from the cold with some colour-ful faux fur geo shapes on the front. It’s great for add-ing a bit of practical disco to the wardrobe.

what is the one winter essential you cannot do without? My pom pom beanie for my early morn-ing walks.

what is your ultimate winter travel destina-tion? Paris! It is so beau-tiful in the winter and a very inspiring city. I love walking the streets, visiting galleries and indulging in cheese and wine!

who is your winter style icon? Artist Miran-da Skoczek. I collaborated with Miranda for our Win-ter 15 collection prints and she is not shy and is brave and fabulous in how she dresses. She wears a lot of colour, layers, fabrications, textures, jewels - a feast for the senses.

what is the one winter es-sential you cannot do with-out? I would have to say a big beautiful coat that I can throw over any outfi t. My favourite at the moment is the Traveller Coat that just hit our stores.

who is your winter style icon? I’ve been following Em-manuelle Alt for a long time, I really love her style, layering and chic look.

what is your secret to the perfect winter look? The per-fect winter boot - it can make or break an outfi t! I absolutely love the Hudson Boots we have in store at the moment. They add a point of diff erence to a win-ter outfi t and are a great staple piece for any wardrobe.

what is your secret to the perfect winter look? A great coat in a quality fabric and good cut is essential for winter. Not only will it be practical for the cooler months, but it also makes an easy addition to com-plete a look. what is your ultimate win-ter travel destination? I have just been to Barcelona and I loved it’s rustic edge, colour, people, food and wine! It’s a mix of the bohemian with the cosmopolitan and is full of life. what is one winter essen-tial you cannot do without? A cashmere cardigan is a must; it’s handy and a go-to in winter. Cashmere is beautiful to wear, light, soft and adds a bit of luxe to any outfi t.

what is the one item that should be on everyone’s grocery list this winter? When fresh home-grown tomatoes are not in season, make liberal use of canned tomatoes and my favourite variety is San Marzano, great for soups, paella dishes and pas-ta sauces.

what is your tip for breaking up the monotony of winter dishes such as bangers and mash? Noth-ing quite beats a Dutch cream potato in winter however I love le puy style green lentils, cabbage (loaded with vi-tamins and minerals), celeriac (deli-cious), kale and brussel sprouts. Try a slow cooked spiced rib of beef, celeri-ac mash and brussel sprouts blanched and then sautéed in French unsalted butter, tossed with toasted almonds and small pieces of slow roasted belly bacon.

How has the food scene in bris-bane evolved in the last decade? We have seen Brisbane restaurateurs and chefs alike starting to fi nd their own sort of identity. There is real originality coming through with many new diff erent styles of venue and food. There are more dedicated festi-vals and food markets also off ering a wider selection of food and introduc-tion of new cuisines.

We caught up with Michael Dean, Product Procurement & Operations Manager at the James St Market to talk about all things food and winter.

winter in tHe KitcHen

who is an up and coming local producer that we should keep on our radar? Woombye Cheese, Lirah vinegar and New Farm Confectionery.

What would we fi nd on a perfect winter cheeseboard? A fromage des Clarines studded with blanched garlic or truffl e (see recipe), raclette and comte gruyere.

what is your one foolproof winter dish? Risotto. Simply obey the basic rules and use a good rice; Carnaroli is my favourite as it produces a creamy risotto. A quick tip: at the end of cook-ing, fold in plenty of unsalted French butter and heaps of fi nely grated Reg-giano parmesan.

what elements of brisbane food culture are you most passionate about and why? I love the multicul-turalism that brings us such a beau-tiful blend of many cuisines. I love how fresh produce, particularly local, is gaining a place in many Brisbane eateries and home kitchens and these producers are being recognised for their commitment.

what is the best way to contin-ue the ritual of bbQing into the

colder months? If you own a BBQ with a lid, experiment with an accu-rate thermometer and use your BBQ to slow cook dishes at lower temper-atures. This can enhance the fl avour, particularly when cooking on lump wood charcoal, and help with the tenderization. use a pizza stone on your BBQ for perfect pizzas. I person-ally only cook on natural lump wood charcoal at low temperatures - I love it, even the smell of the slow smoul-dering charcoal on a cold night.

METHOD1. Preheat oven / BBQ to 220°C2. Unwrap the plastic covering from the cheese and leave the cheese (uncovered) in the wooden box.3. Stud the top of the cheese with slivers of garlic or truffle.4. Sprinkle the fresh herbs over the top of the cheese and add a splash of wine.5. Cover with foil, put cheese in the oven for 20 minutes or until golden brown on top.6. If using garlic, remove the slivers before serving. If using truffle, do not remove.* To reduce the intensity of the garlic, it can be blanched in cold water prior to slicing.

if winter were a meal what would it be? My absolute favourite comfort food in winter is my mother’s home-made minestrone with Angelo’s ravi-olini.

What is your secret to executing the perfect winter meal? For me, it’s all about the food! you can’t go wrong when you use the best, fresh ingredients tossed with love.

what is the one winter essential you cannot do without? Apart from food, I love wearing scarves and always have one nearby.

if winter were a dish what would it be? Shakshouka of course! Straight from the oven still in the skillet on a cold morning, the best toasted sourdough available and loads of hot coffee!

what’s your secret to the perfect winter meal? Large plates of slow cooked meats, heaps of tasty veggie dishes and Iranian rice, shared on the deck at home with good friends and a couple of bottles of solid grenache.

the one winter essential i can't do without? Game of Thrones. As soon as the temperature drops I get a little bit excited.

what’s one word you immediately identify with brisbane winter? It has got to be the EKKA. I never went until last year. We took our 5 year-old for the fi rst time and it was amazing seeing him have an adrenalin rush on a roller coaster - it’s magic expe-rienced through a little person’s eyes.

INGREDIENTSHalf an onion sliced thinly • one garlic clove crushed • two tbs extra virgin olive oil • two cinnamon quills • ¼ tsp caraway

seeds • ½ tsp cumin • ¼ tsp freshly ground coriander seeds • one pinch of saffron • one tin crushed tomatoes • one roasted red capsicum peeled and puréed • two pinches dried mint • one bunch coriander, leaves picked, stalks and roots finely

chopped • one merguez sausage, skin removed and broken apart • six free range eggs • two tbs thick yoghurt or labne • one bunch picked mint leaves and reserved coriander leaves • best quality sourdough

METHOD: In a heavy-based pot sweat the onion and garlic in the oil until very soft. Turn up the heat and add the cinnamon, caraway, cumin and ground coriander. Sauté until fragrant then add the tomatoes, saff ron, puréed red pepper and dried mint. Cook out for 30mins until thick and sweet. Adjust seasoning with salt or raw sugar if necessary.

In two cast iron skillets, colour the broken merguez and then add the tomato base. When boiling, crack the eggs into it and stir in carefully, trying not to break the yolks until well distributed. Cook out in a preheated oven at 200°C until the whites have set but the yolks are runny (about 5 to 10mins). Serve immediately, topped with yoghurt and herbs and freshly toasted sourdough.

The rendered fat and smoky fl avour along with the earthy tones of the caulifl ower accented by ras el hanout is complimented by sweet pomegranate. Eat this while en-joying the Brisbane blue skies, warm days and crisp nights of winter.

What is your secret to the exe-cuting the perfect winter meal?

There is one thing that is built into our DNA. It’s the taste of food cooked over an open fi re, the fl avour every-one recognizes and loves. This is how everyone has cooked and eaten through all of the ages.

Duck confi t was traditionally made in France, particularly in the south west region. It was used as a method of preserving duck or goose for the winter months, before refrigeration was available. The process starts with the marylands (leg and thigh) salted with the bone in, for up to 30 hours. Salting removes moisture from the raw poultry, in the same way that salt

is used to cure other proteins such as a fresh side of Atlantic salmon.

The salt is next rinsed off and the meat is patted dry and then complete-ly covered in the relevant fat i.e. duck in duck fat, goose in goose fat.

The cooking process is similar to a braising or slow cook method with at least 2.5-3 hours of cooking at around 140-150°C in the oven. Some variations include cooking the meat for up to 6 hours at 110°C or until the meat falls from the bone and melts in the mouth.

When preserving, the meat is cooked and then transferred into pre-serving jars and completely covered with fat. It is then stored in a wine or root cellar for months at a time. From a modern perspective the protein would be stored in the fridge.

To fi nish, remove the duck confi t

from the fat and allow to warm slight-ly. Heat a heavy-based frypan and add the duck skin-side down and al-low the skin to get golden brown and crispy. Turn over and repeat on the other side, then fi nish in an 180°C oven until the duck is hot through.

This dish is often served with braised cabbage, fennel or witlof with either a red wine or other vinegar, providing a sharp fl avour to contrast the richness of the duck.

We can still enjoy heavier textiles such as fur, shearling and wool in QLD - just remember to purchase in silhouettes that make sense for our climate e.g. a shorter length jacket or vest. Inexpensive layering pieces such as a scarf or stockings can be a good way to revisit pieces in your wardrobe from autumn.

what is the one item in your wardrobe you can’t live without? My Strateas Carlucci black leather jacket; I wear this whenever I travel and receive compliments every time.

I am not inclined to wear layered accessories so will be opting for a great handbag and shoes with an outfi t instead of lots of jewellery.

For winter SS16, we’re channeling Sir John Everett Millais’ moody painting, ‘Ophelia.’ Botanical el-ements such as leaf motifs and earthy textures are softened with muted blush tones and crystal embellishment. The Botanist ear-rings were among my favourite fi nds on this strip. I love the way the champagne crystals catch the light.

Whenever I travel, I always carry a little notebook just in case inspiration strikes. I col-lected a bundle of beautiful leather notebooks on my fi rst day of treasure hunting; more market fi nds.

If possible, I’ll opt for a night fl ight on my return journey. There’s something romantic about wak-ing up to watch the sunrise from above the clouds.

what are the best plants to grow during winter? Winter is a great time to grow vegetables in Brisbane as the weather is perfect. Most of the pests and disease that plague our veggies during the summer are dormant in the cooler months of the year. Veggies such as tomatoes, silverbeet, kale, cabbage and broccoli are our pick of the bunch.

what is the secret to making sure gardens make it through winter? Fertilise - people forget that we have a 12-month growing season here in Bris-bane. Many gardeners follow a North-

ern Hemisphere regime where plants go to sleep during winter and don’t require feeding for optimal health and vitality. Mulch is the other great material that many people don’t have in their garden but should. use a high nitrogen mulch to feed the soil and retain moisture.

advice for creating a snug home in winter? Take cue from the Danes who are re-portedly the happiest nation in the world and yet live for a large part of the year in deep, dark winter! The secret of their well-being is attributed to their philosophy of “hygge” - loose-ly translated as a feeling of warmth and cosiness. This in-cludes creating a joyful and in-viting atmosphere in the home through things like thick pile rugs, candles and books. In a deeper sense it implies taking delight in simple things and fi nding happiness in the small moments of joy that make a life.

there is one essential item that makes a home, but I do know that the best homes are those that feel lived in and loved and are a refl ection of the journeys and passions of the people who live there.

if winter were an artist who would it be? Edvard Munch. In the early 1900’s Munch had an open air studio where he would paint scenes standing in the snow in sub zero tem-peratures - the mood of those paint-ings is sensational.
