welcome to issue 44. This month we are featuring some stunning apartments. With smaller homes and even one-bed apartments becoming increasingly sought-after, we are pleased to showcase two compact apartments that can really inspire us with their clever layouts. Martin Xuereb talks us through his techniques for maximizing

light, facilitating comfortable living and making the place seem bigger. Daniel Scerri created a bachelor pad in a very small space by focusing on the vertical volumes. In a Tigné Point apartment offering the luxury of space, Duo Designers focused on incorporating the clients’ request was for red and leaving plenty of space for young children to play in. In an exclusive HOMEWORKS interview, Lisa Borain caught up with design guru Giorgio Armani to talk about the launch of his latest Armani Casa outlet. We focus on the trends that are taking the concept of a feature wall to new heights. Innovations in technology are allowing solid surface materials to be made thinner and in larger panels, so that they become eminently suitable to cover a vertical surface. Walls are definitely taking centre stage in contemporary interiors. We look at several ways to create a custom wall with a wow factor. Our cuisine pages bring us some welcome relief from the heat: cold dishes that are easy to prepare and perfect for summer entertaining. Claude Camilleri adds his touch to classic gazpacho, steak tartare and summer pudding. The gardening pages remind the enthusiasts among us of the time to reap, and the time to sow for both flowering plants and vegetables. Enjoy!

GLASS ThAT PEfOrMSMost people know that you get better performance from double glazing than from single pane windows, however there are even more options to increase the efficiency of insulated windows by using specific types of glass. ‘Low emittance glass’ will suppress radiant heat flow by reflecting energy back into the house in the winter when the sun is low and reflecting energy away in the summer when the sun is higher in the sky. Adding Argon gas to the low emittance glass – which makes it difficult for warm or cold air to pass through – gives 40% more efficiency.

NATUrAL LIGhT SOLUTIONSSkylights aren’t much in vogue nowadays, but the newer tubular version is creating interest. Tubular skylights involve a roof-mounted acrylic lens set inserted in a metal frame. The sunlight is then guided to a diffuser lens (resembling conventional lighting fixtures) mounted on the interior of the ceiling, which simply spreads light throughout the room. Tubular skylights may use plastic glazing or glass, and are smaller than most other skylights without losing efficiency. Because they have a small surface area, they minimise heat losses in winter and heat gains in summer.

GrOUNd-brEAkING dESIGNDesigned by the Roca innovation lab, together with Gabriele and Oscar Buratti, W+W is a truly exciting innovation from Roca. The W+W is an all-in-one washbasin and WC designed to maximise space and conserve water. It uses waste water from the basin to fill the WC cistern, thereby reducing water usage by up to 25% compared to a standard 6/3 litre dual-flush WC. For safe hygiene there is a double filtration system to filter particle debris and chemically treat the used water before being applied to flush the WC, thereby eliminating bacteria. W+W also won the international Design Plus Award at ISH 2009 – an award given to products that are outstanding in terms of their innovative concept as well as sustainability.

hW: When opening a new Armani

Casa outlet, particularly in Milan, what still

excites you most about the process?

GA: It’s important to be seen

globally, to be recognised – and what

better place to do this than Milan?

What instantly excites me is that this is the

biggest Armani Casa store and it is opening at

the right time, within the right space.

The new Milan store holds the

entire collection, with new items.

Everything is available here –

even bathrooms and kitchens.

But this is just the tip of the

diamond. This is a unique

place to me. It is an

immense space and

everything is produced

here. Private clients,

decorators and

architects can view it, then proceed to the

top floor, where we now have the interior

design offices. This is great for me personally

as well, because it allows me to work in one

place. This in itself is very exciting to me.

Apart from all of this, this store was

previously the very first Giorgio

Armani fashion boutique. The store

today is actually surprisingly similar,

considering the first opening

was back in the late 70s. One

always returns to where one was committed.

I feel that this space is good luck.

hW: I imagine Armani Casa designs are

an amalgamation of advisors’ and designers’

suggestions and opinions. How often do you

end up disregarding all the advice and just

go on your initial instinct? How do you stay

in focus on what is wanted by the market?

GA: [Laughs] People listen to me, not

the other way around. And they listen to

me with all my errors. The first question I

had to ask myself for the furnishings and

design sector of the business was: what

did I want to be? To do? To stand for?

Most importantly, I wanted to stand apart

from the others, to be unique. I wanted

to be a great innovator: a scrupulous,

meticulous researcher from the past.

The best road for me was to be myself. I

have a certain classic style. When some

people see my pieces at first, they don’t see

the innovation. My pieces have some sort

of connection with modern art – the detail

of it all. It’s innovatively classical with a clear

outspoken view of what I love in fashion.

I’ve bettered the collection now. In the

beginning my work was basic. It was too

mystical. People buy one or two sofas in their

life. I found out that clients want glamour, not

mysticism. I found out that the client who

buys is female so the furniture must have a

female touch. The feeling that the client then

brings to the piece is personal. I had to, in a

certain sense, give in to this. I realised that I

had to find a compromise – all of this without

overlooking what I love, which is the finishing.

My biggest setback is that I have no time to

think; yet I am obliged to have fantastic ideas.

It’s like having one hour to study, except I have

one hour to create a living room. I am obliged

to be quick and immediate. When you’re

obliged you have no time for loose ends.

hW: What is your favourite

Armani Casa piece?

GA: The burgundy lizard skin desk.

It’s classic and glamorous, embodying

the Armani Casa lifestyle.

this project emphasises that

importance should be given before the

construction of a building to proper

design of the internal voids and spaces.

Spaces need not be left-over volumes

inside a building shell. The art of creating

a feel-good space should be the driving

factor from the initial stage of any project.

August Schmarsow was perhaps the first

to talk about ‘raumkunst’, the art of space.

How is it done in a small interior? Daniel

Scerri explains that space does not need

to be tightly contained in rooms within the

property. “The articulated spaces project into

the main space and their interior becomes

porous. Space flows continuously from one

function to another, as does the user. This

attention to space shifts the focus from a

solid building that needs to be constructed,

to a void that can be filled with activities.”

the chandelier in the back yard serves as an external focal point at the lower level. the psychological partition between the entrance and the kitchen is perceived by a cluster of twigs at eye level, passing through the bar counter.

the main exercise was primarily with the size that was available for the creation of an inspiring space.

“materials, textures, colour schemes and styling reflect the contrast between rough and smooth, raw and refined, dark and light. the use of contrasting textures, e.g. raw versus elaborate, triggers an internal conflict/attraction between the raw and the refined part of our personalities. Certain textures and materials, if used in the correct location and in the right proportions, can actually trigger emotions. space itself can be spiritually and emotionally uplifting. Living in a particular space can mean the difference between feeling depressed or happy, particularly for sensitive and moody people. As architects i feel we have an obligation to do our best towards the creation of feel-good spaces.

in some cases a rough texture has been purposely applied, such as a very rough dark texture inside the niche that, with light reflected on it, gives the feeling of a warm hearth core beneath the sharp, minimal exterior.

by introducing texture, the user feels closer to the building, and therefore more comfortable. i have had people walking towards a wall and rubbing their palm against it to feel the texture – that is a demonstration of interaction success. the colours and materials of the fixed pieces of furniture (by studio moda to a custom-made design) create a neutral background, livened up by a hint of colour, lime green in the lower level, burgundy in the upper level.”

This duplex was carefully designed around the needs

and activities of the user/owner. The sequence of

spaces, the allocated volumes, the proportions

of the spaces, down to the details of materials,

textures and focal points reflect the owner’s

personality, character, lifestyle and frame of mind (at

the time it was designed). The place was designed

to be the ideal bachelor’s pad, complete with

gadgets: a well-sized living room, projector, sound

system throughout, BBQ area, various terraces

for entertaining, and an open flow of spaces.

Hints of this very personalised design are evident

throughout: a quote to live by, the abstracted

chandelier in the back terrace void, the ‘memory

niche’, maximisation of storage space and

organisation of storage. This combines to create a

relaxation pad, free from clutter but enhanced with

one-off items strategically placed to give interest to

any viewpoint, rather than a reductionist minimalism.

The main exercise was primarily with the

size that was available for the creation of an

colour (inherent in material itself, not paint) and

texture, to further emphasise the experience

with the created volumes, voids and spaces.

Daniel Scerri: “I consider texture and material to be

much more important and effective than use of colour

alone to create contrast and composition. For interiors

this aspect of touch gains even more importance

since surfaces and volumes are perceived at closer

proximity and the sensory interaction is more likely

and frequent. natural daylight is important, since it

brings a sense of well-being. It has most effect on raw

materials, as their full splendour usually only comes

out in sunshine. Internally, the amount of natural

and artificial light can be adjusted to create various

moods, through the use of reflections, shadows and

light itself falling on the various surfaces and textures.”

the ceiling. All the external building envelope is

insulated (walls, roof, apertures, floors) and in the

case of walls, for both heat and sound. South-

facing projections are built such that sunlight is

allowed in only in winter, creating an interesting

play of the sun’s rays against the textured walls.

Artificial lighting provides for a myriad of mood

effects, ideal for backdrops depending on the

activity. The only white wall of the property has

images projected on it via an Av projector, such

that the projection can be seen from both levels.

The concrete panel wall further emphasises the

double-height, its warmth avoiding the coldness of

a bare high space. Its combination of a rough, raw

material with a refined finish gives a pleasant feel.

Daniel: “Cold surfaces have been purposely avoided,

particularly in the bathroom, which is the area with

most sensory contact. Wall cladding is textured and

dark, creating a background that visually recedes,

bringing the contrasting mirror forward. The black

crocodile-skin basin is one of my favourites in the

apartment; the bathroom was designed around it.

The bathroom’s touch of classical, old and kitsch

gives a hint of forced character to the design. A lime

green wall gives touch of colour and life, while a

white wall provides a break between the dark grey

and the lime green, and continuity with the ceiling.”

Living room and bedroom floors are covered

with light timber panels. This same material

was used for the stair treads for consistency

in horizontal surfaces between the two main

spaces. The staircase was kept lightweight to

avoid blocking the flow of space and avoid the

negative space created beneath the staircase.

The wallpaper is placed along the staircase,

offering a smooth pleasant touch and a contrasting

warm tone to the glass cladding opposite, while

lighting lights up the wallpaper for increased effect.

The external planter at the upper level

provides both a degree of privacy for the

bedroom back terrace, as well as creating a

foreground to the view of Sliema Creek.

t his is a good example of Penny Apap Brown and Annabel

Caruana of Duo Designers delivering a fresh, modern design

concept on a very affordable budget. Their clients’ brief for

designing this apartment was to make it ‘small–child friendly’ and

to provide plenty of clear floor space for their two young children

to spread out with their toys. This was achieved in the family space

which incorporates the typical open plan living/dining and kitchen

area.

The family expressed a wish to include Swedish furniture in the design concept. The kitchen, dining room, Tv unit, rugs and some of the pictures were imported. With so much natural light streaming in from the big terrace, blinds were chosen in preference to curtains. The living room blinds have an unusual design, featuring tree trunks in shades of greys and black on a white background, which break up what is otherwise a long wall of glass and contrast effectively with the facing wall which is white.

Red was used to provide dramatic colour. Feature walls were spiced up with a bright Harlequin Harris red, charcoal and black striped wallpaper and red paint. The Homemate charcoal sofa is simple, comfortable and a

practical colour for the children to play on. Oversized cushions with velvet spots in lime green, red and turquoise are favourites with the children and get dragged onto the floor for play and watching Tv. A black iron floor lamp with a paper shade provides light to the seating area. Glass and brushed steel wall and ceiling lights and table lamps are imported. The colour red was scattered around in different forms, from the flower wall décor to a large black and white picture featuring a red bicycle.

The bedroom furniture is Duo Designers’ Swiss brand. The spacious master bedroom has a natural wood finish, the headboard is brown, woven leather. The Harlequin Harris wallpaper behind the bed is striped silver grey and fuchsia pink and the curtains are in taffeta. Wallpapering one wall in any room immediately makes an impact.

The children’s bedroom is fresh lime green featuring Duo Designers’ Swiss brand furniture. A multicoloured, striped rug brightens the floor.

The third bedroom, a guest room, is masculine, featuring walnut and steel furniture with a strictly monotone scheme in contrast to the rest of the apartment.

small apartments have now become

very sought after, totally the

opposite of when this apartment

was built in the 80s. Architect Martin Xuereb

happens to be both the present owner and

original architect of this Sliema property.

The original design featured an entrance

hallway, all the rooms opened up on to

the view and the kitchen was at the back.

Martin’s redesign necessitated changing

the whole layout to make it more current.

At approximately 66m2 the apartment is quite

small, so it was important to make use of

every bit of space. “An entrance hall is wasted

space, you might as well come into your living

room straight away. If you take the analogy

of a hotel room, you see how this works.”

Martin doesn’t like having a totally open plan

kitchen/living/dining. “I am a firm believer that

the kitchen has to be centrally placed but not

be the focal point. I’m also obsessed by light

and made it a priority during the redesign.

The main rooms I wanted to heat up are

now facing south and also have a view of the

sea. I moved the orientation of the front door

and the layout so that the main room has

two apertures to maximise light. When you

come in during the day you are facing south

and are greeted by light straight away.”

The kitchen is centrally placed yet is tucked

in at the side, the advantages being that from

it one can still enjoy other people’s company

and the room also benefits from the natural

light. Martin introduced a breakfast bench

to block the view inwards slightly, because

“there is always a bit of mess going on”.

Another original feature is the entrance door.

“When you are sitting in the dining room you

would be facing a door, which I didn’t want, so

I added wood panels to turn it into an L, which

makes it look like a partition screen. It became

a design feature. Had it been one panel, you

would still have had the idea of a door.”

Another major consideration is the soffits. “In

the areas where I want people to pass through,

I lower the ceilings. This gives two benefits:

it makes the space wider, and imperceptibly

guides you where you have to go. I also did

this in the entrances to the more private areas.

“Since the apartment is very small, I needed

to get a crescendo effect. I like to have

the higher ceilings close to the light, higher

than the inside, so you get the effect of

the light coming in. By putting the inside

soffit lower and a light in the higher point,

it automatically guides you to the view.”

Another challenge was to make the living/

dining room look larger, which was done by

the use of black and white. “I put white in

the centre because white normally makes

things larger. Black is used at either end.

Automatically the black pulls the room back –

even if you don’t have shadow – it gives depth.

The picture frames have the same effect.”

In the bathroom, Martin also not only created

clever storage, but introduced details to make

the space look bigger and be practical. “The

lower part of the bathroom soffit matches

the wall, providing continuity with the ceiling.

By creating a shelf around the bath, it unifies

the space and gives a comfortable seat. I

like to avoid the use of silicone behind the

basin because it tends to look grubby after

a while, so I positioned the basin away from

the wall. A gap of 2cm allows any water

to go down and it can be easily wiped. I

used the same detail for the bath, leaving a

gap between the bath and the wall.”

I like to think that the last decade will be seen as another Renaissance.

Something’s happened to designers – whether they are creating modular

seating, handbags or, websites – because the old rules no longer apply.

They are thinking in multiple dimensions and conjuring up dual and triple

functions for many items of furniture and the humble wall is also being

taken to new heights. Why are walls coming to the fore in home décor?

Traditionally, walls were decorated at the cornice, frieze, picture rail, chair

rail and skirting board levels, as well as around window and door frames.

Then came the feature wall, one wall of a room being decorated boldly to

stand out. In Malta the bare stone finish (fuq il-fil) was our first real foray into

allowing walls to be focal points in themselves. We still enjoy the odd flirtation

with wallpaper and we’re still experimenting with the joys of perfectly smooth

gypsum. Even here, the feature wall is morphing into something that can

stand on its own, a design feature in and of itself. Why is this happening?

it’s all about balance

Minimalism, modularity and simplicity are giving us the freedom to re-think what

can be achieved within four walls, this time including the walls themselves.

Contemporary furniture has dictated new dimensions. It has a lower, more

horizontal orientation which is being echoed throughout the design spectrum:

in window treatments in plain fabrics with wide bands of colour at hem, tape

or middle heights and in the new elongated wall-hung units that suit either a

living or kitchen space. It is this horizontal quality which begs for an equally

strong vertical element to balance it. Alongside the new horizontal focus, larger,

open-plan spaces have forced us to think in terms of zones, both at floor level

and on the walls. Hence walls taking on an important design element.

Eiseman says that anything that lends

itself to movement via optical illusions, light

interplay etc., is in. Retro 3D is the latest

look. The 3D effect, combined with cutouts,

offers numerous design possibilities.

The first is obvious, where the original wall

that shows through can be in a contrasting

colour. Lighting is the second option,

whether single colour or changing lights,

that will create a totally different mood

at night. Wall cladding with cutouts is a

good option for climates like ours because

they allow stone walls to breathe.

how to achieve the effect

A contemporary setting which has minimal

detailing and an absence of architectural

detailing, runs the risk of seeming cold and

remote. If walls are dull they need decoration

and elaboration. To transform flat colour into

areas of movement and depth, think in terms

of blocks of shape and zones, either horizontal

(in an updated version of a border or frieze),

vertical or like a huge frame. The shape should

be a simple and bold one to prevent the walls

from appearing fussy. notice how flat screen

Tvs are being given a frame, set into sleek

gypsum, into quartz walls and even wardrobes.

An entire wall can be covered with pattern

or texture from corner to corner, or allow a

smaller and unexpected addition of stark

colour to give layers and dimension.

If you have a blank wall that could serve

as a focal point for a large room, consider

custom-creating a piece of art. This could

be a photo enlarged as a print or mural, a

graphic stencilled artwork painted on to the

wall, or the latest custom-print tiles. Composite

materials can be moulded and formed to create

smooth, curved installations. The possibilities

for customization mean that an individual piece

of wall art is only a few mouse clicks away.

Moving on from the trend for frameless

paintings and framed fabric wall hangings,

smaller panels of leather, vinyl, textured fabrics

or wallpaper can be attached with velcro to

the wall, to form a modern take on the mosaic.

In a similar way, shelving and cupboards

are being positioned on walls as a focal

point and work of art in their own right.

Consider not only how a feature wall can add new colour, but

new texture to a room. Moving on from the mainstays of paint,

plaster, paper, wood and cork, innovations in technology have

The focus This monTh is on heAlThy, quick And eAsy food.“The wonderful thing about these recipes is that they are all extremely low in calories.  I refer to this as part of my zero calorie

armoury in my repertoire.  It all has to do with the principles of catabolic (the opposite of anabolic) foods – foods that require

more calories to digest than they actually contain.  Even though these foods have calories, they are extremely low in calories

and if you remove the addition of sugar that the recipes require, then you are discovering the secret of how all those Parisienne

women stay so slim. Although I do not recommend it, you can achieve almost complete zero calories by replacing the sugar with

an alternative fake sweetener. But, to be honest, I would rather die a bit younger and happier. The other beautiful thing is that all

the dishes can be prepared before needed.  On the day all you have to do is just take out of the fridge and serve.”

Gazpacho24 ripe tomatoes1 red onion1 cucumber2 sweet red bell peppers, seeded2 stalks celery, chopped 4 tbsp chopped fresh parsley2 tbsp chopped fresh chives12 leaves fresh basil3 leaves fresh mint1 tbsp thyme1 chilli, deseeded1 clove garlic, minced2 tbsp freshly squeezed lemon juice2 tsps sugar1 tbsp Worcestershire saucesalt and fresh ground pepper to taste

you are never going to make all the ingredients fit in a blender all at once. put some of the ingredients in the blender and add with them some of the tomatoes, seeds, skin and all. do not fret too much. skin of vegetables is good. blend, mix together in a big bowl and refrigerate overnight for the flavours to fuse. have it as rustic or smooth as you like. serve topped with an extra virgin olive oil (evoo) ice cream and a sprig of wild rucola.

Extra Virgin Olive Oil Ice Cream500ml milk100ml crème fraiche (alternative: benna cream)150g sugar5 egg yolks½ vanilla bean250ml of good olive oil

make sure that the honey is at room temperature as is the yoghurt. mix them together well and churn.

method for evoo ice cream: heat the milk with the crème fraiche and the split vanilla. separately, beat the egg yolks with the sugar until they are light and foamy. slowly add the hot milk to the egg mixture, mixing constantly; place over a low heat and continue to stir until the mixture thickens enough to coat the spoon. chill, add olive oil and churn in an ice cream maker.

Steak Tartare 200g fresh lean beef1 egg yolk 1 tsp mustard, dijon recommended 1 tbsp red onion, finely chopped1 tbsp capers, drained, rinsed and roughly chopped1 tbsp fresh grated horseradish1 tbsp gherkins, finely choppedA few drops of Tabasco sauce (five splashes as minimum)

2 tsp Worcestershire sauce 1 tbsp olive oil (optional)

1 tbsp cognac1 tbsp parsley, mincedsalt and pepper

so much myth surrounds the steak tartare. let us start by saying that it will noT kill you. but if you are pregnant or in ill health, you should avoid it.

Although the meat should be fresh, it does not have to be an expensive cut. it just has to be a very lean cut of beef. if you buy the beef and get the butcher to mince it for you (inform him that you are using it raw so he takes extra care not to contaminate it for you) the day before, you can put it in portions in the fridge. Alternatively, mince it yourself, at home. pass the meat through a coarse mincer twice.

Wash the egg. prepare boiling water. immerse eggs in boiling water. Wash hands with disinfectant and take egg out of boiling water once you dry your hands. This way the egg is sanitised and all bacteria, including e-coli on the shell, is killed.

either serve the patty in the middle of the plate with the condiments around the plate in little piles. in that case, make an impression in the middle of the patty and place the egg yolk there. The wet additions could be placed in shot glasses.

Alternatively, in a bowl, mix the dry ingredients with the patty and add the Tabasco, Worcestershire sauce, the mustard, the cognac, the olive oil and the egg.

GAZPACHO – BEST WINE ACCOMPANIMENT 2009 MEDINA ROSÉ GRENACHE D.O.K. MALTA.matching wine with soup can be problematic (and especially cold soup), but this is a thick soup with lots of flavour and weight, not thin and watery at all.  during the winter months i would probably opt for a non-tannic light bodied red, but during the warmer weather i would go for something lighter still, that i can chill down.

A full-flavoured white, with low acidity will work well but what i think works even better is a fruity, dry rosé. That is why i have opted for a medina rosé grenache, its soft creaminess will balance out the crème fraiche and its overt fruitiness will go well with the delicious ripe maltese tomatoes.

STEAK TARTARE – BEST WINE ACCOMPANIMENT 2009 MEDINA SANGIOVESE I.G.T. MALTESE ISLANDS.Although the raw beef is prominent in this dish it is the spicy elements we need to consider more closely when trying to match a wine. horseradish, Tabasco, Worcestershire sauce and dijon mustard are all fairly hot or spicy and on top of that we have strong flavoured ingredients like cognac, capers and gherkins. so i am definitely looking for a wine that is strong enough to cope with these flavours but not add to them and something that is going to refresh my palate. A clean, full flavoured, weighty white would suffice, but i am going to opt for a red that i can chill down comfortably, so the tannins need to be low, and has enough flavour to combat those spicy elements. my choice is a soft, medium bodied, slightly spicy red, medina sangiovese. SUMMER PUDDING – BEST WINE ACCOMPANIMENT DELICATA GELLEWZA FRIZZANTE ROSÉ – DEMI SEC.This is a classic combination, red summer fruits and medium dry sparkling wine, nicely chilled down, a match made in heaven. The fizz on the tongue is the only thing that will adequately cope with the mouth-numbing chill of ice cream and the gellewza grape is perfect with ripe summer fruits. The flavour characteristics of malta’s indigenous black grape, when fermented into a rosé wine, are strawberries and raspberries, making it a really compatible wine for this refreshing, delicious dessert. The slight sweetness of the gellewza frizzante is also important because of the sweeter elements of this dish, most noticeably, the pure maltese honey. but make sure you drink it as cold as you can get it and preferably served in a nice, elegant glass flute.

Summer Pudding

2 kilos berries

500g sugar

Two–day old sourdough loaf with crusts removed

nothing says summer like berries. They are cool in taste

and refreshing. The best way to serve them is fresh in

a glass. yet if you want to add something really special

to the idea of berries in a glass, then you must try our

take of a summer pudding. left–over bread and lots of

berries, topped with a berry coulis and a yoghurt and

honey ice cream to die for.

you would need a couple of moulds to line. you can use

individual aluminium moulds (they are most practical

and convenient – perfect portioning) or a couple of large

moulds.

separate the berries and cook the biggest berries first,

with the sugar in a pan over a low heat, just for two

minutes, enough to melt the sugar and get the juices

out of the berries. After two minutes add the other, more

fragile berries (blueberries, raspberries, redcurrants,

mulberries, blackberries, etc). Take off the heat.

dip the bread in the juice that has come out of the

berries and line the moulds. fill the moulds with the

berries and then cover the top (that will be the bottom,

when you turn the pudding out) with more soaked bread.

if there is any juice left, add it to the coulis or simply

pour it over the pudding. Weigh the pudding down with

something weighty and place in the fridge. To serve,

turn out from the mould, pour over the coulis and

the left-over berries and scoop some of the honey

and yoghurt ice cream. near zero calories never

tasted so good.

Honey and Yoghurt Ice Cream

½ litre of full fat benna yoghurt

250 ml of pure maltese honey

make sure that the honey is at room

temperature as is the yoghurt. mix them

together well and churn.

Berry Coulis

500g berries

500g sugar

cook the berries with the sugar and reduce the mixture over a low heat for 15 minutes. blend, pass through a fine sieve and store the mixture in a jar in the fridge until you need it.

A s summer temperatures soar,

the gardener’s attention needs

to be focused on helping plants to

survive the heat while making the most of

enjoying the fruits of earlier labours. There

is a feeling of stillness in our gardens, with

no lush growth, no fresh green buds or any

abundance of flowers. Bright colours seem

to be confined to potted seasonal plants

and of course to the ubiquitous and always

dependable Bougainvilleas and nerium

Oleanders.

A little time spent on grooming your plants

will make a big difference in the overall

appearance of the garden. Many characteristic

Mediterranean plants such as Medicago,

Teucrium, Phlomis and Cistus increase their

drought-stress defences and go into summer

dormancy. They look as if they are dead or

dying when in fact they are surviving. By

deadheading them and keeping them neatly

clipped into shape they will not be an eyesore

pruning makes perfectSummer-flowering shrubs should be pruned for shape after they

have finished blooming, and any dead or diseased branches

removed. Lavender shrubs (left) are shaped to keep them

compact and flower spikes harvested to make fragrant

bouquets. Lantana, which gives such a long display of

colour throughout spring and summer, can be trimmed

to stimulate continuous flowering and also to remove

berried branches which may stain paths. Tulbaghia,

better known as society garlic, with its long-lasting, pretty

lilac flower heads, responds very well to deadheading

and thrives both in full sun and dappled shade with little

water. Plumbago also blooms profusely with little irrigation

and brightens the garden with its beautiful sky-blue flowers.

Likewise, picking spent flowers off annuals and perennials such

as Petunias, vincas and Geraniums will prevent the plant from

going into seed-producing stage and stimulate continuous flowering.

mulch and moisture Maintaining moisture in the soil is the most

important task for the gardener in summer. By

planting closely and mulching generously the

roots are kept cool, moisture is retained and

every drop of water is taken advantage of.

For all plants, deep and less frequent watering

in the mornings or evenings is preferable to

frequent shallow watering. This will encourage the

plant’s roots to grow deeper, where they are less

likely to dry out. Pots on patios, balconies and

terraces are particularly vulnerable and need to

be watered daily, as are thirsty lawns.

Even plants which are regarded as drought-

tolerant, as many indigenous ones are, once

established, should be watched for signs of

over-stress, and given emergency water rations.

Weed control is also very important. With warm

weather and increased watering, weed seeds

will germinate and grow faster, and compete for

water and nutrition in the soil.

Because of the uncomfortably hot temperatures at this time of year, gardens are mostly enjoyed in the evenings. Wonderful examples of plants that can be better appreciated at night are the Ipomoea Alba, or Moonflower, a fast growing climber with gorgeous white trumpet flowers which open only after dark, and night-blooming Cereus, the aptly-named “Queen of the night”. White or pale flowers in general stand out at night and those, like Jasmine or Stephanotis, which have the added bonus of a delicate scent, create the perfect setting for a warm summer evening outdoors.

The vegetable garden, with adequate watering, hoeing and weeding, rewards

us with a succession of maturing crops like tomatoes, cucumbers, bell-peppers,

marrows and aubergines. Winter vegetables should also be started now by sowing

beets, spinach, carrots, cabbages and turnips. Stone fruit trees may be showing the

effects of drought and must be well watered until the first rains. The area under and

around the trees should be kept free of fallen fruit so as not to attract insects.

In this season the herb garden has a plentiful supply of rosemary, basil, mint, parsley and

oregano, and August is a good month to harvest herbs for drying.
