anditsbreathtakinglandscapewere

inspirational.Atthesametime,itwasevident

thatanumberofkeymodificationswere

necessarytoensurethatthebuildingwas

suitableforthenewprogramme.

“Westartedoffbyredesigningthelandscaping.

Theintegrationoftheexternalpool,thedeck

andgardenwiththeinternalspaceswaskey

increatingacontinuousarchitecturaldialogue

betweenthetwo.Ourclient’sfunctional

requirementsalsomeantthatwehadto

addressanumberofkeychangestothe

existingbuilding.

“Wekeptastruetothenaturalmaterialsas

possibleandthishascreatedanexciting

dialogueincolourandtexturebetweenthe

varietyofnaturalmaterialsthatarefound

throughoutthehouse.”

Theperfectionofdetailingandtexture

balancingofthevariousmaterialsisevident

throughouttheentirehouse.Thestunning

infinitypool,whoseshapeechoesthe

surroundingfields,takesonparticular

significance.Amixtureofavarietyofdark

andgreenslatesmakeastrongarchitectural

statement,yetatthesametime,offershues

perfectlybalancedwiththesurrounding

landscape.

Atgroundfloor,awallcladinrough-cutschist

balancesthenaturalfinishtotheteakdoor

attheentrance.Withinthelivingroomthe

palettechangestoaconcretebench,aribbed,

wide-plankednaturaloakfloorandavarietyof

plasteredfinishes.

Movingtowardsthekitchenarea,thereisa

changeintheflooringmaterial.Anaturally

treatedconcretefloorslipsthroughthe

remainderoftheinternalgroundfloor,creating

abalancedbackgroundtothevarietyof

naturallyfinishedmaterialswithinthearea,

includingthenaturally-cladBulthaupkitchen.

Inthegroundfloorpowderroomand

basementareas,cabernetbrownmarble,

taupecoloursandavarietyofplastered

texturescreateamoreintimatefeel,perfectly

suitedtotheirmoreprivatefunctions.In

contrasttothis,thecosyrelaxationnook,

whichopensuptothelightfromthegarden,is

onceagainleftinanaturalconcrete.

“Itwasararepleasuretoenjoysucha

continuouscommunicationwiththeowners

ashappenedonthisproject,”saysChris.“The

resulthascreatedafluidandfunctionalspatial

layoutwithaharmoniousdialogue.”

Pippaexplainsthatalthoughherhome

isgracedbyamplenaturallight,itreally

comesintoitsownatnight.Anew

bulkheadwasinstalledintheliving

roomtoprovidedramaticdown-lighting

overtheimpressivemirror,whichwas

itselfreframedinblacktomatchthe

newscheme.Newblacktablelamps

wereadded,andastandardlampwas

bothdesignedandmadebyPippa’s

sonPhilip.

Reformattingthelayout

Notonlydidthelivingroomredesign

involveanewcolourscheme,butthe

opportunitywastakentochangethe

formatoftheroombyincreasingthe

floorarea.Theroomwasextended

bytakingoveranadjacentbedroom,

whichallowedmorelightintotheliving

roomthroughtheoldbedroom’ssliding

doors.Anewparquetfloorwasgiven

totheextension,carefullymatchedto

theexistingparquet.

Pippa’slivingroomisframedbytwo

magnificent,gracefulMoroccan-

inspiredarcheswhichshehad

introducedtothehome30yearsago.

Duringthisrecentredecoration,Pippa

closedoffthearcheswithglass,thus

creatingtwinwindows.Insteadof

enclosingtheglassinaframe(which

wouldhavelookedlesselegant),

shecreatedaslimgypsumwallasa

facingfortheexistingmasonryand

sandwichedtheglassbetweenthe

two.Thewindowsnowfunctionas

focalpointsandcanbeenjoyedfrom

boththelivingroomandthehallway.

Intheentrancehall,Pippatooksome

oftheexistingspacetocreatea

bedroomtoreplacetheonelostinthe

livingroomextension.Bymirroringthe

newwalladjacenttothefirstarch,a

trompel’oeileffectisachieved,giving

theimpressionthatthehallhasmore

thanonearch.

Thishomehasgaineditscore

personalitythroughthespectrumof

lovedpiecesthatPippahascollected

overtheyears,fromanelegant

antiquesideboardtohernewelephant

bookends.Pippahasproventhat

anupdatedoesnotmeanhavingto

changeelementssuchasrugsand

paintings,butitdoesinvolvemaking

boldmoves.

“People are often scared of using dark paint on the walls, but I’m quite daring.”

thinkthatitwouldbespooky,abitlike

swimmingintheoceanatnight,butyou

havetobetheretoappreciatetheeffectthat

ablackpoolhas.Whenthewateriscalmit

actslikeamirror,reflectingthetreesaroundit

inaMonet-likescene.Thesunsetsmustbe

amazing.

Thismeditativeaspectisexactlywhatthe

ownerswerelookingfor.Theideaofablack

poolhadfirstcometothemwhentheywere

consideringbuyingachateauinFrance–a

dark-colouredpoolwouldhavebeenthe

onlycolourthatwouldhaveblendedinto

thelandscape.Similarly,theownersfeltthat

aturquoisepoolwouldhavejarredagainst

theGharbcountryside,especiallybecause

thelowgardenwallsmeanthatthepoolis

quiteexposed.Plus,theylikethefeelingof

swimminginaninkypoolatmidnight,“It’sso

decadent,especiallywhenthemoonisbright.”

Thedramaofablackpoolisalsoinkeeping

withtheGothicthemethatrunsthroughoutthe

property.Theladyofthehouseisanantiques

dealerwhousedtospecialiseincostumesand

textilesandalsotrainedingardendesign.Her

loveforallthingsGothicisevidentthroughout

thehome,fromthefrontdooritself,tothe

reproductionkitchentableandtheironbeds

thatweremadebyalocalpoliceman.But

shehasn’toverdonetheGothicfeel,instead,

itconjuresupMoorishovertonesthatsitwell

withthehome’scharacter.

Atownhouseinthecountry

Thispropertyistheperfectblendof

townhouseandcharacterproperty,whichis

whattheownerswerelookingfor.Theyliked

therusticityofafarmhouse,butnotthetypical

lowceilings.

Theywantedtheimpossible:atownhouse

inthecountry,andthishomedelivered,with

someveryhighceilingsandampleapertures,

reminiscentofaperiodpropertyinEngland.It

issituatedinthevillagecore,yetstilloverlooks

avalley,theloudestsoundsbeingthetruculent

moanofanearbytractor.

Thekitchenisaparticularlylarge,welcoming

andairyroom.Theunitswerecustom-made

inoak,theirpalegreenpaintcolourpickedout

fromtheoriginalMaltesefloortiles.Thesetiles

wereretainedanddelineatethediningarea.

Beyondthekitchenliesthecourtyardgarden,

whichhasasemi-tropicalfeeltoit.Insteadof

havingonelargeoutdoorspace,itwasdivided

intothesetwoverydifferentspacesforadded

impact.Infact,thepoolareacomesasa

surprisetoallfirst-timevisitors.

Aporticowaserectedtoprovideshadefor

theoutdoorseatingarea,ontopofwhich

anextensionwasbuiltonthefirstfloorthat

createdasun-trapthatisusedasacosy

winterlivingroom.

Theremaynotbeanyturquoiseinthepool,

buttheownershaveusedittofulleffectinthe

livingroom.Itmetamorphosesfromacosy

winterretreatwithmutedchenillesofacovers

inthewintertoanenergeticturquoiseoasis.

Turquoiseisalsoechoedinthediningroom

tablesettingsandintouchesofMdinaglass

throughoutthekitchen.

Whatalsosetsthispropertyapartisitsfive

Toppings

For one Margherita:

4 fresh basil leaves

100g of buffalo mozzarella chopped into

cubes and drained for a few hours

100ml of tinned tomatoes, chopped

A drizzle of the finest extra virgin olive oil

For one Sweet Margo:

A sprig of mint

200g fresh strawberries

A sprinkling of icing sugar

4 scoops of quality vanilla ice cream

Preparation

1. If using dried yeast, use half the amount

of the fresh yeast recommended (and

follow the instructions on the sachet). If

using fresh yeast, put it in 100ml of the

bottled water and melt it by stirring gently.

Put all dry ingredients together and add

the yeast liquid first and then the rest of

the lukewarm water. cover and let rest for

an hour at room temperature or until it has

doubled in size. Knock back the dough

and divide it into four balls. Let it rest for

a couple more hours before using. (you

can even prepare the dough a day before,

kept in the fridge and opened out once it

reaches room temperature.)

2. When you are ready to make the pizzas,

spread some flour on the work surface and

put the ball on it. Do not use a rolling pin.

Use your fingers to gently open the dough,

flipping occasionally. Imagine that you are

creating little air canals in the dough with

your fingers. If you are having problems

opening the dough, stop, rest for a few

minutes and then continue the process.

you are aiming for a disc of dough about

30cms in diameter.

3. For the margherita, spread the tomatoes

as close to the edge of the dough disk as

possible. Distribute the mozzarella evenly

and bake at 250°c for a few minutes until

the cornice (the perimeter of the pizza) is

tanned and puffed. Once you take it out,

drizzle the oil in the shape of a number 6,

place the basil in the middle and serve.

4. For the Sweet margo, hull the

strawberries and cut in half, place them on

the dough, sprinkle the icing sugar on top

and bake at 250°c. Once out, let it cool a

little. Place a sprig of mint in the middle to

emulate the original margherita. Put the

vanilla ice cream on the pizza just before

serving.

on our menu at margo’s, when we tried

the Sweet margo we were blown away

by the honesty and the goodness of such

a pizza. It is the fresh fruits and the lush

creamy, pure vanilla ice cream that make

it so enjoyable. It is a simple, quick and

wonderful dessert.

“creating margo’s very simple pizza

is a hard and laborious process. What

constitutes a perfect pizza is both skills

and ingredients. At home you will never

achieve what Giovanni (our bread and

pizza maker at margo’s) achieves in a

purpose-built wood-fired oven, but set

your oven on a high temperature, 250ºc,

and you will be close. We mill our own

flour, which is a blend of different types

of wheat, but normal bread flour will do.

Use bottled water to make the dough. Do

not (and never) knead for more than 10

minutes.

topping. If you have fresh tomatoes, use

them and use only the finest mozzarella

money can buy, the best extra virgin olive

oil and never use dried herbs.

have in the oven, hot. those dishes with

holes in the bottom are not bad to lay

the dough in. Simply put one on the

terracotta tile. the heat transfers through

the thin metal quite quickly.”

For this style of pizza you could easily opt

for a fairly full white with lowish acidity or

a light-to-medium-bodied red wine with

low tannins. Whenever possible I always

go for a red when there are tomatoes

involved and if the buffalo mozzarella

is the fuller flavoured one, a red will

go with this as well. this particular red

wine is also a good choice if you are

a ‘pepper freak’ like me, as it has this

really attractive soft spicy flavour all of its

own, which goes just great with freshly

ground black pepper. this wine also has

good concentrated fruit and soft velvety

tannins which should complement this

style of pizza perfectly.

SWEET PIZZA MARGHERITA –

BEST WINE ACCOMPANIMENT

2009 PJAZZA REGINA ROSE GELLEWZA

GRENACHE I.G.T. MALTESE ISLANDS.

Now here’s a challenge for a wine! But the

first thing to eliminate is a red, unless you

have a recioto on stand by, which might be

interesting. that leaves white or rose and

because of the icing sugar and the vanilla

ice cream I would definitely veer towards

a medium dry rose. Don’t forget this pizza

still has other flavours like the dough and

mint, so anything too sweet would be

cloying and clash. But at the same time we

need something to match those strawber-

ries and ice cream. A nice chilled bottle of

Pjazza Regina medium dry rose is a good

compromise. you have a good clean, full-

flavoured, refreshing wine with a nice level

of sweetness and ripe fruit that should

balance out nicely with all the ingredients

in this challenging dish.
