Beef Picadillo Use with any menu LD 16

This is a delicious stew made with ground beef, tomatoes, and other ingredients. It is a popular dish in South American coun-tries and the Caribbean. Serve it over rice or as a filling in tacos.

Combine brown rice and water in a small pot, heat on medium-high heat to a rolling boil. Cover and reduce heat to medium. Cook until water is absorbed, about 15-20 min. Stir once. Cover and cook an additional 10 min. over low heat. Fluff the rice gen-tly with a fork. Brown ground beef in a medium skillet. Drain. Add onions, pep-pers, and garlic to the beef. Sauté until onions are soft. Add to-matoes, tomato sauce, raisins, oregano, and cumin. Bring to a boil. Remove from heat. Serve ½ cup sauce over ½ cup rice.

1 cup brown rice, uncooked 2 cups water 12 oz ground beef 1¼ cups onion, diced 1 cup bell pepper, diced 1 clove garlic ⅓ cup diced tomatoes with

juice, canned 1 cup tomato sauce ½ cup raisins ¼ tsp oregano, dry ½ tsp cumin, dry, ground 2 Tbsp cilantro, fresh, chopped (optional as a garnish)

Happy New Year 2019!!

More Money for the New Year may be in your future, if you...

Too many of our providers are missing out on their full reim-bursements due to simple and small errors. A little time and attention could bring each of you more $$! These are the most common errors we continue to find:

Do you know who you are?

We have been receiving more and more claim forms with the WRONG provider id number bubbled in. Please be aware that the scanner and computer read the BUBBLES and not what you write. If you fill in the wrong bubbles, or leave them blank, you are not receiving the reimbursement for that entire page—someone else is! Always review the scan form before you send it in to make sure it is complete and correct. Always use a No. 2 sharpened pencil. If you can read the number in the circle after you fill it in, it is too light, please darken it.

Which children are in your care?

The new “attendance” column seems to be a difficulty for many of you. Please pay special attention to it. If a child is in your care at all during the day, fill in the bubble that is associat-ed with them. That’s it! Whether or not they are there for a meal, please mark the attendance column for them. If you claim a meal for a child (fill in their number) and they are not also marked in the attendance column, all the meals for the day will be disallowed. Many of you are being disallowed for

this very simple error.

Enrollments and Reenrollments

When enrolling a new child, please remember 2 things:

1) The enrollment must be in the office before the end of the month—or within 7 days of first starting, whichever is ear-lier. Any enrollments received after the 1st of the month will be enrolled for that month, even if the enrollment date is for the prior month.

2) Check the form over carefully before sending it to us. Make sure ALL the information is complete. Parent’s name, ad-dress, phone are required. Days in care and hours in care are also necessary. Make sure you put in the EARLIEST the child will be arriving—including the days school is out—and the LATEST the child will be staying, even if it will be that late only a few times a month. You (not the parent) are responsible for making sure the enrollment is complete and correct.

Make sure it is signed by both parent and provider (you). The reenrollment must be done every year. We will send you a spe-cial form for it. Please complete it, make any changes to the child’s information and have the parent and you sign it. If the signature for a child is missing, the child will automatically be made inactive.
