Last week it was papaya, this weekit’s lilikoi! As an island girl, bornand raised, I have a soft spot for

this tropical fruit. Remember pickinglilikoi from Grandma’s backyard? Butwhen you are as crazy about food as I am,a mere slice of lilikoi isn’t gonna cut it,especially when you’re a slave forsweets (and a bit of tartness).

Lilikoi is a tart tropical fruit — aunique type of passion fruit — thatgrows in climates similar toHawaii’s, which is why you’ll finda multitude of this fruit in thePacific Islands, and parts of Southand Central America. Rich in vita-min A and C, riboflavin and niacin,lilikoi can be considered an “over-achiever” in the fruit category. Canwe say perfection? That’s a big, fat“yes” in my book! Yellow in color,lilikoi always brightens up my dayand is a passion fruit that I’m …well ... passionate about.

So, without further ado, it’s timeto follow my lead as we share ourlove for lilikoi at the followingOno, You Know establishments!

ness is JJ Bistro & French Pastryon Waialae Avenue. Executive chefand owner JJ Luangkhot has beenluring in those with a sweet toothfor quite some time with his Euro-Asian fare that is complete deca-dence. Do the words “ChocolatePyramid” make your heart melt

like sugar? What about these two sweet-est words “Chocolate Lilikoi”?Delicious!

“Chocolate Lilikoi is one of our best-sellers,” Lunagkhot says with great pridein his homemade dessert. “In fact, it’s sec-ond to the Chocolate Pyramid, and we sell

close to 30 to 40 pieces ofChocolate Lilikoi perday.”

A perfect reflection ofthe Islands, this sinfuldelight with a bit ofParisian influence is

priced at $4.75 per piece or $30 foran 8-inch cake, and features a solidfoundation composed of moistchocolate cake topped with a lilikoimousse made with the freshest offruit, richest of cream and eggwhites. Lastly, Luangkhot adds anessence of flair to it with freshfruits such as blackberry, strawber-ry and orange, and a hint of choco-late ganache.

Located at KamehamehaShopping Center in Kalihi,Kenny’s has been an iconic land-mark since 1966 when foundersJohn Fujieki, Kenny Kaneshiroand Herbert Souza opened thedoors. Nowadays, Fujieki’s son,John Fujieki, serves as presidentand owner of the establishment.He believes that while continuityis key, it’s also important tochange with the times.

“We have a lot of employeeswho have been with us fordecades, such as our senior assis-tant manager, Erlene Hutchinson,who has been with us for 32years, but we also just recentlyhired a new sous chef, PeterAlarcon, about two weeks ago,”Fujieki says.

“With every new chef comesnew ideas; our menu is ever-evolving,” Hutchinson adds.

Kenny’s offers a vast array ofcuisine, specializing in local,Japanese and American fare,and Alarcon brings his ownunique twist to the menu withthe addition of Poke withWalnuts, and Snapper withLemon Caper Butter Sauce(prices yet to be determined).

“Poke with Walnuts is some-thing that you won’t find at verymany places,” Alarcon says,describing this alluring dish asthe freshest of poke marinated insoy sauce and seasoned withHawaiian salt, red onions, greenonions and chopped walnuts.“The walnuts bring a texture tothe dish, which complements thesoftness of the ahi.”

As for the mouthwateringsnapper, Alarcon lightly coats thefish with flour and sautés it toperfection before taking it to the

next level with fresh butter,capers and a zest of lemon, not tomention the sides of rice and stir-fried mixed vegetables thataccompany the meal.

“I hope the customers arehappy with these dishes. I reallywant to bring more local dishes tothe menu,” he adds.

Open daily for breakfast, lunchand dinner, Kenny’s entire menuis available at any time of the dayor night. So, if you’re aching forKenny’s Specialty Full StackPancakes with chocolate chipsand almonds ($10.85) for dinner— yes, Kenny’s can make it hap-pen.

“Currently, with the purchaseof any breakfast entree, youreceive two free hotcakes untilnoon,” Hutchinson confirms.

A best-seller for years isKenny’s Famous ChineseChicken Salad ($11.45), spot-lighting shoyu chicken, char siu,wonton chips, Chinese parsleyand peanuts on a bed of crisp let-tuce doused with the restaurant’sspecial sesame seed dressing(sugar-free dressing also avail-able upon request).

“We had a customer fromHong Kong come in and say thisis the best Chinese Chicken Saladhe’s ever had in his life,” seniorassistant manager Duck Sheldonrecalls.

“We have a lot of loyal cus-tomers who know us on a first-name basis. Some visit regularlyand we know their orders — PrimeRib Au Jus is a popular one.”

Priced at $25.99 for a regularcut and $30.99 for Kenny’s Cut,this former special is now avail-able daily and features a slow-roasted cut of succulent prime ribserved with au jus and a side ofhorseradish, mashed potatoes anda vegetable medley of baby corn,broccoli, green beans, bell pep-pers, water chestnuts and carrots.

Kenny’s also serves up an arrayof fruit of the sea, includingMenpachi ($20.99) steamed inKenny’s house-made regular orsugar-free sauce, or grilled withlemon shoyu and suri daikon.

“James Drewery was our for-mer sous chef and he brought alot of Southern items to themenu, such as barbecue ribs andhomemade cornbread, which wehave kept on the menu as well,”Hutchinson explains. “Businesshas been steady and we couldn’tbe happier, although with the hol-iday season coming up we’reexpecting an increase in cus-tomers coming in for our holidaypackages to-go.”

Kenny’s is already takingorders for its holiday packages:Freshly Roasted Turkey,Complete Turkey Package,Holiday Ham, Holiday Prime Riband Special Turkey Plates.

“This year, we decided to offercornbread stuffing or lup cheongstuffing for an additional price.We hope it will be a great holidayseason for us and it’s never tooearly to get started,” Sheldonsays, adding that patrons may call841.0931 for more informationand to place orders.

“Some may not know that wealso cater, and with football sea-son here, that’s picking up a lot.”

With a variety of tray sizes tochoose from, from half to extra-large, tailgaters and party-goershave been gravitating towardtop catering entrees, includingBBQ Beef Tri-Tip, KoreanChicken, Chow Mein Noodlesand more.

Sometimes life just givesyou lemonade. That’s thefeeling one gets while din-

ing at Chai’s Island Bistro. ChefChai Chaowasaree’s take onAsian fusion has made him aculinary star whose growingempire includes two restaurants,a TV show and being the personresponsible for bringing flavorback to flying as the executivechef for Hawaiian Airlines. He’sgot a third restaurant in the mak-ing and is one of 10 chefs acrossthe country chosen to take part ina culinary contest, but more onthat later.

Chai’s main menu talent isexpertly expressed in the appe-tizer section that features Asian,Pacific and European flavors thatcombined, or alone, provides aperfect introduction to the rest of

the menu. Confused about whichof the 17 pupu items to pick? LetChai do the choosing and go withthe appetizer platter.

The Sampler Platter is $10 perperson and can be ordered for upto four people. Diners wishing tofocus on each individual itemcan do so as well.

Chai recommends starting offwith ahi, so we will too. FreshAhi Katsu with Wasabi Currycomes in large, bite-sized serv-ings on individual spoons.Ordering it solo as an eight-piecedish costs $16. The sashimi-grade ahi is wrapped in nori,coated in panko and deep-frieduntil the outside is crispy, but theinterior remains cool and buttery.The nori combines with thepanko to make a protective shellthat keeps the ahi at the proper

interior temperature while theslightly spicy curry provides justthe right bite that is balancedwith fresh mango.

Next comes Graulax SalmonRoulade with Crab Meat andCream Cheese Mousse ($16 as asingle order). Thinly slicedsalmon is cured overnight in salt,fresh dill and lemon zest, andwrapped over crab and creamcheese, topped with tobiko andfresh dill, and served on a cucum-ber chip. The stuffed salmon isvery light while the cucumberprovides a cool freshness to thetasty bite-sized appetizer.

The third stop about the platteris Sun-Dried Tomato and PunaGoat Cheese Wonton with Fresh

Tomato and Mango Salsa($12 by itself). Goat cheese

can be pungent and off-putting to some, but Chaireduces the cheese’s natu-

ral flavor by adding moz-zarella to the mix. The result

is a mixture that is only mildlysharp in flavor and balanced withthe sweet acidity from themango. Chai entered these tasty

wontons into the AlouetteCheese Master Holiday ChefChallenge. Fans can vote fortheir favorite recipe online, start-ing Oct. 15, at masterholiday-chef.com.

No. 4 on the hit parade isKataifi and Macadamia NutCrusted Black Tiger Prawns ($13solo). The prawns are cut intobite-sized portions, coated inmacadamia nuts, wrapped in theshredded filo dough, fried, driz-zled with a pineapple vinaigretteand served on a pineapplewedge. Sweet, crunchy andmoist, the delicate prawns arehandled perfectly, absorbing thesurrounding flavors without los-ing their own succulent identity.

Finally, Chai recommendsRoasted Butternut Squash andLobster Bisque ($10 for an indi-vidual bowl). The thick, rich andcreamy bisque is gluten free anduses no flour or butter as a thick-ening agent, just squash, a lob-ster stock and more squash. Whatcomes to the table is a thick, hotsoup that has a wonderful textureand a light flavor.

You may be familiar with the taste and flavor ofcommon mushrooms, such as shiitake, reishi orthe typical white mushroom. These ‘shrooms are

year round delicacies, which add nutritional and healthbenefits to many dishes.

Yet, each autumn, usually from September throughNovember, the matsutake mushroom finds its place inmany restaurants. The matsutake mushroom could beconsidered the black sheep of the mushroom fungi fami-ly. A prized commodity in Japan for centuries, matsutakemushrooms hide themselves far and away from the oth-ers, typically found under canopies of pine trees, bond-ing and forming to its roots.

Sushi King, open for 20 years in Honolulu, is usually thefirst in Hawaii to serve the matsutake seasonal mushrooms.Starting last week and through fall, the restaurant will fea-ture its Matsutake Dobin Mushi, a hot soup, which com-bines a variety of ingredients all served in a tea pot.

Priced at $9.50, Sushi King’s, Matustake Dobin Mushistarts with a clear broth. Added ingredients include

shrimp, chicken, carrot, fish cake, ginkgo nutsand, of course, matutake mushrooms. Thebroth is typically poured into tea cups andthen the ingredients are added to the

broth using chopsticks.Matsutake mushrooms can go far

beyond its role in soup. Sushi King isgetting creative, adapting the season-

al mushroom to traditionalJapanese cooking as well.Sushi King now offers

Matsutake Tempura ($12.50).Given the nature of matsutake

mushroom harvesting and beingimported from Japan, this unique

mushroom will not bearound for long, so

explore the tastesof mushroom sea-son.

For the past 10 years,Wailana Coffee House inWaikiki has been offering a

Available Oct. 5 and 6, theOktoberfest menu featuresSmoked Ham Shank ($15.75),German Bratwurst ($12.95),Smoked Pork Chops ($14.25)and a Bavarian Breakfast Special($9.95).

“Our Oktoberfest menu is real-ly popular,” says general manag-er Kenton Tom. “ It’s fun to do,and it’s a nice change of pace forthe restaurant.”

Breakfast is servedfrom 6 a.m. to midnight,and the threeOktoberfest lunch/din-ner entrees are offeredfrom 10 a.m. to mid-night.

Chinese SeafoodRestaurant convenientlylocated in the Liliha com-munity. Dining Out wasfortunate enough to catchup with friends Vanda Gill,Kuulei Alma-Francis and

Lois Sueda for a dim sumlunch one afternoon.

The trio all enjoyed dif-ferent types of dim sum,and Nice Day is the bestplace to go. “It satisfieseach of our palates,” Alma-Francis says.

Vanda Gill: “I like all theseafood dim sum, but Loisis allergic to seafood. The

reason we came is becauseof its great location andgreat, free parking.”

Kuulei Alama-Francis:“I like more of the vegetar-ian dishes. I really like thespinach dim sum.”

Lois Sueda: “I like themochi rice. It’s so flavor-ful. It’s really greatbecause it’s satisfying andfilling.”

The spotlight shines onMary Gutzi, a renownedsinger and actress who’s

made her mark in musical the-ater and has shared her talentswith audiences across the globefor the past four decades. Withan appetite for the performingarts, she also has a real taste forpremier cuisine, which led us toPipi’s Burgers in McCullyShopping Center for this week’sDining with the Stars.

“Guess what? I’m not a redmeat eater, so it’s pretty ironicthat I’m at a burger joint,” Gutzisays with a laugh.

Pipi’s Burgers is a recent addi-tion to the McCully ShoppingCenter ohana, and opened itsdoors this past July serving upmelt-in-your-mouth gourmetburgers and sandwiches that arewell worth your buck. WhilePipi’s Burger reigns supreme,

the restaurant’s friendly andaccommodating staff was morethan happy to forgo the Angusbeef, and instead whipped up aFurikake Ahi Burger and GardenBurger complete with sweetpotato fries and french fries forGutzi to indulge in.

Pipi’s Garden Burger featuresorganic mixed greens, a veggiepatty and a spread of onions,carrots, tomatoes and mustardon a brioche bun, while FurikakeAhi Burger presents a fresh slabof ahi coated with panko andfurikake, teri glaze and wasabiaioli along with lettuce, tomatoand onion, also served on abrioche bun.

“Everything is so fresh andtasty,” says Gutzi, who was bornand raised in Detroit, but spentmost of her life in The BigApple and is a self-proclaimedNew Yorker at heart. “The

Who or what inspires you as achef/manager/owner? Ourfamily inspires us. Most of ourfamily members work in therestaurant business in HongKong. We had a chance to openour first restaurant in Hawaii in1998.

If you could serve food to acelebrity, who would it be andwhy? What dish would you

serve? If we could serve acelebrity, it would be PresidentObama and the first lady. Itwould be an honor to have ourPresident, who’s from Hawaii,try our most popular WontonNoodle. Our noodles and won-ton wrappers are imported fromCanada, and we make our spe-cial broth daily without anyMSG. The shrimp wonton isdelicious. We cut big pieces of

shrimp and add some groundpork and wrap it with the won-ton skin. Many customers sayour Shrimp Wonton Noodle isthe best on the island.

What is your favorite dish onthe menu? Why? Our favoritedish is our Baked Pork Chop withFried Rice. Every time we eatBaked Pork Chop with Fried Ricewe remember our childhood as

we’d eat this dish with family.We use the fresh boneless porkchop with our homemade tomatosauce and top it with mozzarellacheese. It’s so delicious!

“We’re one of the fewfamily-owned okazuyas.Our customers like the tra-dition of that,” says ownerJoy Morihara.

Founded by Morihara’sgrandparents in 1934,Sekiya’s continues to makeits dishes from scratch.

Saimin — the restau-rant’s staple — is served inthree different sizes ($4.95for a small bowl, $6.95 fora large bowl and $8.95 foran extra-large bowl).

Topped with sweet-and-salty char siu, its flavorsblend with a traditionaldashi broth that is servedover noodles.

“Saimin is always popular.

It’s great with the older peo-ple and kids, and everyone inbetween,” Morihara states.

Let’s get one thing out of the way first:If you’re going to name your restau-rant after one dish, that dish better be

among the best — and Loco Moco DriveInn’s Loco Moco ($7.95) really is.Owner and chef Sheng Zhu saysthat it is one of the restaurant’smost popular dishes.

“The beef patties and thegravy are homemade,” Zhusays, explaining whatmakes their Loco Mocostand out. “And weuse fresh eggs andfresh rice.”

In addition to itsnamesake, the restau-rant serves up othertasty local favoritesat a reasonableprice.

Another must-tryitem is MushroomChicken ($8.25), which featuresfried chicken bathed in a creamymushroom sauce. Steak With GarlicShrimp ($10.25), which features NewYork steak, also is a popular item.

Loco Moco Drive Inn is a family-ownedventure: While chef and owner ShengZhu works in the kitchen, his wife

works at the front counter, and his brother helps out with thebusiness aspect.

“We all immigrated from China,” Zhu explains. Zhu moved toOahu more than 10 years ago and got started in the restaurantindustry right away. “Right when I moved here, all I was doing wasrestaurant work.”

He worked his way up quickly in his early days in the restaurantbusiness — going from prep work to one of the main chefs in a mat-ter of months. Prior to opening Loco Moco, Zhu and his brother owneda restaurant in Waikiki where Zhu further sharpened his culinaryskills. He opened Loco Moco Drive Inn about a year and a half ago.

While the service at Loco Moco Drive Inn is quick and conven-ient, owner and chef Sheng Zhu’s description of the restaurant as

“fast” should not be mistaken for fast food. Rather, therestaurant uses quality ingredients, and the menu

also includes healthy alternatives.“Sometimes a lot of people think thatlocal food is fatty or junk food,” Zhu

says. “But in here, we also carryhealthy items.

“We prepare all of the fooddaily, so it’s fresh,” Zhusays. “And most of theitems are homemade.”

This dish features a variety of vegetablesalong with the tasty, seasoned ahi and is served withbrown rice. And for seafood lovers, a similar newoffering is Health Plate with Mahi Mahi ($7.95).

“We always change and update (dishes) based onwhat is requested by customers,” Zhu explains.“Sometimes we ask customers what they are lookingfor.” Loco Moco found in their chats with customersthat a lot of diners are looking for healthier options.“They are health conscious,” he says.

Having been open for lessthan a year, SakuraTerrace Japanese Cafe

is flourishing with contempo-rary Japanese dining conceptsthat go beyond the norm. Whatbegan as a restaurant that spe-cialized in donburi dishes soonsprouted new ideas, and hassince then added grilled meats,sushi and an assortment ofseafood to its menu.

The ever-popular SakuraBento enthralls diners who wanta bit of everything. Priced at

$15.75 for lunch and $18 fordinner, this bento of all bentosoffers up a spectacular mealconsisting of rice, miso soup,salad and your choice of twodishes including sashimi (ahi,hamachi, salmon), shrimp andseasonal vegetable tempura,saikoro steak (cubed steak onthinly sliced potatoes), teriyakichicken and grilled salmon. Youwant it all? Now you have it.

Whether you’re dining withfamily, friends or business part-ners, Sakura Terrace has itemsspecifically made for sharingamong guests. Take MatsuriChirashi, for example.Presented in an oke bowl withrice, shrimp, ikura, unagi, egg

and more, this entree feeds twopeople during lunch ($13.75)and four to five individuals dur-ing dinner ($30).

On my most recent visit to the patis-serie, owner Hiromi Tanaka quicklyidentified two lilikoi indulgences thatwill make you say, “Wow!” First isTropical Fromage ($4.20 each) — a LaPalme D’or classic — a masterpiece oflayered cheesecake and coconut spongecake topped with the most temptinglilikoi and mango mousse. A tropical par-

adise on earth, wouldn’t you agree? Nextis a fairly new item, which chef Akikocreated earlier this year. Affectionatelynamed Passion Delight ($4.95 each), thisone is almost too striking to devour. Withsuch precision, chef Akiko hand-craftslayer upon layer of vanilla sponge cakeintertwined with bits of fresh raspberrytopped with strawberry and lilikoi cream,and finally savory banana and whitechocolate mousse. Passion Delight thenseduces your palate even more as a rasp-berry macaroon and a strawberry morselsit atop this slice of heaven, encompass-ing a marriage of French flavor andJapanese craftsmanship.

chic dining establishment located on thesecond floor of Honolulu Design Center.First impressions are always crucial, soStage awes its guests with its state-of-the-art interior complete with statement light-ing, stylish hues, eclectic furnishings andremarkable artwork.

And while Stage’s Asian-American-inspired cuisine receives rave reviews, thedesserts are immaculate as well. Pastrychef, Cainan Sabey, brings lilikoi to lifewith his Lilikoi Creamsicle creation($10). Available Monday through Friday,during dinner only (5:30 to 9 p.m.), thismorsel of love is meant to give a light andrefreshing end to your meal.

“The inspiration for this dish was orange-vanilla ice cream popsicles,” Sabey says.“The tartness and acidity of the lilikoi sor-bet together with the rich, creamy vanillaice cream brings a perfect balance of flavor.

“For a unique crunchy texture, I groundup freshly baked vanilla shortbread cook-ies with a premium organic extra virginolive oil that has been infused withKalamata olives. This process is calleddeconstructing and then reconstructingthe cuts, to get the same flavor of short-bread cookies, but creating a whole newtexture,” he adds, noting that the lilikoi isprocessed and shipped from Hilo and thevanilla beans are Tahitian.

What’s more is the sauce! Sure, LilikoiCreamsicle is simply amazing as is, butadd to that a sauce made from fresh straw-berries and a pomegranate-flavored bal-samic vinegarette, along with fresh fruitsand berries ... and oh, my days, it’sChristmas in September!

W hile local awards serve as attractivefeathers in the caps of eateries, the hon-ors bestowed by international organiza-

tions carry much more weight and prestige.Jade Dynasty Seafood Restaurant, located at

Hookipa Terrace on Ala Moana Center’s fourthfloor, recently experienced the prideand acclaim that comes with earn-ing such an award as the EscoffierSociety’s Asia Pacific Regionnamed the restaurant as “BestChinese Restaurant in Hawaii.”The Five-Star Diamond Award ofExcellence was presented to JadeDynasty in August, and comes from the presti-gious culinary group that boasts a history datingback to 1936.

“It’s a great honor for us,” says general managerGary Chan. “One of the gentlemen from theEscoffier Society flew here all the way fromthe Asia Pacific headquarters to test outour food.”

Jade Dynasty is constantlyadding new menu items, manyof which are influenced by thecuisine in both China and HongKong, including Braised Shanghai

Pak Choy with Carrot andCrab Meat Sauce ($17.95,advance order required). Thedish features fresh, flavorfulvegetables in a savory sauce,and for those who do not prefer

meat, Chan explains that the crabmeat can be excluded to create a

vegetarian option.“This is a very healthy

option, as the sauce con-tains a little egg white and

carrots, and crabmeat that goes ontop of the pakchoy, which isarranged turnedup-style on the

plate,” Chan says. “The presentation is beautiful,and the taste is very good as well.”

Yin & Yang Seafood Soup ($22.95, serves fivepeople, advance order is required) pleases both thetaste buds and the eyes, as the dish is presentedbeautifully with the broth crafted to feature ele-

ments of spinach and pumpkin.“The top of the dish contains two

layers, as the spinach and pumpkinare on top, and the seafood isbelow,” Chan says. “It’s abrand-new item, and it’s veryhard to prepare this dish with

the different layers.”Another popular seafood selection served up

at Jade Dynasty is Steamed Crab and Mochi Rice ina Lotus Wrap (market price, advance orderrequired). Chan explains that the mochi rice is

steamed in the lotus leaf with the Dungeness craband stir-fried with a Chinese white wine

sauce to allow the starch to soakup all the flavors.

Chan also is proud of anoth-er new dish to grace the JadeDynasty menu in the Deep-

Fried Golden Rolls ($4.50 fortwo). The pupu-style dish features

taro, Chinese bacon and sausagewrapped in special spring roll wrappers that areshipped to the restaurant from China. The tastystarter features a light and flaky outer layer thatwon’t weigh down diners.

Another scintillating starter drawing rave reviewsis Snow Mountain Char Siu Bun ($3.50 for three),which features three meat-filled buns that are lightand fluffy, not doughy. The buns, which resemblelittle snow-capped mountains, are cooked in a spe-cial oven from China.

“We try to add new items every couple of weeks,so you will constantly see something new on themenu,” Chan says of the eatery that is capable ofhosting up to 300 people, and encourages cus-tomers to celebrate birthdays and special events ineither the main dining room or one of the privatedining areas.
