These standards focus on quality and food safety, and a complete application of HACCP as an integral part of the system. The achievement of these certifications demonstrates the Company’s commitment to producing high-quality and healthy food, in compliance with local regulations.

SQFPreGel is a SQF certified supplier ; the Safe Quality Food (SQF) is an internationally recognized food safety and quality certification program administered by the Food Marketing Institute (FMI). It certificates that all suppliers in the food chain effectively implement robust food safety control systems, and it demands evidence that both a rigorous and credible food safety management system and continuous monitoring procedures are applied.

ORGANIC CERTIFICATION IIn 2012, PreGel obtained an organic certification in line with the Company’s policy of sustainability. The organic production method not only responds to consumers’ demand and caters to a specific market but also contributes to environmental protection, animal welfare and rural development. PreGel’s organic products are manufactured in compliance with the EC Reg. 834/2007.

KOSHERProducts that carry a Kosher certification satisfy the requirements of Jewish law in regards to the ingredients and process involved in the production of food or food products.

HALALIn 2011, PreGel obtained the Halal certification. Halal-certified products have been certified to follow Islamic food preparation and ingredient standards in keeping with the Halal lifestyle.

HAZELNUT PIEDMONT I.G.P.Since 2013, PreGel has obtained the I.G.P. certification for the Classic Paste product “Piedmont Hazelnuts I.G.P.”. This certification contributes to the development of a sustainable model, enhancing the quality of the resources from local communities in Italy. The product “Piedmont Hazelnuts I.G.P.” meets the requirements of EC Reg. 1151/12 on the protection of geographical indications and designations of origin for agricultural products and food.

LIQUORICE OF CALABRIA D.O.P.In 2014, PreGel also decided to join the D.O.P. certification, making the product “Liquorice of Calabria D.O.P.” manufactured in accordance with the relevant guidelines. HOT PROCESS BASES PreGel’s hot process milk bases are proprietary powdered blends of dry ingredients with the most advanced formula that is activated by heat.Gelato or ice cream created with a hot process base have sweeter flavour, as the heat also acts as a flavour enhancer.

All hot process bases must be heated before the mixture goes into the batch freezer. The overall process is quite simple. First, heat the milk in the pasteuriser to 35°C–40°C. Next, add the solids, mixed well, to complete the heating phase. Once the temperature reaches 85°C cool the mixture down to 4°C and let it rest for at least 1,5 hours. Remove the appropriate amount of mixture from the pasteuriser and add in the PreGel Flavouring of your choice, blending well before pouring into the batch freezer.

FRUIT BASESPreGel’s fruit bases are ideal for preparing refreshing fruit gelato and sorbetto. All fruit bases are created for cold process but can also be run hot process. PreGel’s Fruit Bases can be used with fresh fruit, frozen fruit, fruit puree, PreGel Fortefrutto® Pastes, or a combination of them all to create unique and delicious product.

COLD PROCESS BASES PreGel’s cold process milk bases are the answer to gelato makers’ need for a quick method of achieving a greater amount of gelato without compromising taste. The formula for these bases was designed to eliminate the need to heat the mixture, saving time and money. These are artisan bases because they still give each Gelato maker the option to balance and personalise their recipe to taste. The cold process consists of thoroughly mixing all ingredients together, then letting it rest for at least 30 minutes in a refrigerator before adding the PreGel Flavouring of your choice and processing in the batch freezer.

Please note that all PreGel cold process bases can be pasteurised if desired.

The flavourings are divided in three categories to meet all of our customers’ needs: Classic Pastes, Fortefrutto®, and Cold Processing Assorted Flavours in powder.

Our Classic Pastes are intense flavourings for cream and milk based desserts. They are generally thicker in presentation and contain particulates.
