1 large onion, sliced into thin half circles
4 Tbsp. butter
5 potatoes
3/4 cup chili sauce
Salt & pepper to taste
Pinch of Sugar
8 oz heavy cream
Shredded mozzarella cheese
1 medium ripe avocado (peeled and cubed) 1/2 cup mayonnaise 1/3 cup oil 1/3 cup water 3 tablespoons lemon juice 2 garlic cloves 1/2 tsp salt
In a large frying pan melt the butter. Add the onion and saute until soft. Add the chili sauce, seasoning and cream. Bring to a boil. Lower the flame and simmer for about 2 minutes until well combined.
Preheat oven to 350ºF.
Scrub the potatoes and microwave on high for 10 minutes until soft (I peeled the potatoes and cooked them in water until soft). Cube the potatoes and place in pan. Pour sauce over potatoes and mix well.
Bake for 20 minutes uncovered, stirring occasionally. Sprinkle with cheese and place under the grill for about 7 minutes until crispy and just getting brown.
Put all ingredients in food processor and pulse till blended.

5 Tsps Coffee Granules Divided
3 Tbsps Hot Water Divided
32 oz Cream Cheese
1 cup Sugar
1 cup Gvinah Livanah or Sour Cream
4 Eggs Lightly Beaten
1 cup Dairy Whip Cream
1 Tbsp Cocoa Powder
Layer half the wafers in a greased 9x13 pan.
In a bowl, dissolve 2 tsps coffee in 2 Tbsps hot water.
Brush half of this coffee mixture on the wafers.
Beat cream cheese and sugar until smooth.
Add the gvinah livanah (or sour cream) and mix again.
Add eggs one at a time, beating after each addition.
Divide the batter in half. Dissolve the remaining coffee in the remaining hot water and add to half of the mixture.
Spread that mixture over the wafers. Layer remaining wafers and brush the rest of the coffee mixture on top. Spread the remaining cheese mixture on top.
Bake at 325ºF for about 40 minutes until set.
Cool for about 1 hour and then refrigerate.
Beat the whip topping (dairy) and spread on top of the cake and sprinkle the cocoa on top.

On Aged and Hard Cheeses
By our Rav Hamachshir Rabbi Chaim Meyer Wagshal Shlit”a
There are extensive discussions among the Poskim regarding how long one should wait after eating dairy before consuming meat/poultry. (p"y x"cwx)
Some Poskim suggest, that in keeping with the Minhag of eating dairy on Shavuos and then eating meat products Le’kovod Yom Tov afterwards, perhaps the waiting period should be shorter than usual.
This notwithstanding, hard cheeses are not included in this leniency because, as the rn"t writes, “It is the Minhag that after eating hard cheeses one should not eat even poultry, the rn"t compares it to not eating cheese after meat...and it is best to be Machmir.” This is also the P’sak of the g"aeu ost ,nfj 'd"np 'l"a.
A cheese is categorized as “aged/hard” or vae vbhcd if it meets two criteria. 1) If it is manufactured with rennet and 2) It has aged for a period of six months. Examples of this would be Swiss or Parmesan cheese.
Conversely, cheese which was cooked, like American Cheese, is not considered “Hard Cheese” according to the vsuvh sh because it becomes soft as a result of the cooking, and therefore one does not need to wait 6 hours after ingesting American Cheese before eating meat products.
Hard cheeses (i.e. Mozzarella, Cheddar and Muenster) which become hard immediately during manufacture by hydraulic press are deemed by many Poskim as hard cheese and require waiting six hours, even though these cheeses have not aged to six months (j"pa c"j ,udvbvu wua,) ejmh ,jbn kgc sugu (v"k c"j) hukv yca kgcu (unac). Other Poskim, however, hold that a waiting period of one hour is sufficient after eating these hard cheeses which are not aged, but they do require waiting six hours after eating cheeses which are “sour/sharp” even though they have not aged for six months.
In order for a consumer to know which cheeses have been aged for six months from the time of manufacture, the Margrover Rav Shlit”a implemented that the “Sell by Date” on the Mehadrin hard cheeses is precisely six months after the manufacturing date (although, the cheeses are fresh and can be consumed long after this date).
Discussing this issue with Rabbonim who certify other cheeses, they explained two reasons why they don’t indicate the six month period on the packaging: 1) Being that the cheeses are vacuum-packed and no air can reach the product, “it cannot become aged”. 2) Since the milk is cooked prior to making cheese, it is covered by the P’sak of the vsuvh sh mentioned above. It is advisable that consumers discuss with their Rav.
So that our customers can be assured that they don’t have to wait 6 hours after eating products produced in our store, Evergreen uses Mehadrin cheeses in our products (salads, etc.) to satisfy the opinion of all Poskim.

MEATSPECIALS GRILLGUIDE
1 GET IT HOT! Preheat your grill 15 to 25 minutes before you start cooking to make sure it reaches the right temperature (and to kill any bacteria). Your grill should be 400-450°F for high, 350-400°F for medium-high, 300-350°F for medium and 250-300°F for low heat. A properly heated grill sears foods on contact, keeps the insides moist and helps prevent sticking. While searing doesn’t “seal in” the juices (contrary to popular belief), it does create improved flavors through caramelization.
2 BRUSH IT OFF. It’s easier to remove debris when the grill is hot, so after preheating, use a long-handled wire grill brush on your grill rack to clean off charred debris from prior meals. Scrape again immediately after use. Don’t have a grill brush? Crumple a sheet of heavy-duty aluminum foil until it’s the size of a navel orange and pick it up between locking chef tongs. The tongs will act as the handle. Holding onto the ball of foil, brush away.
3 OIL IT UP. Even on a clean grill, lean foods may stick when placed directly on the rack. Reduce sticking by oiling your hot grill rack with a vegetable oil-soaked paper towel: hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot grill.)
4 PREP SMART. To avoid soaking bamboo skewers each time you need them, soak a big batch once for an hour or so, drain, then freeze them in a plastic bag. When it’s time to grill, pull out as many skewers as you need. Burgers can puff up in the middle as they cook, making the tops rounded and awkward for piling on the toppings. To avoid this, press a little indentation into the top of each raw patty with your thumb or the back of a spoon. Then, when the center pushes up, the top of each burger will be relatively level.
5 THE HAND TEST. To gauge the temperature of a grill without a thermometer, place your open palm about 5 inches above the grill rack; the fire is high if you have to move your hand in 2 seconds, medium if you have to move your hand in 5 seconds and low if you have to move your hand in 10 seconds.
6 DO A WARM-UP. Take your steak out of the fridge about 20 minutes before grilling to bring it to room temperature. A freezing-cold steak won’t cook evenly.
7 DON’T MOVE. Let your steak/burger develop a seared crust on the grill before moving or flipping it. If you try to lift the meat before it’s ready, it’ll stick to the grates.
8 GIVE IT A REST. Let finished meats rest on a clean platter, tented with foil, for about 10 minutes before carving so juices can redistribute evenly.

If you’ve never tried a surprise steak, then you are in for a treat! Surprise Steaks are extremely well marbled & do not need to be marinated. When grilled correctly, they are as tender as a filet mignon, but with the full flavor of a rib eye. Surprise steaks are not widely available but Evergreen is proud to offer this prime cut to our customers at a great price. There are many ways to prepare these steaks, but for best results when grilling, follow these simple instructions.
GRILLINGDIRECTIONS: There are many ways to cook these steaks, however there are a few things that you must do to ensure perfection.
Always bring a steak to room temperature before cooking by setting it unrefrigerated and uncovered for about 20-30 minutes. This allows the steak to retain its juices during
cooking. This is the time to add any spices or flavoring. This cut is so flavorful it doesnt need much in the way of added seasoning. Salt and pepper recommended.
I have had many discussions with customers regarding the best method, temperature and cooking time for grilling this steak. Based on a lot of feedback and suggestion, I recommend a preheated 550 degree well greased grill. 3 1/2 to 4 minutes on each side will result in a perfectly cooked medium rare steak. Although most “professional grillers” prefer their meat rare, this particular cut seems to have a better consistency when cooked to medium rare.
Allow the steak to rest for at least 5-10 minutes before serving. Surprise Steak is best eaten medium rare. Due to its consistency, rare seems to be tougher and more chewy. I know, I know, most grillers think that this is a sin of grilling, however we find that this is the best way.
