STREET FOOD: GROWTH & OPPORTUNITY

With the pinnacle of the American Football calendar taking place in February, there will be a surge in popularity for the already highly demanded US “street food” - as much a part of Super Bowl Sunday as the game itself. Over 1.25 billion chicken wings will be eaten on the day alone, worldwide.

It’s not just wings: Add other US classics like chicken, ribs and simply that smoky BBQ flavouring and it becomes undeniably clear that America led the way on the street food trend which shows no sign of let-up in 2016. Combined with other growing cuisines like Mexican and Pan-Asian, it is estimated that 2.5 BILLION people across the world consume street food – each day!

The concept is relatively new on these shores. It has roots in various influences and inspirations but the term is believed to have originated Stateside when movie set style catering was expanded for the masses, growing in to a food truck craze. American street food followed a real back to basics approach to popular dishes – reinventing the ‘classics’ by stripping down the dish to the core ingredients and then re-designing it with taste as the key motivator, rather than price or marketing budget like a fast food chain.

Many of the first UK proponents took inspiration from the American trucks for the food they serve, as well as for cooking methods and for marketing (particularly on social media) and to a degree, for attitude.

In the purest form, street food is considered to be referring to artisan food sold on the streets. However, the surge in demand has been all encompassing, taking the

concept back ‘inside’ with the alternate guise of casual dining – particularly to the pub where it has been made to feel at home with the shared elements of fun and general communality. This provides all manner of opportunities for operators and not least in terms of craft beer, which has become inextricably linked with street food – both affording the allure of a back story worth hearing.Here, we present 3 great US craft beer and food matching suggestions:

PULLED PORK AND BLACK IPAPulled Pork has been one of the real success stories of the street food growth, almost synonymous. For beer matching, go dark. Stouts are not a bad shout because the pork will love the dark malt but the hop bitterness of a Black IPA is even better, cutting through the richness. Go for: a Scottish twist with the new intensely flavoured BrewDog Arcade Nation which blurs the divide of Black IPA and Stout

CHEESEBURGER AND IPA The ease of premiumisation have made burgers the fastest growing food item to be found on menus and for, say, a classic cheeseburger, there is one unsurpassable beer choice - an American IPA. The malt sweetness will enhance the flavour of the meat, whilst the hop bitterness will be softened by the salt and fat in return. Go for: Brooklyn East IPA: Hoppy and punchy with some New York cool.

BBQ RIBS AND RAUCHBIERWhen pairing ribs and beer, the best choices are malt-forward beers that offer sweetness or roast. A crisp lager is nice as a palate cleanser but beware super bitter beers which may harshly overpower delicate flavours. With BBQ, a Rauchbier or ‘smoke beer’ will complement them instead.Go for: Aecht Schlenkerla Rauchbier: A dark, aromatic, bottom-fermented German Rauchbier from Bamberg.

INGREDIENTS350g Country Range Dark Chocolate Drops175g Country Range Butter7 Free Range Eggs400g Golden Caster Sugar175g Gluten Free flour50g Cocoa Powder1tsp Xantham Gum50g Country Range Chopped Walnuts50g Country Range White Chocolate Drops

METHOD1. Place the chocolate and butter into a heatproof grass bowl and gently melt together over a pan of simmering water.2. In a separate bowl, whisk together the eggs and sugar until pail and airy.3. Once the chocolate and butter has melted, cool for 5 minutes and fold into the egg mixture a third at a time4. Sift together the flour, xantham gum and cocoa powder and fold in to the mixture .5. Stir in the white chocolate drops and desired nuts and place in to a lined baking tin and cook at 180 for 25-30 minutes.6. Brownies are best served gooey and slightly undercooked, so if the batter still feels loose to gently shake, leave to cool and it will set with a delicious fudgy centre.7. Once cool, slice and store in a cool and dry place before serving.

Asian food is not new to the UK restaurant scene, but it is only now that its capabilities are being explored.
