STREET FOOD: GROWTH & OPPORTUNITY
With the pinnacle of the American Football calendar taking place in February, there will be a surge in popularity for the already highly demanded US “street food” - as much a part of Super Bowl Sunday as the game itself. Over 1.25 billion chicken wings will be eaten on the day alone, worldwide.
It’s not just wings: Add other US classics like chicken, ribs and simply that smoky BBQ flavouring and it becomes undeniably clear that America led the way on the street food trend which shows no sign of let-up in 2016. Combined with other growing cuisines like Mexican and Pan-Asian, it is estimated that 2.5 BILLION people across the world consume street food – each day!
The concept is relatively new on these shores. It has roots in various influences and inspirations but the term is believed to have originated Stateside when movie set style catering was expanded for the masses, growing in to a food truck craze. American street food followed a real back to basics approach to popular dishes – reinventing the ‘classics’ by stripping down the dish to the core ingredients and then re-designing it with taste as the key motivator, rather than price or marketing budget like a fast food chain.
Many of the first UK proponents took inspiration from the American trucks for the food they serve, as well as for cooking methods and for marketing (particularly on social media) and to a degree, for attitude.
In the purest form, street food is considered to be referring to artisan food sold on the streets. However, the surge in demand has been all encompassing, taking the
concept back ‘inside’ with the alternate guise of casual dining – particularly to the pub where it has been made to feel at home with the shared elements of fun and general communality. This provides all manner of opportunities for operators and not least in terms of craft beer, which has become inextricably linked with street food – both affording the allure of a back story worth hearing. Here, we present 3 great US craft beer and food matching suggestions:
PULLED PORK AND BLACK IPAPulled Pork has been one of the real success stories of the street food growth, almost synonymous. For beer matching, go dark. Stouts are not a bad shout because the pork will love the dark malt but the hop bitterness of a Black IPA is even better, cutting through the richness. Go for: a Scottish twist with the new intensely flavoured BrewDog Arcade Nation which blurs the divide of Black IPA and Stout
CHEESEBURGER AND IPA The ease of premiumisation have made burgers the fastest growing food item to be found on menus and for, say, a classic cheeseburger, there is one unsurpassable beer choice - an American IPA. The malt sweetness will enhance the flavour of the meat, whilst the hop bitterness will be softened by the salt and fat in return. Go for: Brooklyn East IPA: Hoppy and punchy with some New York cool.
BBQ RIBS AND RAUCHBIERWhen pairing ribs and beer, the best choices are malt-forward beers that offer sweetness or roast. A crisp lager is nice as a palate cleanser but beware super bitter beers which may harshly overpower delicate flavours. With BBQ, a Rauchbier or ‘smoke beer’ will complement them instead.Go for: Aecht Schlenkerla Rauchbier: A dark, aromatic, bottom-fermented German Rauchbier from Bamberg.

The UK is obsessed with pancakes and all in the face of the fact that the pancake recipe has barely changed since Roman times (although an 18th century cookbook did suggest using 18 egg yolks, half a pint of cream and some wine… a little out there).
The nation will be piling ‘em high on Shrove Tuesday, but on which side do you come down?
Do you go for something sweet or go a little against the grain for the often overlooked savoury favourites like classic cheese and ham? Whichever way you choose to go, Pancake Day offers another angle by which to capture the US trend and how better than with our Country Range American Pancakes.
Unlike French crepes, American pancakes are fluffy and thick and ours are made with British Lion eggs for the perfect sponge texture.Frozen for convenience, they defrost in two to three hours and are suitable for vegetarians. The breakfast day-part is becoming increasingly important for caterers with more and more diners choosing to eat breakfast out-of-home. Offering plenty of choice is vital and American pancakes are extremely versatile and can be adapted in a number of ways:● For a traditional all-American breakfast or weekend
brunch, service with bacon and lashings of maple syrup
● Layer with fried egg and ham for a savoury treat● For the health conscious, offer fresh fruits, such as
raspberries, strawberries or blueberries served with natural yogurt
FLIPPING FABULOUS
● Pancakes are great for dessert too, served with fruit and ice cream
● For chocolate fans, spread warmed Nutella over a stack of pancakes and top with chopped hazelnuts

LOVE COMES FROM THE HEART
Traditionally, Valentine’s Day is one of those days in the year where venues can expect a big crowd.
Although somewhat expanded by the growth in consumer society, Valentine’s Day dates from the 3rd Century, the time of the Roman Empire, but still 61.8% of consumers celebrate the event to the tune of an average £80.73. Almost 35% celebrate by going out for a meal.
Regardless of age, people are always in demand for new experiences and your Valentine’s Day offer must be so attractive that your guests fall in love with it. Not only should love be in the air, but creativity too – and with no limits. There is no food that can not be served or prepared in a way to look like a symbol of love – a heart!
Why not try our Valentine’s Day Menu idea?

METHOD1. Place the chocolate and butter into a heatproof grass bowl and gently melt together over a pan of simmering water.2. In a separate bowl, whisk together the eggs and sugar until pail and airy.3. Once the chocolate and butter has melted, cool for 5 minutes and fold into the egg mixture a third at a time4. Sift together the flour, xantham gum and cocoa powder and fold in to the mixture .5. Stir in the white chocolate drops and desired nuts and place in to a lined baking tin and cook at 180 for 25-30 minutes.6. Brownies are best served gooey and slightly undercooked, so if the batter still feels loose to gently shake, leave to cool and it will set with a delicious fudgy centre.7. Once cool, slice and store in a cool and dry place before serving.

Asian food is not new to the UK restaurant scene, but it is only now that its capabilities are being explored. With huge intense flavours, relative healthiness and cheap inputs, Asian cuisines have a lot to be said for them and more open-minded and better-travelled diners are opening up the market for untapped nations and dishes.
Analysts first predicted a rise in demand for Asian concepts back in 2012, when a quarter of restaurant executives surveyed by Allegra cited Asian as the fastest growing restaurant type between then and 2017.
Their predictions have already started to catch on with pan-Asian foods and flavours the latest trend amongst street food and ‘small eats’.
It’s a slightly unusual concept to behold (would pan-European be accepted?) that previously would have tended to point toward all-you-can-eat buffets. However, the spirit of street food means consumers are more
PAN-ASIAN POWERaccepting of the way foods can work together.
The days of straightforward Chinese restaurants are coming to an end, or at least coming under pressure, as people are no longer excited simply by Chinese food alone.
Now, they want to consume more than just authenticity and the excitement has shifted to a new arena: the pan-Asian menu, incorporating Chinese, Japanese, Vietnamese, Thai, Malay and Korean influences. No longer should a menu list each separately but combine the flavours of each for the overall value.
Celebrate Chinese New Year in style with these delightful mini woks.
With 6 individual woks on a plate with individual heated patches, the ‘ Come Dine With Me’ Swan party wok and pancake make offers a uniquely creative and involving dining experience. Bring the kitchen to the dining table when entertaining guests, with this full-size Asian wok gourmet set. Prepare individual portions of meat, fish and vegetables – even eggs and pancakes are simple to prepare. And with a recipe book, getting creative has never been easier.
