TRENDING TASTESETHNIC INSIPIRED BREAKFAST ITEMSAs our society continues to blend diverse cultures together, ethnic-inspired breakfast items are increasingly striking a chord with diners, as found in a survey of chefs by the National Restaurant Association. Keep your offering on-trend and dish up some Chorizo scrambled eggs or some Mexican-inspired chilaquiles.

ARTISAN CHEESES AND LOCAL SOURCINGLocally sourced produce continues to capture the hearts and minds of consumers and at the moment, everything is artisan, with cheese the latest category to attract the label. Combine the two with some of the recent additions to the Local Larder at Dunns including Dunlop Cheddar, Aiket Brie and Dunsyre Blue.

ETHNIC CONDIMENTS AND SPICESLed by the runaway success of Sririacha, sauces that are popular overseas have been really picking up in popularity stakes.

You can find Sririacha in our range, but don’t forget Curry or Peri-Peri which are also soaring. Try also Frank’s Cayenne Pepper Sauce for something with a bit of kick.

SUSTAINABLE SEAFOODSIt’s not just local that diners are concerned about when it comes to concerning - the safeguarding of the planet has moved in to mainstream concern and sustainable seafood is firmly on the agenda. We’ve just welcomed the addition of the Country Range Tuna Chunks in Brine (800g/1.7kg), which comprises of only tuna supplied from well-managed and sustainable fisheries. Try it for Cinqo de Mayo in a Tuna quesadilla!

cINQO DE MAYOIn 2015, Mexican food was finally given the respect it deserves and it was even said that it had managed to knock Chinese off the top spot as the nations favourite cuisine – by July around 1 in 3 had bought or tried Mexican in the previous year.

It’s no surprise then that the number of Mexican restaurants soared by up to 71% and a study conducted on behalf of Premier Foods found that 38% of consumers want to see more Mexican food on menus. With US Tex-Mex giant Taco Bell creeping in to the UK, it is clear the market is going in one direction. It may be April but cast your mind forward to the beginning of May as the 5th will bring about a real Mexican fiesta which offers the perfect excuse to tap in to the Mexican market: Cinqo de Mayo.

Often thought of as being Mexico’s Independence Day, Cinqo de Mayo actually commemorates an unlikely Mexican victory over the French forces of Napoleon III at the Battle of Puebla in 1862.

It’s time to get the margaritas out and enjoy some tasty Mexican dishes. Why not try this recipe from none other than Sir Paul (or is that Pablo?) McCartney?

Spicy Refried Bean Tacos with Mexican Corn Bread‘My Signature Dish’ by Sir Paul McCartney from Stir It Up March 2010

Portions: 4-6

Ingredients230g canned refried beans2 medium tomatoes, chopped small1 tbsp olive oil1 medium onion, chopped1-2 tsp hot chilli sauce or to taste4 taco shells, warmed as per instructions on the packGrated cheddar cheese (optional)For the garnish;Sliced avocadoSour cream optionalShredded lettuceSqueeze of lime or lemon juiceFor the mexican corn bread;1 free-range egg2 tbsp olive oil1-2 tbsp chopped fresh hot chilli pepper230g tin sweetcorn, drained or 2-3 fresh earns of corn, kernals cut off110g créme fraiche or sour cream130g yellow cornmeal1 tsp sea salt1 tsp baking powder460g grated cheese

Instructions1 In a large frying pan gently fry the onions in 2 tbsp olive oil for 4-5 minutes, stirring frequently.

2 Stir in the refried beans. Add the chopped tomato. Fry til heated through. Season to taste with chilli sauce and a little salt if desired.

3 Half-fill the warm taco shells with the mixture and top with shredded cheese and shredded lettuce (you can put the lettuce at the bottom of the shell if you prefer). Garnish with a slice or two of avocado and a dollop of sour cream.

4 For the mexican corn bread: beat the egg with the oil until blended. Add the chilli pepper. Stir in the corn, créme fraiche, cornmeal, salt, baking powder and all but 110g of the cheese. Pour into a 20cm square pan. Sprinkle the remaining cheese over the top. Bake in a pre-heated oven (180°)for 40 minutes. Let cool slightly in the pan, then un-mould and serve warm.

ScOTTISh STABLEFollowing Aintree, it’s the turn of the Scottish Grand National meet across the weekend of the 16th-17th . As it takes place at Ayr, we’ve picked out some of the best of Ayrshire and Scotland in honour

76173 - AIKET BRIE – 1kg - £12.45Soft, white, mould- ripened cheese (brie, camembert style) made from Ayrshire cows’ milk. When young it is firm with a chalky texture and fresh mild taste. As it ripens from the outside to the centre, it becomes smoother and

develops a rich, almost mushroom flavour. Try with: Arran Dark

66163 - DUNLOP CHEDDAR – Avg 3kg - £9.45 per kgTraditional Ayrshire Dunlop is a hard-pressed cheese not unlike cheddar but more moist. When young it is mild with a nutty flavour and smooth, close texture. As it matures it

develops a good strength with a slight sharpness.

Try with: Arran Blonde

ARRAN BLONDE ALE/ARRAN DARK ALE 12 x 500ml £12.95

Nestled between the islands largest mountain, Goatfell, and the imposing Brodick Castle lies the award winning Arran Brewery. Their 5% Blonde is a light golden ale with a glowing warm honey hue and a delicate floral hoppy aroma. The Dark (4.3%) is smooth - a well-rounded roasty “Scottish Heavy”

with a pleasant bitter chocolate finish.

cURRIE’S RED KOLA6115 – 24 x 330ml (9645 – Sugar Free)3861 – 12 x 500ml (5210 – Sugar Free)

6169 – 8 x 1.5L £4.99 (3810 – Sugar Free pMp)It may be ABV 0% but this is the champagne of Red Kola.

Try with: chips!
