I have had such a great time putting this issue together. Gathering ma-terials to bring my imagination to life and meeting new people are just a small part of this job. There is planning and research. There is cooking and photoshoots. There is asking questions and getting paint under your fingernails. This is FUN.

In this issue, we have taken items from the back of the closet, under the shelter and deep in the china cabinet drawers and made use of them. Cre-ating beautiful and functional bird feeders, houses and baths. We’ve dug up things to do this Summer and we’d like to ask you to remember mom and dad and our military personnel.

Having a job that encompasses all the things you love has got to be one of the best feelings in the world. I hope you enjoy the fun I’ve had.

Memorial Day, when we wear our poppies, fly our Flags and place flowers and flags on the graves of Military Personnel. Many volunteers and Volunteer Organizations march in patriotic parades. Frequently there is a reading of Abraham Lincoln’s Gettysburg Address. Patriotic speeches are made and declarations by The President and Heads of the Armed Ser-vices are also read. We all take time to remember the Human sacrifice it has taken to establish and maintain this great Nation of ours. Later in the day on Memorial Day, time is set aside for picnics and other outdoor activities. This Holiday generally marks the beginning of the Summer Season.

We hope that in whatever way you celebrate this Memorial Day, you’ll celebrate it with those you love.

Fancy Bird Bath Made with a variety of milk glass vases, saucers, cups and bowls, but any type of dishes would do. Use an epoxy glue that can be used outdoors and line each dish up to build a totem to hold your shallow bowl that will act as the bath for the birds.

Bird HouseWe created a beautiful home for our birds with this cute little teapot we picked up from the Goodwill for sixty nine cents. Simply take some wire and fasten it to a tree. You may want to consider a slow growing tree as to not damage the trunk with the wire.

Bird FeederHow about a broken shover? It makes a great bird feeder, Or a metal dust-pan? Use your imagination and create feeders from broken or unused tools and household items.

Get the Kids InvolvedEasy and affordable, these bird feeders are perfect for little hands. The milk jug just needs a few holes, and to be filled with bird seed and the toilet paper holder needs to be covered in peanut butter and rolled in birdseed.

Celebrating Mom

zWhat better way to surprise mom on Mother’s Day than with a lovingly-pre-pared breakfast in bed. This menu is easy enough to put together that morn-ing, and young kids will love to help dad in the kitchen by mak-ing the scasserole or slicing bananas. Of course, when bringing mom break-fast in bed, presenta-tion matters. If you don’t have a handy breakfast tray de-signed for eating in bed, you can use any regular serving tray — or even a baking sheet covered with a nice placemat — to serve the meal. Don’t forget a napkin and any silverware she might need. A small vase with a blossom or two adds a special touch.

French Toast Kabobs

This one is easy to make, even the kids could help out.

IngrredieintsYour choice of bread4 whole eggs1/2 cup milk1/4 teaspoon vanilla1/4 teaspoon ground cinnamon1 cup raspberries1/2 cup blueberries6 inch bamboo skewers4 tablespoons buttermaple syruppowdered sugar Directions1. Bake French loaf according to package directions. Slice the French loaf into 1-inch cubes. Preheat oven to 250 degrees.2. In a medium bowl, slightly beat eggs, milk, vanilla, and cinnamon. Add half of the bread cubes to the bowl and stir to coat. 3. In a large saucepan, melt 2 table-

spoons of butter. Using a slotted spoon remove the soaked bread cubes and add them to the pan. Cook for 2-3 minutes over medium high heat flipping frequently to brown on all sides. When done, place on a cookie sheet and keep them warm in the oven. 4. Pour the remaining bread cubes into the egg mixture and stir to coat. Melt the remaining 2 tablespoons of butter in the pan and using a slotted spoon remove bread cubes and add them to the pan. Cook second batch of bread cubes in the same method as the first. 5. Thread fruit and bread on skewers. Serve immediately with maple syrup and a sprinkle of powedered sugar.

Baked Eggs in Bacon Baskets

Spray a 12 cup muffin tin with PAM spray.

Lightly cook 12 strips of bacon (or how ever many baskets you are making).Do NOT cook the bacon till crisp, but just enough to get rid of some of the grease. A few seconds on each side. Drain on paper towels.

Coil your bacon slices around the wells of the muffin tin.

Crack an egg and pour into the well.Sprinkle with salt and pep-per.

You can also whisk your eggs together and add some cheese, like a quiche, and pour this mixture into the bacon baskets.

Bake at 375 for 10 minutes for a runny center (to soak up with toast), or 12 minutes for the scrambled & cheese version.

Use a spoon to remove the baskets and serve! They are so pretty and better than the usual bacon and eggs.

Mississippi Breakfast Bake

This breakfast casserole is a tasty combination of eggs, bread, sausage, diced tomatoes and green onions, and Monterey Jack or Cheddar cheese.

Ingredients:•4 slices bread, crusts removed•6 to 8 sausage patties, cooked•1/4 cup sliced green onion•1/2 cup diced tomato•1 cup Cheddar or Monterey Jack Cheese•salt and pepper•6 large eggs•1 cup milk or half-and-half•1/4 teaspoon salt•1/4 teaspoon Cajun or Creole sea-soning or seasoned salt•1/8 teaspoon pepper•1/4 teaspoon paprika, optional

Preparation:Tear bread into small pieces and sprinkle in bottom of a lightly buttered 2-quart casserole. Arrange sausage

patties over the bread; sprinkle with green onion, tomato, then the cheese. Sprinkle lightly with salt and pepper. In a medium bowl, whisk together the eggs, milk, and remain-ing seasonings. Pour slowly over cheese

layer. Refrigerate overnight or bake immediately. If refrigerating overnight, take cas-serole out of refrigerator about 1/2 hour before baking. Bake at 350° for 40 to 45 minutes, until set in middle.Serves 4 to 6.

Set a tray with a pretty linen or paper napkin

Warm the coffee cup and chill the juice glass before serving mom

Serve mom’s favorite breakfast foods (not yours)

Farmers Skillet Breakfast

Ingredients:•5 strips bacon, chopped•2 tablespoons finely chopped onion•3 medium cooked potatoes, cubed•6 eggs, beaten•salt and pepper to taste•1/2 cup shredded mild Ched-dar cheese

Preparation:

In a heavy skillet, cook bacon until crisp; remove to paper towels to drain. In drippings, cook onion and potatoes until browned, about 5 minutes. Pour beaten eggs into the skillet. Cook, stirring gently, until eggs are set and cooked. Season with salt and pepper; sprinkle

with the bacon and shredded cheese. Let stand a minute or two, just until cheese melts. Serves 4.

Ham and Egg CasseroleIngredients:•12 slices white bread, crusts removed, torn into small pieces •3 cups cooked, cubed ham•3 to 4 cups chopped frozen broccoli, thawed•8 ounces shredded sharp Cheddar cheese•3 cups milk•5 eggs, beaten•1 1/4 teaspoon salt•1 teaspoon dry mustard•tablespoons melted butter

If the kids want to do this on their own, there is nothing stop-ping them from using store bought waffles and pancakes. u

Preparation:

In a 9x13x2-inch baking dish, put enough of the bread pieces into the bottom of the pan to make a thin layer. Make a layer of ham, broccoli, and cheese. Whisk together milk, eggs, salt, and dry mustard. Pour over top. Toss remain-ing bread with butter; sprinkle over the top of the casserole. Bake at 325° for 45 minutes. Let cool for about 20 minutes; cut into squares. Serves 10 to 12.

Blueberry Pancakes with Bacon & maple Syrup

2 cups Original Bisquick® mix 1 cup milk 2 eggs 1 cup fresh or frozen blueber-ries

1. To make the pancakes mix together the flour, baking powder and a pinch of salt in a large bowl.2. Lightly beat the egg to-gether with the milk. Make a well in the centre of the flour and slowly whisk in the milk to make a thick smooth batter. Beat in the melted butter, and stir in half the blueberries.3. Meanwhile cook the bacon until slightly crispy. Use a pan on the hob for best results, but grilling is fine too.4. Next heat a teaspoon of

oil or small knob of butter in a large frying pan over a medium heat. For each pancake, take around a tablespoon of the bat-ter and drop add neatly to the pan. Each pancake should be around 7cm in diameter. Make three or four pancakes at a time. Cook for about 3 minutes until small bubbles appear on the surface of each pancake, then turn and cook another 2-3 minutes until golden. Cover with kitchen paper to keep warm while you use up the rest of the batter.5. Stack the pancakes and place the bacon on top. Drizzle with maple syrup and scatter the blueberries over just before serving.

Herb Cheese Waffle BLT

Ingredients For the Waffles: ■2 eggs (separated)2 cups flour ■4 teaspoons baking powder ■1/2 teaspoon salt ■1 1/2 cups buttermilk (or add 1 tsp of lemon juice to regular milk and let it sit for 5 min) ■2 Tbsp melted butter■1/4 cup of green onion, chopped ■3/4 cup of grated cheese Ingredients For the BLT Sandwich: ■8 Waffles ■8 pieces of lettuce ■4 large tomato slices or the equivalent ■Salt and Pepper ■12-16 slices of crisp bacon ■Mayonnaise (or my favorite...Combine mayonnaise with some whole grain mustard; approximately 2 Tbsp of Mayo combined with 1 tsp of mustard) ■Basil leaves for garnish

Does the thought of cooking ribs, scare you? Well, let’s make this clear you do not need to be a Pit Master or have a Big grill rig

to make a great rack of ribs. I’m here to help you be the best backyard griller ever... This time we’re grilling Baby back Ribs

Let’s talk about the two types of ribs; there is a spare rib and baby back rib. The St. Louis style ribs are just spare ribs with the tips cut off, so we’re still talking about two main parts of the pig. Spare ribs are much larger and meatier, so they take about 4 hours to grill properly “slow and low”. As us good ol’ Southern boys like to say. The Baby back rib, are much smaller racks with nice marbling, so it only takes about 1.5 hours to grill using a gas or charcoal grill. Baby back ribs or a great rib to build your confidence as the Rib Master in the family. We’re going to talk about a quick technique to grilling ribs. So let’s talk about the quickest path to some delicious, and lip smacking ribs!

Let’s look at this technique step by step…

Step 1, Remove the skin. This is THE hardest part of the job of the whole process. There is a really thin skin on the back of the rib that doesn’t look like much, but after it cooks it’s as tough as leather. Grip the edge of one side and get under the skin,

and rip it off the back of the back ribs.

Step 2, rub those ribs. For a great rib use a rub, we like Nephew’s Haba Java. After you rub it, now comes the secret. Use your rub to generously cut the ribs, front and back and then place them in a pan of “sweet Tea”, yup you heard me right, the tannings in the tea make the meat so tender. Then cover them with plastic wrap and let them cure a bit in the refrigera-tor. This step allows the meat to marinade...

Step 3, Soak some wood chips. You can add some smoke flavor to your ribs. Now, there are Fruit woods like apple and peach that provide a nice subtle smoke, while hickory and mesquite are very strong. I use fruit, but it’s up to you. Soak your chips or chunks of wood for at least 30 minutes prior to grilling your ribs.

Step 4, Fire up the grill. While the ribs are being marinated, fire up your grill. Using a gas grill take the soaked wood chips, light half of the burners to high and leave the others low. Using a charcoal grill simply light a chimney full of coals and when there is a white ash on top of the coals Place the coals to one side of the grill and put a foil pan with about 1 inch of water on the cool side of the grill.

Step 5, Let’s Grill. Place the ribs on the cool side of the grill, with the wood chips onto the coals (if using a charcoal grill) and close the lid. That’s it, told you it was easy!

Step 6, The Sauce! After about an hour into the grilling, it’s time to sauce them up. I will do this towards the end for two reasons. One, we don’t want the sugar in the sauce to burn. And the other is that we want that rub to create a nice bark or crust on the ribs. What sauce should you use? Well, you’ll love the Cherry’Polte by Nephew’s. A great Simi-sweet flavor with a little smoke makes for a great tasting rib. Let’s take that sauce and slather it on those ribs and close the lid. If using charcoal, throw a few more coals on the pile, preferably already lit from the chimney.

Ribs on the grill can be a little intimi-dating, but as you can see from this article it doesn’t have to be. You’re one step closer to being that Back Yard Pit Master….
