Learning Objective:

The objective is to train the student to develop a comprehensive knowledge of professional cookery in the hotel &

catering industries by inducing in the student professional competence as culinary head in any type of food production

operation with basic common to Indian & other types of cuisines and its related subjects and areas.

Student will able to evaluate modern development and the different

standards of professionalism, create design of different kitchen sections by

planing out using different types of layouts.required and will apply the

same in the industry

small quantities and to plan their applications in different menus after adapting the recipes
