Country Squash5 or 6 yellow squash with ends cut off1 Vidalia onion1 T. cooking oil
Wash and peel squash and onion. Dice into small 1 pieces. Heat oil in an iron skillet until sizzling. Add squash and onion and lower heat to medium low. Continue to cook, stirring occasionally as onion and squash begin to caramelize (or turn a light brown color). This will take about 20 or 30 minutes. Makes 2 servings. Delicious!
