COLONIAL APPLE GRUNT

2 oz. butter1/3 cup brown sugar2 cups peeled, cored, sliced apples3/4 cup chopped walnuts1 egg1/2 cup sugar1/3 cup milk1 tsp. baking powder1 cup flour

APPLES! APPLES! APPLES!

Bramley, Arkansas Black, Fuji, Golden Delicious, Gala, Jonagold, McIntosh, Pink Lady, Pacific Rose

It’s raining apples! It’s November, fall is here and I have to say I always think of apples this time of year. My favorite would have to be Honeycrisp

—cool, crisp, sweet and tart all together perfect for everyday noshing.

Apples were brought to North America by colonists in the 17th century; the fi rst orchard being planted in Boston around 1625. Apples were spread along native trade routes as well as cultivated on colonial farms. By 1845 there was a catalogue of at least 350 varieties.

According the USDA, a typical apple weighs about 242 grams and con-tains 126 calories, signifi cant fi ber and vitamin C. Apples are often eaten raw, the whole fruit including skin is suitable for human consumption with the exception of the seeds which do contain cyanide. Varieties bred for raw consumption are termed table apples. Apples can be canned or juiced. They can be milled or pressed into apple juice, unfi ltered apple

cider or fermented into hard cider. Distillation can make the juice into wine or brandy.

Chefs and cooks alike love the versatility of the amazing apple. Apples can be shaved, sliced or diced raw into salads, roasted for salads and used in savory meat, poultry and game dishes. Bakers cannot get enough of the apple. You’ll fi nd many varieties used in sauces, pies, tarts, cakes, crisps and cobblers; all of them tasty and all of them bringing a bit of nostalgia back to when grandmom and mom were baking for the holidays. Can you smell the cinnamon, nutmeg and allspice as the scents permeate your home? I do!

You can fi nd fresh local apples at your farmers markets, Weber’s Apple Orchard in Baltimore County, Baugher’s in Carroll County and your local market.

In an 8” baking pan, melt the butter, remove 2 tbsp and place it in a mixing bowl, set aside.

Add the brown sugar to the baking pan, stir until dissolved and arrange the apples over the butter and sugar mixture and sprinkle the walnuts over top. In a mixing bowl, combine egg, sugar, milk and butter. Mix well, add flour, mix smooth. Pour batter over apples. Bake at 375 for 35 minutes, loosen cake from sides of pan with a spatula, invert onto serving platter and serve with sweet Chantilly cream.

Ken Day is an award-winning television producer with more than 32 years experience, 30 of those at Maryland Public Television. For three years Ken Day has been developing a documentary Maryland Vietnam War Stories interviewing more than 60 Vietnam veterans from the Free State (so far) about the experience of serving and coming home. Airing in May of 2016, this three hour documentary fi lm traces the war years in the words of Marylanders who were serving —overseas or even on the home front — an often ungrateful nation.

Mario Livio, Ph.D., internationally know astrophysicist at the Space Telescope Science Institute, and author of over 300 scientifi c papers and fi ve popular science books, argues that inspiring curiosity is the key to breakthroughs in education and at the root of all scientifi c discovery. “When is it we get curi-ous?” Mario Livio asks. For Dr. Livio, the answer is either one of two things: something that surprise us, or evidence that confounds us. And, he reminds us: “curiosity is like hunger”. Check out Dr. Livio’s blog, A Curious Mind; you’ll grow even hungrier reading it.
