President’s Corner

The hot topic for this month’s corner will be information regarding the upcoming vote to amend our bylaws. The substance of the change is quite simple . . . should we advance into the technological age and provide for electronic voting in future elections. The Board of Directors has contemplated this issue for some time, has studied other organizations that have taken this route, and

feel that we have enough information to give our membership an opportunity to vote on this important issue. If approved, the bylaw change would provide a secure electronic format in which we could conduct future elections. Let me be clear that this would not totally replace paper ballots and more traditional ways of voting. By traditional ways I am referring to the Board preparing a paper ballot, mailing it to the entire membership, requesting the membership to make their choices on the ballot, putting a stamp on the ballot, and mail it to the designated address. A date is set when all ballots are opened and results tabulated in the presence of designated officials.

While the traditional method has served our club very well for a number of years, new technologies have offered a different approach that may save money, simplify and be less time consuming for those of you whose world revolves around computers, I-phones, I-pads, and all that other technology that is now common place. The thrust of electronic voting would be to log onto a secure website where we have set up the ballot, log in using a high level of security and simply pick your ballot, make your choices, hit “vote” and “send”. Then you’re done.

One of the biggest concerns the Board had was verifying voters and proper security measures. We have several websites that have met our needs, one of which is “www.simplyvoting.com”. Several unique identifiers will ensure that the voter is a vote eligible member, and the results are instantly tabulated. This proposed change to our bylaws is the first change to take place in many years and a lot has happened with technology since we considered our last revision. In this edition of the Kassette our members will have the opportunity to review the current language and the proposed changes. Hopefully our members will be fully informed on this issue when the same text is introduced in ballot form next month. At the end of the ballot you will be asked to vote simply yes or no on whether the proposed changes should be approved. The ballot will be included in the next Kassette and you will need to remove it, vote, and mail. If this passes, this could conceivably be the last time you use a paper ballot if your preference is to go high-tech and vote electronically.

Another important topic on the horizon is our elections for next year’s Officers and Directors. Our bylaws require this be done in November and if we incorporate electronic voting, our members will be able to vote electronically or with the traditional paper ballot for next year’s Officers and Directors. For those of you

unfamiliar with the process, GCR has a Nominating Committee that will bring forth a slate of proposed officers/directors. In addition to this slate, the membership has the opportunity to nominate additional candidates from the floor at our August and/or September board meetings. If you are considering running for a position, please attend one of these meetings. Regarding the Director positions, two (2) Directors will be voted on as well as an Alternate Director and Alternate-in-reserve position. The 2 highest vote getters capture the 2 Director positions, while the person with the third highest votes becomes the Alternate Director, and the person with the fourth highest votes becomes the Alternate-in-reserve. In addition to the Nominating Committee slate, canidates may also be accepted for the Officer positions of President, Vice President, Secretary and Treasurer at the above meeting(s).

I know that this entire article has been dedicated to bylaw changes and elections; however, both these issues are extremely important to the future of Gold Coast Region and its members. Whatever your opinion may be, I encourage you to vote and express that opinion so the will of the people is heard through our democratic process.

AND FINALLYTHE WAX

In the last two issues we have been discussing the

detailing of the exterior paint surface. Last month we covered the benefits of claying your car and it’s effectiveness in removing microscopic particles and contaminants, especially in the pores of the paint surface. This is only the second step after the car wash, of course, but I still recommend two more steps before the final waxing or sealing. We must thoroughly clean the paint, and then polish it.

Paint Cleaner is readily available from various manufacturers and generally looks like ordinary wax, and it is applied accordingly. This deep cleaning process cleans what the clay did not, like mechanic’s finger prints often observable on white or light paints for example, or a host of other imperfections or contaminants which the clay did not clean. Further more, if you were to observe paint through a microscope you would see that it looks somewhat like a mountain range with peaks and valleys. The friction and light abrasive process of the Cleaner helps clip the tops and fill the valleys to achieve that optimum smooth surface. This cleaning also restores damaged dull surfaces; removes fine swirl marks, oxidation, and provides emollient oils. Emollient oils are common in beauty products, which oil the skin to keep it supple and moist.

Ok, so we just washed, clayed, and thoroughly cleaned the paint surface with our Paint Cleaner, now comes the final step before the wax and sealing, and that’s the Polishing. Car Paint Polish is also readily available and also looks like wax.

We know that the paint is meticulously clean because we just spent a long time getting it that way, but is it shiny? Probably, but not good enough! Polish will help restore the color and shine ever further. The clean and polished paint will be more reflective, smoother and better able to bond with the wax. And now you can wax!

A lot of work, I know, but the good news is that you won’t have to do the entire process very often. By now you are also figuring out why true professional detailers charge the money the do. Depending on your driving and storage habits, and if you keep a good coat of wax on your car, you have a while to recuperate. I’m also a big believer that the less abrasive and polishing action that is done on the car the better it is for the paint in the long run.

Constantly wiping and using abrasives on the paint just eats a microscopic part of it away over a long period of time. Sometime you can observe this “wiping off” of paint on you applicator. Today’s modern paints do not require the same tedious protection of the older paints. They have a clear coat over the base and primer coats which is laboratorialy formulated and tested to protect the surface. You can still eat away at the clear coat over time.

Generally, I try not to minimize the applications and wipe downs on my Concours cars. Typically I may clay bar the paint (cleans and removes old wax) and then wax it before the season starts. From then on I try to maintain it using a good detailer spray and a microfiber cloth. Here again, I try to limit this, keeping in mind that the more wiping and abrasive activity I perform on the paint surface the worse it is. If you have a red car, which I do, you can sometimes see paint on the wiping cloth.

If you observe at the Concours events, like the recent PCA Salt Lake City Parade, you will notice that there are some who stage their car, do some light dusting, and then seem to disappear just until the Judges arrive. There are others who constantly wipe and wipe their cars down as if a little natural dust was going to make them lose points . All this wiping can’t be good. By the way, want to bet on who the winners are?

In other issues we will go over application techniques, washing, preparing the wheels and tires and everyone’s favorite…cleaning the windows. Until then……

Last month many of our members were treated to a fantastic tour of the Gunnar Racing Museum by Kevin Jeannette. Read more about Kevin and Gunnar Racing and check out the gallery of historic Porsches in their museum. Kevin who is a Gold Coast member has a long history of involvement with Porsches in the restoration and racing of historic

vintage Porsches.

The GCR Board of Directors have reviewed and proposed a change to the By-Laws so that our voting process can be modernized with electronic voting. Many organization have updated to electronic voting with several benefits such as reduced cost, better member participation. Please review the proposal on pages 12 and 13. Next month a ballot will be included in the Kassette. Please complete and return your ballot.

Last year at this time many Gold Coast members attended the Parade in Savannah. Several members provided articles that were placed in the Kassette.

Proposed GCR By-Law Changes

Listed below in red are the proposed by law changes. The Blue represents sections being removed. While this may look like a lot, the substance is to provide for electronic voting using a secure format such as Simply Voting and provide for increased use of electronic media. Please review these proposed revisions and next month each member will be asked to vote yes or no on the entire proposal. The Board of Directors is sponsoring this change and the intended purpose is to better use available technology to offer easier and less costly methods to traditional voting. In addition, the proposal will more clearly define the roll of the nominating committee, while making the vote counting process easier and more in keeping with best practice models. In reviewing this proposal some of the questions the Board addressed were:

Are there products out there that will meet our strict security standards?•Will this electronic process be easy to use and encourage more members to vote?•Are we ready to move into this arena of modern technology?•

The answer to these questions was yes, however for more details please feel free to contact Pedro Bonilla or Steve Kidd for more information regarding this proposal. SECTION 3: DUTIES OF THE SECRETARY The Secretary shall attend all meetings of the members and the Board of Directors and shall keep full and complete minutes of the proceedings and of all votes cast thereat. The Secretary shall cause to be published in the Club’s official publication and through its electronic media, notices of all meetings of the members, proposed and adopted amendments of these Bylaws and other matters relating to the proper conduct of the Club. ELECTION OF OFFICERS AND DIRECTORSSECTION 1: NOMINATING COMMITTEE The Nominating Committee will be appointed by the President on or before the date of the May Board meeting. The Nominating Committee shall consist of three members including the immediate Past President who shall chair the Committee. A member running for election in the current year may not be part of the Nominating Committee. The Committee shall submit its proposed Slate of Officers to the Board of Directors at the July Board meeting. No person may be nominated without his or her permission. The Secretary shall verify that the person has given permission for the nomination if that person is not present at the time of the nomination. The Nominating Committee, in conjunction with the Secretary, will verify that each nominated member conforms to the standards of these Bylaws in order to be considered a candidate.SECTION 2: NOMINATION BY THE MEMBERS Any Gold Coast Region member in good standing may nominate any one or more persons who are eligible as candidates for an elected office from the floor at the August or September Board meeting and general membership meeting. No person may be nominated without his or her permission. The Secretary shall verify that the person has given permission for the nomination if that person is not present at the time of nomination.SECTION 3: NOTICE OF ELECTION The Secretary shall cause to be published in the September issue of the Newsletter and in Gold Coast Region’s Website a Notice of Election of the Nominating Committee’s Slate of Officers. The Notice of Election shall set forth the election procedure

as described in SECTION 4: BALLOTS, below. Each candidate will be requested to submit a statement for candidacy and/or biographical profile to be published in the September issue of the Newsletter for the benefit of the membership.SECTION 4: BALLOTS All voting shall be by write-in ballot. Only one ballot will be mailed to each pair of active, family-active, associate and family-associate members in good standing who hold and present a current valid PCA membership card. Ballots will be distributed through the U.S. Postal Service mail. The ballot will contain a place for the qualified voter to sign and list his or her PCA membership number.Preferably, all voting shall be done by secure, electronic form although traditional, non-electronic paper ballots may be used as well to supplement when needed. Each GCR member in good standing at the time of the elections may log into the designated web address between October 15 and November 15 and after accessing the site using the necessary and individually specific security keys, he/she shall proceed to fill in the different choices in the electronic ballot. There will also be a space for a write-in vote. Electronic voting will only allow each member to vote once. In the case that an active, family-active, associate or family associate member requests it, the Secretary will send one non-electronic, write-in ballot to that member by the U.S. Postal Service. The Secretary shall prepare a written ballot listing the names of all the nominees for each of the offices for which there will be a vote taken and that ballot will be replicated in electronic form at the voting website. If only one nominee is submitted for any office, then that nominee is deemed to be elected. The name of any such unopposed nominees will appear on the ballot but no voting will be required for their election. Ballots will be produced in a form that cannot be copied, that is, using colored paper, colored ink, initialed, numbered, etc., at the Secretary’s discretion. Ballots shall be sent through the U.S. Postal Service mail to the general membership. Ballots must be mailed by the Secretary on or before October 15th. Completed Non electronic, write-in ballots must be returned to the U.S. Postal Service Box number address indicated on the ballot and postmarked no later than November 15th. Ballots shall remain sealed until opened all together at the same time by the Nominating Committee for tabulation.The Secretary with a two member tally committee consisting of the Membership Chairperson and Treasurer Nominating Committee shall tabulate the votes cast received, add them to the electronic tally and report the results of the election. The nominee who receives the greatest number of votes cast for the office for which he or she is a candidate will be declared to be elected. For the election results to be official, they must comply with ARTICLE X , SECTION 4: QUORUM. If a quorum is not achieved, a re-election shall immediately be conducted using the same ballot format and nominees and with an explanation of why the re-election is necessary. During the time of the re-balloting the current officers and directors will remain in office. Upon receipt of the results of the re-election, the newly elected slate of officers and directors will immediately take office.The Secretary shall inform the newsletter editor and the webmaster of the results of the election in time for their publication in the January issue of the Club newsletter and as soon as possible in Gold Coast Region’s website. A formal announcement of the election results will be made to the membership at the December dinner/social meeting and an e-mail blast to the membership shall be generated with the official results as well.SECTION 5: NOTICE OF MEETING A notice, stating the time, date, place and purpose of any meeting of the members shall be published by the Secretary in the Club’s official publication and/or announced through electronic media to the membership not less than three (3) thirty (30) days prior to such meeting.SECTION 1: AMENDMENT OF BYLAWS These Bylaws may be amended by a majority of the votes cast in a referendum of the membership, which shall be conducted by mail in the same fashion as the yearly elections.Proposed amendments may be adopted only in the manner set forth in the ARTICLES of this Corporation.SECTION 2: NOTICE OF PROPOSED AMENDMENTS Proposed bylaws amendments must be presented and approved at a regularly scheduled meeting of the Board of Directors. Gunnar Racing Museum Tour by Vivian Ortega

We had a great turn out at the Gunnar Museum, where we were treated to a tour by Kevin Jeannette caretaker of this amazing collection of historical racing Porches. The members enjoyed a delightful narrative by Kevin; it seemed every car on site had its own unique and exciting story, brought to life by their passionate builder. Kevin and Sharon Jeannette were wonderful hosts, providing breakfast and refreshments to the many (over 90!) visitors from Gold Coast. We were all allowed to wander their shop and view their incredible collection up close. Many thanks to Kevin and Sharon and everyone else at Gunnar Racing for their hospitality and to all the Gold Coast members who participated in this terrific event! Kevin Jeannette, owner of Gunnar Porsche Racing has a long history of involvement with Porsches. His start came over 35 years ago with a Porsche repair shop in Southern California. By 1977, Kevin was a Porsche racing mechanic and devoted his full-time to the sport in 1978. Kevin began his racing career working with teams racing 934s and 935s and eventually into 962s. He also started what would turn into a thriving restoration business, restoring vintage Porsches racing cars for this new arena for these retired racing cars. The early years included such teams as Cliff Kearns/ Milt Minter in a 934, for the Whittington Brothers at the Indianapolis 500 and in a 934, and

935s. Kevin went on to crew the Swap Shop Porsche 935 including the 1983 Daytona 24 Hour winning car with Foyt, Wolleck, Ballot-Lena, and Preston Henn. Kevin even built the engine for this winning car. It was in the early 80’s that Andy Jensen started working with Kevin. They had first worked together on the Whittington Brothers team. Kevin moved on to Porsche 962s, with the Swap Shop Racing, then Shelton Racing, Primus Racing, Bayside Racing, and Busby Racing. All the while, Gunnar Racing was making a name for itself for restoring the most historic of racing Porsche’s racing cars including 917s, 908s (both long tail coupes, and short tail spyders) and 910s, all the way back to the earliest RSKs and Speedsters. What brought Kevin to Florida was the 908 LH (long tail coupe) that he helped Gerry Sutterfield restore for the Porsche Factory. Gunnar Racing, led by Kevin's innovative thought process, built the first modern day open topped prototype to run in the IMSA Camel GTP class with the 966 Spyder. Gunnar Racing campaigned the car from 1991 until the final demise of the class in 1993. The car which wasn't always the fastest compared with the Nissan and Toyota factory teams always attracted attention. It also attracted great drivers such as Derek and Justin Bell, Hurley Haywood, John Paul Jr., Jay Cochran, David Donahue and some Hollywood stars such as Bobby Carradine and Chad McQueen. This car was the

fore runner of the current WSC/ LMP cars that are the top class of professional sports cars racing today. Gunnar Racing took on a new account of enthusiasm in 1990 as Kevin’s son Gunnar who grew up in and around the cars his father was preparing took to the sport as a driver at the age of 17.Since then Gunnar Racing ran the 2000 Rolex 24 with Gunnar and Paul Newman driving as well as the 24 Hours of Le Mans, where they finished sixth in the GT class and Gunnar went into the record books as the youngest driver ever to complete the race at 18 years and 33 days old. Gunnar drove with Panoz Motorsports is a test and endurance driver in 2002 and ran the full season with them in 2003. Not to forget their roots in vintage Porsches, Gunnar Racing is also the very active in historic racing, keeping a whole stable of cars race ready, including some that Kevin and Andy worked on when they were originally campaigned professionally. The current staff at Gunnar Racing includes Kevin Jeannette, Andy Jensen, Bret Plazak, Paul Frederick, Sharon Jeannette, Gunnar Jeannette, and Jesea Jeannette. It is doubtful that Kevin, Andy and the entire Gunnar Racing staff are looking to retire anytime soon. There is far too much racing yet to experience! Thanks again to Kevin and the Gunnar Racing staff. We are looking forward to our next tour.

From The Members: Achtung! Autobahn!

Every time I mention to my friends that I am originally from Germany and that I frequently visit my Parents there, the conversation sooner or later leads to the German Autobahn. People are envious, scared or simply intrigued by what they have heard and imagined.

Here is the scope:The German Autobahn is not a scary place to drive. Quite honestly, I am more scared driving 65 miles an hour on the LIE than 120 mph on the Autobahn. Being passed by trucks on the right and minivans operated by drivers eating happy meals while talking on their handheld phones on the left is no fun. What makes the German Fahrvergnugen so different?

For one, there are important rules that make a big difference: No one is allowed to pass anyone on the right. EVER!!! (unless in congestion and traffic is crawling). So while people drive at high speeds, they do so in the right lane, come out to the left only to pass someone and then immediately go back to the right side. Small cars and fun mobiles like the Smart may never see the left side of the road.

Tailgating is also a big NO NO. You are allowed to drive fast, but not too close to the car in front of you. Years ago, my dad got caught doing this and his license was suspended for a few months. How did they catch him? Well, watch out when you see a series of lines painted on the ground right before a bridge or overpass. The police set up cameras and radar and measure your speed plus your distance to the car in front at the same time. They snap a picture of you and the ticket arrives in the mail a few days later. Voila, there goes your license.

Contrary to myth here are some speed limits. Usually the signage is posted in dangerous conditions, traffic patterns, proximity to major urban areas, etc… In many cases, there is not just a speed limit, but also an explanation for the limiting condition. For example: a speed limit of 130 kph is listed when there is fog. It always makes me feel better to see why I should go slower and I tend to take it more serious this way.Second, Germans take their cars and driving skills very seriously. Did you know that in order to get a license you have to spend a minimum of 12 hours with a professional driving instructor in their specially equipped car? This includes 4 hours of Autobahn and 3 hours of nighttime driving. You also have to participate in a full day class learning everything about first aid, how to change a tire and more. The written test takes about 45 minutes and over 50% fail it the first time they take it. (I passed it the first time in case you wondering…) This is not because the Germans are such idiots, THE EXAM IS REALLY REALLY DIFFICULT! I remember it being comparable to finishing my High School final exams. Well let’s just say that once you have your license you are a pretty decent driver.

Last, cars are part of our culture. We Germans love our cars and a great many of us are born with Gasoline in our blood. Many people will buy a brand new BMW or Mercedes before they own a home. People love to wash and maintain their cars on the weekends and take great care of their 4 wheels. The amount of magazines devoted to driving and cars is enormous. The German Autobahn itself is a pretty low key affair. Most are 2 lane highways and is not very impressive at first sight. However, it is designed and maintained extremely well and it is hard to find sections with a bumpy or bad surface. The general rule for the design of the road is to provide for “unimpeded, high-speed traffic flow”. IMAGINE THAT! One reason is that the subsurface and structure of the autobahn is significantly thicker as compared to roads here. High Speed is the goal.

Oh and before I forget to mention this: The Autobahn is free. No tolls whatsoever. I believe the huge amounts we pay for gas pays for the roads… While we are at this subject, take a look at the pictures I took while filling up the car in Germany and also in Switzerland. These prices are for liters, not Gallons. Imagine paying 150 Swiss Francs to fill up your car! (Roughly $130.00) Don’t you feel great that gas is still so cheap here? On the other hand the quality of the gas is also higher in Europe. Regular gas has 91 Octane; Shells’ V POWER is at 100. There is nothing available in Germany in the high 80 octane range even if you try to find it. So don’t even think of fueling the cheap stuff for your German ride as it will have unpleasant side effects.

So if you can’t decide on where to go on your next holiday (or to pick up your new Porsche), consider a trip to Germany. The German people are very friendly and most speak English. The food is great (there are other things available besides bratwurst and sauerkraut) and places such as the new Porsche Museum, as well as the Mercedes Benz and BMW museums make for fantastic destinations for the car enthusiast. Zipping along on the Autobahn going from one place to another will make it that much better.

Remember: the Autobahn is a safe place to be and meant to be enjoyed at high speeds!

Brunch in the Gables at La Palma Ristorante

When it rains, it pours, which was an understatement, but it did not keep forty-four members away as everyone cautiously made their way to La Palma for a delicious Sunday Brunch on April 29th. A Broward caravan was led by Richard Diaz in a Speed Yellow Boxster S, so everyone could see him a mile away as they approached the meeting point in Pembroke Pines. La Palma has been voted as one of the most romantic restaurants in Miami and has extensive list of brunch favorites, such as omelettes, fruit & cheese, a couple of salmon dishes, eggs benedict, a carving station with turkey & ham, crab legs, pastas, seafood paella, desserts and much more.

Not all arrived in their Porsches, since we had such inclement weather, but everyone brought their appetite! After a few hours enjoying friends and food, the weather improved, as it was time to say good-bye. It was wonderful to see everyone and thank you for making the moment very enjoyable as always! Tech Corner: Higher M P G ‘s

With the price of gasoline at $3.50 and higher I get a lot of: “How can I get better gas mileage from my Porsche?”I generally tell them: “I can sell you a Kit to increase horsepower which will make your car more efficient giving you better mileage, or just follow some of my gas-saving tips”:

1.- TUNE-UPKeeping the factory-recommended maintenance service schedules is one of the best ways to gain fuel economy. These scheduled maintenance services make sure that the spark plugs are in optimum condition, that the brakes aren’t dragging, that the engine breathes properly with a clean filter, that your oxygen sensors are reading the exhaust correctly and that your ECU is adjusting the fuel/air mix in the most efficient way, among other issues.

2.- TIRESHaving your tires properly inflated can save you a couple of MPGs. Check your owner’s manual or the tire-inflation sticker on the door jamb for your car’s recommended tire pressures. Note that with our Porsches, we generally have different front-to-back tire pressures and remember that tires tend to lose a few psi per month, so make it a habit to check them frequently and keep them optimized.

3.- GASOLINEThe lower the octane, the cheaper the gas, but does it save you money?Porsches in particular have higher compression engines than the larger displacement engines in domestic cars. This higher compression requires higher octane grade in order to eliminate knocking. Newer cars have knock sensors that retard the ignition to avoid knocking if a lower octane gas is used, but this makes the car less efficient, and in the end it uses more gas to drive the same distance and ends up costing you more. Check your manual or the sticker inside the gas lid for the recommended octane rating for your car.

A lesser known tip is when to purchase your gasoline. Buy it during the coolest part of the day. Evening or early morning is best. The lower the gasoline’s temperature the denser it is, meaning that a gallon of cold gas weighs more than a gallon of warm gas. Gas pumps charge you by volume not by density.

4.- MAKE IT LIGHTERWe all know that making a car lighter will make it go faster, but it will also save you gas. So, check your trunk(s) and clear them as much as possible of the stuff you don’t need which will translate into savings at the pump.

5.- LIGHTEN THE LEAD FOOTAt the track you shouldn’t be worried about gas mileage, but in the city, you can save a lot of fuel by accelerating lightly. Full throttle acceleration is a sure-fire way to drop your average MPGs.

Most cars’ fuel consumption reaches maximum efficiency at 55 mph in it’s highest gear. Wind resistance increases exponentially with speed, so as your pace quickens, your gas tank starts to dry up faster. Each 5 mph you drive over 55 mph can lower your gas mileage by 7% or more! Look at your instant fuel consumption gauge (if so equipped) and that’ll help you drive in a fuel-saving manner.

6.- A/C or AL FRESCO?The air conditioner, unlike the heater which uses the engine’s “free” heat to warm you up, uses the engine’s power to run the compressor, thus lowering fuel economy. But if you’re driving on the highway, sometimes it’s better to close the windows and run the A/C. Why?, Because of aerodynamics. The detriment from driving with the windows down is greater in a Porsche, which has excellent aerodynamics, than in a Hummer, which has ... none! The same applies to cabriolets. You’ll get better gas mileage with the top up.

7.- MOTOR OILUse the correct grade of motor oil specified for your vehicle. Following the factory’s recommendation

can improve your gas mileage by 1-2%. The recommended oil and oil grade is specified in your car’s manual.

8.- DON’T IDLEShut the engine off if you expect not to move for a while. When a car is idling, it is giving you zero (0) MPGs.

9.- WARM UPAvoid prolonged engine warm up. Even on cold mornings 30 seconds or so is plenty of time, but never fully accelerate an engine until it reaches its operating temperature.

10.- PLANNINGPlan your trips. Combine short errands into one trip using the shortest distance possible.

Following these tips you can easily gain 2-5 MPGs, guaranteed.Here’s an interesting exercise. Chicken Crepes With Avocado 8 Entrée Crepes 1 tsp. salt5 Tbsp. butter or margarine ¼ tsp. pepper5 Tbsp. flour 2 Tbsp. chopped 1 c. heavy cream parsley1 c. chicken broth 2 c. diced, cooked¾ c. dry white wine chicken1 c. grated Swiss cheese ½ c. ripe olive slices½ tsp. Worcestershire sauce Avocado slicesPaprika

Melt butter or margarine in saucepan and stir in flour. Add cream, broth and wine. Cook, stirring constantly, until mixture is thickened and smooth. Add ¾ cup of the cheese and stir until melted. Add Worcestershire sauce, salt, pepper and parsley. Add one cup of the sauce to combined chicken and olives. Divide mixture evenly among crepes and roll up. Place in single layer in greased, shallow baking dish. Dish can be covered and refrigerated at this point. Refrigerate sauce, too. Before serving, top each crepe with an avocado slice and pour remaining sauce, warmed, over all. Sprinkle with remaining cheese and dust with paprika.

Bake, uncovered, in oven at 375°F. for 15 to 20 minutes or until hot, bubbly and lightly browned.

Basic Entrée Crepes1 c. all-purpose flour, 3 eggs Sifted or presifted 2 Tbsp. melted butter or¾ c. water margarine¾ c. milk ¼ tsp. salt

Put all ingredients in a blender jar and whirl for about one minute at high speed. Scrape down sides with a spatula and whirl again at high speed for another 15 seconds. Pour into bowl and cover. Refrigerate for an hour or more. Heat a crepe pan or small “Silverstone” coated pan and brush it lightly with butter, margarine or oil. Let it heat until just about smoking. Pour in 2 or 3 tablespoons of batter (a gravy ladle is perfect measure). Quickly, tilt the pan in all directions to cover the bottom surface with a very thin layer of batter. Cook the crepe over a medium high heat until the underside is browned. This should take about a minute. Then turn the crepe with a spatula or carefully with your fingers and brown the other side for about 30 seconds. (The second side is spotty and is used as the inside.) Place the crepe, browned side up, on a plate. Grease the pan again as necessary and repeat the steps to make the rest of the crepes. Use the crepes right away or cover with plastic wrap and refrigerate until needed.Jude L. Rollins, Gold Coast Region

Chicken in FoilChicken breasts 2 Tbsp. cooking sherrySalt 1 Tbsp. cream (cannedPepper milk can be used)Oleo Rosemary leavesChopped onion 1 can sliced mushroomsCelery

Wash and remove skin from chicken breasts. Salt and pepper and brown in oleo. Remove from pan and place in individual pieces of foil; meat side down. Saute chopped onion and celery in pan chicken was removed from. When onion and celery are tender, turn off fire. To this, add 2 tablespoons cooking sherry and 1 tablespoon cream for each piece of chicken. Add rosemary leaves and 1 can sliced mushrooms. Spoon mixture over the chicken pieces, dividing evenly and close foil. Cook in 350° F. oven for 1 hour or until tender. Do not bake too long, chicken pieces will get dry.
