Taking Tea at The Marlay

Alzheimer’s Tea day was marked on May7th in The Marlay Nursing home withresidents, visitors and staff enjoying tea,home-made cakes and music while raising€1,000 for the Alzheimer's Society.

It also was also an opportunity to invite localresidents to come and see at first hand thenursing home and its wonderful facilities.“Serving and being part of the localcommunity is very important to us” said SueCameron, Director of Operations at theMarlay.

“This is the second time this year we haveinvited people to come and visit us. Werecently held an Open Day at which over 70people dropped in to see us. Giving peoplethe opportunity to see the home and itsfacilities, talk to staff and ask questionswithout obligation was welcomed by thosewho came. With an ageing population mostof us know someone who is caring for anolder relative and while thankfully most of uswill live out our lives at home it is good toknow that there is somewhere within thecommunity available for those of us who mayat some time need care within a residentialsetting. The feedback from the day was verypositive and possibly the most frequent andnicest comment being that it didn’t feel like aNursing Home!” .

Sue went on to say “Nursing Homes over theyears have improved and The Marlay is one ofthe Nursing Homes developing and leadingthe changes not only in the standard of careit provides but also in the areas of activitiesand dining. Our diverse activity programmeincludes art and music therapy for the soul,while our beauty and complementarytherapies look after the body”.

“Food is one of life’s pleasures and our menuchoices prepared by our excellent chefs,trained in nutrition ensure that mealtimes arehigh on the list of enjoyable experiences. Thebackbone of any Nursing Home is its staff andhere in The Marlay we are fortunate to have avery experienced team lead by the Director ofNursing Colette Clabby who is also local tothe area.”

The Marlay opened its doors in 2007 toresidents who require long term NursingHome care. It also serves people who requireConvalescence care following a stay inhospital and Respite care for those who areusually cared for in their own home but needa short time in a Nursing Home.

Fennel and tomatoes are gently served withwine, herbs and garlic and then topped withpan-fried sea bass. A tasty combination of classicMediterranean ingredients.

Ingredients:For the sea bass:4x170g/6oz fillets of sea bass, skin on 1 tbsp olive oilsalt and freshly ground black pepper

For the slow cooked fennel and tomatoes:4 fennel bulbs, tough outside leaves removed175ml/6fl oz extra virgin olive oil400g can of chopped tomatoes 1 head of garlic, split into cloves and peeled150ml/5fl oz boiling water120ml/4fl oz dry white wine 2 tbsp chopped fresh oregano leaves24 black olives, stoned and halved2 tbsp balsamic vinegar12 basil leaves

Method1. Preheat the oven to 170C/325F/Gas 3.2. Slash the skin of the sea bass fillets and place in the fridge.3. Cut the fennel lengthways into quarters. Heat the oliveoil in a heavy-based ovenproof pan and add the fennel.Cook the fennel over a medium heat, turning frequently,for 20 minutes or until starting to brown. 4. Add the tomatoes, garlic, boiling water, wine, oreganoand some black pepper. Bring to the boil, cover and cookin the oven for 1½ hours. 5. Remove the pan from the oven and add the olives,balsamic vinegar and basil leaves. Place on a low heat,season and simmer gently.6. Take the sea bass from the fridge, rub the surface withthe olive oil and season with salt and pepper. Heat a largefrying pan. Add the sea bass fillets, skin side down andcook for 3-4 minutes until the skin is crisp. Turn the filletsover and cook for a further minute or until the fish is justcooked through.7. Place a spoonful of the fennel and tomatoes into thecentre of each plate and top each with a piece of sea bass.

Coming into the Summer months, weddingsare very much in the air. So, what anopportune time to speak with two localentrepeneurs, Richard Masterson and PaulArmstrong, the founders of the www.ourweddingjourney.ie - personalised wedding websites.

These days, the average person spends severalhours a day sitting at a computer. Staying intouch and communicating has never beeneasier, with the phenomena of Bebo andFacebook leading the way. It was only a matterof time before this easy communication viapersonal websites, came to the world ofweddings.

This is where Richard Masterson from Dundrumand Paul Armstrong from Ballinteer, have comeonto the wedding scene, changing weddingplanning as we know it. After going through theplanning process with their own weddings,Richard and Paul saw the huge need to have aplace where all wedding arrangements could bemade; a place for guests to get information andfor couples to keep track of wedding plans andexpenses. .Launched in January ‘09, www.ourweddingjourney.ie is Ireland’s firstpersonalised wedding website company. OWJ isa place where couples can create a beautifulwebsite in order to showcase their wedding andgive information to all their guests. Couples havecomplete control over their own site; can uploadpictures, news, music and have a forum to talkto guests. It is essentially the Facebook or Bebofor weddings!

Richard explained “OWJ gives your guests aplace to get all the information they need forattending your wedding. They can RSVP, finddirections, get phone numbers, contact you,find out about your gift list and read all aboutyou as a couple.”“Having a website is especially important for theguests travelling to your wedding. Your web sitecan give them all the information about where

Round the Garden in June

This is one of the best months for yourgarden to look good. Growth is now at itsmost vigorous – that is if there is plenty ofmoisture in the soil! Grass can suffer in thedry weather so its best not to cut it at all andlet any dew cling to the grass blades duringthe night. If you do mow, set your blades alittle heigher than you usually would.Watering they say, is best done in the earlymorning and best given to the roots and notall over the plant; if the sun is out, the sun onthe water can burn the leaves.The leaves of daffodils that have been left to dieare probably yellowing now and can be cut offas all the goodness has been taken down intothe bulb.

The clematis will need to be checked and all newgrowth tied in to the support. This also applies toclimbing roses. Don’t forget to take of all the

dead heads of roses as this will help to continuethe flowering. This also applies to many plants.Prune the evergreen ceanothus as soon as it hasfinished flowering.

It is still time to sow annuals for flowering thisyear and also those that take two years to flowersuch as Aubretia, Aquilegia, Canterbury bells,Foxgloves, Hollyhocks, Lupins, Sweet William etc.Vegetables to sow include carrots, lettuce, andFrench beans.

So, if you are suitable for the job, thenmake sure they don’t reject your CV becauseyour experience and ability is not clearlyexplained, or the layout of the CV is hard tofollow. Remember KISS. Keep it short andsimple. Concise and factual is key!

The InterviewRemember this is your one chance to promoteyourself and elaborate on your CV. Interviewshave become more competency-based;meaning that the focus is on questions whereyou need to provide the details of yourexperience and achievements, and evidence ofactions taken and results achieved.

In the Case of RedundancyOne of the key criteria to receiving theJobseeker's Allowance is that you must beavailable for, and genuinely seeking, work. Youmay be asked to show evidence that you areactively seeking work. For example, lettersshowing job applications or failure to get a job.Attending a 1:1 coaching session or a trainingprogramme where you update your CV anddevelop your interviewing skills, shows that youare making an effort and preparing yourself forthe job market.

Your Summer Capsule Wardrobe Did the recent spell of gorgeous weatherset you off to look out last year’s summerclothing to check what would still fit andwhat was still in? With the Irish climateoffering us four seasons in one day it canbe difficult putting together clothes thatare summery in appearance and yet handlethis variety.

I would like to suggest a working summercapsule wardrobe as this simplifies the matterof choosing what to wear everyday. What isa capsule wardrobe and how do you create

one?

A capsule is basically a collection of betweenseven and ten items that you can mix andmatch yielding several outfits. This caninclude for the summer, light weight trousers– perhaps in linen or cotton, a skirt or dressand shorts or cropped trousers. Look carefullyat the existing clothes you have, you maywell find that you are already choosing itemswith one colour being prevalent, perhapswhite or cream or a paler shade of blue orbrown. A good capsule would include eitherknitwear or a light coat or jacket that workswith the colour-way on the bottom half. Bymixing in a selection of tee-shirts or tops itshould now be possible to create severaloutfit combinations from this basic collection.

This everyday capsule can be adapted to suityour lifestyle or holiday requirements. If youare heading off to certain sunshine then yourholiday capsule could include: swimwear witha kaftan or a beach cover-up, shorts andcropped trousers or light weight skirts and aneasy to wear dress for evening or sightseeing.It is really simple to totally change the look ofan outfit by wearing different footwear andaccessories. The kaftan that can be slipped onover your swimwear can look completelydifferent if teamed with strappy sandals orwedges and pretty jewellery. With baggageallowances being cut to the minimum it canbe important to choose wisely when packingyour bags.

This basic guide can be used for all the familymembers and for any holiday destination. Inorder to get the greater number of outfits outof your capsule look carefully at the coloursyou are choosing, if you can match two orthree tops to each bottom then the optionsincrease. Add in flat comfortable sandals orshoes along with a dressier pair with a fewwell-chosen accessories and the optionsincrease again.

If this sounds too complicated, don’t worry,help is at hand. Creating capsule wardrobesand yielding outfits out of existing clothing ismy speciality. My aim is to create outfits thatwork for you whatever the season, whateveryour budget.

Is it just me, or is it getting more and moredifficult to find that perfect Fathers Day gift?Can he really need yet another pair of HomerSimpson socks? Maybe another book ongardening to go on the shelf with the fishingbook you got him last year and the book onbee-keeping from the year before?

Wouldn't it be great if he got a present thatwould open up a world of new ideas andpossibilities for him as he gets older?

Years ago, for many senior citizens, the radiowas their only source of company if they livedalone. That need not be the case today. Formany elderly people today, the computer canprovide a necessary form of communicationwith the outside world.

Most elderly people have relatives living abroad,and with the cost of living today, many find itdifficult to stay in regular contact by phone orletter.The internet can be an invaluable resourcefor them, and costs are coming down all thetime. As well as that, Skype is a wonderful andcost effective way of communicating withfriends and relatives abroad for free, and there'salways email.

The computer is a great way for older people,and indeed all of us, to keep up with what'sgoing on in the world. These days, we canaccess up-to-the-minute news on the internet,as well as being able to read the newspapersonline.

Then there are all the practical things that canbe done online, such as paying bills, bookingconcert tickets and flights or holidays. Thesedays, many hotels and holiday destinations offerdiscounts to customers who book online.

So what about a few computer lessons for yourDad as a Fathers day present? Maybe next timehe goes away on a fishing trip or rugby trip, he

can book it online first, and then come homeand write a blog about it for his pals!

The libraries run courses for elderly people inthe use of computers. Or, if preferred, there isalways one to one training in their own home,which is becoming the preferred option formany people.
