world, an opportunity can

sometimes come from an

unlikely source. Recently, for

instance, a major online

retailer has taken steps to

create opportunities for

smaller stores.

A Troubling Trend

While the success of "big-

box" and online retailers has

been a boon for employees

and shoppers, not all busi-

nesses have benefited.

In fact, many believe that the

success and growth of chain

stores has, in many cases,

come at the expense of the

smaller brick-and-mortar

retailers whose market is

much smaller.

Historically, these smaller

businesses have been part of

America's economic back-

bone, but the presence of

big-box retailers in an area

can often be linked to a

decrease in the number of

small businesses in that loca-

tion. Given the big role that

small businesses have usually

played in economic recover-

ies, many see this trend as a

troubling one.

A Revolution On Main

Street

In 2010, Patrick Byrne,

CEO of online retailer

Overstock.com, decided to

do something about the state

of business on Main Street.

The result is what he calls

the Main Street Revolution

initiative. He describes it as

an effort to give small busi-

nesses that sell hand-crafted

products access to millions of

his company's loyal online

customers.

Said Byrne, "It's in every-

body's best interest to see

that small businesses not

only survive, but thrive. Our

economic recovery depends

on it. That's what our Main

Street Revolution initiative is

attempting to accomplish."

Mariana Schechter is one

such "revolutionary" success

story. While on vacation in

Southeast Asia, Schechter

came upon a unique style of

handcrafted furniture made

entirely of old, weathered

boat wood. Upon her return

to the U.S., she launched a

business that imports

reclaimed Indonesian boat

wood for use in her own fur-

niture line, which she calls

Ecologica.

Angeles-area showroom, but

most of its sales now come

via the Main Street

Dear Heloise: I lost your recipe for Heloise’s CHINESE BEETS. I looked for it, but it doesn’t seem to be anywhere. I read your column in The Orange County (Calif.) Register daily. Thank you for all the years of good hints. -- Joan R., via email

Joan, say “hi” to my friends in Orange County! It’s been years since this family recipe was printed. It’s a good time to run it again. Get together the following:

6 cups, or 3 (16 ounces each) cans, sliced or whole beets

1 cup sugar 1 cup vinegar 2 tablespoons cornstarch 24 whole cloves (less if you don’t

want a strong taste) 3 tablespoons ketchup 3 tablespoons oil (optional) 1 teaspoon vanilla extract Salt to taste Drain the beets. Set aside 1 1/2 cups

of the liquid. In a medium saucepan, place the beets and reserved liquid. Then add all the remaining ingredients. Mix well and cook for 3 minutes over medium heat, or until the mixture thickens. Let cool before storing in the refrigerator. Serve as a side dish or in a salad. Want more Heloise’s All-Time Favorite Recipes? HEARTY HOMINY Dear Readers: Do you know what

hominy is or how to cook with it? I recently just “rediscovered” it, and I

started wondering. I know it’s corn, but ...? It is the center of the corn that is left over after the corn kernel is soaked in a solution to bleach it, then washed.

Hominy can be eaten by itself or added to recipes such as soups, stews and casseroles. I sprinkle some on my salad for a nice addition. -- Heloise

MAKING MOLASSES Dear Heloise: Is blackstrap molasses

the same as regular molasses? -- Louise S., via email

No, it is not! Molasses comes from the juice of sugar cane or sugar beets. The juice is boiled to remove the sugar crystals. How many times the juices are boiled determines the “type” of molasses.

Light or regular molasses is made from the first boiling, while dark molasses comes after a second boiling. Blackstrap molasses is what remains after a third boiling, and it has a bitter taste. It’s used in slow-cooking recipes, e.g., baked beans or barbecue. -- Heloise

SEEDING SQUASH Dear Heloise: Cleaning out the pulp

and seeds when preparing winter squash using a spoon was difficult. I looked in my utensil drawer and chose the larger end of my melon-ball cutter. The insides of the winter squash come out with very little effort using the melon-ball cutter. Don’t turn it; simply pull it along the inside of the squash. The pulp and seeds come out easily. -- W.B. in Texas

Today’s Performance Parts Kick Your Car Into Gear And Save Gas

(NAPS) – How many times have you tried to accelerate onto a freeway with cars zipping by and couldn’t get the power to do it safely? It’s kind of scary, right? Or how about when the van’s filled with kids you’re taking to a soccer game and the super-slow-going uphill quickly turns the trip downhill. It’s kind of frustrating, right? The problem isn’t your driving. Most likely, it’s something lacking from what you’re driving: automotive performance. You don’t have to be a car nut, watch “Pimp My Ride” reruns religiously or have a “Fast & Furious” tattoo to know your vehicle is underpowered. All you need to do is step on the gas and wait and wait...and worry. “Performance is not just a need-for-speed type of scenario,” says Peter MacGillivray, vice president of events and communication for the Specialty Equipment Market Association (SEMA), a 50-year-old automotive trade organization with 6,500-plus member companies. “Performance-challenged vehicles are a common issue. We’re finding more drivers of all ages are now looking to heighten their driving experience and even improve gas savings via performance add-on products.” MacGillivray likened the performance products trend to home entertainment. “Consumers go out and buy a new 55-inch flat-screen TV and find the sound quality is good but could be much better. So then they go buy additional speakers, subwoofers or soundbars to pump it up. It’s the same with a car. People are adding a variety of performance parts to make their vehicles run better.” SEMA has a website at www.enjoythedrive.com where consumers can find and learn about a litany of performance parts, as well as the latest products to improve a vehicle’s appearance, comfort and overall ride. “It’s a good place to start, especially for the nonautomotive person,” says MacGillivray. “Today’s automotive aftermarket products are highly innovative and technologically advanced. For example, in many cases, you don’t have to give up engine performance for fuel economy, which is pretty cool technology.” For the automotive novice, MacGillivray offered some performance upgrade suggestions: • Breathe easy: Like a human body, a car’s engine needs air to run better (and faster). A variety of products, ranging from performance air filters to air intake systems, will make your car breathe easier, and the extra airflow will translate to more horsepower and better gas mileage. • Keep cool: We’ve all seen overheated cars on the side of the road, hood up, steam pouring out and frustration boiling over. In short, the biggest performance killer is heat, so let cooler engines prevail. To make sure the heat’s not on, there are a number of cooling performance upgrades such as thermostats, cold-air intakes, intercoolers and automotive cooling fans. • Sound off: Performance exhaust systems and sporty mufflers boost horsepower and can improve gas mileage. But wait, there’s more: They sound so cool. Dropping the kids off at school and watching their friends do a double take when your engine growls: priceless. • Chip in: Used to be a big, bad gas-guzzling engine was the key to power. Today, a small performance chip can do the same, sans the fuel consumption. Consider it a computer upgrade for your car that will bring better engine efficiency, which will allow you to do things like accelerate faster, pass quicker and tow more without burning extra fuel. • A real kick: As mentioned, forcing more air into an engine creates more horsepower. The air force will really be with you with a turbocharger or supercharger. These are big-time fun boosters with acceleration aplenty. • Take a seat: OK, a race-style performance seat won’t make your car go faster, but they are supercomfy and will make you look and feel like Speed Racer. • Rubber hits the road: Tires are, unfortunately, mostly overlooked, but they are the only part of a vehicle that touches the road. If you’re upgrading your car’s performance, supersticky rubber should be considered. The correct set of tires will provide more grip for sharper road handling and braking. Also, keeping them properly inflated will get you better gas mileage. “Performance products are very mainstream and easy to buy and get installed,” says MacGillivray. “They are readily available from local auto parts stores, mass retailers, car dealerships and, of course, online.” The right accessories can make your car safer, more efficient and more fun to drive.
