CHAPTER 1

INTRODUCTION

Aspiring entrepreneurs or business owners may have an idea about the

type of product they would like to make to start a business. This can come from

seeing other company succeed in food industry successfully producing them and

wanting to copy the idea or formula of the business, talking and asking to friends,

and family members or even in surveys about the products that they think they

could make. However, the aim of this study was to look at the feasibility and

introduce the product into the market and penetrate the food industry. Various

techniques for increasing a throughout and peak data were gathered of the

product which is the cookie oatmeal that will be coated with a chocolate with

variety of vegetables as flavorings.

A healthier variety of cookies are what we are in cognizance. For this

brand perception that we formalize we would like to linger the interest of the

buyers and also the consumer with our version of Cookie Oatmeal with

vegetables.

BACKGROUND OF THE STUDY

The researchers would like to introduce a new product in the market which

is a cookie made out from oatmeal with a varieties of flavorings that consumers

would not normally taste with the following flavors that we would like to propose:

2

Carrots (carrots), kalabasa (squash), malunggay (horseradish), ampalaya (bitter

gourd) etc.

Nowadays, people like to choose an artificially made food product that has

a less nutritional content over the conventional foods that is said to be “good for

our health” that is available in the market. Promoting a healthy and convenient

way of eating by introducing varieties of Veggie Cookie Oatmeal to the public

consumers with its health nutrition content it have but also helps Filipino farming

industries in the country as well.

It is also important to remember that we have seen in the news and some

of it we heard in the radio and read in newspapers that most of the people or 50-

60 percent of Filipino died not in an accident but most often died because of lack

of nutrients of what they eat. Malnutrition is very rampant in the Philippines and

we cannot deny that. You can see them in Streets, under the bridges, near

seaside, metropolis and even in provinces. They were addicted to the food they

eat that has artificial flavors such as noodles, canned goods, junked foods, and

etc.

In this study, the researchers want to help those people who need

nutrients to their bodies. With the vegetable as a flavoring of the cookies, they

can be a compliment to the sweetness taste of the product.

As the researchers go further to the feasibility that the researchers

concluded, this study need not be difficulty or expensive, but the most important

3

aspects should all be taken into account to ensure that potential problems are

addressed.

In this section, the following questions that can be answered by feasibility

are addressed:

1. Is there a demand to produce?

(Find out the characteristics required of the product and the size and value of the

market)

2. Who else is producing similar products?

(Determine the number and type of competitors)

3. What is needed to make the product?

(Find the availability and cost of staff equipment, services, raw materials,

ingredients and packaging)

4. What is the cost of product?

(Calculate the capital costs of getting started and the operating costs of

production)

5. What is likely the profit?

(Calculate the difference between the expected income from sales to an

estimated share of the market and the costs of production)

Each of these aspects should be look at in turn when all the information

has been gathered and analyzed; it should be possible to make a decision on

whether the proposed product/flavoring is worthwhile or whether the

business/producers money could be better spent doing something else.

4

In the following parts of this section, the above aspects described short

information about the product, its flavorings and its nutritional factors also, the

above mentioned described in a systematic way, as should be done in a

feasibility study, starting with the “Background of the Study”.

We make this product proposal for the purpose that we want to serve our

valued customers in a new product dishes a healthy food that they’ll enjoy not

only for adults but also the young ones; we add special ingredients for our

products such as vegetables plus it will be coated with a chocolate.

Oatmeal is a quick, healthy breakfast that's good for your cholesterol. It

has traditional uses mainly as flakes in baked goods and porridges. Oat grain

has mild and pleasant taste. Whole grain oat is high in soluble dietary fiber beta-

glucan, known to lower cholesterol and postprandial glycemic response. Specific

oat foods may thus help to reduce the risk of heart disease and type 2 diabetes.

Oat fiber is readily fermentable and contributes to gut-mediated health effects.

Oat grain is also rich in antioxidants. Oatmeal is a unique product because you

cook it in liquid that allows the fiber to completely absorb the water and become

quite viscous. The heating gelatinizes the starch and the fiber is completely

solubilized.

Three out of 10 Filipino adults 20 years old and above are either

overweight or obese, according to a report by the former president of the

Philippine Association for the Study of Overweight and Obesity Inc. (PASOO).

The occurrence of obesity is most prevalent in the 20-below age group and least

prevalent in people 30 years old and up. It also noted that there are more

5

females who are obese than males. Specifically, android obesity or apple-shaped

obesity is more common among female children according to Food Nutrition

Research Institute (FNRI).

The oatmeal is beneficial to the reduction of total cholesterol and LDL

(Low-density lipoprotein) -cholesterol. The study aims to demonstrate the role of

the oat fiber in the control of diabetes, with decreased postprandial glucose

response and improved insulin sensitivity. Although the role of oat fiber in satiety

and weight management is still unclear, the physiochemical properties of oat

fiber may play a role in weight management through increased satiety.

STATEMENT OF THE PROBLEM

This feasibility study is intended to evaluate the feasibility of manufacturing,

packaging and selling a relatively new and novel product using both indigenous

and tested ingredients and the benefits to the manufacturer and consumers of a

new introduced product which is a cookie made of special and unique ingredients

Specifically, the study seeks to:

1. Become profitable; determine whether to cater to customer with large or

small orders. Arrive at a cost effective ratio with regards to production and

profit margin.

2. Describe the characteristics of the cookies in terms of consumption and

nutritional health benefits.

6

3. Identify the challenges and opportunities of innovating and introducing a

new product to the market.

obvious that consumers are willing to buy different goods.

17

In order to meet these needs, the business identifies groups of consumers

and directing their marketing efforts primarily on the groups of consumers. It is

essential to segment the market to identify its target customers.

Market segment is design to implement strategies to target customers and

to divide a broad market.

It enables the business to determine the market considering the following

factors: geographic, demographic, psychographic and behavioral.

The business considers all types of people in what places came and no

matter what gender and religion either who have high or low income can be our

target market that can be one of our potential buyers.

This oatmeal cookie is a combination of Affordable and Satisfaction

among the market. This cookie is not just simply a “cookie” but it is also coated

with chocolate with different flavors. I think our edge among all other cookie is

that we offer an “all in one product”. We use oats as our main ingredient for

healthy lifestyle.

The class did not only focus on the contents of the new product. We also

consider the packaging of the product which is very different from other

package could also maintain its freshness.

you expect.

Place

The researchers decided that the Barangay Centro Mandaue City is the

best place wherein we could put up our product because the place serves as the

center for commerce and industry.

Promotion

Promotion means activities that communicate the qualities or virtues of the

product and persuade target customers to purchase “Chookie: You’re Healthy

22

Choice”. It includes different tactic and techniques to endorse a product such as

advertising, personal selling and sales promotion. Products or services require to

be promoted, especially those newly recognized ones, to capture the customers’

interest.

Companies must be imaginative and innovative when promoting their

products and think of ways on how to encourage customers to make sure that

their product or service will perform well in the market.

That is the first step in promoting a product. Companies must think about

the macro-environment and the changes that might occur that might affect the

taste of the consumers.

Using of posters and leaflets which includes the benefits and

specifications. This kind of promotion is moderately cheap than commercial

advertising.

SWOT ANALYSIS

The target market extends internationally through internet and social

networking not just promoting domestically.

Before promoting to the internet, the first step is having a market study

within Mandaue City, specifically in Centro, Mandaue City as an accessible

area where target volumes of prospects are present which includes both

public and private schools.

23

The next step is the market segmentation in which it focuses in the

product packaging and food marketing. Product packaging and uniqueness of

the product is the main strategy they should consider.

existing competitors.

Increase of business taxes according to economic condition.

There are many products similar to Quaker oatmeal with a lower price

New product of this kind of a different brand

STRATEGY

a. Product

25

Expand the variant in flavor. Aside from vegetables, we will put another

flavor of the cookie like it will be coated with chocolates.

The product will be sold in retail or in pack depending on the

preference of the buyer.

b. Promotion

Creating a promotional program, which is if we buy ten of pack of

CHOOKIE, customers can get 1 free bowl and a recipe book that contains

a food recipe using Oatmeal.

c. Price

We choose the market penetration way in launching our new

product because we think that if we use this way, we can enter the market

easily.

For example: when we take a look at the price of the product in the

supermarket, people would think that they can purchase for new variant of

flavor with the exact same price as the old type or lower than the old type.

If the demand to this product is increasing well, we can increase the price

slowly.

DEMAND

The current demand of the product will be based on the 10% of the

current market size which is 3,600 individuals of Barangay Centro

26

Mandaue City. And of which, the researchers will be considering 20%

marginal error.

PRICE STUDY

In economic theory, price of the cookies are determined mainly by the

demand-supply situation. An increase in demand of cookies with supply constant

will hike prices. The reverse would result in the lowering of prices.

There are, however, other factors which exert some influence on the price

of the cookie. Without any change in demand or supply of the cookies, prices

may go up if raw materials costs rise; or prices may decline if the government

decides to subsidize production.

Prices may also be determined by the simple cost-plus method of the

company.

Price can be determined by its market, since now a day’s people have

been conscious for their figures so price can be constant, and because of its big

demand in the market it will make its price stable during seasonal periods,

holidays and even school days where parents buys in large as a snack for their

children.

27

Price Study can also be based on the following:

Cookie Baking Guides

Mixing Cookie Dough

Baking Tips for Cookies

Cooling Cookies

Storage and Freezing Cookies

Mixing Cookie Dough

Cookie dough can be mixed by hand or with an electric mixer. Take butter

or margarine from refrigerator 10-15 minutes before using or cut into 1-inch

pieces so it will blend more easily and evenly with other ingredients. Butter or

margarine that is too soft or melted will change the texture of the cookie and

should not be used. Over-softened butter or margarine is the number one reason

why cookies spread or become too flat.

Unless your recipe indicates otherwise, follow these steps when baking

cookies:

Combine (often described as "cream") softened butter (or other fat) and

sugar (or other sweetener) with electric mixer (or by hand) until smooth

and creamy.

Add eggs and liquid flavorings and continue mixing. This mixture may

begin to look separated, but this will not affect the final cookie texture or

flavor.

45

Realize that most recipes combine the flour and other dry ingredients

before adding them to the butter mixture. Raisins, chocolate chips, other

"add ins" and, sometimes oats, are added last.

Once dry ingredients have been added, don't beat vigorously or over mix.

Over mixing can result in tough cookies.

Baking Tips for Cookies

When preparing for baking, grease cookie sheet or baking pan only if

recipe directs. To grease, use a paper towel to apply a thin layer of shortening or

lightly spray with no-stick cooking spray.

Refrigerator/Slice-and-Bake Cookies

Chill dough thoroughly before slicing.

Using a sharp knife, cut slices to thickness specified in recipe. Use a back

and forth sawing motion to help cookies retain their shape.

Every time you've cut 1-1/2 inches of the cookie dough "log," turn the log

1/4 turn to help retain its round, cylindrical shape.

Note: The dough should be at room temperature unless recipe directs

otherwise.

Baking and Testing For Doneness

For more even baking, position oven rack at the center of the oven and

bake one sheet of cookies at a time. If you prefer to bake two sheets,

46

space racks so oven is divided into thirds and switch cookie sheets top to

bottom and back to front halfway through baking.

Preheat oven 10 to 15 minutes before baking the first sheet or pan of

cookies. Check oven temperature with an oven thermometer.

When testing for doneness, your best guides for cookies are time and

appearance. Always use a timer. Most recipes include a range in baking

time; always check after the minimum time stated in the recipe.

Drop, rolled and refrigerator cookies can range from barely browned to

medium golden brown in color, depending upon the cookie. For softer,

chewier cookies, bake for the shorter amount of time indicated in the

recipe.

When placing dough on cookie sheet, allow sufficient space between

cookies, usually 1-1/2 to 2 inches unless recipe directs otherwise.

Cooling Cookies

The cookie recipe will indicate whether cookies should be removed

immediately from cookie sheet to cooling rack with a metal spatula, or

whether the cookies should remain on cookie sheet for a minute or two to

firm up so they can be removed more easily.

Remove cookies using a metal spatula (also called a pancake turner).

Using a plastic pancake turner may result in torn or broken cookies.

47

Cool in single layer on wire cooling rack. Cool completely before

decorating or storing. You may want to post a trustworthy guard at the

cookie rack to avoid the common practice of freshly baked cookie thievery.

Storage & Freezing Cookies

Cool cookies completely before storing. Store crisp and soft cookies in

separate containers or the crisp cookies will soften; store each kind of cookie

separately or flavors may transfer.

For cookies that will be eaten in a day or two: store crisp cookies in a

container with a loose-fitting cover; store soft cookies in a container with a tight-

fitting cover. Separate very soft, fragile, frosted or decorated cookies with wax

paper between the layers.

Bake Ahead and Freeze

Freezer Storage Times

Waste Disposal

In a perfect world, no one needs to be concerned about food sanitation

and safety. In the real world, however, diseases are awaiting to grow and

develop at any opportune moment.

48

Therefore, when baking cookies at home, pay particular attention to the

following areas:

Personal Hygiene

Properly restraining hair, short fingernails and preferably without nail

polish.

No smoking, eating, or chewing gum while baking, even cookies.

Securely covering cuts or lesions on fingers and hands with bandages and

wearing gloves.

Washing hands before handling cookie ingredients and after using the

restroom. Refraining from touching hair, face, or other body parts while

mixing and preparing ingredients.

How Cross Contamination Affects Food Sanitation and Safety

Do not use ingredients that have been spoiled by yeasts, mold, or infested

by pests. Yeasts and mold grow well in acidic food with low water content

such as jelly, jam, syrup, honey, cheese, sour cream, and applesauce.

Molds produce toxins that can cause food-borne illnesses.

Freezing temperatures can prevent or reduce the growth of molds

but do not destroy them. Heat can kill molds and their spores, but cannot

destroy their toxins.

Avoiding chemical contamination by using only food-grade utensils and

equipment to prepare and store cookies.

49

Don’t use a saucepan made from copper, lead, brass, zinc, cadmium, and

antimony, to prepare lemon curd for coconut macaroons. The acid in citrus

fruits will leach these toxic metals from the saucepan and become

contaminated.

Always washing hands before and after separating eggs because they are

considered potentially hazardous food. Harmful microorganisms can

rapidly grow in raw eggs or in food that has been contaminated with them

through improper handling.

Inspecting each cookie ingredient to assure that there is no physical

contaminants such as hair, dirt, broken glass.

Proper Storage of Cookie Ingredients to Insure Food Sanitation

It is important to keeping shell eggs refrigerated at 45 degrees F. (7

degrees C.) or below, dry ingredients such as flour in a dry, cool place to

discourage pest infestation
