2014 2016 On behalf of our Coco Family may we take this time to send Christmas greetings to all our partners and guests who supported us in 2016. As we celebrated our 11th Anniversary, Coco Palm has just undergone an upgrade to the property including both the hotel and the F&B department with the emphasis on the newly rebranded Ti Bananne. Our Corporate and groups market continue to grow and we have extended these areas to better cater to both our guests and events. Our team members make us who we are and this year we congratulate Anaman Knight, Receptionist at Front Office as Employee of the Year. Department of the Year was awarded to Accounts headed by the Financial Controller, Sonia Marquis and her team, Asha Reynolds, Claudia Mitchell, Wayne Marius, Sophie Aimable and Kazia Lewis. Mr Marius, Cost Controller, manages Stores with Akeem Baptiste, Jonathan Charles and Anna-Lee George with the newest members, Wayne Daniel and Akil Dathorne. Sonia also manages the IT department with Daune Roachford and Archer Richard who have all been honoured as the Department of the Year. Chef Richardson Skinner and Food & Beverage Manager Daniel Barnard have relaunched Ti Bananne Caribbean Bistro and Bar following a $3 million dollar renovation and expansion. Chef Richardson, renown for his Trini and French Caribbean Creole cuisine has seen the demands on his kitchen grow over the last 12 years with the launch of the All Inclusive plan and expansion of five meeting and conference rooms.

Chef noted “Following the growth of both the hotel and our events department, we have taken the opportunity to invest in our product to and raise the bar. Our restaurant has been rebranded as its original name, Ti Bananne. Catering for the corporate guests and fine dining in the evening, an air conditioned dining area has been created. A dedicated food station off the kitchen allows for an enhanced breakfast service and our Friday and Sunday buffets.

Ti Bananne’s menu will feature a few of Chef ’s signature dishes while the Creole Grill will offer a local menu popular with both guests in house and patrons who enjoy a taste of local flavour.Menus for both Christmas and New Year’s Eve celebrations are featured for two of the biggest days in the calendar with Chef Richardson offering his most inspirational menu. Limited seating and reservations are already on the books so be sure to book your table and ring in the New Year at Ti Bananne Caribbean Bistro and bar.
