Country Lentil Soup-a Healthy Liver Recipes
Ingredients
1cup dried red lentils, rinsed thoroughly
1cup onion (diced)
1/2cup carrot (diced)
1/2cup celery (diced)
1/4tsp thyme (dried)
1tbsp vegetable oil
4cups chicken broth (vegetable broth, if you may)
a pinch of salt
freshly ground pepper
½ cup fresh flat-leaf parsley (chopped finely)
Preparations
Heat oil over medium heat using a large saucepan. Sauté onion, celery and carrot for approximately 5 minutes or until tender or softened. Mix the broth, lentils and thyme then, bring to a boil. Reduce heat and cover to simmer for approximately 20 minutes or until lentils are soft. Remove from heat. Transfer soup in batches to a blender and puree it on high speed until smooth and creamy. If puree is too thick, add 1 cup of water. Return to the saucepan to reheat and season with salt and pepper to taste. 9adle into soup bowls and garnish with finely chopped parsley.
