Baguio has always had a special place in hearts
of many Filipino tourists. As the Summer Capital of
the country, the City of Pines has become a classic
weekend getaway, with its cool climate and
attractions. No wonder it has become a constant hit
with families, friends, and office workers.And Baguio becomes even more interesting
when it holds events. The 11th Annual Hotel,
Restaurant, and Tourism Weekend highlights the
novelty and talents of the people that make this
place a remarkable one. It is also an opportunity to
raise the quality of services that the participating
hotels and restaurants have to offer.Accommodation and food outlets are important
sectors of travel and tourism, as these are at the

Through the years, the HRAB and the City Government of
Baguio came up with events to provide an opportunity for
both students and professionals from the hotel, restaurant
and tourism industries all over the country to learn, gain
exposure and foster camaraderie through a series of
competitions, seminars and display of culinary and hospitality
skills. I salute the efforts of HRAB's organizers and those who
took part in the success of events these past years such as the
Largest Wedding Cake Part II, Largest Fried Rice in 2011, Pasta
Festival in 2010, Largest Pizza in 2009, and the like. These
activities didn't fail to attract tourists.This year's theme: “A Tribute to our Farmers – Rice and
Shine 2.0” is a way to recognize and give credit to our Filipino
farmers who are the major players of the agriculture industry.
Agriculture is among the main pillars of the Filipino society. As
an Asian country, rice as the main means of subsistence and
as our staple food has a central role in the Filipino's daily diet. Farmers perform a crucial role in the Philippine society.
They till the land and restore its vitality. Unlike in other
countries, being a Filipino farmer entails numerous setbacks
which include capital shortage, high cost of inputs, pest and
diseases as well as limitations in the irrigation system and
facilities. Despite this situation, they work every single day to
produce the food served on our tables. Their perseverance is
truly inspiring. I leave you with this inspiring quote: “My grandfather
used to say that once in your life you need a doctor, a lawyer, a
policeman and a preacher but every day, three times a day,

accelerated globalization of social processes. By directing
its attention to standards, practices and developments
abroad, the HRAB demonstrates its awareness of the
importance of this trend, while it still supports the local
rice farming sector as a valuable assest for the Filipino
people. We need to explore more and more possible
opportunities where local farming can thrive in a global
society, since agriculture will be an essential component of
a healthy society. HRAB's “A Tribute to Our Farmers—Rice
and Shine 2.0!” this year underscores the unique
contribution of Filipino farmers to the dynamic
transformation of Filipino food culture.Saint Louis University has consistently supported
initiatives to promote tourism in the city of Baguio,
including through its own school program offering.
Creativity and motivation are key concepts in the social
and economic development of a society. Both concepts
can become drivers of people's potentials. The program
scheduled by the HRAB this year aims very well precisely at
promoting these concepts, especially through the regional
competition and the offering of networking opportunities

(HRT) Weekend, organized by the Hotel and Restaurant

Warmest greetings from the 8th National Food
Showdown 2014!For the past 11 years, we have made our annual
trek to Baguio in order to heed HRAB's request for us to
bring up professional judges to assess and grade the
numerous competition entries during the annual HRT
Weekend. Many participating establishments like
hotels, restaurants, tourism schools and universities
come from many provinces in central and northern
Luzon to congregate in Baguio every September. Likewise, our judges take time out from their busy
schedules to share their wisdom and work experience
with the competition participants. Our team of judges
travel to Luzon, Visayas and Mindanao preaching our
gospel for excellence. And like guardians watching over
their wards, we have seen how the tourism landscape
in the provinces has grown.Through the National Food Showdown's Regional
Chef Wars competition, Luzon, Visayas, Mindanao and
NCR come together in friendly culinary battle to
showcase their regions' skills in cookery. This cannot
happen without support from our valuable friends -

The Future beckons on the horizonThe next wave of professionals in hospitality, culinary and tourism
sector who will eventually take their place and carve their own niche in
the industry, are in our midst. At the helm of our evolving industry are
pools of young untapped talent, beaming with potential just waiting to
be unleashed.The 11th Annual Hotel, Restaurant and Tourism weekend provides
the avenues of opportunities for these multitude of vibrant and fresh
genre. And what better way to revel in this year's HRT weekend, but to
highlight and pay homage to their unquenchable thirst for challenge
and penchant for adventure. We call on them to rise and shine. We dare
them to be more. To defy the average. We dare them to be the catalysts
that we so dire need in these dynamic and changing times. Beyond
crafting exciting and savoury dishes and delectable creations, we want
to develop them, take them to the next level and foster in them a
culture of inclusive leadership in hospitality. We want them to bring
their best to the table. We want each culinary gladiator to compete
against industry standards, and to claim the power to create future
they envision. This is the goal of this year's 11th serving of the HRT
Weekend. We challenge each stakeholder to contribute in realizing our

HRAB's programs and activities are all aligned to attain this mandate. I
am happy to share with you the Association's accomplishments and
undertakings for the fiscal year July 2013 to June 2014 as part of its
contribution to hospitality and tourism development. The 10th Hotel, Restaurant and Tourism Weekend
The staging of the 10th Annual Hotel and Restaurant Tourism
weekend turned out better than compared to the 9th HRT Weekend. A
total of 590 competitors from various schools and tourism
establishments vied for various titles in culinary and skills
competitions. Winners of the Chef Wars, namely University of Baguio
(Student Division) and Baguio Country Club (Professional Division)
represented the Northern Luzon in the National Food Showdown held
on September 20 to 21, 2013 at the World Trade Center, Metro Manila.

RICE AND SHINE 2.0
Rice, edible starchy cereal grain and the plant by which it is produced. Roughly one-half of the world population, including virtually all of East and Southeast Asia, is wholly dependent upon rice as a staple food; 95 percent of the world's rice crop is eaten by humans.
The cultivated rice plant, Oryza sativa, is an annual grass of the Gramineae family. It grows to about 1.2 m (4 feet) in height. The leaves are long and flattened, and its panicle, or inflorescence, is made up of spikelets bearing flowers that produce the fruit, or grain.
Many cultures have evidence of early rice cultivation, including China, India, and the civilizations of Southeast Asia. However, the earliest archaeological evidence comes from central and eastern China and dates to 7000–5000 BC. With the exception of the type called upland rice, the plant is grown on submerged land in the coastal plains, tidal deltas, and river basins of tropical, semitropical, and temperate regions. The seeds are sown in prepared beds, and when the seedlings are 25 to 50 days old, they are transplanted to a field, or paddy, that has been enclosed by levees and submerged under 5 to 10 cm (2 to 4 inches) of water, remaining submerged during the growing season.
Here in the Philippines, the eighth wonder of the world stands proud, “The Banaue Rice Terraces”. Proof that for us Filipinos, and our forefathers, this staple crop is indeed valuable. Three years ago, the Hotel and Restaurant Association of Baguio paid tribute to the Filipino Farmer through RICE and SHINE, Baguio's Rice Festival. About 8,000 spectators partook of the different varieties of fried rice prepared by nine member establishments.
This year, with the theme: “Developing Filipino Culinary Leaders of the future”, we again salute the Filipino Farmer with RICE and SHINE 2.0. A collaboration by Baguio Country Club (Pesto and Tuna Fried Rice and Lechon Fried Rice), Rose Bowl Restaurant (Rose Bowl Fried Rice), Gilligan's Island Bar and Restaurant (Gilligan's Fried Rice), Alabanza Meat Store
(Hamonado and Garlic Longganisa Fried Rice), Kalapaw, a Taste of Laoag Seafood Binagoongan Fried Rice) , Le Chef at the Manor, Golden Pine Hotel (Yang Chow Fried Rice), Solibao Restaurant (Puto Bumbong) and Mario's Restaurant (Arroz de Pobre of Brazil). This centerpiece promises to satisfy the palate of spectators as they present a bigger and better variety of Fried Rice. Preparation was tedious, as a sampling of planned presentations by the participating establishments was done early. It must get the nod of all the participating establishments, plus it must be unique and the taste should be impeccable. It will be unveiled during the opening day of the 11th Hotel Restaurant and Tourism Weekend at The Atrium of SM City Baguio, displayed in a huge pan measuring 22 feet in diameter with servings enough for 15,000 people. It will take 16 cavans or 800 kilos of rice to fill up the display pan. Another unique and exciting event awaits tourists and residents alike as we present, RICE and SHINE 2.0 and we expect that this endeavor will continue to make Baguio the culinary destination north of Manila.
