David Jensen and his business Jensen’s Taber Corn have been providing Albertans with

Taber corn for nearly 40 years. He credits the growing season, high heat, soil and irrigation with Taber corn’s appeal. You might choose

your corn based on colour or husk, but David recommends trying your corn raw. “It’s a good way to test what you’re buying. If it tastes good

raw, it will taste even better cooked!” When it comes to cooking corn, steamed and grilled

are good standbys, but he recommends the campfire method. “Roll it in tinfoil and throw

it in the hot coals to cook it.” He says that method takes about 10-12 minutes, but it

might depend on your campfire.

MISSION INSPIRATION

Yeah, they were all yellow. Sorry, not to get too corny but the sight of fresh ripe corn is a

beautiful thing. This time of year it’s in plentiful supply and Alberta corn can be

found anywhere, from farmers’ markets to fresh produce stores. We’d like to see you celebrate the annual harvest of our husky friend. A summertime staple, you can eat it boiled or grilled on the cob. Or perhaps you’ve got a special use for kernels in the

kitchen. However you enjoy corn, make the most of maize while you still can!
