We love food and drink, who doesn’t these days.

For us it’s all about authentic local produce served in interesting or traditional ways and packed with flavour. From our nature-inspired modern approach in Rastella for dinner through to our locally grass-reared beef burgers smothered with our manor-made barbecue sauce, everything is put together with thought and pure enjoyment in mind.

We pay close attention to provenance, locality, seasonality and sustainability, so you don’t have to. This means you will find a vast array of food and drink that ‘ticks’ all the boxes and not because we have to but because we should all want to.

GIN Whether the sun is just past the yard arm or to set you up before a night of decadence we have slaved long and hard to find you the perfect pairings of the unstoppable phenomenon know as GIN. Garish and served over ice in the now familiar fish bowl. Or just straight up with ice and a slice if you would rather.

THE CORNISH Organically produced St. Ives gin paired with Seabuck tonic from the very same craftsmen, both with naturally extracted quinine. The addition of antioxidant sea buckthorn berries found in the dunes of Godrevy produce a truly Cornish (and truly delicious) drink.

THE CREAM TEA Hand-crafted in small batches, Wrecking Coast Clotted Cream gin imparts bold juniper flavours with a little creaminess from the clotted cream used in the production. With all-Cornish Navas tonic and strawberries, naturally.

THE CITRUS Malfy Con Limone Italian gin, with lemon peeled by hand, is paired lovingly with Fentimans Valencian Orange Tonic. Bright and mouth-filling, with lemon-infused thyme.

THE MEDITERRANEAN Gin Mare (produced in Catalunya, Spain) is perfectly balanced here by Fevertree Mediterranean tonic. A wide range of Mediterranean botanicals grown on the producer’s land impart herbal and aromatic notes that really light up the palate and deliver a slightly spiced finish.

THE SUMMER Cornish Trevethan Passion Fruit & Orange Blossom gin, produced in limited numbers for a limited time only, is quite simply incredible. Rich passion fruit combines with subtle orange blossom and is rounded off with pink grapefruit tonic for a perfectly balanced quaff. Local and refreshing.

THE FLORAL Locally produced Caspyn Midsummer Dry gin joins our shelves from West Penwith, where Captain Poldark liked to roam in times gone by. The addition of Fevertree’s Elderflower Tonic produces a thoroughly English drink to be enjoyed in any iteration of England’s famous weather.

THE ROSE Rose Tinkture gin, produced using fresh, organic, David Austin roses and distilled by hand a mere few miles away starts off a golden amber hue that changes to a beautiful pink when mixed with the aromatic tonic that we have chosen here. Let the rose sing.

THE CLASSIC Like Rose Tinkture, the Boxer gin that we use here is delivered to us in fully bio-degradable eco-pouches and is a perfect example of what a London Dry should be. Distilled in Kent, there is sometimes no better way to enjoy a G&T in the way that it was originally intended. Vibrant, complex and elegant.

All gin and tonics are served as a 35ml measure of gin with a matching tonic (unless otherwise specified). To make life easier all our G&T pairings are 9.00 with the exception of the Classic served at 8.00

A COLOUR FUL HISTORY

Connections to Welsh royalty, a British war hero named Power, and the family who shaped Falmouth’s history: Merchants Manor has seen a lot in the last one hundred years.

Built in 1913 by local merchant George Newby Carne, Merchants Manor was originally named Garras, Cornish for ‘The house on the hill’. Although locals dubbed it ‘Screw Top Mansion’, as the Carne Brewery was one of the first bottlers to use the new screw top cap. George lived in Garras with his wife Annie and son James Power Carne, who would later receive a VC for his bravery during the Korean War. The Carne family in Cornwall can be traced back as far as 1559, when the Earl of Rutland sold Trevaunance Manor in St Agnes to Richard Carne. Richard was a nobleman descended from the Carnes of Glamorganshire in Wales, thought to have direct links to Ithal, King of Gwent. His coat of arms, a pelican feeding her young, can still be seen today on the roof of St Agnes church.

Fast forward to Falmouth in 1745 and another Richard Carne, George’s great great grandfather, went into business with London merchant John Camin to form shipping, importing, banking, and mercantile company Camin and Carne. When Camin died, Richard took over the business which added to their diverse repertoire the distilling of wine and spirits and the brewing of beer. As well as working for the family firm, Richard’s son John worked as an agent for the East India Company and became a key figure in the community. He served as mayor of Falmouth and even found time to father 16 children. His sons, William and Edward, followed in their father’s footsteps and established the W & EC Carne Brewery on Killigrew Street in the latter half of the 19th century. William was also instrumental in bringing the railway to Falmouth, even sacrificing his own back garden so the tracks might be laid.

As for Garras, two sisters purchased the house in 1958 and ran it for almost 50 years as the Green Lawns Hotel. Owners Sioned and Nick, like the Carnes, hail from Wales – bringing back the Celtic connection.
