Summer openingof the gala hall at amalienborgIn July and August the Gala Hall and adjoining rooms will be open to the public. The rooms are considered to be some of the most beautiful interiors in Denmark and still serve as royal chambers of representation.

The rooms represent the zenith of Danish neo-classical décor, with colour schemes by artist Nicolai Abildgaard (1743-1809), whose bold choice of tones reflected the taste of the time in Europe’s trendsetting circles. The celebrated sculptor Bertel Thorvaldsen (1770-1844) created two large figures which decorate two recesses in the Gala Hall. The palace was inhabited by Christian VIII from 1805 until his death in 1848. Be-fore then, his father Prince Frederik, who was known as the Heir Presumptive, lived at Amalienborg and even had a throne chamber, which stands intact today and is part of the tour.

Each room on the beletage has its own personality. There is a room in Pompeian style, a neo-gothic library and the Cabinet of Orders, where the Order of Danne-brog and the Order of the Elephant are exhibited. A remarkable part of the visit is the view of the palace square with Saly’s equestrian figure in the center. The beletage forms part of the visit to the museum in Christian VIII’s palace, which tells the story of royal life from past to present. The museum features the private rooms of the latest kings and queens, with original furnishings and art, while an-other part of the exhibition gives an insight into the 21st century monarchy and its many traditions. During the rest of the year, the beletage is open to the public on Saturdays.

Over the summer, Amalienborg is open every day between 10am and 4pm

GEOrG JENSEN, a name globally synonymous with Danish design for over a century, will provide visitors to its grand flagship store at Amagertorv Square with a demonstration of the craftsmanship required to produce its luxurious silver pieces.

It’s a unique opportunity to appreciate the inner workings of the iconic brand and all part of its 110th anniversary celebrations, which will include other special events and the release of limited edition pieces.

The silversmiths have trained for four years as artisans to learn their craft, and on our visit to their workshop, it was fascinating to get so close to the process and to be able to appreciate the detail and precision required to produce each design.

Deep-rooteD paSSionSAs well as the close-up demonstration, the silversmiths discussed their pas-sion for a craft passed down from generation to generation, the technical skill required to form the pieces and the process of bringing designs to fruition, from paper to silver. The silversmith craft is laborious. One silver platter takes approximately ten months to complete, executed with count-less targeted hammer strokes, each requiring perfection.

The piece de resistance is the custom-made table: a collaboration be-tween Georg Jensen and the acclaimed Hørsholm-based designer and cab-inet maker Laura Bergsøe’s. Using 6,000-year-old bog oak and elm wood, Bergsøe collaborated with the silversmiths to take moulds of the oak sur-face and fill sections of the pitted surface area with solid silver for the ap-pearance of “silver floating in the veins of a tree, bubbling out of holes and cavities”. The innovative design of the table is an impressive work of art, which is fitting for the store and well worth seeing.

an alaDDin’S caveWhether or not you’re a lover of Danish design, it’s impossible not to be impressed by the gleaming collections on display and the newly renovat-ed store. Every minute detail in the headquarters could be described as the stylistic excellence you’d expect from the design institution: from the custom-made Ege magnolia patterned carpets and the long sleek Finn Juhl exhibiting table, to the unique Vibeke Skar porcelain ‘knitwear-inspired’ lamps illuminating the collection.

Visitors also have the opportunity to learn about the history of Danish de-sign on a tour that includes a rare display of silverware pieces designed and crafted by Georg Jensen himself, displaying his talent as both an artist and craftsman. Jensen’s work sits alongside master craftsman Harald Nielsen’s work from the early 1900s and Sigvard Bernadotte, the ‘Design Prince of Sweden’, from the same era.

The store holds an array of beautiful vintage Georg Jensen pieces, sourced from private collectors over the last decade. The second level displays two leather chairs and antique mahogany furniture cabinets from Georg Jensen’s original store in 1908. The varied collection features silver pieces and jewellery from the past century, providing a visual story of the evolu-tion of Danish design, from art nouveau to contemporary.

happy ever after on thiS fairy-tale gaStronomic journeyby emily mclean

“OUr PHILOSOPHy is to share our stories and emotions,” explains Jakob Mielcke, the owner and executive chef of Mielcke and Hurtigkarl.“Just like in the fairy-tales you’ll never know what to expect.”Jakob wasn’t just reeling off words when he made this statement. From our first glass of r&L Leg-ras Blanc de Blancs Champagne in the pavilion, to the last homemade beer-fudge chocolate, these words rang true.Situated in Copenhagen’s stunning Frederiksberg gardens, the surroundings are an integral part of

the organic experience. And while the gardens may be cultivated, Mielcke aims to inject as much “organic wilderness” into his cuisine as possible. This was evident from the moment we sat down with our starters in an outdoor terrace remi-niscent of those in Provence. We enjoyed leeks rolled with pistachios and puffed potato, fresh-ly-picked carrots with a carrot cream, and lovingly crafted ‘leaves’ made of sea-buckthorn with gar-den herbs. And just as we thought we were on a journey through the spring garden, a Japanese street food called Takoyaki was served up. This was my ab-solute favourite and a fine example of Mielcke’s aim to present elements that are “playful and in the moment”.After moving indoors here, you quickly notice that Mielcke’s obsession with nature has been captured in the interiors. The walls are artfully painted with greenery, and if you look closely, you’ll even notice the small plastic garden bugs too.Having been spoilt by the starters, we moved onto the fish and meat courses. Mielcke is on a mission to play with people’s senses and the dish that certainly embodied this was the asparagus. Surrounded with a green curry sauce and a gen-erous dollop of cream infused with Italian pork breast, the dish etched a place in my mind due to its sheer creativity and complexity. After five fine courses we reached a main of pork infused with a richness that I’ve rarely tasted. Fer-

mented in miso for two days, then cooked over charcoal with black garlic, it came served with hearty flamed overtones. This was offset with a salad component that was tart, fresh, and earthy. Now while the food here is magnificent, the wine pairings are also on par. The delightful sommelier, Jose Santos, fills the room with a charm and a pas-sion for his craft. He sources the most in-demand vintages from around the globe and works closely with the chefs on a daily basis. After a night here, it’s certainly clear why this restaurant was award-ed ‘Best wine experience 2014’ by White Guide Denmark. The desserts here are made for the moment. Take the Woodrof for example. Made with apples, al-monds and wild herbs, it was fragrant and raw. The dessert wine – a 2013 Spätlese Burgenland Weingut Kracher – further enhanced the dish. An Austrian drop made with Chardonnay and Welsh riesling, it was acidic yet sweet.A dining experience with Mielcke and Hurtigkarl is one of those fairy-tale gastronomic journeys with surprises at every turn. Never have I witnessed such a creative expression of food that left such a strong impression. I can’t recommend this place highly enough. It just might change your outlook on food forever.

lumskebugten Esplanaden 21, Cph K; lumskebugten.dkShielded by Copenhagen’s old custom house and the grand headquarters of Maersk, Lumskebugten is not immediately obvious to either locals or tourists. This makes the old cliché ‘a hidden gem’ very apt, because once discovered it won’t be forgotten. Vegetables have played a dominant role in the cooking of Lum-skebugten’s owner, Erwin Lauterbach, throughout his long career. And at Lumskebugten, seasonal vegeta-bles are used both as central ingredients in the de-licious dishes and as informal, stylish decorations in vases, which means that both the restaurant’s menu and decor change according to the season.

krogs Gammel Strand 38,Cph K; krogs.dkThis city has so much to offer that I hate to imagine how many poor tourists end up paying too much for the mediocrity available at many mid-priced cafes. So I was inspired upon the discovery that Krogs is uphold-ing the establishment’s rich seafood tradition by offer-ing consistent, delicious, classic seafood in a relaxed yet refined brasserie setting. Tourists can delight in the novelty of enjoying fresh Danish seafood in a historic setting that was once the centre of the city’s harbour side fish market without forgoing the opportunity for a Copenhagen-worthy gastronomic experience right in the heart of the city.

kadeau Wildergade 10, Cph K; kadeau.dkEverybody talks about Nordic cuisine, but why not make your experience of the sought-after kitchen a bit more local? At Michelin restaurant Kadeau they present the Nordic cuisine with a special focus on the terroir of Denmark’s sunshine island, Bornholm. The menu, inspired byBornholm’s specialities, is cen-tred around conserved summer ingredients. The res-taurant pretty much oozes Bornholm. The colourful plates are from a local ceramic maker called Lov i List-ed, the decorations both in the restaurant and on the plates are inspired by the terroir, and the toilets play natural sounds from the island.Read the full reviews at cphpost.dk over the summer!

IN 2013, 20,000 party people joyfully strutted their stuff along the Copenha-gen Pride Carnival route, exuberantly frolicking in the sunshine and generally having a whale of a time.

This annual rainbow-tinted celebra-tion of the city’s LGBT community is al-ways a colourful affair with thousands lining the streets to wave at the fancy floats, watch the often scantily-clad rev-ellers, and admire some truly amazing outfits.

The parade winds its merry way into town on Saturday 30 August at 13:00 between the two city halls of Frederiks-

berg and Copenhagen for a big party that continues well after dark in the downtown bars and clubs.

There is also plenty going on in the week before. During Pride Week, the City Hall square is renamed Pride Square.

Here you can take part in events such as drag night, gay bingo shows, concerts, dance and the grand finale of Denmark’s Mr Gay contest.

It’s not all fun, fun, fun as Pride Square will also be the place to debate the burning issues of the day affecting the LGBT community.

It’s all free, but you might want to show your support by buying the official Pride bracelet.

As the mayor of Copenhagen, Frank Jensen, puts it: “Copenhagen shows its true colours to the world; it is a day when we show that we are a city that is open and tolerant and that we make room for everyone.”

New political party reaches out to internationals‘The Alternative’ wants to change politics in Denmark ... and the world

T HERE is a new party on the political landscape and, while it knows it

cannot get the vote of inter-national residents, it is inter-ested in reaching out to them.

Calling itself ‘the Alterna-tive’, the group – which has Uffe Elbæk, the former cul-

ture minister, as its spokes-person – says it is “more than a party, it is also a political movement and a cultural voice”, with a goal to change politics across the world.

Although based in Den-mark, the party views itself as a worldwide movement, welcoming members from anywhere. It maintains what it calls ‘ambassadors’ in many countries via its website.

MPs within five yearsFOCUSING on sustain-ability, the environment and culture, the group aims to ex-pand its online presence to “a real world platform where al-ternative political role model examples can be shared”.

The party’s first general meeting is scheduled for June. It needs to collect over 20,000 signatures in order to stand in elections and it has a goal of

eight to ten MPs in parlia-ment within five years.

As part of its international focus, the party is inviting expats and international stu-dents to an event on Monday 7 April that starts with a tour of Christiansborg at 17:00.

Elbæk will talk about the Alternative’s role as an inter-national party at 17:45, and the evening will wrap up with a group discussion.

Shale gas drilling given green light

DTHE FIRST shale gas

the brink of becoming

a reality following the con-

The council has been de-

thorough that for the first

the case has been under great

public scrutiny and demon-

The bartenders here are quick and certainly know how to mix it right. It offers plenty of classics such as the Strawber-ry Daiquiri and Mojito.

Try for example its Long Island Ice Tea, which is said to be the drink that made the talking mule talk.Find out more at cphpost.dk

A SPOrTS stadium and a construction site: not where you would expect to find a double Michelin-starred restaurant until you see the thread-like, slightly weath-ered letters spell out ‘Gera-nium’ on Parken’s (the Dan-ish national stadium) façade.

If you don’t judge a restau-rant by its exterior, do start in the elevator: clean and purposeful, it takes you as far from the nondescript ground floor as any lift in Co-penhagen will.

Eight floors up you will enjoy a birds-eye-view of green tree tops, red-brick roof tiles and – on a clear day – the blue of the Øresund as dis-tinct from the sky.

Lest this be dizzying, the interior is entirely down-to-earth. robust and justi-fied, the furnishings adhere to Scandinavia’s favourite (non-)colour palette: white table tops, grey Georg Jensen cutlery and black counter tops.

With a bearing that is a re-markable blend between stern and friendly, the staff (waiters, runners, managers and cooks) help you out of your coats and to your table, at which you remain until a

waiter invites you to accom-pany them to the kitchen for a little surprise.

It is here, under the auspice of owner and head chef ras-mus Kofoed’s three Bocuse d’Or trophies (bronze-silver-gold), that you enjoy your first dessert.

Clear your schedule. There is a ‘light lunch’ option set for two hours, but it took us a comfortable three and a half to complete, and if you go with the standard set menu (lunch or dinner), you’ll be glad about the comfortable chairs. Four hours may not sound like particularly much for a restaurant visit until you consider that at Geranium you never wait longer than a few minutes for the next course – 19 of them in our case.

Especially at the beginning of our lunch, when the ap-petisers were being served, I could see that the next dish was waiting for us to stop marvelling at the current one. And that is easier said than done.

I haven’t enjoyed confec-tionary in my adult life the way I adored the little carrot ball with sea buckthorn, nor did I expect to encounter

mackerel coated in dill when I first eyed what looked like a plain old olive.

But while surprises were a plenty as we wandered through the menu, none of them were demanding. Unlike Noma, Geranium doesn’t try to provoke. It doesn’t challenge your be-liefs about food or disrupt your senses.

It ‘just’ pleases with its shocking simplicity, elab-

orate layers of flavours and artful plating. I never thought I’d sympathise with people who eat with their cameras first.

That most ingredients in-cluding the edible flowers are seasonal and sourced from within 100 miles goes without saying in the con-text of New Nordic Cuisine.

Another high note of this food philosophy: if for what-ever reason you do not want

to have sommelier Søren Ledet pair the wines for you, try the home-made juice pairing option. My favourite was the tar-ragon-infused grape juice, which expertly accompa-nied the scallops in juniper aroma.

We left the restaurant with light stomachs and heavy hearts. Having tried Gera-nium’s handpicked version, scallops will never taste the same again.

Smørrebrød means “open sandwiches” and, as the name suggests, it isn’t just one dish but many. In fact, it embraces a vast number of variations of fish, meat, salads and vegetables and cheese on rye or white bread. Real smørrebrød is a pleasure to the eye and to the palate. But be careful - smørrebrød comes in almost as many different sizes as there are variations and it is more filling than you might think! The Danes eat smørrebrød all year round as a traditio nal lunch dish. It is also popular on festive occasions to gether with the family or friends. And smørrebrød is al most always accompanied by Danish beer and schnapps.Copenhagen boasts a whole range of restaurants which specialise in smørre brød – typical Danish open – faced sandwiches. They are ancient, traditional establish ments, often located below street level in cosy basements and cellars. Service at Copenhagen smørrebrød restaurants differs in style from that at normal eating places and can be an experience in its own right!Welcome to the traditional Danish kitchen! Velbekomme – Bon Appetit!

No one really has any idea when it first appeared. And no one knows who invented it, either. But everyone agrees that it is the very essence of Danish cuisine.

Café Sorgenfri is a 150-year-old basement restaurant in central Copenhagen, serving classic Danish open sandwiches. Our famous kitchen works every day from 11am to 9pm (Sun 12 noon to 5pm), where as the restaurant only closes at midnight. A lot has been written about Café Sorgenfri as an example of genuine, traditional Co pen -hagen culture at its best. However, most of all, the restaurant is popular in the true sense of the word. Café Sorgenfri is known by any Copenhagener and everybody from all walks of life comes here to enjoy a meal, a couple of pints...and the company. Quite naturally, Café Sorgenfri is often completely packed – so please phone in advance for table reservation.

Restaurant & Café Nytorv is 150 years old and one of the very oldest inns in Copenhagen – established 30-40 years after the Great Fire in 1795 that left most of the capital in ruins. In times gone-by, Restaurant & Café Nytorv was the haunt of drunkards and prostitutes, today its clientele are artists, lawyers, businessmen and good people that just pop into the place for a beer or a good meal – we serve typical Danish-style lunches all day!

Københavner Caféen is a genuine Danish restaurant situated in one of Copenhagen’s small and charm-ing streets – just a couple of steps off the walking street (“Strøget”). Traditional open sandwiches (“smørrebrød”) dominate the lunch menu whilst renowned Danish dishes are served in the evening. The café is noted for its untraditional and impul -sive activities for tourists. For example, Santa Claus often appears during the summer months! Københavner Caféen is open seven days a week including public holidays and serves lunch be tween 12:00 and 17:00 and dinner from 17:00 until 22:30.

Kanal – Kafeen – Canal Café – located on the canal near Christiansborg parliament building – dates back to 1852. The first owner of the café was a former cook at the royal palace who was given the restaurant as a pension! Canal Café has a genuine old – world Danish atmosphere, with a plethora of old pictures on the walls and low beams! The restaurant is frequented by office workers from the quarter as well as parliament, with families and tourists often in evidence! The Kanal – Kafeen is a bit cramped with seating capacity for only 60 guests, but there’s always room if you are prepared to wait a few minutes for a table – otherwise when weather permits, tables are put out on the pavement overlooking the canal.

Café Petersborg is one of Copen-hagen’s very oldest restaurants with a history which dates all the way back to 1746. The cuisine is typically Danish and the res-taurant has always made it an honour to serve good, tradi-tional Danish food at reason-able prices. The menu has extended to include a range of foreign dishes which have be -come part of the Danish kitchen. Many famous Danes and foreigners have visited Café Petersborg – notably Hillary Clinton.

Husmanns Vinstue – a classic luncheon restaurant founded in 1888 – is one of the very few old basement restaurants left in Copenhagen – almost totally unchanged in style during the 125 or so years of its existence! One significant change is that women are allowed to lunch there now – they were forbiden admittance in 1912 by the then proprietress, a ban not lifted until 1981! HUSMANNS VINSTUE is today a traditional Danish smørrebrød lunch restaurant of the high est quality offering homemade specia lities composed of fresh raw materials, based on typical old Danish recipes. Opening hours mon-fri: 11.30 am – 6 pm, sat: 12.00 pm – 4 pm. Kitchen: mon-fri: 11.30 – 4pm, sat: 12 – 4 pm. Closed Sundays and Bank Holidays. All credit cards accepted. PrOMISING 17 operatic happenings ranging from full-scale operas to vocal snippets on a boat-tour, the highlights of the eight-day festival include full length performances of romeo and Ju-liet, Manon, The Marriage of Figaro and Ottone in Villa (see page 3).

Massenet’s Manon has French sopra-no Patricia Petitbon in the title role and will be one of the festival highlights. A close-shaven version of the Barber of Seville will also be doing the rounds of the suburbs on the back of a truck over five days.

If you hanker after the days where school started with a rousing tune, you can burst into song yourself every day

at 9am at Torvehallerne at the festival’s morning assemblies.

If a sing-song on a boat sounds like a good idea – try the ‘Operetta on a Boat’ canal tour leaving from Gammel Strand twice a day where the charming Inge-borg Børch will be belting out classics that take us from from France to Den-mark, via America.

At the other end end of the cultural spectrum, DJ Noize makes sure Friday night ends with a bang by looping and mixing opera into the beat accompanied by mezzo soprano Andrea Pellegrini.

Another promising collaboration is the staging of Gounod’s opera Faust to-gether with the 1926 silent film of the same name.

Saturday will see the superb inter-national baritone Bo Skovhus serve up arias as a warm-up to the the grande finale concert at Torvehallerne on the final Sunday, which will be transmitted live on DrK.

THIS AUGUST, Louisiana will welcome a spectacular solo exhibition featuring Danish-Icelandic artist Olafur Eliasson. Famous for his large-scale installations, the main highlight of this exhibition will be a really long landscape that will take over most of the south wing of the mu-seum.

As it can be understood from his pre-vious works such as the façade on the Harpa concert hall in Iceland and his installation your rainbow Panorama at Aarhus Kunstmuseum, Eliasson likes to enhance the audience’s experience by

using reflections and elements like light and water and playing with human per-ception.

“My senses are my experiential guides – they generate my innermost awareness of time while generously giving depth to my surroundings,” he explains on his own website (olafureli-asson.net).

Known as the light and space artist, his work can be classified as post-mod-ernist, although it is rooted in roman-ticism: the belief in seeking the ideal nature.

While eliminating fundamental ele-ments of nature in his work such as rain and making it a man-made scenario, Eli-asson is searching for the sublime and he finds it in the nature.

riverbed will be a blend of contrast-ing notions such as outside and inside, nature and culture highlighted with the concept of vacancy.

a Sign in SpaceMalmö Konsthall, St Johannesgatan 7, Malmö; opens July 5; konsthall.malmo.se

Gunilla Klingberg’s project A Sign in Space started life in Spain as a sand print.

During the low tide season in Laga beach, the graphic star pattern was im-

pressed on the beach via a heavy iron roller pulled by a tractor. The large scale pattern is intended to look like a man-dala: a cosmological diagram that repre-sents the universe and its cycles of life, death, and rebirth.

Klingeberg’s goal was to explore and fuse everyday consumerism with spirit-ualism. The museum will transform the high light into Klingberg’s cosmic beach, which both challenges and exploits the gallery’s space limitations. (AB)

Everything has a warm, homely-feel-taste here and Chef Maya’s chocolate-coconut pyramids are scrumptious!

lagkagehusetVarious locations (incl Torvegade 45), Cph K; open Mon-Sun 06:00-19:00With ten bakeries across central Copenhagen, you can’t miss this one, but what should you buy? We suggest you opt for a real Danish classic, the hindbærsnitte − a sandwich of sorts, with two sheets of pastry filled with raspberry jam and topped by deliciously light icing and sprinkles.Find out more at cphpost.dk
