Farm To Table FruitAs the leaves begin to change in West Michigan the orchards are abuzz with activity as the apples reach their peak. One local couple, Tom and Sandy Nuyens spend every autumn turning their harvest into a delicious applesauce using an old family recipe and a whole lot of love. Three years ago they took a chance when they brought in a sample for Sara, the Baker’s wife. One bite and she knew it needed to be added to our menu! Each year since we have continued to increase our order for this scratch made delight that give our customers the chance to enjoy the taste of fall all year long!

Greetings fabulous customers and community members! I am Sara, the Baker’s Wife of Village Baker in Spring Lake and Chief Editor of this publication. Every fall and spring I enjoy the privilege of connecting with the other

local business owners in our area to build the next issue of Village Appetite. Each issue I am reminded of the interesting, dynamic and capable community of small business owners we have in our area. This “coming together” that the magazine necessitates leaves me inspired and feeling surrounded by professional excellence! I hope that the Village Appetite introduces you to a few entrepreneurs you didn’t otherwise know, and updates you on the latest events, community news, new developments and exciting places to visit, dine and perhaps enjoy a local libation.

Allan Plantenga’s face lights up with delight as he recalls his idyllic and occasionally

mischievous childhood in Spring Lake: Carefree bike rides with his buddies and siblings, riding bikes off the boat launch at the ferry landing near his home, plunging into the Grand River, body surfing the wind-whipped waves of Lake Michigan and earning a lecture from his watchful mother for “borrowing” his sibling’s bicycles.

“It was a fairy-tale life in the old ferry master’s house,” said Plantenga, now 66, who cherishes any happy recollection of distant days. For the past several years he has lived with the devastating dual diagnoses of Alzheimer’s and Parkinson’s disease. Allen suffers additional complications of Post-Traumatic Stress Disorder linked to his experiences serving with the U.S. Marines during the Vietnam War. After his service he worked at his family’s dry cleaning business in the Tri-Cities until his health forced him into an early retirement.

“By day, he is a lovely guy - - a sweetheart,” said Plantenga’s wife, Martha, “but in the mid-to-late afternoon, when sundownders begins to set in and the effects of dementia keep him up and agitated and aggressive with an inability to reason, well, it becomes a nightmare all night long. He becomes a completely different personality. Believe me, the caregivers are affected by the illness - - just in a different way.”

Al now lives at the Grand Rapids Home for Veterans, but he and his spouse credit The Little Red House in Spring Lake with helping them stay safe and sane for the past several years during his transition from independent living.

“I just couldn’t do it alone in our house anymore,” said Martha. “I had to have help but Al wanted only me. He didn’t think anyone else would understand him, but the staff at the Little Red House was so well prepared to take care of Al…I knew he was safe there. He was happy.”

For his part, Plantenga describes The Little Red House as a sentinel of compassionate care and a safe harbor where his every need was anticipated and addressed.

“They gave me the first relief I had in a decade. They gave me help and they also gave me encouragement to be a helper to others when I can.”

Martha praised the environment her husband experienced stating, “he became so helpful to others, and he felt needed instead of being a burden for others. When we come for a visit now, everybody remembers and loves Al. He was able to get a freighter load of love and good feelings here, which he couldn’t always get at home from one exhausted wife. This place is a miracle for us.”

Jody Herrelko, the Executive Director for The Little Red House, noted that Plantenga made a positive and lasting impact on the staff and other participants during his several years of taking advantage of the adult day care center’s programs and offerings.

“He’s well remembered here, said Herrelko. “He loved his time with us, and we enjoyed getting to know him and his unique needs. The fact that The Little Red House could be available to Al and Martha, and that it’s

nestled in the fiber of our community is a great benefit to caregivers and their families.”

Herrelko adds: “People in our service areas of Ottawa and Muskegon counties know that the best measure of any community is how the most vulnerable populations are treated and cared for. We’re so grateful to be part of a supportive community in the Tri-Cities, without whose generosity we would not exist.”

The Spring Lake train depot was erected in 1884. This train station was key in building

commerce and connecting village residents to Grand Rapids, Muskegon, Holland and Chicago.

It was located at 505 W Savidge Street in the Village of Spring Lake for a total of 89 years where you

will now find Arby’s Restaurant. The train tracks that serviced this depot were converted years

ago into a fabulous bike path which is now enjoyed daily by residents and visitors.

Train transportation left its glory years in the1950s and lost its importance due mostly to the popularity and affordability of the automobile. This particular train station finally closed its doors in 1957 and then stood vacant for another 16 years. There was talk of demolition in the 1970s when Joe Bisacky offered to purchase the structure and move it to his property rather than tear it down. Joe purchased the depot for $100 and paid $400 to relocate the landmark to his property to be stored for another 25 years.

Gary and Ruth Bisacky, son and daughter-in-law of Joe had the building turned to face Cleveland Street, added an additional wing keeping in theme with the depot’s architecture and opened Depot Antiques in 2000. This antique store is my favorite because it is full of furniture and larger-than-life

artifacts. Ruth’s late husband Gary used to joke that if it wasn’t heavy she wouldn’t even look at it. When I visit her store, I first stroll through the depot and marvel at the beauty of her finds, and then I

ask her if I can snoop around in “the barn”. “The barn” is where Ruth stores her overflow, and believe me, there is more overflow in her barn than inventory in her store! This two story structure is chock full

of dressers, hoosier cabinets, antique store fixtures, trunks, end tables, headboards, fireplace casings and more chairs than you can imagine.

Depot Antiques is a local historic landmark that is open 7 days per week and “admission” is FREE! This antique store is an ideal “daycation” destination for couples planning to have breakfast or lunch in the Village.

A bonus for gentlemen visitors is the military “wing” where you will find the largest collection of war memorabilia in the state. In the winter months bring mittens and wear a warm coat to explore “the barn” as it is unheated,

however complimentary coffee will welcome your return to the depot’s original, cozy waiting area.

European hearth breads, American pan breads & San Francisco SourdoughMy husband calls himself “the bread guy”, and when we purchased the Spring Lake property for our bakery he said he was looking forward to being “THE village baker”, thus our bakery name. It was on date #3 with my husband, when he invited me for lunch and made for me the king of sandwiches on his freshly-baked bread, that I knew he was “the one”. Those of you who frequent our bakery understand my weakness and willingness to submit (or commit) to a life of deliciousness.

This photo was taken at the Baker’s Wife, our companion store located on Washington Street, the main street of downtown Grand Haven. We have a changing variety of freshly baked bread at both stores every day of the week with the exception of Monday which is a traditional day for bakeries to be closed. I have listed a schedule below, but remember that for holidays we expect to make most of the breads on the days leading up to Thanksgiving, Christmas and Easter. On those three holidays we are closed so that we and our staff can enjoy the holiday with loved ones too.

My staff would like to remind you to call in your special orders. We prefer to know that all of our customers are getting what they need, and we will be sure to have your bread and fresh baked pies ready for your pick-up. On the eve of holidays, our restaurant is surprisingly not very busy. So consider enjoying breakfast, lunch or dinner while we are filling your special order.

Pairing Work With WineIt was almost one year ago that the exciting news was officially announced: Village Baker had been approved for a liquor license! In a flurry of meetings, phone calls and emails to renovate the dining area to accommodate a new bar, Sara and Oran entrusted two of their staff members to fill the role of hobbyist sommeliers.

Alejandro is the Commercial Account manager at Village Baker. He is in charge of keeping all of our restaurant clients and grocery store customers happy and well supplied with fresh Village Baker baked goods. Most days you will see him zipping around town between Grand Haven, Spring Lake and Muskegon in the white logoed Village Baker van.

He began his employment here in 2012 and resides in the Village of Spring Lake with his lovely wife Virginia. Originally from Uruguay, Alejandro is a wine enthusiast who balances his time between his role at the bakery and an independent property manager. To unwind he enjoys sipping a glass of red wine and enjoys the full body of a shiraz, especially those from Chile.

Paige is the Office and Catering Manager. Her time is spent wading through the paperwork that comes with a small business, creating custom menus for special events, and working on an array of projects ranging from design to editing which compliments her background in early childhood education where multitasking was a staple!

She has been with the bakery since 2014 and also calls the Village of Spring Lake home along with her husband Jeff and their two year old

son, Pierce. When she’s not consuming copious amounts of coffee to keep up with her little guy, she enjoys relaxing with a glass of cabernet and favors those from California.

Since last November, Alejandro and Paige have met with several vendors sampling their offerings and choosing those that they felt held the broadest appeal and most value for Village Baker customers. On several afternoons they would be spotted in the back clubroom sipping their way through regions of France, Australia, New Zeeland and across North and South America.

We hope you enjoy these wines as much as we do, and more importantly, the company with whom you share them!

Calsista Pinot Noir California: A blend of dried cherry, rose petal, violet and roasted coffee, this is date night in a bottle. The flavor is enhanced when enjoyed along with fresh flowers and sincere compliments!

Babich Black Label Sauvignon Blanc New Zeeland: The fresh and fruity flavors make this an excellent pairing with our salads. It has a nice citrus note and is best enjoyed in social settings where one wishes to avoid the embarrassment of the red lip ring!

La Crema Chardonnay California: ChardonYAY! This classic has a lovely mix of green apple, lemon and subtle earth notes. It does not have the bold oak aftertaste of many Chardonnays and pairs well with “I forgot about the bake sale, so I stopped in to buy some cookies,” days.

North by Northwest Columbia Valley: This is the Switzerland of red wines. It has the yin and yang of crisp tannins and acidity. It pairs perfectly with our pizzas and persnickety palates.

Domaine La Forge Cabernet Sauvignon French: The description “dark, rich, dry, intense scents of red berries, red pepper, and tobacco, with cocoa and spicy vanilla aromas,” is liquid dessert! Buy it by the bottle because just like our chocolate ridiculous cake, it’s meant to be shared.

The resulting mass of the cantilever assembly is greatly reduced allowing it to trace the sound etched in the vinyl with much greater fidelity. Manufacturing these is extremely difficult and their prices can be stratospheric. Nice ones begin at over a thousand dollars, and top quality models can reach prices well over $10k! But aahhh, think of that magical sound!

I have enjoyed one of the best MM carts at home now for a couple years. But just what am I missing out on? A trip to my local dealer helped me answer just that. I packed up my analogue front-end and brought them to Way Back Audio where one of the owners, Thomas Klynsma, and I were able to do some side by side comparisons. Admittedly, it wasn’t very scientific as it would have been cumbersome to swap cartridges on the same tonearm but it was instructive. We listened to some fabulous jazz and other records through my system, and then the same on a stereo featuring an entry level MC cart, a great Clearaudio turntable, vaccuum tube Jolida electronics, and KEF loudspeakers. The music was engaging, silky smooth, and dymanic through both systems. The result? Inconclusive! But it sure was fun, and my quest for the Absolute Sound continues.

The $11,995 Lyra Atlas

Audiophillia Nervosa, I have it bad. It always seems like the Absolute Sound is just one more upgrade away. As soon as I install the latest and greatest component in my stereo system and sit down to listen to music doubts begin to creep in and questions arise:

“Is the copper in my speaker cables pure enough?”

“Are the stock 6NS7 dual-triode vacuum tubes in my DAC adequate or should I try the Northern Electrics?”

“Are the phase-angle adjustments on my subwoofers optimized for the smoothest in-room bass response?”

But it’s all in fun. It’s a thrill to listen to a virtual jazz quartet right in one’s own living room. I urge anyone who really loves music to visit a store that specializes in two-channel audio to audition stereos that really elevate the act of listening to music to a very satisfying experience. And really, good sound doesn’t have

to cost a mint. Huge improvements over the mass market consumer electronics that are sold at the big-box stores can fit nearly any budget.

My nervosa, however, begs the next question:

“MC phono cartridges, why all the fuss?”

MM, or Moving Magnet carts are very common, easy to manufacture, and can be very good. In these, a tiny magnet is affixed to the opposite end of the stylus in a

phono cartridge and as the tip traces the grooves in a record a tiny electrical signal is generated. These magnets have a certain mass and inertia as they vibrate. And it’s this inertia that limits the ulitmate sound quality of even the best MM’s. Moving Coil carts, on the other hand, replace the magnet with a nearly microscopic coil that vibrates in the magnetic field of fixed magnets.

Just the other day I was sitting in our café when Sara came up to me and said jokingly, “Can we get any more contractors in here today?” Already in our parking lot were the assorted pickups and box trucks for a plumber, concrete saw cutters, a hood installer, a fire suppression specialist, an electrician, two builders, and Doug the Painter!

“I just called a locksmith”, I deadpanned, but indeed I had. The lock on the front door had gone kaput.

It really has been a big year for improvements and growth at Village Baker. Signing a purchase agreement for a liquor license in the spring of 2015 prompted us to try to figure out exactly what our vision is for our future. We knew we wanted an elegant bar sans big flat screen TV’s. And we knew that we would need to expand our menu to include many of the items that one would expect at a full service restaurant.

So the next several months included countless discussions about design, hiring an architect, thinking about menus, and loads of paperwork. Every utility needed upgrading, including a much larger gas service, a bigger municipal water connection, and even a new utility pole to deliver more electricity to the property. Many new drains had to be cut through old cement floors as there wasn’t any water on the whole side of the building where our new kitchen would go!

Designing the bar was fun. Sara and I visited bars from Grand Haven to Traverse City. Meeting many wonderful people, we were often given a little tour of the various bars and offered lots of valuable advice. Ultimately it was Sara who translated her vision into what has to be one of the most beautiful bars in the area. The bar top was cut from a huge old utility pole purchased from Zeeland Board of Light and Power after many years of service holding power lines. Most of the stainless steel fixtures were sourced through careful and persistent Craigslist searches. And the mirrored bar back reflects Sara’s penciled drawing to a fraction of an inch. Being the audio nerd that I am, I added the classic Sansui 9090 receiver and the pair of handsome Wharfdale BBC style monitors.

Our delicious café menu and our authentic pizza list have been essential to the success and growth of Village Baker. LuSinda, our Chef, is masterful at creating amazing soups and stews, which when paired with a deli sandwich or one of our specialty salads, makes for a delicious and satisfying meal. Our savory department has worked wonders with a limited workspace, but a major kitchen upgrade has been long overdue so we’re adding a full restaurant kitchen….

As this issue of Village Appetite goes to press, so too are the finishing touches on our new kitchen. LuSinda and her talented staff will be getting a full sized range, a 60” griddle, a large char-broiler, and a fryer! Soon our menu will include many of the choices that one expects at a full service restaurant including eggs to order, pancakes, omelettes, burgers, fries…. Of course, these will all be done with the usual Village Baker flair.

Yet another feature coming soon will be a new takeout and retail area through the two french doors by the North entrance. Here customers will be able to quickly pick up pizzas and any takeout order, along with purchasing beverages and other groceries from a large display cooler. Our master plan is really beginning to take shape!

There are so many wonderful people and dynamic local companies that have helped us with our expansion and upgrade project. I’m sure that by listing them I’ll be missing some and for that I apologize.

Jim Storey of StoreyLine Connections was invaluable in helping us obtain our liquor license, we couldn’t have done it without him. Mark Oppenhuizen of Oppenhuizen Architects helped solve many tricky problems in turning our sprawling building into a working restaurant. Community Shores Bank helped finance this project and really emphasized the ‘community’ in banking. Joe Fry and the crew of KFC Flat Works have been our go-to

company for many of our cement emergencies. Thanks to Marcus DeWeerd of West Michigan Food Equipment for sourcing a nice combination of used and new equipment; Bilz Plumbing for

getting all the water flowing where it needs to; Phase II Electric for keeping our outlets energized; our customer Jim Brady for creating our magnificent bar and bar top; Eric Payne of Payne Restoration for much of the carpentry including completing our beautiful women’s restroom from start to finish in just 10 days; Current Venture Contracting for drywall installation and mudding; Mark Rankin for lots of carpentry, repairs, and creative solutions to many of the in-the-trenches problems that inevitably arise;

and our patient and flexible staff who go with the flow everyday as the space around them changes.

And of course, we owe such a debt of gratitude to our wonderful and faithful customers. It has been such a privilege for Sara and I to get to know so many lovely people. I look forward to many more years as your Village Baker! ~ Oran

We are your hometown market committed to offering quality products at competitive, value-driven prices. Orchard Markets provides a friendly, customer service focused atmosphere that is big enough to take care of all your needs, yet small enough to know you by name!

While dining at Village Baker you may have noticed each room has a namesake. We have our front Cafe, the Cuckoo Clock area, and the Clubroom. The Clubroom has doubled in size since our renovation and now includes the area that once housed our central office. It was affectionately named for the clubs that frequent the bakery. This area is an enclave with the double french doors and antique leaded windows that look out over the new bar area while simultaneously offering a feeling of seclusion.

Any given day we host clubs ranging from running, biking, & swimming to book studies, faith based groups and environmental.organizations. We appreciate seeing these familiar faces day after day throughout the year. For some it’s an early morning mocha and fresh scone and for others they gravitate toward our hand tossed pizza and selection of craft beer.

It could be our central location, homemade recipes, or hospitality, but whatever the reason we want to express our gratitude to those who have designated our little niche as a grown up clubhouse. No “Keep Out” signs allowed!
