Millet provides a host of nutrients, has a sweet nutty flavour, and is considered to be one of the most digestible and non-allergenic grains available. It is one of the few grains that are alkalizing to the body. It is also amongst the most important grains in the world, sustaining one third of the world’s population.

Benefits:• Millet is alkaline and it digests easily.

• The Hunzas – who live in a remote area of the Himalayan foothills, known for their excellent health and longevity – enjoy millet as a staple in their diet.

• Millet’s 15% protein content makes a substantial addition to a meat free diet.

• Millet can act as a prebiotic, feeding microflora in your digestive tract.

• The serotonin in millet may be calming to your moods.

• Millet is a smart carbohydrate with lots of fibre and low simple sugars. Because of this it has a relatively low glycemic index and has been shown to produce lower blood sugar levels than wheat or rice.

• Magnesium in millet may help reduce the effects of migraines and heart attacks.

• Niacin (vitamin B3) in millet may help lower cholesterol.

• Millet consumption may help decrease triglycerides and C-reactive protein. Scientists in Seoul, South Korea concluded that millet may be useful in preventing cardiovascular disease.

• Millet is naturally gluten-free and non-allergenic.

• Millet may help hydrate your colon to keep you from being constipated.

MILLET


RECIPE IDEAS

Serves: 6Ingredients:

• 720ml water• 240g millet• 10 chopped sun-dried tomatoes• 1 garlic clove• 60g pine nuts• 80g pitted green olives, chopped• 60g grated Parmesan cheese• 4 large caper berries, stemmed and then minced• 1 tsp dried oregano• 1 tsp dried marjoram• 2 tbsp unsalted butter• 2 tbsp olive oil

METHOD:

1. Combine the water and millet in a medium saucepan and bring to a boil over high heat. Cover, reduce the heat to low, and then simmer slowly for around 30 minutes until it has a thick porridge consistency. Uncover and stir well to incorporate any remaining water. Scrape the millet into a large bowl and cool for 10 minutes.

2. Meanwhile, put the sun-dried tomatoes and garlic in a small heat-proof bowl. Cover with boiling water and steep for 10 minutes.

3. Toast the pine nuts in a dry skillet set over medium-low heat for about 5 minutes, until lightly browned and fragrant. Pour them into the bowl with the millet.

4. Drain the sun-dried tomatoes and garlic and add them to the bowl with the millet. Add the olives, cheese, caper berries, oregano, and marjoram. Stir well, roughly mashing the ingredients together. Use dampened hands to form the mixture into 6 round, even sized burgers.

5. Melt the butter and the olive oil over medium heat in a large skillet, preferably non-stick. Place the burgers into the skillet and cook until crisp and golden brown, about 4 minutes. Flip them and continue cooking until set throughout, about 4 more minutes. If your skillet isn’t large enough to hold all 6 burgers at once, work in two batches, using 1 tablespoon olive oil and 1 tablespoon unsalted butter for each batch.

6. Serve with your choice of buns, salads and sauces.

Baobab is called the Tree of Life in Africa, as it is one of the most nutrient-dense foods in the world, drying naturally on the branch to produce a 100% natural raw whole food. It is an excellent source of vitamin C, calcium, potassium and thiamine and a source of vitamin B6 and comprises almost 50% fibre. These nutrients combine to support:

Described as a cross between a grape and a blueberry, the Acai (pronounced ah-sigh-ee) berry is a small, reddish-purple fruit which originates from trees found around the Amazon River basin of South America.

These berries are also quite perishable, but have significant nutritional attributes, and are best prepared into a convenient powder form.

Acai berries are low in sugar, but contain excellent amounts of iron, calcium, fibre, and vitamin A.

• The fibre found in Acai berry can aid digestion. Fibre can help prevent or relieve constipation and may help support a healthy cardiovascular system.

• Acai is naturally high in essential fatty acids having a fatty acid profile similar to olive oil. The link between essential fatty acids and heart health and a healthy nervous system is well documented.

• Acai berries contain amino acids which help promote muscle performance, energy production, endurance and strength.

• Acai berries contain as much Vitamin C as blueberries and is also a source of Vitamins A, B1, B2, B3 and E. It is also a source of calcium, magnesium, zinc and copper.

RECIPE IDEAS


• 400g baby sweetcorn• 60ml olive oil• 3 tb Cajun seasoning• 2 large courgettes, thickly sliced• 1 red onion, finely chopped• 3 garlic cloves, crushed• 2 tb tomato purée• 200g freekeh• 600ml vegetable bouillon• 350g frozen broad beans• 150g feta cheese, crumbled• 3 tb chopped chives• Sea salt, black pepper

METHOD:

1. Preheat the oven to 220ºC.

2. Combine the corn with half the olive oil, 1 tb Cajun spice and season well with salt and pepper.

3. Place in a roasting tray and roast the corn for 20-25 minutes until golden.

4. Meanwhile heat 1 tb of olive oil in a pan, add the courgettes, onion, garlic and cook until the vegetables begin to slightly soften.

5. Add the tomato purée, remaining Cajun seasoning and cook together for 2 minutes.

6. Pour over the stock, add the freekeh, mix well and bring to the boil. Reduce the heat and simmer, covered for 14-16 minutes or until the freekeh is just tender.

7. Meanwhile cook the broad beans in boiling salted water for 2 minutes, drain and refresh.

8. Add the beans to the cooked freekeh, stir through the chives and adjust seasoning to taste.

9. Serve the warm freekeh salad topped with the roasted corn, sprinkle over the crumbled feta cheese and serve.

UMBRIAN SEMI-PEARLED & PRE-SOAKED

Farro is a grain similar to pearl barley but it’s dried in such a way that instead of being fluffy and spongy it becomes chewy and nutty, when cooked.

• It is rich in fibre & notable amounts of magnesium and the vitamins A, B, C, and E.• This versatile cereal has been pre-soaked and therefore only requires 30 minutes cooking time without any need to pre-soak the night before. • Ideal in soups, stews and salads.

WHAT IS FARRO?

Often used as a substitute for pasta or rice, farro is a grain with a nutty flavour similar to brown rice. It’s actually ancient as it was first domesticated 10,000 years ago in the Fertile Crescent, has been found in Egyptian tombs, and is believed to have sustained the Roman legions.

Today, farro grows in the central and northern Italian regions including Lazio, Umbria, and Tuscany. Historically, these were impoverished areas, and the longevity of its people is sometimes attributed to farro.

RECIPE IDEAS


• 2 tb olive oil• 1 onion, sliced• 400g fresh spinach, blanched and coarsely chopped• bunch of fresh basil, coarsely chopped• 250g farro grain, cooked• 100g parmesan, grated• 2 eggs, beaten• 50g unsalted butter, melted• 9 sheets filo pastry, halved• 625g pumpkin, peeled, cut into 1 cm thick slices, cooked in boiling water• Salt, freshly ground black pepper

“ This recipe is a variation of a classic rice torte or pie, using farro in place of the rice. I sometimes add a layer of mozzarella to the dish within its layers. Serve with a nice tomato and basil salad.”

METHOD:

1. Heat the butter in a pan, add the onion and cook until golden.

2. Add the blanched spinach and basil, cook for 2 minutes and set aside.

3. Divide the farro equally between 2 bowls, adding the parmesan and beaten eggs between the two, mixing well. Add the spinach & basil mix to one bowl only and combine.

4. Grease a 20cm spring form cake pan with butter.

5. Brush the sheets of filo with some melted butter and use to line the bottom and sides of the cake pan, leaving a small overhang of filo. Reserve 6 half sheets of filo for the top.

6. Start forming the torte with the spinach and farro mix, followed by a layer of pumpkin.

7. Top with the second mix of farro & parmesan.

8. Cut the reserved filo pastry into strips, brush them with butter and use to decorate the top of the torte.

9. Bake for 45-50 minutes on a baking sheet until golden.

10. Turn it out of the cake tin onto the baking sheet again and bake for a few minutes longer to crisp the sides.

11. Cool slightly before serving.
