Ugandan Peanut SoupIngredients:2 T olive oil3” ginger roughly chopped2 carrots - peeled chopped1 clove minced garlic1 onion (2 c.) - diced1 sweet potato - peeled and chopped6 c. veg/chick broth14.5 oz crushed tomatoes1 c. creamy peanut buttertopping: roasted peanutsgreen onions
Instructions:1. saute ginger, carrots, garlic and onion in oil for 2 minutes2. add potato & stock 3. Bring to boil and simmer 10 minutes4. Add tomatoes and peanut butter, warm until PB melts5. use immersion blender until smooth6. top with roasted peanuts and green onions.
